Arkady Novikov was born in Moscow in 1962. His mother was a kindergarten teacher, and his father worked as a designer in a factory. When the parents decided to leave, the hero of our article was only six years old. As a result, one mother raised him, she was engaged in his education.

While studying at school, Arkady Novikov practically did not think about his future profession, did not indicate that in his adult life he would turn into one of the most influential restaurateurs in the country. As often the entrepreneur himself currently recalls, until the age of 15, his main hobby was amazing fairy tales, because he did not want to part with his childhood.

It is noteworthy that he did not know how to cook for a long time, watching with interest how his grandmother did it.

Education

After school, the fate of the hero of our article was such that he connected his life with cuisine and restaurants.

He received his first education at a culinary school. Then he went to serve in the army, where he specialized in dog training. Returning to the "citizen", he entered an even more prestigious institution - the Plekhanov Academy of National Economy at the faculty of the economy of public catering.

After graduating, Arkady Novikov first worked as a cook in the restaurants "Havana" and "Universitetsky", and five years later he headed the kitchen of the fashionable metropolitan restaurant "Olympic Lights". He gained invaluable experience in the administration of catering establishments in the Victoria restaurant, located in the Gorky Culture Park, as well as in the Hard Rock Cafe, which belonged to the musician Stas Namin.

Own business

Arkady Anatolyevich Novikov decided to open his own business in 1991. He created a company called Novikov Group, which eventually became a leader in the domestic restaurant business.

At the same time, his very first institution was a small cafe "Siren" in the building of the technical school. The project was beneficial in that it was not necessary to pay the rent, instead, Novikov pledged to feed students of the college with lunch for a nominal fee.

The project was quite successful. In 1994, restaurateur Arkady Anatolyevich Novikov opened his new restaurant called Club T. They were followed by the Tsarist Okhota restaurant of Russian cuisine, respectable institutions such as Gallery, Grand Opera, Cantinetta Antinori, Vogue Cafe, and the famous Elki Palki restaurant chain with affordable prices. "Tree sticks"

The chain of restaurants "Christmas trees-sticks", although it was focused on the middle class, and not on the rich, but these institutions brought fame and fortune to their creator.

The very first inn under this brand was opened on Tishinskaya Square in the capital in 1996. Initially, it was not planned as a network, but its popularity was so great that the restaurateur, who became the hero of our article, began to open new establishments the next year.

In total, about 20 restaurants were opened as part of this project, not only in Moscow, but also in Voronezh, Yekaterinburg, Nizhny Novgorod, Tver, Omsk and Ufa. The concepts of these catering establishments were based on Russian, Caucasian and Ukrainian cuisine, and the main feature was the so-called cart with an unlimited approach. In 2014, the network held a massive rebranding, changing the logo and style of restaurants. However, by 2017, it became known about multibillion-dollar debts, Novikov decided to get rid of this asset.

Arkady, do an interview and shoot for OK magazine! You offered at Novikov Restaurant & Bar. Interestingly, you did not open your first restaurant named in Moscow, but in London. Why?

Arkady:   I decided to combine business with pleasure. ( Smiles.) The fact is that at that time I often flew to London, because my children studied there. In general, this project was a big adventure. You know, in the restaurant business, like in football, it's easier when you play on the home field. In general, for three years I looked closely at the business of the British capital. There was a problem with renting a room. But at some point, she miraculously resolved: I got a top place in the top area. Of course, such a chance would be foolish to miss. I thought for a long time what to name the restaurant - “Arkady Novikov” or “Alexander Novikov”. ( Winks, smiling.) As a result, I decided: for the time being I’ll risk only my last name.

It is no secret that, after the British newspaper The Guardian published a devastating article, the London project could fail miserably. But the result was the opposite: the day after the publication of the article, the restaurant doubled its turnover.

Arkady: No wonder they say: risk is a noble cause. In general, by virtue of my nature, I am not 100 percent satisfied with anything. And this is normal. It always seems to me that one can do better. This also applies to the project Novikov Restaurant & Bar. But I am not complaining. After London, Novikov Restaurant & Bar opened in Moscow, then in Dubai. By the end of the year, plans to open Novikov Asian in Miami. We are thinking of doing a project in Monaco - maybe next year. The plans also include a restaurant in Saudi Arabia and Las Vegas. But will it all work out or not, I don’t know. For all the will of the Almighty. Believe me, I have no idea to conquer the world, I have a desire to make high-quality projects that will give pleasure to both me and the guests.

Alexandra, I noticed how your eyes lit up when dad said about a restaurant in Las Vegas. Maybe you should try to work with this project?

Alexandra:   I don’t think so. ( Smiles.) I have never been to Las Vegas, but I know that grandiose projects are opening there, and my father’s restaurant cannot but match.

And how old were you when the first daddy's restaurant, Siren, opened? By the way, he still works.

Alexandra:   This year the Novikov Group will be twenty-five years old, the Sirena restaurant will be twenty-four. It turns out that I was not even a year old, right, dad?

Arkady: Yes. We hurried then, it would be a great gift for you on your first birthday. ( Laughs.) Of course, this is a joke. Probably, then everything just coincided. I didn’t have a clear plan when and how many restaurants I want to open. Yes and no now.

Alexandra:   Do you have any final goal in front of your eyes? Say, "I’ll open a hundred restaurants and stop."

Arkady:   No. I can’t even say for sure how many restaurants Novikov Group has today. Something constantly opens up, something in the plans. And all this somehow happens by itself. I am fueled by restaurants, they are fueled by me. And so for a quarter century.

Is there a desire for children to continue your business?

Arkady:   “I want the children to be happy doing what they love. And so that they also have enough for life. Of course, at certain moments, the selfish desire to shift the business to them, and to go fishing himself, visits me. ”

Alexandra: Dad, you’ll have enough for exactly a week, and then you ask us all. ( Laughs.)

Arkady:   It's true. Moreover, we have a different vision of business with Sasha.

Aren't you going to do a joint project?

Arkady:   Stop. Of the joint projects, we have only a family. As for business, here everyone is for himself. ( Smiles.) As a father and an experienced restaurateur, of course, I will not refuse my daughter advice. But so far no one is asking me. Alexandra is involved in her How to Green project. And, it seems to me, successfully. This project is great for her in spirit.

But somehow, in an interview, the daughter mentioned that you are skeptical about her project.

Arkady:   I am skeptical not about a healthy lifestyle and not about what Sasha is doing. As a restaurateur, I am interested in new ideas, but as a businessman I have to think about how to make money from them. The topic of healthy eating in our country is only gaining momentum. The target audience is not large enough to make money.

Therefore, you are not financially involved in the How to Green project?

Arkady:   Firstly, no one invited me to participate, but I didn’t ask much.

Alexandra:   Dad does not believe that an Internet project can make money. But I don’t have a goal to earn billions.

Arkady:   But in vain! Billions will always come in handy! ( Smiles.) In matters of earnings, I am a man of the old formation. I know that you can buy meat at one price, sell meatballs prepared from it at another, and here you have the profit.

Alexandra, since we are talking about your project, tell us how you yourself came to a healthy diet?

Alexandra:   In fact, it didn’t happen on the same day. At some point during my studies in London, I had health problems due to malnutrition: my cholesterol increased, anemia started. It also turned out that I had gluten intolerance. I tried many different diets, but at some point I gave up, as the situation only worsened. Then I decided to give up meat, eat more vegetables, fruits and cereals. Having started to prepare healthy dishes for myself, I realized how simple and tasty it is - and fell in love with a healthy lifestyle! After London, I lived in New York for some time, where there is a cult of healthy food and many “green” cafes. In Russia, alas, there is a shortage of information and places with a healthy concept. That is what prompted me when I returned to Moscow to start a project on a healthy lifestyle.

And you started a How to Green blog?

Alexandra: At first I was trained at a health coach in London, received a diploma. This was the Institute for Integrative Nutrition online course. Arriving in Moscow, I decided to open a vegetarian cafe. We chose a room, started work on the menu. But next door opened my father’s meat restaurant "No Fish." It turned out that in this case my cafe would become a passage. That is, from time to time in a restaurant that serves exclusively vegetarian dishes, a person would appear with a tray of fresh meat, which he brought for a nearby restaurant. Agree, this is absurd. Then I was very upset, but now I understand that everything is for the best. Having started a blog, I realized that the topic of healthy eating is also promising in Russia. Over the year, the How to Green Internet project has formed a fairly large audience. And now the opening of my cafe is really waiting.

Is it important for you that your cafe opens next to the Novikov Group project?

Alexandra:   No, but I think this may have its advantages. Now I am looking at several locations, including the Kuznetsk Bridge, next to the Vogue Café. The concept of my cafe will depend on the place and size of the room. If the area is not very large, I will most likely focus on the idea of \u200b\u200ba self-service fast-food cafe. And if you have a spacious room, you can make the concept more complicated.

Arkady:   Sasha is very popular among young and advanced chefs of my restaurants. I don’t know if this is a professional interest. ( Winks.)

Alexandra:   Well, dad, as always. ( Smiles.) For me, this is a great workout before opening my own cafe. This is such a challenge. You need to come up with original dishes that will not only be tasty and healthy, but will also be able to correspond to the concept of a restaurant. Just recently, my healthy-menu was launched in the Asian restaurant Roni.

Arkady:   Healthy creativity is good, but nobody canceled the fish and meat in the restaurants of Arkady Novikov!

Arkady: My wife is most dissatisfied with my activity on a social network. Like, a waste of time, and in the comments they write different things. But for now, I’m interested in talking in this way, talking about my projects, and getting criticism.

Judging by Instagram, you are often in Italy. Do not want to open a restaurant there?

Arkady:   No, you should not mix business and leisure. Italy is a country for the soul. Why let negative emotions into this hedonist's paradise?

Arkady Novikov was born in Moscow. Father was a designer at the Ordzhonikidze factory, his mother was a kindergarten teacher. Parents divorced.
  After leaving school, he tried to enter the road institute, but failed in exams. Then his mother advised him to go to a culinary school, which was located near the house - Arkady from childhood loved to watch how his grandmother cooked. He graduated from culinary school N 174, later entered the Academy of National Economy. Plekhanova, at the faculty of catering economics. He served in the army, by the way, he himself came to the draft board and asked for service. He studied for several months at the Central School of Military Dog Breeding near Dmitrov. The diploma says: the driver of the guard dogs - cooked them food, fed, trained.
  He began his professional career in 1988 as a cook in the Universitetsky restaurant, where he worked for about five years. Then he was the deputy chef at the Havana restaurant, the chef at the Olympic Lights restaurant.
In 1990, Arkady became a chef at the "Hard Rock Cafe", which was opened by Stas Namin in the Green Theater of TsPKiO named after Gorky. Success came to Arkady Novikov in the 90s. In 1992, Arkady Novikov opened (this and almost all subsequent ones, in partnership with various restaurateurs and investors) his first restaurant, Sirena. It became not only the first fish restaurant in Moscow, not only introduced Muscovites to exotic fish products at that time, but also became one of the restaurants with a qualitatively new approach to cuisine, service, interior and atmosphere. This was the beginning of a new, post-Soviet stage in the development of the Russian restaurant business. Over ten years, he created many original and successful projects and earned a reputation as the first restaurateur in Moscow. In total, Arkady Novikov came up with more than 30 restaurant projects: the restaurants “Vogue café”, “Gallery”, “Tatler Club”, “GQ Bar”, “Shore House”, “Vanilla”, “Luce”, “Mr. Lee ”,“ Vesna ”,“ Uzbekistan ”,“ Bapaska ”,“ Cheese ”,“ Market ”,“ Cantinetta Antinori ”,“ Peperoni ”,“ China Club ”,“ Biscuit ”,“ Five Stars ”,“ Francesco ”, as well as network projects “Little Japan”, “Prime Star”, “Sushi Vesla”, “Kish-Mish”, “Yolki-Palki”, “Prisoner of the Caucasus”.
  In 1994, Arkady Novikov opened the Club T restaurant of French cuisine, which for many years was considered the best French restaurant in the capital.
  In 1996, the Tsarist Hunt restaurant of Russian cuisine was opened, which became the "calling card" of Moscow and Russian cuisine in general. Over the ten years of its existence, the restaurant has repeatedly received honored guests, and once it hosted a dinner of two presidents - Russian President Boris Yeltsin and French President Jacques Chirac.
  In 1997, the White Desert Sun restaurant was opened. He marked the beginning of fashion for themed and nostalgic restaurants.
  In 2002, Arkady Novikov organized his own greenhouse farm “Agronomist” in Gorki-10 (Rublevskoye Shosse). On the territory of 6 hectares several thousand ecologically clean plants are grown. Products are delivered both to Novikov's restaurants and to other restaurant and retail enterprises.
  Since 2003, Arkady Novikov is one of the founders and a member of the coordination council of the Federation of Restaurateurs and Hoteliers.
Since 2005, he has been creating and promoting environmentally friendly products under the NOVIKOV brand. In the same year, another project was launched - the Globus Gourmet premium grocery store chain. Then Arkady Novikov launched the following projects: a chain of Japanese restaurants "Japanese Mama" and a restaurant of modern Provencal French cuisine "Casual". In the summer of 2005, he took part as a presenter in the reality show "Candidate" (a joint project of TNT and Junior TV). In this show, 16 applicants are fighting for the right to become the manager of one of the projects of Arkady Novikov and get an annual contract worth 15,000,000 rubles .. In the program, Arkady tried to positively influence the image of the Russian restaurant business, showing it from the inside and showing what opportunities it offers for young and passionate people.
  In January 2007, the Nedalny Vostok restaurant was opened in Moscow on Tversky Boulevard with Pan-Asian, author's cuisine.
  And at the end of 2011, the first London project of Arkady Novikov - “Novikov Restaurant & Bar”, in the center of London, was launched, later another restaurant was opened.
  In the ranking of senior executives in 2010, the newspaper Kommersant Arkady Novikov took 2nd place in the nomination "Service".
  In 2013, the MasterSchef project was launched on the STS channel, in which Arkady Novikov acts as a judge and presenter, as well as a well-known restaurateur who took part in writing the script for this show and made recipes for the contestants.
