Michurin, endowed with medicinal properties and decorative properties. Chokeberry (the scientific name of the plant) is not uncommon in the gardens of natural healthy products. Chokeberry, having the official status of a medicinal plant,
pleasing with the abundance of the harvest, loved and revered by folk healers and cooks. Fans of originality will be pleased with chokeberry preparations for the winter with a unique taste.

Chokeberry and its beneficial properties

The fruits and leaves of the plant from which they are brewed are recognized as beneficial. medicinal tea. The biological composition is saturated:

  • vitamins A, B, C, P, beta-carotene;
  • trace elements of iodine, boron, phosphorus, potassium, sodium, molybdenum, fluorine, magnesium, iron, copper;
  • folic, malic, oxalic acids, pectin, sugars, fiber.

The huge amount of anthocyanins, as indicated by the black color of the berries, is a natural antioxidant. Astringent taste - the presence of tannin, which protects against the formation of tumors. Regular consumption of black rowan:

  • normalizes cholesterol and glucose;
  • saturating with iron, thickens the blood, preventing bleeding;
  • strengthens the walls of blood vessels;
  • increases the acidity of gastric juice;
  • regulates liver recovery processes.

A good diuretic that lowers blood pressure. Tannins help regulate digestive disorders; when exposed to radiation, they bind and remove free radicals from the body. The ability of berries to accumulate large amounts of iodine from the soil is useful for diseases of the endocrine system.

Thanks to its entire healing complex of substances, chokeberry is an exemplary immunomodulator, relieves stress, improves memory, and restores sleep.

Attention! Chokeberry is dangerous for hypotension, increased blood clotting, gastritis, stomach and duodenal ulcers.

Blank black chokeberries in their natural form

Dense, dryish, thick-skinned fruits allow prepare chokeberry different ways. Considering rich vitamin composition, black rowan can be preserved in its natural (without heat treatment) form. They dry it, dry it, freeze it, make wine.

  1. The fastest, easy way- freezing. Owners of freezers need to collect the bunches, peel them from the stalks, wash them, dry them, lay them out on a tray, dry them with a towel or in any convenient way. Fold into suitable container, put in a quick-freezing chamber so that the sugar in the berries does not turn into starch. Fresh frozen chokeberry is used for cooking various dishes, desserts, tea.
  1. You can keep the chokeberry unchanged. Collect ripe brushes, it is allowed with branches, hang them in a cold room where the temperature does not exceed 5 degrees (basement, cellar, glassed-in balcony), or put them in cardboard boxes or wooden boxes. Good way save the harvest for a long time.

Advice! Can be used to freeze berries plastic bottles from under milk - do not crack in the freezer.

How to properly dry berries

Chokeberry - unique, requires special approach to the workpiece. Fruits collected after full ripening, caught by the first frosts, fully reveal their valuable qualities. It is necessary to dry them so as not to lose their healing properties.

The collected rowan is sorted, separated from the stalks, sorted, washed, and dried. It is recommended to dry berries in three ways: dry outdoors, electric dryer and oven are used. Observing the temperature regime, you can choose any option.

On open air

Chokeberry is dried both in clusters and in bulk. Cleared of debris, rot, and berries pecked by birds, the umbrellas are hung on a line in a well-ventilated area; if there are dry, sunny days, the bunches can be taken outside.

Periodically inspect for mechanical damage and mold. It is not recommended to allow already dried fruits to be moistened. To dry in bulk, place parchment (or any other food-grade) paper on a tray. The prepared chokeberry is thinly laid out. Dry as if in bunches, stirring periodically to check the quality of the berries.

Ready chokeberry looks a little like wrinkled raisins, dark in color, with a glossy sheen.

Important! Dried fruits are considered dried if, when squeezing the fruit between your fingers, no juice is released.

Electric dryer

Place the prepared rowan berries on the trays supplied with the dryer. Maintain at a certain temperature indicated by the instructions, usually, initial drying occurs at +55 - 60 degrees, dry the dried berries at +40, approximate readiness time 4-5 hours.

Oven

IN home oven the actions remain the same, only on modern ovens they turn on convection, conventional oven- leave the door ajar, checking and stirring more often. It is necessary to ensure that the color of the fruit does not lighten - chokeberry loses color and loses its healing properties.

Advice! If the chokeberry is dry and crumbles, it is not forbidden to grind it in a coffee grinder or add it to baked goods.

How to store dried chokeberry

Chokeberry, like any dried fruit, tends to absorb moisture. To preserve the product, dishes that allow air to pass through are not suitable: paper bags and boxes, plastic containers.

  1. Glass jars with ground-in lids - best option, dried fruits are stored for a whole year.
  2. Tight closing cans will protect the chokeberry from moisture for about six months.
  3. In food-grade plastic (containers or zip bags), semi-finished products will last 3 months.

Storage conditions: at room temperature.

Reference! The fruits of chokeberry are dietary product. Due to the low sugar content, 100 grams of berries contain 52 kcal.

Medicinal wine

A natural drink that retains all vitamins and healing properties property Chokeberry, as well as a stress reliever, is wine. The fruits of the bush contain a small proportion of sugar (9%), so the fermentation process lasts longer than usual, the wine turns out sour, tart (due to the high content of tannins), and not strong (it will spoil quickly), but this useful low calorie drink. People suffering from diabetes or overweight are recommended to drink only this wine.

To prepare any recipe, dry, ripe, strong fruits are collected, the quality of which determines the taste of the wine. Do not wash it - this is important, wild wine yeast lives on the unpeeled chokeberry peel, thanks to which the juice will ferment, and the dirt will turn into cream of tartar, settle at the bottom of the container, and be removed during filtration. They crush each berry with their hands or use all kinds of devices: a meat grinder, a chopper, a press.

Chokeberry is a rather low-juice berry, it is difficult to squeeze juice out of it, and it is not sweet, so winemakers add sugar to improve the taste of the wine and fermentation.

Traditional wine technology

Ingredients:

  • 5 kg of chopped rowan;
  • 1 kg sugar;
  • 50 g raisins;
  • 1 liter of water.

Pour the raw materials into a 10 liter container. To improve fermentation, it is allowed to add unwashed raisins (50 - 100 g), which also contain wine yeast. Add 500 grams of sugar, mix thoroughly, put in a warm place for 5-6 days to release the juice, without tightly clogging the container. Daily stirring several times a day will prevent the appearance of mold on the skins that float (after the juice is released).

When the berries give up a sufficient amount of juice, the pulp (skins) float up, a characteristic foam appears, it’s time to squeeze the juice. Using your hands, carefully squeeze out the pulp, drain the liquids together, and filter through cheesecloth.

Pour the purified juice into a container for further fermentation, for example, glass jar, the amount of liquid should not exceed half the container, so that there is room for fermentation products and the next portion of juice. Pull a rubber glove (or any other water seal) over the neck of the jar, after first piercing one finger, to release carbon dioxide, and place it in a dark, warm place.

Add the remaining sugar and warm water (30 - 40 degrees) to the squeezed pulp, mix, cover with gauze, remove for further release of juice, stirring daily, several times a day. Leave for 5 days.

After the end of the period, carefully strain the released juice without squeezing, because the dregs from the pomace can spoil the quality of the wine. Pour the resulting liquid into the jar with the first portion of juice, close the water seal, and remove the fermentation bottle. The final fermentation period lasts a month or more.

The termination of the process is indicated by a drooping glove (or the absence of bubbles with another type of shutter), the liquid has become transparent, and there is sediment at the bottom of the container. Drain the wine carefully through a straw without stirring the sediment.

The wine must now mature. Tightly closed, filled to the top, the jars are placed in a cold place (cellar, refrigerator) for 3 - 6 months. If sediment appears, the wine is filtered. This wine can be stored for up to 5 years.

Using this technology, you can make wine without adding sugar, add alcohol and other components before sending the wine for maturation, having received fortified drinks, the essence of the wine will not change, it will remain a storehouse of vitamins, microelements, etc. useful substances.

Advice! To cool wine in a glass, you can use frozen grapes; ice is not suitable in this case.

Blank juice for the winter

Despite the low juiciness of chokeberries, a little natural extract can be squeezed out of it. The fruits have a thick, durable skin; there are two ways to soften it: blanch or freeze - defrost. Such vitamin reserve, saturating the berries, will not harm either one or the other.

Prepared chokeberry is easy to squeeze. To crush the berries, you can use a meat grinder, blender, or wooden masher. Squeeze the crushed mass through a sieve or several layers of gauze. The cake can be used for other delicacies - fruit drinks, marmalade. Fill ice containers with the resulting juice, freeze them in a quick-freezing chamber (vitamins are retained in full), or preserve:

  • pour the juice into an enamel or stainless steel container, just bring to a boil;
  • pour hot juice into sterilized glass jars;
  • quickly close the lids, turn them upside down, and wrap tightly with something warm (the jars sterilize themselves).

This method of preservation preserves a maximum of vitamins. Jars must be stored in a cool, dark place.

It is permissible to use a juicer, where juice is released under the influence of hot steam. Parts must be made of stainless steel (in contact with metal, many are lost during the oxidation process useful components). The finished juice is already pasteurized in a juice cooker; just pour it into sterile jars and wrap it in a blanket for sterilization.

Chokeberry is a noble honey plant. Attracts a large number of bees, the berry harvest is usually rich. For distilling large volumes of juice and minimal losses You can use a ready-made fruit press or make it yourself.

Aronia has a specific taste - astringent and tart, the color is dark ruby. Before use, if desired, add sugar, spices, and dilute with clean water.

Advice! Don't boil the juice. Deep heat treatment of the drink depletes the mineral and vitamin complex.

Chokeberry preserves and jams recipes

Chokeberry is rich in fiber, without which proper digestion is impossible, vitamin PP (nicotinic acid), which is responsible for metabolism, beta-carotene (vitamin A), involved in cellular regeneration, and many microelements that can withstand elevated temperatures and remain in the product after boiling. You can make jam without fear of getting useless sweetness.

The fruits used are fresh, frozen, or pre-soaked dry (the water in which the rowan was soaked is used to prepare syrup).

Recipe 1. Vitamin jam

Ingredients:

  • 1 kg of rowan;
  • 1.3 kg sugar;
  • 2 glasses of clean water.

Preparing jam occurs in several steps.

  1. Pour the rowan berries, blanched for 5 minutes (or after freezing), into a bowl for cooking. Fill with sand, add water (or boil syrup from sugar and water), mix. Leave for 12 hours so that the fruits absorb glucose and release juice.
  2. After the designated period of time, put the berries on low heat. Stirring, bring to a boil. Boil for 1-2 minutes. Remove from heat for next 12 hours.
  3. Repeat cooking. There can be many such stages; cook until done (a drop of product does not spread on the plate).

Gourmets can add various spices to their taste. Pour the finished chokeberry hot into sterile jars with iron lids. Store the jam in a cool, dark place. You can add to chokeberry cherry leaf(300 pieces), will add piquancy to the jam.

Important! Do not use aluminum, enameled utensils with cracks or chips in the enamel for making jam, preparing spicy and sour dishes. When the acids contained in the food are exposed to the walls of the dishes, the metal oxidizes, which spoils the taste and quality of the food.

Recipe 2. Chokeberry jam

Ingredients:

  • 1 kg of rowan puree;
  • 1.5 kg granulated sugar;
  • 2 glasses of water.

Jam is a sweet, thick, homogeneous mass of fruits obtained by boiling syrup. Skin chokeberry It’s harsh, so it’s quite difficult to boil them to a homogeneous mass. To make jam you need to prepare puree:

  • Blanch ripe fruits for 10 minutes;
  • pass through a meat grinder or grind with a blender.

Boil the syrup. Pour half the amount of sugar into boiling water in a thin stream, stirring. Boil until the liquid becomes clear. Cool slightly.

Place the rowan puree in a wide container with low sides (basin, bowl, such dishes promote rapid evaporation of water), mix with syrup, pour in the remaining sugar. Bring to a boil and continue cooking over low heat, stirring regularly. In 20 minutes. remove from heat, let cool. At this time, you can add spices (lemon zest, cinnamon).

The readiness of the jam is checked with a drop on the saucer - if it does not spread and after a moment it becomes covered with a film - the jam is ready. Cooking time largely depends on the ripeness and pre-processing of the fruit.

The product is transferred hot into a sterile container and stored in a dark, cool place. Very good for filling in baked goods.

Advice! If desired, pectin is added to reduce boiling of the product and quickly thicken.

Chokeberry sweets: marshmallows, marmalade

For lovers of “sweets” who do not have problems with excess weight and glucose fluctuations, an exquisite delicacy There will be marmalade and marshmallows made from chokeberry puree.

Marmalade

In cooking recipes it is recommended to rub the puree through a sieve, but this way the product is lost essential component chokeberries - fiber that promotes digestion, so it is healthier to leave the puree unchanged (how to prepare it is described in the recipe for jam), mix with sugar and water, and simmer over low heat until thickened.

Place the berry mixture on a moistened cold baking sheet, evenly distributing it in a layer of 1.5 - 2 cm. Leave to dry at room temperature.

You can cut the finished marmalade into various shapes using cookie cutters, or simply cut strips with a knife, roll in sugar, and place in a jar with a ground-in lid. Served for tea.

Chokeberry has its own sugars, so for 1 kg of berry puree you will need 800 grams of granulated sugar, but it has little juice, you will have to add 400 mg of water.

Paste

Ingredients:

  • rowan puree 1 kg;
  • granulated sugar 1 kg;
  • egg white of two eggs.

Mix the berry mass with sugar, place in a heat-resistant glass container, cover with a lid, and simmer in the oven at 160 degrees until the juice releases.

Remove the dishes from the oven and stir thoroughly until the sugar is completely dissolved. The mass takes on a jelly-like appearance. You can grind it through a sieve, removing the fiber, or leave it to cool as is, preserving all the useful fiber. The jelly has cooled, add raw proteins. Beat with a mixer until the marshmallow turns white.

An important stage is drying. There are 2 ways:

  1. “Rolls”: spread parchment paper on the table, spread the marshmallow in a thin layer of a few mm (you can use a wide knife), leave to dry at room temperature. As soon as the layer has dried, carefully twist it into a tube and cut into small rolls (the pastille is plastic, easy to shape and lags behind the paper).
  2. “Puff marshmallow”: divide the resulting “dough” into three parts, spread one thin layer on a baking sheet, put it in the oven to dry, on the lowest heat, with the lid slightly open or with convection. The second layer is laid on the dried first layer and dried, then the third. Remove the finished pastille from the oven and cover with thick paper until it cools completely. Next, cut into squares.

The glossy surface of the marshmallow does not need additional decoration. Store the product in a cool place covered. Can be combined with tart and sour chokeberry wine or juice.

Then, strain the cake through several layers of gauze (without forcibly squeezing). Pour the tincture into bottles. Store in a cool place.

Alcohol-free liqueur

In this recipe, the drink gains strength through the fermentation process. large quantity sugar and own wine yeast located on the surface of the berries. Therefore, they are not washed, they are collected from the bush in dry weather. The taste of the liqueur depends on the quality of the berries. To better guarantee fermentation, not washed raisins are used, but for a piquant taste - a cinnamon stick or vanilla, lemon juice and zest.

Number of products:

  • chokeberry - 1 kg;
  • sugar 1.5 kg;
  • raisins - 50 grams;
  • water - 1 glass;

Place the bottle in a warm, dark place for 2 months or until the end of fermentation (when the glove sag). Strain the liqueur through several layers of gauze without forced squeezing. Bottled, put into the basement for maturation (at least 2 - 3 months).

Important! Optimal air temperature for efficient fermentation 23 - 27 degrees. Lowering the temperature lengthens the cooking time, lowering it kills wine fungi.

Liqueurs, liqueurs, wine have healing properties if consumed no more than 50 - 100 ml per day.

  • 0.5 kg of oranges;
  • 2 kg granulated sugar;
  • cinnamon stick.

The berries are washed thoroughly. Oranges are falling into hot water, to remove the wax film, cut into segments, the seeds are removed. The prepared ingredients are passed through a meat grinder. Transfer to a cooking container and mix with sand. Leave for 4 hours for sufficient juice release.

At the appointed time, place the container on low heat and add cinnamon. After boiling, cook for 10 minutes, stir constantly, remove the foam. Placed hot into a sterile container.

Advice! To make jam, you can use multicookers with a “stew” mode.

At the end of the 19th century, it came to our country wonderful berry- chokeberry. And in 1961, chokeberry was recognized by the Ministry of Health as a plant with medicinal properties.

Chokeberry has a wonderful bactericidal effect due to the high content of tannins, and the pectin contained is able to envelop the wound with a protective film, thereby preventing bacteria from entering.

Beneficial properties of chokeberry

The fruits of chokeberry have a tart taste, and they contain a huge amount of useful substances:

  • beta carotene. Protects the body from free radicals, increases stress resistance, softens the effects of radiation;
  • vitamins A, E, C, K;
  • minerals. These are potassium, calcium, magnesium, iron, manganese, fluorine, iodine, phosphorus necessary for life;
  • carbohydrates;
  • proteins, fats, alimentary fiber, acids, starch.

Chokeberry has a very valuable property - it normalizes cholesterol levels in the blood and even lowers high blood pressure. And regular consumption of chokeberry fruits reduces the risk of atherosclerosis and greatly improves liver function.

Unfortunately, chokeberry does not grow here all year round. What to do when it’s not the season for berries to pamper us with their healing properties. The answer is simple: chokeberry fruits can be frozen and consumed all year round. It is noteworthy that frozen berries do not lose their properties and usefulness.

In order to properly freeze berries, you must use quick freezing. Such freezing is carried out at temperatures from -15°C and below. This is done so that when frozen, the sugar contained in the fruit does not have time to turn into starch. For freezing, fruits begin to be collected at the very end of fruiting. This is the period of August and September. Frozen berries should only be stored in the freezer; defrosting and then re-freezing is completely impossible. Do not store frozen berries in the same freezer with fish or meat. It is advisable that the berries are in a separate chamber. At home freezing It is advisable to use plastic containers and jars. The container must be thoroughly washed and dried before use.

Before consuming frozen chokeberry berries, you must defrost them, beat them with a blender and then add them to tea, compote, jam, or you can also add them to flour products as a food additive.

Therefore, we can only receive it from the outside. And, as you understand, chokeberry is the most suitable for this suitable option. Rutin is considered a flavonoid - a substance that slows down the aging process and has a beneficial effect on our body.

General strengthening decoction of chokeberry

The most common recipe for a tonic decoction is:

Pour boiling water (200 ml) over 20 g of dry fruits and heat over very low heat for 10 minutes. Let it brew for 20 minutes, squeeze well and strain and drink half a glass three times a day.

Chokeberry for hypertension, atherosclerosis and gastritis

To treat atherosclerosis, hypertension and gastritis with low acidity, you need to eat 100 g of berries every day half an hour before meals three times a day. Chokeberry is an excellent remedy for solving certain health problems. And although it is believed that the berry itself is not very tasty, although “taste and color,” as they say... But in addition to the decoction that we talked about above, other medicines can be prepared from chokeberry. And you can’t even call them medicines, but it’s a fact: many of us like to prepare such “interpretations” of chokeberry as wine, jam and compote.

Chokeberry wine. Benefit. Chokeberry wine recipe

The ancient Greeks and Romans knew that wine could be used for healing. Of course, the wine must be of high quality and made using a certain technology. What could be better than homemade wine? Moreover, if it is made from healthy chokeberry berries.

Benefits of chokeberry wine:

  • Reduces high blood pressure.
  • Improves stomach function.

Chokeberry jam

I’ll say right away that I’m not a supporter of jam; we need to understand that we get additional carbohydrates. But again, it's a matter of our wisdom. If we don’t abuse everything, then, of course, we won’t cause harm to the body. And in the cold winter evenings Sometimes I really want to have a tea party like this. Since chokeberry itself has a tart taste, to improve the taste of future jam, you can take not only chokeberry, but also some other sweet berries or plums, for example.

Blanch 700 g of chokeberry berries in boiling water for about 5 minutes, so the berries will become more tender. We do not pour out the water in which the berries were blanched. Take two and a half glasses and mix them with a glass and a half of sugar, cook the syrup. As soon as the syrup boils, throw in the already prepared chokeberry berries and at the same time add other berries or fruits (raspberries, plums, apples and even finely chopped orange peels).

Bring everything to a strong boil, stirring occasionally, remove from heat and let cool and brew for about 8 hours. It's convenient to leave everything overnight. Then bring the mixture to a boil again and leave again for 8 hours. For the third time, bring the mixture to a boil and cook over low heat for 1-15 minutes. Then we pour everything into jars and roll up in the usual way.

Chokeberry tincture

Another recipe that uses chokeberry - alcohol tincture. It can be added to teas for adults, as it is regarded as a warming and tonic drink.

Recipe No. 1. Chokeberry tincture with cloves.

Take 1 kg of washed chokeberry berries, pour them into a jar and gently crush them with a wooden masher. Add half a kilo of sugar, 3 cloves, mix everything well. Cover the neck with gauze and leave for a couple of days at room temperature. Next, pour in alcohol - 1 liter of vodka and close nylon cover. We put the jar in a dark place for a couple of months. All that remains is to wait for the measured time, strain the tincture, bottle it and you can try it. Store in a cool place.

Recipe No. 2. Tincture of chokeberry with honey and oak bark.

Wash 2.5 cups of chokeberry and pour it into a jar. Add 3 tablespoons of honey and a washed pinch of oak bark. Fill everything with 1 liter of vodka, close the jar tightly and put it in a dark place for 4-5 months. Sometimes the jar needs to be “checked” - taken out and shaken. Strain the finished tincture through several layers of gauze and bottle it.

Chokeberry for the winter. Preparation of chokeberry. How to store chokeberry?

We have already talked about the timing of picking berries - this is autumn, when the first frosts have already been observed. How can you store it in order to use it? beneficial features berries in winter?

  1. The easiest way is to freeze in freezer to then add to mousses, jams, or simply eat a few thawed berries. When frozen, some of the vitamin P will be destroyed, but there will still be benefits from consuming chokeberry.
  2. And here dried berry will retain all its beneficial properties and will be useful in winter period. To dry, you can not tear the berry from the shield, but string it together with a wire or rope and hang it in a cool, dry place (barn, balcony, veranda). By the way, the berries can be stored in frosty conditions, retaining all their benefits.
  3. It is also good to dry chokeberry berries. To do this, washed, dried berries are laid out on trays or small racks outdoors in the sun. You can dry the berries in the oven. To do this, first, the berries laid out on a baking sheet are dried for 20-30 minutes at a temperature of 40 degrees until the berries, when squeezed, stop releasing juice. Next, increase the temperature to 60 degrees, but not higher. Keep it like this for about 5-10 minutes. The berries should not lose their color, but still remain black. This indicates that the berries have not lost their “vitamin properties.”

Chokeberry fish. Contraindications. Harm

Aronia also has a number of contraindications for use, failure to comply with which can cause harm to the body. Chokeberry is contraindicated:

  1. With increased blood clotting and thrombophlebitis.
  2. For gastritis and ulcers of the stomach and duodenum during exacerbation. The rest of the time, those who have such problems with the gastrointestinal tract can consume berries and preparations made from them only with the permission of a doctor.
  3. With low blood pressure - hypotension. Chokeberry itself lowers blood pressure, which can aggravate the problems of hypotensive patients.

These are the beneficial properties and contraindications of chokeberry.

    The valuable qualities of chokeberry can be listed for a long time. It is very important for women that the fruits of this plant are dietary and contain only 47 calories per 100 g, which means they help keep their figure in good condition. But besides this, chokeberry is a source of a large amount of vitamins, minerals and other beneficial substances needed by our body.

    Chokeberry is a source of vitamins and nutrients

    If you regularly eat chokeberry, you will notice that you are looking younger right before your eyes. This applies not only to appearance, but also to the general condition of the body. This wonderful berry is an excellent preventative against inflammation, bacterial infections, diabetes, nervousness and even oncological diseases! And recent studies have proven that chokeberry fruits will significantly enhance the effect of treating all these diseases.

    For those who want to lose weight, especially after winter, chokeberry will be a real discovery. It has a general balancing effect on the body, speeds up metabolism and will provide you with all the necessary set of vitamins during this period of the year. This plant has very interesting feature: It prevents the accumulation of fat, particularly at the abdominal level.

    What's the best way to prepare for the winter?

    In summer and early autumn, when chokeberry ripens, its fruits can be eaten immediately, picked from the bush and washed in running water. Fresh berries will last no more than a week in the refrigerator, so you need to decide how you will process them to stock them for the winter.

    Note! For any preparations, choose beautiful, dense berries with an even color and a clean, shiny surface. It is better to throw away wet fruits covered with stains immediately: most likely, they are spoiled and will spread mold.

    From chokeberry you can prepare for the winter:

    In this article we will tell you about making chokeberry jam. In winter, you can add it to tea, compote, and also to pies and muffins as a filling.

    The main components of chokeberry jam

    The standard set of products for classic jam is as follows:

    • chokeberry berries;
    • granulated sugar;
    • water.

    Since chokeberry fruits have a peculiar bitter, astringent taste, you will need a lot of sugar - about 1.5 kg per 1 kg of berries.

    Choose strong, dense and clean fruits for jam.

    Agree, it would be boring to make jam only from chokeberries. After all, we love experimenting with flavors! So chokeberry goes well in winter preparations with many berries, fruits, spices and other products. You can combine it in jam with:

    • apples;
    • oranges and lemons;
    • nuts;
    • plums;
    • zucchini;
    • mint, lemon balm and other herbs.

    We will present to your attention several different recipes preparing such jam. They will become a kind of “starting point” for your further experiments, because chokeberry is so good in tandem with other products that it would be a sin not to try as many options as possible! In addition to taste and aroma, such combinations acquire additional benefits for the body.

    Recipes

    We'll start with classic version preparations. This jam has a beneficial effect on the condition of the whole body and improves immunity.

    Classic version

    Difficulty level: easy. Cooking time: 40 min.

    Classic chokeberry jam

    Ingredients:

    • 1 kg of chokeberry;
    • 1.3 kg sugar;
    • 1 glass of water.

    Cooking process:

    1. Take a pan of suitable volume, pour water into it and add sugar. Stir until completely dissolved. To do this, you can warm up the water a little.
    2. Wash the berries and remove the stems. Place in a saucepan and place in boiling water for 5-7 minutes to blanch.
    3. Boil the syrup and add blanched berries to it. Cook for 10–15 minutes over medium heat. After this, remove the pan from the heat and leave the mixture to cool for 3-4 hours to room temperature.
    4. Place the pan with the future jam on the fire again, bring to a boil and simmer for 15 minutes.
    5. Immediately distribute the jam into the jars, seal with lids and leave to cool at room temperature. Jars must be cleanly washed and sterilized.

    This jam is stored equally well both in the room and in a dark, cold room, such as a basement.

    Delicious combination: chokeberry, lemon, apples and nuts

    There are so many vitamins in this jam that doctors recommend enjoying it after long-term serious illnesses and operations.

    Difficulty: medium. Cooking time: about 70 minutes.

    Apples are an excellent addition to chokeberry jam

    Ingredients:

    • chokeberry berries - 1 kg;
    • sugar - 1.5 kg;
    • lemon - 1 piece;
    • apples (preferably Antonovka or other sour varieties) – 300 g;
    • walnut kernels - 300 g.

    Cooking process:

    1. Pour boiling water over peeled and washed chokeberry berries and leave overnight.
    2. In the morning, take 1 glass of the resulting infusion, mix it with 1.5 kg of sugar and boil until completely dissolved to make a syrup. While it is boiling, add berries, apple slices and pre-crushed nut kernels. Boil for 10 minutes and let cool slightly for 1-2 hours. After this, repeat the cooking process 2 more times for 10 minutes.
    3. When you cook the mixture for the third time, add lemon to it. Pre-scald it, peel it, cut it arbitrarily and be sure to remove the seeds - because of them the jam will be bitter.
    4. Cover the pan with the prepared jam with a cotton cloth and cover it with another container of the same diameter. This way you will create an air cushion that will significantly soften the rowan fruits.
    5. Leave this structure overnight, and in the morning, spread the infused jam into sterilized jars and close the lids. Store the preparation in a cool place (unless, of course, you eat all the jam in a week!).

    Quick jam - five minutes

    Preparing this jam will take you the least amount of time.

    Difficulty level: easy. Cooking time: about 40 minutes.

    Preparing five-minute jam will not take you much time

    Ingredients:

    • 2 kg of chokeberry berries;
    • 1 kg sugar.

    For this jam, it is easier to use not the exact amount of products in grams, but the proportions: for 2 parts of fruit, 1 part of granulated sugar.

    1. Blanch the washed berries in boiling water for 5 minutes, then grind in a meat grinder or blender. Mix thoroughly with sugar and place on low heat. Heat until the sugar is completely dissolved.
    2. Turn up the heat a little more, wait until it boils and cook for 5 minutes.
    3. Distribute the jam into clean, sterilized jars. Install them in large saucepan, pour water up to the shoulders of the cans. After the water boils, sterilize the jam for 20 minutes, then roll up the lids.

    If you want, add a little citric acid or baked mashed apples to the five-minute jam.

    After the jam has cooled at room temperature, put it in the basement for storage. A refrigerator will also work - the main thing is that it is dark, dry and cool.

    Note! You can easily determine the readiness of chokeberry jam by the state of the berries: as soon as they sink to the bottom, you can remove them from the heat.

    First of all, you need to prepare a large pan, wide and with low walls. Place a rag on its bottom.

    Treat the chokeberry berries with boiling water and place them in half-liter jars. Pour water into a saucepan and bring to a boil. Place the jars of berries in boiling water so that the water reaches their shoulders, but does not pour inside. Reduce the heat under the pan to just maintain a simmer.

    This jam is prepared by sterilizing jars filled with berries.

    While the water is boiling, the berries in the jars will settle slightly; you will have to add them to fill the empty space.

    The boiling process should last no more than 40 minutes. After this, remove the jars from the pan, roll up the lids and let cool at room temperature. Store in a cool, dry place.
