I love accuracy in everything, so i always make a birthday menu in advance. Even if guests are scheduled for tomorrow, I will still take the time. It is better to spend the extra 10 minutes writing the list than to go to the store twice because you accidentally missed it.

What lists are needed?

I write several lists at once:

  1. a list of dishes and drinks that will be on the table;
  2. list of ingredients and purchases;
  3. a to-do list, that is, a sequence of actions so as not to forget anything.

Example: organizing a husband’s birthday at home

I will show you how I organized this process for my husband’s birthday.

Initially, we decided that we would celebrate this day together in a restaurant, but later my husband said that he just wanted to sit with friends and have a beer ... and this is at home ... tomorrow. Does this happen to you? In 5 minutes, the men decided that the restaurant was canceled, and long live the home feast. Shock? Stress? No, absolutely.

We specify the number of guests: together with us, we have 6 adults and 2 children. So the menu, I was counting on this number of people.

If you have more time, then there is more opportunity to plan everything carefully and correctly, but if it is not there, as in my case, just stop for a few minutes and think that people who come to visit you like it. I know that two of the guests do not eat liver, two more seafood, etc., so these dishes on the table are not desirable. It is probably impossible to take into account all tastes and preferences, but the fact that guests do not eat exactly is not worth cooking. And vice versa, if you know for sure that your guests really love your dish, they always eat it first, be sure to cook it!

I don’t really bother with the compatibility of dishes, I cook what I'm sure of. If this is a beer party, this does not mean that there will be no cake or a snack. Less conventions, unless you need to meet some kind of ambassador.

Example of a birthday menu at home

Previously, my menu was not always placed on one sheet. Three salads, three types of sandwiches, 3-4 snacks, etc. Naturally, all this remained after the holiday and disappeared. What for? To show how good a hostess I am? This is superfluous, my guests already know this :)

I do not urge you to minimalism, I urge to be objective. Just think, would you eat so many meals away? If so, there’s no need to invent and add another extra salad.

Because I don’t have much time for preparation, I chose all the recipes simple and not too laborious:

If I cook according to certain recipes, then I select all the recipes I need on the table: I print them out, remove them from folders or put aside notebooks.

Why do I need it? So I’m sure that having written out all the ingredients, I won’t miss anything you need, but I won’t buy too much. Often, hoping for our memory, we are standing at the store counter and cannot remember how many grams of chicken we need for a salad, or whether there is cheese in this dish at all, so we always take more than we need, being safe.

I AM make up a shopping list  based on the ingredients of the recipes I need. After reviewing all the ingredients, I write out only what I don’t have at home, immediately indicating how many grams, kilograms, etc. I need this or that. My list this time looked like this:

Tip: do not be lazy and rewrite your list so that it matches the departments of the store you go to. I definitely know the location of the departments of my favorite supermarket, so I start with fruits and vegetables, then meat products, cheeses and sausages, etc. These few extra minutes will save you a lot of time in the store, as You won’t rush around the store, and calmly go around it only once.

And one more important point. If there are products on the list that you need to go to a specialty store or market, take them separately. With such a detailed list, you can send your husband to the store, and do other things yourself.

I think you noticed that on my list chicken wings and potatoes are highlighted in red. This is because we ordered their preparation in a beer specialty store where there is a huge grill.   If there is an opportunity to facilitate your preparation, and you are confident in the quality, be sure to use this.  The difference in price with raw foods is not as great as it might seem.

We plan the sequence of actions

Important plan a sequence of actions  so that before the guests themselves do not run around in an apron and dressing gown, cutting food.

Everything that can be cut in the store needs to be cut there. Having on hand a sliced \u200b\u200bloaf and sliced \u200b\u200bsausage on sandwiches, you spend 5 minutes, not 20.

I said that I was writing a list of actions, while pointing out what my husband could do, for example. And do not neglect to include in your list such items as washing your hair and doing cosmetic procedures. You do not want to remember this half an hour before the arrival of the guests.

What can be done the night before

If possible, do part of the preparatory work the night before: cook the compote, bake the cake cakes, boil the eggs and vegetables. In the morning, you can immediately start cooking, and not to prepare the ingredients and cool them.

In the evening I cooked stewed fruit so that it cools, baked a biscuit, and in the cooling oven I made crackers for salad. Also boiled chicken and eggs. In the evening, it is better to clean the house, wash the bathrooms and wipe the dust. Tomorrow you may just not be in time.

If I cooked the wings at home, I would pickle them in the evening too. I usually pickle wings in a mixture of vegetable oil, soy sauce, ketchup and honey with garlic.

If possible, then in the evening you can cook the whole cake, it will stand perfectly in the refrigerator until the next evening. If not, start at this point in the morning.

Morning

In the morning  you need to do the remaining preparatory work, namely, chop the eggs and chicken for salad and baskets.

I accustomed myself to cutting the same type of food for several dishes at once, for example, all eggs for all recipes. Naturally, I take into account how many they need for what dish, and divide them into different salad bowls. This really saves time - you only wash the grater, board and knife after this product, and not 3-4.

You can also do with cheese and other products. At this stage, I also cook mushrooms so as not to be distracted by snacks anymore.

Important to do in advance filling for baskets , then you just have to put it in the baskets and bake. Cook smoked chicken salad.   Since all the ingredients are already sliced, it will take quite a bit of time.

What is important to do in the afternoon

In order to switch, and simply do not miss this moment, you need to postpone all the necessary dishes that you need for serving. I put it on a dresser in the room, checking along the way whether it is necessary to wipe or rinse something additionally. Of course, it is better to accustom yourself to thoroughly wash and wipe the dishes after each feast, then before the holiday it will take only 5-10 minutes.

Prepare a tablecloth and napkins. Refrigerate drinks if necessary.

Lubricate the slices of the loaf with a thin layer of oil, mayonnaise or tartar sauce, lay the slices of sausage and top with a slice of kiwi. Garnish with half the olives.

How much time did it take for this dish? From the strength of 5-7 minutes, because only kiwi had to be cut. Such sandwiches look spectacular on the table, kiwi gives sourness and emphasizes the taste of sausage. In this recipe, it is best to use cooked smoked sausage.

If you decide to make khachapuri, like me, then knead the dough. We need about 40 minutes to knead and rise. We will do the main work when the guests have already gathered.

We spread the fish in a hot pan, fry on both sides, add chopped carrots and onions, simmer for 5 minutes, add milk, sour cream, seasoning, simmer for another 5-10 minutes.

Boiled rice with fried mushrooms. Separately, cook rice and fry the mushrooms with onions, then mix or spread the mushrooms on top of the rice.

Oven baked chicken wings.  A few hours before baking, soak the chicken wings in the sauce: sour cream or mayonnaise, salt, pepper, spicy seasoning. Then spread on a baking sheet and bake until crisp.

Potato casserole.  Wrap in a thin pita bread, spreading in layers: mashed potatoes, minced meat or stew, fried onions, cheese, sour cream.

Warm meat salad.  Fried separately: finely chopped chicken breast, a little beef and vegetables: eggplant, zucchini, onions. We spread the slide on a plate, serve short.

Usually this is the well-known “Fur coat” salad, laid out in layers, just chopped herring with pickled onions and butter and mincemeat for delicious sandwiches.

But today I will share with you how to serve herring cake on waffle cakes. My recipe has step-by-step photos, and therefore you will understand how easy it is to prepare.

Ingredients for cooking:

  • herring mincemeat - 300 g,
  • waffle cakes - 1 pack.,
  • boiled egg - 2-3 pcs.,
  • mayonnaise sauce - 2-3 tsp.,
  • boiled beets - 1-2 pcs.,
  • carrot - 1 pc.,
  • table salt to taste.

How to make herring cake

  1. First, prepare all the ingredients listed above. I boiled beets and eggs in advance, and also prepared herring mincemeat.
  2. Life hack! To make the eggs easier to clean, immediately after being ready, dip them in ice water, so that the shell will easily lag behind the protein. After cleaning the boiled eggs (2-3 pcs.), Grate them on a fine grater, and then mix them with 1-3 tsp. your favorite mayonnaise (I usually use Provence or make homemade yolks).
  3. Peel the beets and grate them too.
  4. After that, we give our vegetable a little “rest” so that he can allocate juice (5-7 minutes). We merge it and slightly squeeze the beets, and then add 3 to 5 tsp. mayonnaise and salt (salt to taste). We take a chopping board, put the first wafer cake on it and apply a herring forshmak (the layer should be dense). Then we put the second cake, coated with egg mixture.
  5. After the beetroot layer. Then repeat the layers. I prefer bright colors, because my top layer is wafer cake, spread with boiled beets. Herring cake on waffle cakes is almost ready.
  6. Leave it for 20-30 minutes in order to be saturated with a whole bunch of healthy ingredients.
  7. If you want to serve such an appetizer to the festive table, then you need to serve it accordingly. I propose to decorate the top layer with a bright and juicy carrot.

We take carrots, cut into slices, fill them with boiling water so that they are slightly softened. We decorate the cake with herbs, carrot roses and lingonberry berries.

The preparation of this snack is rather unpretentious, despite this, it is very original and will look great on every holiday table. When cooking, the hostess will save a lot of time.

Ingredients for cooking:

  • 120 grams or four pieces of processed cheese;

  • 200 grams of crab meat;
  • 150 grams of mayonnaise;
  • 4 cloves of garlic;
  • Lettuce leaves.

Cooking:

  1. The processed cheese should be placed for 25 minutes in the freezer so that they harden a little and it is convenient to rub them on a grater;
  2. After 25 minutes, take the cheese from the freezer and grate it on a coarse grater;
