Beneficial features

“Currant”, this is what the ancient Russians called black currant, which translates as a strong smell. Flowers, fruits, leaves, buds and even its branches are fragrant. This plant owes its aroma to the large number of essential oils it contains. They, in turn, explain most of its medicinal properties.

In folk medicine, the following healing properties of currants are most often used:

  • antibacterial
  • immunomodulatory
  • anti-inflammatory
  • antioxidant
  • diuretic
  • blood purifying
  • tonic
  • restorative.

The berries also contain a lot of vitamin C. By the way, it is responsible for the sour taste that the fruits of this plant have. To satisfy a person’s daily need for this element, it is enough to eat a handful of berries. And everyone knows how important it is for the body. Blackcurrant fruits also contain folic acid, which helps remove toxins from the body, potassium, which relieves swelling, iron, necessary for hematopoiesis, as well as many other substances necessary for humans.
When heated, some vitamins are invariably destroyed. Because of this, compotes, jellies, and preserves practically do not contain them. Fruit juice is prepared, as a rule, with minimal temperature treatment, so it is the most valuable drink in terms of health benefits.

Black and red currant juice is not only a cool drink, which is so necessary in hot weather, but also a healthy, tasty and rich cocktail at any time of the year. Another plus is that it is an excellent substitute for the sweet carbonated water with dyes that children love.

With the help of a variety of flavoring and aromatic additives, fruit juice can be made even more original and unique.

How to choose the right ingredients

Currants are a very valuable and healthy food product. Each variety has its own advantages.

Did you know? For example, black currant is characterized by the presence of a huge amount of essential vitamin C, red currant, in turn, contains coumarins, which are necessary for the body if it is necessary to reduce blood clotting. The white one is the sweetest, it is better to eat it straight from the branch without freezing.

In order for the currant juice, the recipe for which you will see below, to be of high quality, you should pay attention to the following indicators:

  • Color. The richer and brighter the color, the better, because currants with a bright red or bright black color are the freshest. If you see a berry that is too dark, this indicates that it is overripe.
  • Form. This is a very important indicator. My grandmother grows currants herself, and always says that the rounder and plumper the berry, the better and fresher it is. At the same time, it should be quite hard.
  • Appearance. Look for currants that are sold on branches. It will be stored for as long as possible. But there is also a minus - the weight of such a product will be greater, although only slightly.
  • The remaining leaves should not be thrown away, After all, an excellent option is the ability to brew them with tea, due to which it will become more aromatic and healthier.

In favor of newfangled (and absolutely not healthy) drinks, the ancient Russian fruit drink - made from black currants, lingonberries, cranberries, raspberries and other gifts from the gardens at hand - was forgotten. We have even learned to make cola at home, without thinking about how necessary it is, and without thinking about the harm we are doing to ourselves. It's time to return to traditions that not only bring taste to life, but also supply tired organisms with vitamins, supporting them with the difficult rhythm of modern existence. Blackcurrant juice is exactly what you need for cheerfulness and optimism. And he will probably be able to replace the chemical fizzy drinks for our children - even if it takes some effort.

What you need to know and remember

Morse from, however, as from other berries, is prepared extremely simply. However, the key to success in preparing the drink will be the awareness of some culinary truths.

  1. Blackcurrant juice should only be prepared in a heat-resistant glass or enamel pan. Aluminum is absolutely not suitable: the juice may react with it if the wall is scratched during the cooking process. In addition, the color and smell deteriorate. Yes, the enamel on the vessel will darken, and it will hardly be possible to wash it. But the average family can easily afford to acquire an “extra” pan intended exclusively for fruit juice.
  2. When preparing the berries, you can use a blender, juicer or mixer. But our goal is not to speed up the process, but to fully preserve all the benefits found in the berries. When in contact with metal, some of the vitamins present in the berries are irreversibly destroyed. Therefore, blackcurrant juice should be made the old fashioned way, by hand.
  3. goes well with almost all other berries, both garden and forest. Blackcurrant juice with cranberries is especially appreciated by lovers of sourness. But also with strawberries, raspberries, lingonberries - or with anything! - the drink comes out excellent.

Otherwise, the process, unlike most culinary “approaches,” is incredibly simple.

Currant juice: first preparation option

There are ongoing debates about the rules for preparing the drink. There are two ways, and both have their supporters and admirers. To begin with, we suggest you try blackcurrant juice, the recipe for which involves pre-squeezing the juice. Using it, a quarter kilogram of washed and sorted berries is lightly kneaded, after which they are ground through a sieve or pounded with an ordinary puree masher. If you used the second method, then the mass is collected in gauze and squeezed well so that the cake is almost dry. The juice is set aside, and the remaining blackcurrants are poured with a liter of water and boiled for three minutes from the moment of boiling. When the broth has cooled somewhat, it is strained, sugar dissolves in it (the amount depends on your preference for sweets) and combines with the juice. For taste, you can add a couple of mint sprigs to the broth while it cools. You can also acidify blackcurrant juice with fresh lemon juice. It is most often drunk chilled. But if you happen to get sick, a warm drink will be an ideal alternative to tired tea.

Currant juice: second preparation option

It also has its supporters, who believe that its use makes it possible to obtain a more tasty and rich blackcurrant juice. The recipe does not differ in composition: the only difference is in the processing of the berries. They are placed in water, poured at the rate of a liter per 150 grams of currants, and cooked over low heat for five to eight minutes. Then the currants are pulled out with a slotted spoon and the juice is squeezed out of them. Next, both liquids are drained, sweetened and drunk.

Apple-currant pleasure

People really approve of red and black currant juice. It is prepared in exactly the same way as drinking from one type of berry. But we suggest adding one more ingredient to the list: apple. The taste becomes so refined that it eclipses everything that was tried before. For a third of a kilogram of the berry mixture, take a large ripe apple, preferably from a hard variety. It is coarsely grated, filled with two glasses of water and covered with sugar to taste, and cooked for about five minutes. The juice is squeezed out of the currants; Cake can also be added to apple compote. The ingredients are combined - blackcurrant juice with pleasant additions is ready for consumption.

Vitamins for the winter

Compotes, preserves, jam are familiar and not very interesting. But a fruit drink made from fresh black currants, rolled up and opened in a timely manner at a gloomy time of year, will delight you with surprise and summer smells. Half a glass of sugar dissolves in a glass of boiling water. A sprig of thyme is also added here - for a brighter aroma - and cake from half a kilogram of currants. The syrup is boiled, which, when slightly cooled, is strained and merged with the previously squeezed juice. The hot fruit drink is once again passed through a double layer of gauze or a sieve, and a spoonful of honey, or even candied honey, is dissolved in it. The drink is poured into a sterile jar and pasteurized for a third of an hour - either the old fashioned way, in a saucepan with boiling water, or in a convection oven set at 120 Celsius.

Winter drink

Those who don’t like to bother with jars and sterilization will still not be left without vitamins in the cold. They will be quite capable of making frozen blackcurrant juice. The only thing you have to take care of in advance is to freeze the berries. Of course, you can “make up” a delicious drink from store-bought ones, but from frozen ones with your own hands, it will be one hundred percent natural, since you will definitely be sure of the quality of the raw materials. The currants are defrosted before cooking. The best solution would be natural thawing, so it will not lose either the aroma or the benefits it contains. The berries are crushed, ground, and juice is extracted from them. To make the process of extracting it somewhat easier, add a little water to the puree. The berry shells are filled with water and simmered over a fire without boiling for about a quarter of an hour. Next, the decoction is combined with juice and sweetened with honey or sugar. For a twist, you can mash a mint leaf into the fruit drink or add a drop of lemon juice.

step by step recipe with photos

It's no secret that the healthiest drink is fruit juice, especially if it's red currant juice. These berries contain a lot of vitamin C, a drink made from them strengthens the immune system, prevents diseases: influenza, ARVI, colds - it is healthy and tasty. It is especially recommended to give this fruit drink to children, but since red currants are very sour, be sure to add granulated sugar or honey when cooking. To preserve as much as possible all the benefits in the drink, first the juice is squeezed out of the berries, then the cake is brought to a boil in sweetened water and cooled, this creates a syrup, and the juice is added to the syrup after it has cooled.

Ingredients

  • 250–300 g frozen red currants
  • 2 tbsp. l. honey
  • 700 ml water

Preparation

1. Place the currants in a deep container - a bowl or salad bowl, bowl.

2. Pour in cold water to defrost the berries on top, and immediately salt it, since the berries in the water will become soft in 2-3 minutes and will no longer hold their shape.

3. Pour into a container with high sides so that nothing splashes around when pressing. Press with a boiled potato press or other special device to obtain juice.

4. Pour the juice from the berries into another container and leave for later.

5. Place the pulp in a saucepan or saucepan, add hot water and place on the stove, turning on medium heat. Since a significant part of the beneficial vitamins and minerals is lost during boiling, we will not boil the contents of the pan, but simply bring it to a boil, when a light foam appears on the surface of the liquid. The cake should not sink to the bottom.

6. Strain the hot liquid with the cake through a strainer and remove the cake - it has given up its color and beneficial vitamins, so we won’t need it anymore. Cool the hot liquid to room temperature for 1 hour, and then add honey or granulated sugar if there is no honey. However, with honey the drink turns out to be more beneficial.
