I also note that all zucchini pies are cooked in the oven. Not in a slow cooker, not in (God forbid!) a microwave.

It is also classified as a French quiche. Whether it is French or not is not so important to me, the important thing is that it is very, very tasty. This zucchini pie will be very juicy and flavorful. Agree, his appearance is very appetizing!

Ingredients:

For the dough:

  • Wheat flour – 220 g.
  • Butter – 120 g.
  • Chicken egg – 1 pc.
  • Milk – 3 tbsp. spoons;
  • A pinch of salt;

Filling:

  • Chicken eggs – 2 pcs.
  • Cheese – 120 g.
  • Liquid cream – 180 ml.
  • A pinch of salt, a pinch of ground pepper;
  • Sunflower oil – 2-3 tbsp. spoons;
  • Onion – 1 head;
  • Zucchini – 500-700 g.

Cooking step by step

Wash the zucchini. If desired, you can remove the skin. Cut into thin slices, salt and pepper.

Peel the onion, cut into small pieces. Fry in oil over low heat for 5 minutes. Add salt and pepper as desired. Then add the zucchini, stir and fry for another 10-15 minutes. The onion should brown and the zucchini should become more tender.

Cut the cold butter into cubes and grind with flour. Beat an egg in there, add milk and a little salt. Make a dense dough out of this, which then needs to be put in the refrigerator for a couple of tens of minutes.

Then you need to roll out the dough and place it in a greased form. Preheat the oven to 180 degrees, put the dough in there for 5-10 minutes, so that you end up with a crust.

Add eggs, salt and pepper to the cream, then beat. Grate the cheese there and then mix.

Remove the dough from the oven. Spread the zucchini and onions in an even layer. Add cream cheese filling on top. Place in the oven again, but for 30 minutes.

Zucchini pie with cheese and cream is ready. I recommend letting it cool so that the filling becomes thicker. Then you can cut it into portions.

A more satisfying version of zucchini pie for meat lovers. Indeed, very nutritious and tasty. It contains a lot of proteins (macronutrients), which means that this pie is an excellent food for athletes and simply active people. A special vegetable dough made with kefir. In addition to minced meat, the pie also contains potatoes. Overall, a great option for a hearty snack.

Ingredients:

For the test:

  • Boiled potatoes – 2 pcs.
  • Fresh zucchini – 600-800 g.
  • Carrots – 1-2 pcs.
  • Flour – 300 g.
  • Kefir (any fat content) – 100 ml.
  • Salt – 0.5 teaspoon;
  • A packet of baking powder or a teaspoon of soda slaked with vinegar;
  • Eggs – 1-2 pcs.
  • Butter – 70 g.

Pie filling:

  • Minced meat – 500-700 g.
  • Onions – 1-2 pcs.
  • Sour cream or mayonnaise - 3 tbsp. spoons;
  • Ground black pepper and salt - 2 pinches each;

How to make this zucchini pie

First, prepare the meat filling. Finely chop the onion and add to the minced meat. Add sour cream, pepper and salt. Mix well. That's it - the filling is ready. I’ll say in advance that in this recipe the minced meat is placed in the dough raw. The pie will be juicier, although it will take longer to cook. But nothing prevents you from frying the minced meat in advance. Do as you please.

Now let's move on to the test. Wash the zucchini, remove the peel and grate on a coarse grater. Get rid of excess juice. Add mashed potatoes, butter, kefir and egg to the zucchini.

Mix the flour with salt and baking powder, then add it to the zucchini mixture. Mix thoroughly again until you obtain a homogeneous, juicy vegetable dough.

Grease a baking pan with any oil and spread 2/3 of the dough in an even layer.

Then comes a layer of minced meat, and then a layer of the remaining zucchini dough.

Cover the pie with foil and place in an oven preheated to 180 degrees for 20-30 minutes. Then you can remove the foil and bake the pie until done, about 20-30 minutes. Foil is needed to prevent the top of the dough from starting to burn prematurely. The pie is juicy and there is a risk that somewhere it will not be baked. There is no need to rush anywhere.

Quick zucchini pie

This easy-to-prepare vegetable zucchini pie will not leave lovers of quick baking indifferent. Some people call this a casserole with zucchini, but in my understanding, if it contains flour, then it is a pie. Be sure to try it.

Ingredients:

  • Zucchini (zucchini) – 500 g.
  • Cream – 200 ml.
  • Onion – 1 medium onion.
  • Flour – 140 g.
  • Cheese – 100-120 g.
  • Eggs – 4-5 pcs.
  • Salt, pepper and other seasonings and spices - optional;
  • Butter – 30 g.
  • Vegetable oil (for frying) – 30 ml.

Cooking process

Peel the onion and cut into thin long pieces. Lightly fry it in oil until golden brown.

Wash the zucchini and cut into thin circles. Slice thickness – 3 mm.

Beat eggs with cream and butter, add spices. Add flour and whisk again. Now put the fried onions and zucchini there. Mix again.

Grease a baking pan with any oil and pour in the dough. Grate the cheese, then sprinkle it over the dough.

Preheat the oven to 180 degrees, bake this pie for 35-60 minutes. This spread is indicated because I don't know what height your mold is. The thicker the pie, the longer it takes to cook.

Layered pie with zucchini

Imagine that you want to snack on something light and original, and then there is a zucchini pie in the oven waiting for you. Beauty! Crispy puff pastry and juicy vegetable filling. It prepares very, very quickly, if, of course, you use ready-made dough (from the store).

Ingredients:

  • Puff pastry (unsweetened) – 250-300 g.
  • Zucchini – 600 g.
  • Cheese – 200 g.
  • Eggs – 2 pcs.
  • Garlic – 3 cloves;
  • Fresh herbs (dill and onion) – 100 g.
  • Salt and pepper - to taste;
  • Vegetable oil – 30 ml.
  • Mustard – 1 tbsp. spoon;
  • Mayonnaise – 3 tbsp. spoons;

Cooking steps

Grate the zucchini on a coarse grater, and then squeeze a little to release excess juice. Grate the cheese there and beat in the eggs. Add mayonnaise mixed with mustard. Either finely chop the garlic cloves or use a garlic press. Salt and pepper. The more pepper, the more aromatic and piquant the pie will be.

Finely chop the greens and add to the zucchini mixture. Mix everything thoroughly. That's it, the filling for this pie is ready.

Roll out the dough and divide into two parts. It will be good if one layer of dough is slightly larger in area than the second.

Grease a baking sheet with vegetable oil. Place a larger piece of dough there and build sides. Transfer the zucchini filling onto the dough. Cover with a second layer of dough. Pinch the edges well. Now you need to make several small holes in the top dough using a fork, knife or toothpick.

Preheat the oven to 200 degrees, place the pie in it for 20-30 minutes. The pie should be golden brown and slightly crispy.

Making a zucchini cake

Wash the zucchini and grate on a coarse grater. Squeeze out excess juice and drain. Beat the eggs into the zucchini, add salt and pepper, add flour and mix well.

Grate the carrots and cut the onion into small pieces. Pour oil into a frying pan and fry carrots and onions over medium heat for about 10 minutes. The carrots should become soft and the onions should be golden brown. Then remove from the stove. Add grated cheese and mayonnaise to the carrots and then stir.

Transfer the carrot mixture into a separate bowl, and place the zucchini dough in portions into the frying pan to make flat cakes. Fry until golden brown on both sides. And so on until all the dough is gone. I leave the diameter of the zucchini pancakes to your discretion.

We take ready-made minced meat or make it ourselves. It’s better to take a mixture of pork and beef, you can add chicken.

Fry carrots and onions.

Fry the mushrooms.

Cut the zucchini into thin slices. It is better to choose longer zucchini. Grease the mold. Lay out the zucchini overlapping.

Since zucchini will release juice during baking, it is better to take a springform pan and place it on a wire rack before baking, placing a baking sheet underneath.

Add fried carrots and onions and boiled rice to the minced meat. Salt and pepper. Place on zucchini.

Place fried mushrooms and chopped tomatoes on top. It is better to remove the skin from tomatoes.

Prepare all ingredients of the dish:

  • Minced meat 400-450 grams (preferably mixed, pork and beef)
  • Small zucchini, 3-4 pieces
  • Lavash, preferably rectangular in shape, you will need 4 sheets (4 layers)
  • Cheese, hard variety, 50 grams
  • Onion, 1 piece
  • 1 clove of garlic
  • Chicken egg, one
  • Mayonnaise, pack 200 grams
  • Vegetable oil for greasing the mold
  • Seasonings: salt, pepper

Sequence of stages:

  1. We wash all the vegetables for the pie that need to be washed, and peel the rest. We chop one zucchini and get straws. Place the meat and zucchini in a suitable bowl and mix.
  2. Finely chop the onion and garlic. Pour a drop of vegetable oil into a frying pan and fry this mixture. Place the prepared minced meat on top and fry. Taste for salt and add pepper.
  3. Trim the remaining zucchini at both ends and cut into slices. Fry in a frying pan for a few minutes on both sides.
  4. Let's start forming our pie. Grease the bottom of the mold with oil. Place the first piece of pita bread (it’s better to buy it in a roll, estimate that it would be enough for 4 layers). Apply mayonnaise (we coat each pita bread with it), add meat and vegetables.
  5. Cover, followed by mayonnaise and zucchini. Next, alternate layers of the pie.
  6. Preparing the fill. Add a little mayonnaise to the egg. Beat and pour the mixture over the top layer of the lavash cake.
  7. Now you just need to sprinkle with grated cheese and put it in the oven. Temperature 180°, time 25-30 minutes. Eat right away while it's hot.

1 kg
100 g sour cream
3 eggs
2 tsp soda
2.5 tbsp flour
salt to taste

For filling:
1 kg
2 onions
50 g butter
1/2 tsp. seasoning for meat
salt, black pepper to taste

5 cloves garlic
50 g
vegetable oil

Preparation:
1. Peel the young ones and grind them through a meat grinder or in a food processor.
2. Place the zucchini in a bowl, add a little salt, after 10 minutes, squeeze out excess liquid very lightly, add sour cream, eggs and soda, season with spices and mix thoroughly.
3. Then add sifted flour to the vegetable mass; the mass should turn out a little thicker than for pancakes.
4. Place baking paper (foil) on a baking sheet and grease it with vegetable oil. Place parsley sprigs as the first layer, and carefully pour the vegetable mixture over the pattern. And evenly spread finely chopped garlic on top.
5. Bake the zucchini pie in an oven preheated to 200 degrees for about 40-45 minutes until golden brown.
6. While the zucchini pie is baking in the oven, let’s prepare the minced meat: fry the minced meat with chopped onions in butter until tender, season with spices.
7. Remove the finished zucchini pie from the oven and, using a sharp knife along the edges, carefully separate it from the baking paper without removing it completely. While the pie is still hot, cut it crosswise (i.e. into 4 parts), sprinkle two parts of the pie with grated cheese, place the prepared minced meat on top and sprinkle more cheese on top.

8. Place part of the pie on top of the filling, carefully turning it upside down, now press down so that the top part of the pie lies tightly. Place on a plate and cut into portions. You can also sprinkle cheese on the top.
9. And zucchini pie with meat ready to serve!
