Another very tasty dish for the holiday table that will not leave any lover of meat snacks indifferent. Veal is best suited for our roll.

Recipe

  • 1,300 beef;
  • 200 grams of cheese;
  • 2 eggs;
  • 3 tablespoons breadcrumbs;
  • 6 -7 cloves of garlic;
  • 1 onion;
  • 2 tablespoons (heaped) of tomato paste;
  • ½ glass of dry white wine;
  • 3 tablespoons of greens (I used frozen);
  • salt and pepper (4 peppers with coriander) to taste.

How to cook, step-by-step instructions with photos

We are preparing the filling of the roll, for breadcrumbs, I dried the baguette pieces in advance. Now let’s grate these pieces

Also grate three cheeses

Break eggs into a bowl

Beat lightly, add breadcrumbs and herbs

stir, then add cheese

Mix everything well again. The filling for the roll is ready

Set aside and get to the meat. Take a layer of meat and cut it across the grain, but not all the way, so that it looks like an open book.

Beat the meat well on both sides to a thickness of about 1 centimeter

We beat it carefully so that there are no holes in the layer of meat, otherwise the filling will leak out through these holes. Season the layer of meat with salt, pepper and garlic

Spread the filling over the entire surface

Now we will tie it with ordinary white thread, in 4 folds

Cut the peeled and washed onion into strips

Pour wine into a bowl, add tomato paste

Then add 2 glasses of water, add a little salt, mix again

Place the onions in a baking dish

Place the roll on the onion with the seam down and pour in tomato juice

Cover the pan with foil and place in the oven

Bake for 2 hours at 180 degrees, then remove the foil and bake for another half hour, pouring tomato sauce over the roll. Remove the finished dish from the oven

Cover with foil and let cool. Remove the threads from the cooled roll, transfer it to a plate, you can decorate and serve

Step 1: Prepare the onions and garlic.

Peel the onion and cut into thin half rings, transfer to a small plate.


We will add garlic to the filling, so it is better to grate it on a fine grater or use a garlic mince.

Step 2: Prepare the filling.



Combine garlic, breadcrumbs, basil, oregano, parsley and salt in a bowl. Add eggs (raw), mix well. Then add the grated cheese and mix well again to obtain a homogeneous mass.

Step 3: Prepare the banquet roll.



Place the beef on a wide board, take a wide knife and carefully cut the piece along the grain.


Do not cut all the way, otherwise you will end up with two pieces, but we need one, about one centimeter thick. Season with salt evenly and sprinkle with ground black pepper.


Place the filling and spread it evenly with a spoon over the entire surface, leaving only about two centimeters free on one edge.


Roll the beef into a roll, very carefully so that the filling does not move.


In order for the roll to keep its shape, it must be tied with twine or other suitable strong natural thread.


Place the chopped onions in the pan and place the meatloaf on top, seam side down. Pour tomato juice and white wine into the pan. Cover the roll with baking foil and place in the oven, preheated to 180 degrees. Bake banquet roll 2 hours. Then remove the roll from the oven and leave to cool. Do not remove the foil so that the meat does not dry out. When the roll has cooled completely, remove the foil and transfer it to a cutting board.


Before serving the roll, be sure to remove the twine.

Step 4: Serve the banquet roll.



Before serving, cut the banquet roll into pieces approximately 1.5-2 cm thick. Place the roll on a dish or place in plates, pour over the sauce in which it was cooked.

If you want the roll to have a golden brown crust, at the end of baking, uncover it and bake without foil for about 20 minutes. Then remove and leave to cool, but do not cover with foil again.

Carefully roll the beef into a roll, making sure to keep the filling inside.

Tie the roll tightly with kitchen thread (or secure with toothpicks).

  • Beef fillet – 1 kilogram
  • Cheese – 200 grams
  • Onion – 1 piece
  • Tomato juice – 400 milliliters
  • Dry white wine – 100 milliliters
  • Garlic – 2 cloves
  • Egg – 2 pieces
  • Breadcrumbs - 3 tbsp. spoons
  • Oregano, basil, dried parsley - ½ teaspoon each
  • Salt, pepper - to taste

Cooking method

Peel the onion and finely chop it, put it in a bowl. Peel the garlic and pass through a garlic press. Mix the squeezed garlic with the breadcrumbs and spices that we have prepared, add salt to taste. Add grated hard cheese there and mix until smooth. This will be our filling.

Rinse the beef fillet well and dry it. Cut in such a way that you get one layer 1 centimeter thick. Lightly beat on one side, salt and pepper on both sides. Spread the filling evenly onto the prepared layer of beef. Wrap in a roll and, so that the roll does not lose its shape, secure with toothpicks or tie with food twine.

Place chopped onion on the bottom of a deep frying pan and place the roll. Then mix tomato juice with dry wine and pour into the frying pan. Cover it with food foil on top so that it is covered like a lid.

Preheat the oven to 185 degrees and place a frying pan with a banquet roll in it. The dish will be ready in 1 hour 50 minutes. Remove the finished roll and, without opening it, cool completely.

Then unroll the roll, remove the twine or toothpicks, cut into pieces of 1 or 1.5 centimeters, place on serving plates and pour over the juice in which our dish was baked, and place on the table. A tasty and aromatic banquet roll will delight you and your guests. Enjoy your meal.
