Kefir pancakes. From choux pastry with boiling water and kefir

Somehow it happened that I didn’t know how to bake pancakes for a long time. Not really, but they turned out thick for me and it was impossible to wrap the filling in them. Until I came across pancakes made with kefir - thin, with holes. The recipe is simply amazing! And the most interesting thing is that everyone can use it (I later advertised it among my friends and heard only positive reviews), even beginners who are cooking for the first time. No first lumps, no dough sticking to the pan. Thin, then stuffed very well. If you do not add a lot of sugar when kneading the dough, do not sprinkle ready with sugar, then the filling can be any unsweetened: meat, eggs with green onions, cheese. Sweet ones can be filled with cottage cheese, apples, etc.

Of course, as with all successful, proven recipes, there are several nuances, which I will focus on today. Therefore, before moving on to step by step recipes and photos, let's first focus on the very important points, without which you won’t get successful openwork pancakes.

It is important!

Kefir. It is better to take it with low fat content, but not low-fat. The lower the fat content, the thinner the kefir. The consistency of the dough depends on its thickness. If the kefir is thick, reduce the amount of flour indicated in the list of ingredients below. Is it possible to bake with stale, sour kefir? Within reason... You can, of course, if this kefir is not a fossil.

Pan. It must have a non-stick coating, ideally a special pancake pan. But the most important thing is its heating. Before baking the first pancake, the pan needs to be warmed up very, very well, I would say even hot. In the first recipe we will not grease the frying pan with anything and only on a very hot frying pan will we get thin pancakes into the hole. And the second point regarding the frying pan: if you use it infrequently, then over time, no matter how clean it is, a grease deposit will still form on it, and dust will stick to it. No matter how clean your kitchen is, a thin, invisible coating will form in any case. Therefore, before that, wash it with dishwashing detergent, wipe it dry and then just heat it up.

Why do pancakes stick to the pan or tear when flipped? What to do? If your pancakes stick, see the point above about the frying pan. This is the most common cause of this problem. If they tear when you turn them over, then this can happen for several reasons, the most likely: 1) you turn them over early; 2) incorrect proportions of ingredients (pay attention to the amount of flour and fat content of kefir).

Thin kefir pancakes with a hole - recipe with photo

Let's start with this option, which can now confidently be considered a classic. It was to him that I sang his praises at the very beginning of the praises. This is what I recommend for beginner cooks to start with.

Ingredients:

  • kefir 1% - 1l;
  • flour – 4 cups* (640g);
  • chicken eggs – 4 pcs;
  • baking soda – 1 tsp;
  • salt - a pinch;
  • sugar – 1 tbsp;
  • sunflower oil – 4 tbsp.
  • boiling water – 2 cups;
  • butter – 120-150g.

* glass with a capacity of 250 ml.

How to cook pancakes with kefir

  1. Despite the fact that butter is the last ingredient on the list, we will start with it. The butter needs to be melted, it will be needed for lubrication. ready-made pancakes so that they do not become dry and stick together.
  2. Pour the kefir into a large container, large enough to later contain 4 cups of flour and 2 cups of water. Break eggs into kefir, add salt and sugar. Even if you need savory pancakes, for example, in order to stuff them with meat later, you still need to add a little sugar. Salt and sugar are the main taste regulators. Beat the eggs with a whisk or fork.
  3. Sift the flour through a sieve into a container with kefir. I recommend not to neglect sifting the flour. Not only can this eliminate possible strings from the container, but it also saturates the flour with oxygen, and this already affects the quality of the pancakes. Then they turn out, although thin, but still fluffy and airy.
  4. Stir the flour and get a fairly thick dough, not at all like pancake dough.
  5. Now comes the most interesting part of the recipe, the result of which will be these cute holes. Soda needs to be poured with boiling water. At the same time, it will bubble. To prevent the water from splashing out, first pour in a little more than half, wait until the disturbance subsides and add the remaining boiling water.
  6. And now immediately, quickly, quickly, before the boiling water has cooled down, pour it into the container with the dough, stirring quite intensively. So it became liquid, as it should be.

  7. Leave to stand for 5-10 minutes, let the gluten bloom a little more and start working. Then pour in sunflower oil and mix.
  8. You can heat a frying pan or two at once. Pour the dough into a well-heated frying pan with a ladle, rotating it and tilting it from side to side so that the dough is distributed evenly throughout the frying pan. When baking your first pancake, look at its texture. It should be thin, bubbles, which will later become holes, should appear immediately. Now you can check the consistency of the dough, add flour or hot water from the kettle to adjust it. Decide on the amount of dough to pour into the pan.
  9. How do you know when it’s time to flip the pancake? First, the surface should become matte, which means it is no longer liquid. Secondly, look at the edges; if they are dry and slightly curled up, you can turn them over. To do this, lift the pancake with a thin spatula and turn it over to the other side.
  10. On the second side we keep it until the desired degree of roasting (here you can always lift it and look). Place on a plate and brush with melted butter. Because it’s delicious and because it prevents the pancakes from sticking together.
  11. In this way we bake everything until the dough runs out.

Look how thin and lacy they are and how the sunlight shines through the holes. And we move on to next recipe, which I tried quite recently.

Kefir custard pancakes

In contrast of previous recipe is that if in the first case we brewed soda with boiling water and then poured it into almost ready dough, then here we will brew eggs with boiling water. A reasonable question immediately arises: will we get an omelette? No, we won’t, and I’ll explain why.

Ingredients:

  • kefir 1% - 1l;
  • flour – 320g;
  • eggs – 2 pcs;
  • salt - a pinch;
  • sugar – 1 tbsp;
  • soda – 2 tsp;
  • water – 2 glasses (250ml);
  • little sunflower – 4 tbsp;
  • butter – 120-150g.

How to cook - step by step recipe

  1. As you can see, the list of ingredients is absolutely the same, only the amount of flour is slightly different. But the main difference between the recipes is the technology for preparing the dough.
  2. We will need boiling water, so it is better to put a saucepan on the fire, bring to a boil and leave at a low simmer until needed.
  3. In a large container (really large), there will be even more foam than in the previous recipe, break the eggs, add salt and sugar. Beat with a mixer until foam appears. Here you need a mixer, not a whisk, since the beating must be very intense.
  4. Now take boiling water and pour it into the eggs in a thin stream without stopping whisking. If you hesitate or stop, you will end up with boiled omelette flakes. The liquid will greatly increase in volume and foam, which is what causes holes in the pancakes, and they themselves will be thin and tender.
  5. Then you can put the mixer aside. Add kefir and mix.
  6. Sift the flour with baking soda and pour it into a bowl with our mixture.
  7. Mix well and leave to stand. I ended up with small lumps that dispersed over time. But still, it seems to me that this is a minus of the second recipe. Perhaps it would be more correct to pour the liquid into the flour in parts.
  8. Add vegetable oil. While the dough is resting, heat the pan. Here it’s better to lubricate it, depending on what you’re used to. I usually lubricate lard, impaled on a fork.
  9. Let's bake custard pancakes as usual. Place in a stack and coat with melted butter.

Pancakes with kefir and yeast

Grocery list:

  • kefir - 1 glass (250ml);
  • egg - 1 piece;
  • flour - 1 cup (160g);
  • instant yeast - 0.5 sachet (approx. 6g);
  • salt - 0.5 tsp;
  • sugar - 2 tbsp.
  • vegetable oil.

How to bake:

  1. Kefir must be removed from the refrigerator in advance so that it warms to room temperature. Pour some sugar into a small bowl, pour in about 1/3 cup of kefir, add yeast and place in a warm place to rise.
  2. Break an egg into a bowl, add salt and sugar. Shake with a whisk.
  3. When the yeast foams, pour it into the egg mixture. Stir and pour in all the remaining kefir.
  4. Add flour in portions. Since this recipe makes thick pancakes, the batter for them should be a little thicker and the consistency should be something between pancake and pancake.
  5. At the end, pour 1 tbsp. vegetable oil. Stir for the last time and put in a warm place for about 30-40 minutes.
  6. The risen dough can no longer be stirred. Let's start baking right away.
  7. Grease a heated frying pan with oil, pour the dough into a ladle. Yeast pancakes It’s better to make them small, so, firstly, it will be easier to turn them over, and secondly, since they are thick, it is impossible to wrap the filling in them, so we will eat them almost like pancakes.
  8. Place the finished pancakes in a stack.

And when everything is ready, we invite everyone to the table for tea.

Try the first two recipes for pancakes with kefir and evaluate in which case the pancakes are thinner and have more holes. And according to the third recipe, although they are not holey, they are very soft and fluffy. Bon appetit!
