How to properly bake in a slow cooker. Recipes and quick baking in a slow cooker

As practice shows, not only bread machines, ovens and frying pans cope with the preparation of various kinds of pies, pies and buns. The slow cooker is also capable of baking golden-brown homemade pies, fragrant bread, and even buns with poppy seeds. Moreover, in a slow cooker, all these delicacies (both sweet and savory) have their own special flavor and unique taste.

Of course, if you have found a dozen recipes for pies, pizzas, pies and bread that are perfect only in your oven, then you should approach the multicooker with caution. However, if you are still looking for signature baking recipes, then know: with a multicooker you will quickly find what you and your family need.

Features of baking in a slow cooker

For preparing baked goods in a multicooker, a special program was invented - “BAKING”, the main meaning of which is read right in the name. So it's hard to get confused.

The main feature of multicookers in terms of baking is the limited diameter of the final product. Naturally, this doesn’t matter for bread, but for all kinds of pies and pizzas it’s a pretty significant minus. Although …

Pies and biscuits in a slow cooker turn out simply brilliant! After all, nothing burns in this miracle saucepan, the temperature is always stable, and the humidity is exactly what is necessary to form the correct structure of the dough (if the recipe is executed accurately).

What kind of baked goods can be cooked in a slow cooker?

Unfortunately, not all baked goods can be cooked in a slow cooker. For example, it is not practical to bake cookies or buns for a large family in a multicooker, because these delicacies require a huge number of individual products, and there is simply no room to turn around in a multicooker.

But vegetable and fruit pies, biscuits, butter pies and thick medium-diameter pizzas work great in a slow cooker. And some even make puff samsa in this pan, using a steam rack to increase the number of pieces baked at a time.

In general, you can bake anything in a slow cooker. The main thing is to decide how tasty and unique this or that pastry turns out. Well, then – cook and enjoy! Our chefs will be happy to share recipes for baking in a slow cooker (bread, pies and pies, biscuits) in this topic.

Refer to the amount of flour in the recipe. It would be optimal to take 400-450 g. Thus, the mass of the dough should be no more than 800 g per 5-liter multicooker bowl. This will allow the dough to rise all the way to the lid without burning or sticking.

Proofing

The multicooker is convenient for proofing dough and dough. It is better to choose the “Multi-cook” mode with a temperature of 35-40 degrees, or the “Yoghurt” mode. For the dough, leave the dough for 30-35 minutes, for the second rise for 1 hour and for proofing before baking for 40-45 minutes. It is not recommended to use the “Heating” mode - the temperature will be high.

If your multicooker does not allow you to use the “Multi-cook” and “Yogurt” modes, then turn on “Warming” with an empty bowl for 10 minutes. Wait until the bowl cools down a bit and add the dough. The dough can be placed in the bowl directly in the bowl, placing paper on the bottom so as not to damage the coating.

Molding

Even though the buns stick together into a single pie during baking, still form them separately and place them in a bowl like a chamomile, not forgetting to grease them with butter on all sides. Then it will be easier to separate them from each other.

You can also use ready-made paper molds for baking, although you can’t put a lot of them in a bowl.

Preparation of products

Before putting the prepared products into the bowl, it is better to line the inside with well-oiled baking paper. Then your product will be well baked and the crust will not burn, and the finished product will be easier to remove. Lubricate the paper thoroughly.

Proofing before baking usually takes 40-45 minutes. But if you don’t have such a mode, first use the “Multi-cook” 35-40 degrees (or the “Yoghurt” mode), and then turn on “Baking” for the required time.

As for the pale top of the baked goods: you can turn the product over and bake for 10-15 minutes, or use confectionery glaze.

  1. The “Heating” mode is absolutely not suitable for proofing dough.
  2. Do not open the lid during baking, otherwise the process technology will be disrupted.
  3. After completing the baking process, do not leave the finished product with the lid closed for more than 10-15 minutes.
  4. When baking yeast products in a multicooker, you cannot turn on the “delayed start” mode.

A multicooker is a device that has captivated many housewives with its functionality, relative compactness and ease of use. Those who live in rented apartments or are just getting started with their household are especially keen on preparing various dishes in multicookers. After all, in one “pan” you can cook completely different dishes: from pilaf to yogurt. You can even bake pies. But things don’t always work out smoothly with them.

What works better?

A slow cooker is not a replacement for an oven. Baking is done differently here. Therefore, the device cannot replace a full-fledged oven, and Easter cakes in a multicooker are unlikely to be made (although there are models that cope well with baking).

The best things to make in a slow cooker are biscuits, pies with berries or fruits with delicate dough, casseroles and manna cakes. You can also make puddings.

How to choose a program?

If there is no “baking” program, then you can make biscuit dough using the “Soup” or “Porridge” program, combining these programs with the standby heating mode.

How to bake in a pressure cooker?

Pressure cookers - cook under pressure. Therefore, for baking, it is recommended to open the valve and release the pressure inside the pan. Meanwhile, press the lid as tightly as possible.

Tip: in any multicooker you cannot open the lid during cooking. Otherwise, the temperature drops, and the cake will also fall, will not bake, and will become limp and ugly.

What to do if it burns?

First, take a closer look at the instructions and recipe book for your multicooker. There are often cases when the device is simply not designed for baking the product that you are trying to make.

Secondly, you can keep the multicooker in the heating mode longer. That is, first put it on the “Baking” program, and then switch it to standby mode so that the cake is finished baking and does not burn.

Finally, you can line the bottom of the bowl with lightly oiled baking paper. The paper will prevent burning and will help remove the cake from the pan.

How to get a pie?

After baking, you just need to turn the cake over onto a plate; it will fall out of the pan on its own. If it sticks, you can tap the bottom of the mold with the handle of a knife, lightly.

A circle of baking paper placed on the bottom of the pan helps a lot.

  1. Add soda to the sour cream and mix well, and set aside in another place to proof for 20-25 minutes.

Next you need to beat the eggs into a container, add 100g of sugar there and beat with a mixer until white, add our sour cream there and beat with the mixer again, now all that remains is to add the flour and beat well again, add the nuts and mix.

Kitchen assistants make the process of preparing various dishes easier and faster. I’m now talking about various gadgets, one of which is a multicooker. By setting the correct mode, you can quickly cook both the first and second courses, and even bake a pie.

Let's learn how to cook a biscuit. In order for baking in a slow cooker to be successful, you will need:

5 eggs; 170 g fine-grained sugar; 150 g fine flour. For flavoring, take a packet of vanilla sugar.

To prepare the sponge cake, start by breaking the eggs into a bowl and mixing with sugar and vanilla. After:

  1. Using a whisk, beat the two named ingredients until you obtain an airy, light mass. This process will take you 5 minutes. By the way, turn on the mixer at the highest speed.
  2. Pour the flour into the bowl, but before doing this, sift it through a fine sieve twice. The flour will be saturated with oxygen and baking in the slow cooker will be very airy. Set the mixer aside and continue mixing the mixture from bottom to top using a spatula.
  3. Pour the dough into the multicooker bowl, greasing it with any fat you have on hand. Both vegetable oil and butter will do.

The biscuit is baked for an average of 65 minutes. This time may differ for some, it all depends on the multicooker model. Place the finished baked goods on a wire rack to cool, then cut lengthwise into two layers and soak with cream.

You may be used to making this type of baking on a baking sheet in the oven. However, the honey gingerbread recipe is designed for steaming.

List of products for gingerbread:

1 egg; 3 tbsp. spoons of liquid honey; 2 tbsp. spoons of white sugar; 1.5 tbsp. spoons of cocoa powder; 30 g butter and the same amount of raisins; one and a half glasses of wheat flour; 2 teaspoons cinnamon and a pinch of soda

Kneading the dough:

  1. Beat a chicken egg into a bowl, add sugar according to the recipe and grind the mixture until white. If you like very sweet baked goods, then feel free to add more than two tablespoons of granulated sugar to the dough.
  2. Pour in honey and melted butter.
  3. Place the bowl of ingredients in a water bath and stir until smooth.
  4. It's time to add baking powder, in our case it's baking soda.
  5. Keep the warm mixture on the fire for another 5 minutes, then remove and add cocoa with half the amount of flour.
  6. Add ground cinnamon, but keep in mind that it should be at least 2 teaspoons.
  7. Place the washed and dried raisins and only then pour the rest of the flour into the bowl.
  8. Knead the dough and divide it into small balls.

Grease the multicooker bowl with oil and place your future gingerbread cookies at a certain distance. On the device panel, select the “Steam” mode and wait for baking for 35 minutes.

The gingerbreads will expand in size as they bake, so don't put them in the bowl at once.

After you place the treat on the dish, take care of the aesthetic component and sprinkle it with powdered sugar. Gingerbread is served with tea or coffee, depending on the tastes of the guests.
