Mascarpone is often used as part of desserts - they turn out to be unusual and exquisite. Now imagine a mixture of strawberries, hot chocolate, biscuit, whipped cream and Italian cream cheese. I think that many salivated. It is the recipe for a mascarpone biscuit cake that will be the subject of my publication today. Cooking is simple, and most ingredients are always at hand.

To prepare a biscuit cake with mascarpone cream, you must choose a cream of at least 33-35% fat.

The story of the mascarpone cake

  The birthplace of mascarpone cheese is Italy. It was there that several centuries ago they came up with the idea of \u200b\u200bmaking it from the milk of cows and buffaloes, which were fed with fresh herbs and flowers to give milk a special taste. The first mention of mascarpone dates back to the end of the 16th - beginning of the 17th centuries. Since then, cream cheese has become an integral ingredient in traditional Italian desserts and cakes based on biscuit, shortbread and pancake dough, as well as with a variety of additives in the form of berries, fruits, chocolate, liquors, honey, etc.

How to make a mascarpone cake at home

To make the process more clear, I conditionally divide the preparation of a cake with mascarpone at home into four stages:

  1. Baking sponge cakes.
  2. Cooking cream.
  3. Assembly of the cake.
  4. Cake decoration.

All stages I accompany the photo.

We start by baking a mascarpone homemade cake biscuit. Honestly, my oven is not so hot, so I got the hang of cooking a biscuit in a slow cooker. There he always comes out tall and delicate in taste. I note that in the recipe that I took as a basis, pink dye is introduced into the biscuit. I did not add it.

Cooking ordinary sponge cake.  We will need eggs - 6 pcs. Separate the yolks from the proteins. Beat the egg yolks with sugar (150 g) with a mixer until a whitish coating forms on the surface.

Add salt - 0.5 tsp and continue to beat with a mixer until a stable mass is formed.

Mix flour 150 g with 1 teaspoon of baking powder and pour into small yolks in yolks. Stir constantly. Then, proteins are carefully introduced into this mass.

Proteins should be intervened with the scapula in one direction - only from top to bottom or only from bottom to top.



The bottom and sides of the multicooker bowl are well lubricated with butter. Pour the dough. Select the option “Baking” in the menu. The timer is set for 1 hour. In the meantime, prepare a cream of mascarpone and cream.

Mascarpone Cake Cream Recipe

Using a mixer, whip the cream (300 ml) and icing sugar (400 g) until a homogeneous mass is formed.

Add 400 g of mascarpone to the creamy mass and mix very carefully with a mixer with a whisk attachment, turning on a slow speed. Cream with mascarpone for the cake is ready.

Mascarpone is a perishable product. Therefore, it is advisable to cook the cake immediately before use.

Meanwhile, the biscuit should already be ready. At the end of baking, it should be further darkened for 15 minutes with the lid closed in the “Heating” mode. Then insert into the bowl the device for cooking for a couple. Turn the bowl over. We take out the biscuit, move it to a wooden board and wait until it cools down.

The cooled biscuit cake we need to divide into three parts. This is very convenient to do with a thick thread. With a knife on the sides, we outline three equal parts and make cuts from four sides. Insert the thread into them. We cross its ends and stretch it through the whole biscuit. One part is separated. We repeat the procedure, separating the second and third parts. The sponge base for a delicious mascarpone cake is ready for assembly.

Grease the bottom cake with butter cream. Stack chopped strawberries around the edges. Then we grease the second and third cake, as well as the sides of the cake.





We put the semi-finished product in the refrigerator for half an hour. It is necessary that the cream soak a little cakes, and they stick together well.

Meanwhile, prepare the icing to decorate the cake with mascarpone cheese. Break a bar of chocolate (100 g) into pieces and put them in a pan. Cream (200 ml) is heated to a hot state and poured onto chocolate. Mix until smooth. If the mass turns out to be too thick, heat it on the stove to the required liquid state.

Fill the cake with icing. We spread the whole strawberries and sprinkle with coconut. After 30 minutes of insisting in the refrigerator, you can taste the mascarpone cake according to my recipe.

How to decorate and serve a cake with mascarpone

I really like the combination of bright red strawberries with dark glaze - it is always elegant and appetizing. To this decoration you can also add cookies, sweets, meringues.

To decorate cakes with mascarpone, the composition also uses a variety of fruits, berries - apples, blackberries, currants, raspberries, kiwi, tangerines, dried fruits. They are simply placed on top of the cake or filled with jelly.

  • In cream from mascarpone for the cake, you need to add only well-chilled cream. So they will beat better and more uniformly.
  • Strawberries can be replaced with other berries and fruits. For example, use kiwi for a layer, and decorate the top with strawberries, or vice versa.
  • To make the biscuit cut well, you can hold it for a while in the refrigerator.
  • If you do not have the opportunity to purchase ready-made cheese, do not worry, because there are many recipes for mascarpone cream for the cake. Mascarpone cheese is also easy to make at home. To do this, you need 400 g of fat sour cream (at least 25%) and 2 tablespoons of lemon juice. (You can use 1 liter of cream instead of sour cream. Then 3 tablespoons will be needed for lemon juice.)
  • Mix the ingredients and put on medium heat. Keep the mixture on the stove for five minutes. It should not boil. Then remove from the oven and cool. Put a colander in a bowl, cover its bottom with several layers of gauze or a waffle towel. Pour the mixture there. Cover and place in the refrigerator overnight. From 400 g of sour cream per night should be about 250 g of cheese. Now it can be used on cream for cheese cake. There is an even simpler mascarpone recipe - buy homemade cream in the market. First freeze them, and then unfreeze. Place on cheesecloth and allow liquid to drain.

    The recipes for making mascarpone with your own hands are not the only ones. On the Internet you can find several of them with different ingredients.

  • I think many of you will also be interested in the question of what else can replace the mascarpone in the cake. It can be: 1) a mixture of 240 g of cream cheese and ¼ cup of sour cream; 2) a mixture of 240 g of cream cheese and 1 tablespoon of cream, butter (milk); 3) a mixture of 180 g of cream cheese, 0.25 cup of milk and 0.25 cup of cream. You can also try putting Philadelphia, Bonjour, Almette cheese in a cake.
  • If you are preparing a biscuit in the oven, you must remember that it cannot be opened for the first 20 minutes, otherwise the cake may settle. The finished biscuit should not be immediately removed from the oven, it should stay there for at least another 15 minutes. The jump in temperature also leads to its subsidence.
  • To make the mascarpone cake for you as simple as possible, you can purchase a ready-made biscuit cake.

I was looking for the simplest recipe for what to make from mascarpone. How do you use it? How to replace cheese in desserts, if it is not at hand? Share your successes. I will be glad to hear about them.

In addition to the fact that Italians found mascarpone used in sweets, they still use this cheese in the same way as we do butter, that is, they spread on bread and eat tea.

Interestingly, mascarpone is not really cheese, because it is prepared from fat cream. The milk from which these creams are collected is taken only from cows that feed on special inflorescences of herbs and flowers. Thanks to this, the mascarpone has such a magical aroma.

In general, mascarpone was first prepared at the beginning of the XVII century. Since then, it has become a favorite product that is used in a wide variety of dishes. But, due to the consistency of the cream and a delicate milk taste, cheese is most often used in desserts and sweet dishes. Probably the most famous dessert with Italian mascarpone is tiramisu. A gentle cheesecake with creamy mascarpone is a classic recipe for a cheesecake. Cheesecakes, according to some sources, tasted even in Ancient Greece, but, of course, then the recipes were without mascarpone.

So, for a magic cheesecake you will need:

  • mascarpone - 500 g
  • fat sour cream - 400 ml
  • chicken eggs - 3 pcs.
  • granulated sugar - 1/2 tbsp
  • vanilla
  • butter - 150 g
  • shortbread cookies - 300 g
  • raspberries - 100 g
  • cinnamon powder - 1 tsp
  • ready whipped cream

Like all dessert recipes, this one begins with the preparation of the base. She will need cookies, butter and cinnamon. Grind cookies to crumbs, mix with soft butter, pour cinnamon powder. Form the base for the cheesecake - bottom and sides, 3cm high. Send the base to fridge.

Beat the cheese, sour cream, sugar, vanilla thoroughly with a mixer and, when the mass is already mixed, beat eggs into it one at a time. Put the finished cream mousse into the mold. Then pour water into the refractory container. Wrap the filling form with foil and lower it into a container of water. The form should be half immersed.

Curd cake is baked at a temperature of 160 degrees. In the oven, the pie should hold at least 60 minutes. But, classic recipes for curd cakes may suggest reducing the baking time to 45 minutes.

A triple is an English sweet, which is most often prepared in glasses or other glassware. The recipes of this dessert are based on biscuit, fruit, berries, jelly, cream and other tasty ingredients, including tender cheese. And some recipes for travel, instead of biscuit, suggest using cookies. This will greatly speed up the cooking process.

For berry truffle you will need:

  • shortbread cookies - 200 g
  • sweet nutmeg liquor - 100 ml
  • bananas - 2 pcs
  • wild berries - 100 g

Mix and beat the yolks and sugar, add cheese. Beat the whites to the maximum and very carefully mix them in a mixture of cheese and yolks. Put this mass on top of fruit puree.

Put the glasses with truffle in the refrigerator. Decorate the finished mascarpone desserts with berries with fruit slices, mint or cinnamon sticks.

Delicious cream mousses can be made from Italian cream cheese. Of course, there are a wide variety of recipes, but probably the best one can rightly be called a cherry cream.

Ingredients for Cream:

  • ripe cherries - 500 g
  • dry red wine - 1 tbsp
  • mascarpone - 200 g
  • granulated sugar - 2 tbsp
  • powdered sugar - 2 tbsp
  • strong alcohol (cognac, rum, etc.) - 50 ml
  • cinnamon

All recipes for creams based on this cheese require preliminary preparation of the ingredients, so before cooking the cherries you need to rinse, remove the seeds and pour over boiling water. Then pour them cognac.

Put the prepared cherries in a saucepan, pour them with wine and a glass of water. Add sugar and cinnamon to the mixture, put on fire and cook for a quarter of an hour. Beat cheese with a blender with icing sugar and mix with cherry syrup.

Mascarpone is a cream cheese born in Italy.  It can also be used as an ordinary bread spread, but it is better to cook wonderful and interesting dishes, including desserts.

They are varied and always delicious. Recipes for making desserts with mascarpone are both quite complex and time-consuming, and very simple.

But the main advantage of all dishes is its amazingly airy and delicate taste.

Mascarpone dessert - general principles of preparation

Mascarpone cheese is the main component of desserts. You can buy it, or cook it yourself.

In order for home mascarpone to be no worse than purchased, you need to use cream with a fat content of at least 33%.

A variety of fruits are added to desserts. They can be fresh or frozen (depending on the season).

To prepare a tiramisu dessert, savoyardi biscuit cookies are used. It can also be bought or baked at home. Or replace with domestic "Ladies' fingers."

Shortbread cookies, preferably chocolate, are also added to dessert.

The recipes are chicken eggs. Since they are mainly used in raw form, they must be washed in hot water with soda.

It is advisable to put the yolks in the refrigerator for several minutes.

We use natural coffee beans. Using a coffee grinder, grind it and cook it in any way.

Mandatory tools are: whisk, blender, mixer.

1. Dessert with mascarpone Tiramisu

The famous dessert is airy, tender and very pleasant to taste.

Lift me up - that’s what the name means.

Ingredients:

Five eggs.

0.500 kg of mascarpone cheese.

0.400 kg savoyardi cookies.

0.250 L of cream 33%.

0.175 kg of powdered sugar.

0.400 l of brewed natural coffee.

0.100 kg of cocoa powder.

A pinch of salt.

Mint leaves.

Cooking method:

Separate the yolk from the egg white and send it to the refrigerator.

After two minutes, we pour the icing sugar into the cold yolks. Whisk with a whisk and achieve complete dissolution of the powder.

We turn the cream into a thick mass with a blender, not forgetting to salt a little.

In the dishes with raw mascarpone, place the yolks and mix with a wooden spatula. Cream is added after the mass becomes completely homogeneous. They are laid gradually in small portions.

We make coffee.  Let it cool. Cookies are immersed in coffee for two seconds. Then put it on the prepared form. Gently cover the top with a ball of cream and level it.

We lay out cookies in three layers. On top, you can not equalize the cream, but decorate it with a culinary syringe. Leave the form in the refrigerator for at least fifteen minutes. During this time, the cream soaks the cookies.

Sprinkle with cocoa powder just before serving. Garnish with a mint leaf.

You can additionally crush with grated chocolate.

2. Dessert with mascarpone “Liquid Tiramisu”

The dessert with rum is fragrant, airy and very piquant. Suitable for an evening together

Ingredients:

50 ml of rum.

150 grams of cream 33%.

150 grams of brewed black coffee.

Three teaspoons of mascarpone cheese.

Three ice cubes.

Two pieces. Savoyardi cookies.

Cocoa powder.

Cooking method:

Make coffee in any way. Let it cool to a warm state.

Put cookies in a plastic bag and crumble with a rolling pin.

In a blender, mix cream, pieces of ice and coffee. Add cheese and rum. Turn on the blender for a couple more minutes.

Transfer the mixture to a bowl and sprinkle with cookies.

Crush cocoa and garnish with raspberries.

3. Strawberry-Banana Dessert with Mascarpone

It is prepared quickly and is suitable for a festive table. No doubt the guests will like it with its sweet and sour taste.

Ingredients:

0.200 kg of mascarpone cheese.

Two spoons of art. 10% cream.

Four tbsp. tablespoons of powdered sugar.

Fresh or frozen strawberries.

One banana

50 grams of cookies.

Cooking method:

Put the cheese in a cup and beat with a mixer for five minutes.

Add the icing sugar and beat again.

Pour in the cream and continue to work with the mixer for another minute.

We crumble cookies with a rolling pin.

Cut the banana and strawberries into thin slices.

In the dessert dishes we spread in turn: cookies, banana, strawberries. Pour cheese on top.

You should get at least two layers.

The top layer of cheese is well smoothed and sprinkled with grated chocolate.

4. Dessert with mascarpone in the oven

An airy, creamy and vanilla-flavored dessert to enhance any mood

Ingredients:

400 grams of cookies and mascarpone cheese.

100 grams of Vologda oil.

Three eggs.

200 milliliters of 20% cream.

140 grams of powdered sugar.

Cooking method:

Cookies put on cling film, cover and chop into crumbs.

Put on top the butter, softened to room temperature, and grind with biscuits.

Transfer the mass into a baking dish and make the sides two centimeters. Put in the refrigerator.

Combine mascarpone with powdered sugar with a whisk.

Gradually introduce cream into the cheese, not forgetting to mix.

Put eggs in the mass, pour a spoonful of vanilla tea. Stir.

Pour the cheese mass into the cookie form. Wrap the form itself in foil in two layers.

Bake in the oven for 80 minutes (160 degrees).

Put the cooled dessert and leave in the refrigerator for two to three hours.

Serve decorating with your favorite fruit.

5. Coffee mascarpone dessert

Dessert can be prepared for a weekend breakfast and slowly enjoy its coffee and chocolate flavor.

Ingredients:

0.400 kg mascarpone.

Six yolks.

A quarter kilogram of chocolate chip cookies.

80 grams of icing sugar and chocolate liquor.

100 grams of black coffee.

Cooking method:

Pour sugar powder into the yolks, wait until it is absorbed a little, and begin to whip with a mixer.

Pour the yolk cream into the container with mascarpone and add chocolate liquor. Mix and whisk at low speed.

We dip the cookies for a couple of seconds in cold coffee and transfer to a glass.

Pour over the creamy mass.

Spread cookies and cream in turn until the glass is full.

It must be filled so that cookies are on top. Put in the refrigerator for at least twenty minutes.

6. Dessert with mascarpone “Quick”

The dessert is filled with sweet raspberries and airy cream. It cooks quickly and is instantly eaten.

Ingredients:

0.200 kg of cream 33%.

250 grams of fermented milk cottage cheese and mascarpone cheese.

Half a raspberry.

0.400 kg fatty sour cream.

0.250 kg of granulated sugar.

0,100 kg planed almonds.

Cooking method:

Whip cream with sugar in the usual way.

Add sour cream, cream cheese, sour-milk cottage cheese and continue to whisk.

Put the dessert in the dishes in layers: first the berries, then the cream.

Sprinkle the top cream layer with almonds and leave in the refrigerator for twenty minutes.

7. Dessert with mascarpone and lemon

The dessert is full of lemon flavor and aroma of almonds. Tiny cakes sprinkled with chocolate will delight at any time of the day

Ingredients:

Two eggs.

According to Art. a spoonful of icing sugar and butter.

0.200 kg of mascarpone.

Art. a spoonful of almond flakes and candied lemon.

Two spoons of art. flour.

Cooking method:

Separate the yolks from the proteins. We place them in separate cups.

Beat the whites until strong with a mixer. Pour powdered sugar and whisk a little more.

Put the butter and cheese in the yolks. Mix thoroughly and pour into a large bowl.

Rub the lemon zest on a smaller grater and move it to the cheese mass.

We lay out the proteins and gradually stir everything again.

Pour the finished mass into separate silicone molds and bake for about half an hour in the oven (180 degrees).

Chill the finished dessert, put in plates and sprinkle with milk chocolate.

8. Dessert with mascarpone and raspberry liquor

Ingredients:

100 grams of powdered sugar.

Vodka - 50 ml.

Raspberry half a kilogram.

Three eggs.

Fat cream - 100 grams.

250 grams of mascarpone cheese.

A few pieces of savoyardi cookies.

Cooking method:

Pour half of the icing sugar generously with vodka. Leave for a few minutes to completely dissolve the powder.

Separate the yolks from the proteins and put them in different dishes.

Beat the protein in the usual way.

Wash raspberries, remove water and fill with a vodka solution.

Beat chilled cream.

Pour the yolk mass into a large bowl and shift the mascarpone. Mix and lightly beat.

First add the whipped cream, then the whites. After each new ingredient, mix the mass.

First, put a few lounges of cream in the bowl, then cookies. If it is long - we break it in half. Get several layers.

Sprinkle generously on top with raspberries soaked in sweet vodka.

9. Dessert with nut-chocolate mascarpone

When we prepare dessert for children, liquor from the recipe must be removed. Without Beilis, the dish will be no less tasty

Ingredients:

500 grams of mascarpone cheese.

400 grams of ladies fingers cookies.

¾ cup powdered sugar.

Six eggs.

Ground nuts - 50 grams.

300 ml of brewed coffee.

Two spoons of art. Beilis liqueur.

50 grams of white and black chocolate.

Two spoons of art. cocoa.

Cooking method:

Melt the chocolate and move it into the mascarpone dish. Chocolate should be warm. Stir, we get a lot of light coffee color.

Before serving, sprinkle with cocoa powder (through a sieve).

    If we cook the mascarpone on our own, then pour the cream into a cold dish.

    In order for the tiramisu dessert to be dense and not break up, the cheese must also be cold.

    When whipping, it does not hurt to add a pinch of salt to the whites. She will help to complete the process faster.

    Whipped squirrels should be so thick that when turning the dishes where they are, not a drop will fall out.

    The whipping speed of proteins needs to be increased gradually.

    It is advisable to beat the yolks with a whisk. They are brought to the desired density if a knife can hold a furrow.

    For a suitable impregnation of cookies in coffee, it is enough to dip it there for two seconds. Coffee should be at room temperature or a little warm.

    Desserts are best prepared with powdered sugar - it dissolves faster than sugar.
