  1. Pour water over the chicken. Boil. It will take an hour to get a rich broth. Get the carcass. Add some salt to the broth.
  2. Chop the potato tubers. Place in liquid.
  3. Chop the carrots.
  4. You will need the onion in small cubes. Place the onion cubes in the pan. Pour in the oil. Fry. When it turns golden, add the carrots. Fry. Add to soup.
  5. Cut the meat. Return to the stew.
  6. To prepare the dumplings, mix baking soda and salt. Pour in the eggs. Cover with flour. Mix. Form blanks. Throw into soup.
  7. Cook for five minutes. Chop the greens. Sprinkle the food. Add spices. Add some salt.

When choosing a chicken, pay attention to its breast. It should not be too convex or enlarged. If so, the chicken was raised on hormones. The chicken breast should be round. Press down on the meat. The pressure dent should recover immediately. This is evidence that the meat is fresh.

The color of the meat of a young chicken should be pale pink, the skin should be tender and white, and the fat should be pale yellow. The smell should not be in doubt. The skin should be clean and not sticky under any circumstances. If you buy chicken in a store, pay attention to the packaging. It’s good if it is without damage and water inside.

Cooking sequence

Broth and frying

  1. Prepare vegetables for broth. Peel the onion and make a cut. Wash the carrots and cut them lengthwise into four pieces. Chop the parsley root (celery).
  2. Rinse the chicken thoroughly under cold running water, place in a saucepan, and cover with cold water.

  3. Add the onion, cut carrots, parsley root, peppercorns and bay leaf. Place the pan over medium heat and bring to a boil.

  4. When the broth boils, remove the foam with a slotted spoon. Reduce heat slightly and simmer until chicken is fully cooked.


    If you take a young chicken from the market, you need to cook it for a little over an hour. If old, then 2-3 hours. If you have a soup set or chicken parts from the store, then it will take you 40-50 minutes to prepare the broth.

  5. Prepare vegetables for soup. Wash and peel the potatoes, onions and carrots. Remove seeds from sweet peppers and wash tomatoes.
  6. When your broth is cooked, remove the vegetables; we won't need them anymore. Place the chicken in a separate bowl to cool. If necessary, strain the broth.
  7. Cut the potatoes into small cubes and add to the broth. Cook for 10 minutes.

  8. Place the tomato in the boiling soup for a few minutes. Then take it out and, when it has cooled a little, remove the skin.
  9. Place a frying pan on the fire and pour a little oil.

  10. Cut the onion into small cubes and place it in a heated frying pan. Pass a little.

  11. Grate the carrots on a coarse grater and add to the onions. Stir.

  12. Cut the pepper into strips, chop the peeled tomato and put it all in a frying pan. Stir and fry all the vegetables a little.

My mother prepares soup dumplings a little differently: she mixes one egg with sour cream, salt and soda, then adds about 100 grams of flour and kneads the dough. The dough needs to stand for a little (10 minutes), and then you can pinch off pieces with a spoon and add them to the soup. This is a quick cooking option.

If you want the dumplings to be perfect and the same size, roll out the same dough to a thickness of 0.5 cm and cut it into small squares or shape it into whatever shape you want (for example, make small round balls), and then add it to the soup.

You can also add grated cheese to the dumpling dough. You can also make potato dumplings for the soup if you wish. It turns out delicious too. To do this, you need to boil peeled potatoes (2 pieces), grate, salt, add softened butter (a tablespoon), flour (5 tablespoons) and an egg. Mix all this well and spoon the mixture into the soup with a teaspoon (as in my recipe).

Dumpling soup can be made with any broth you prefer, vegetable, chicken or meat. The dumplings are added to the soup, usually at the end of cooking. They cook in 5-10 minutes.

Ingredients (based on a three-liter pan):

400 grams of beef neck;

4 potatoes;

1 carrot;

3 onions;

30–40 ml. lean oil;

1 head of garlic;

Salt - to taste;

2–3 table. lie flour

When starting to cook, you need to wash a piece of beef neck well and boil it for an hour.

After the water boils, do not forget to remove the foam.

While the broth is cooking, we need to prepare the frying. To do this, chop pre-peeled garlic, onions and carrots.

Then, pour vegetable oil into a frying pan and fry the vegetables over low heat until transparent.

You shouldn’t overcook the vegetables, and you also need to stir the frying frequently.

When the meat is almost cooked, the broth must be salted and the chopped potatoes can be added to the pan.

Potatoes take about ten minutes to cook on average. During this time, we must have time to knead the dough for dumplings.

How to make soup dumplings from eggs and flour

They are easy to prepare. To do this, you just need to beat an egg in a deep plate with a fork, adding a pinch of salt to it.

Then add flour little by little and continue whisking with a fork. The dough should be without lumps and medium in thickness (as in the photo).

When the potatoes are ready, we need to drop the dough into the pan using a teaspoon. This needs to be done quickly, as the dumplings cook instantly.

At the last stage, pour the roast into the soup and let it boil again.

That’s it, a delicious homemade soup made with rich beef broth with tender egg dumplings is ready.

  1. Cut the mushrooms into thin slices and fry in vegetable oil, add salt.
  2. Add diced onion and grated carrots to the mushrooms. Fry the onion until the onion is transparent.
  3. Peel the boiled potatoes and mash them into a puree. Mix all the ingredients for the dumplings in a bowl - the dough should be thick and dense.
  4. Boil the fillet, then cut it into cubes. Return the meat to the boiling broth, add buckwheat and cook for 8-10 minutes.
  5. Add vegetables with mushrooms and bay leaf to the pan. Use a teaspoon to scoop out the dough and place it in portions into the boiling broth. Add herbs, salt and pepper. Cook for another 2-3 minutes until the dumplings are cooked through.

Cheese dumpling soup

The dish is light and at the same time satisfying, with a pronounced cheese aroma. It tastes best with chicken broth. Cheese dumplings are best prepared one time at a time. If you reheat the soup several times, the dough will become soggy and “float.”

Ingredients:

  • chicken – 500 g
  • potatoes – 4 pcs.
  • carrots – 1 pc.
  • onion – 1 pc.
  • water – 2 l
  • bay leaf – 1 pc.
  • salt and seasonings - to taste

Ingredients for the dough:

  • hard cheese – 100 g
  • egg – 1 pc.
  • chopped greens – 1 tbsp. l.
  • butter – 30 g
  • flour – 1.5-2 tbsp. l.
  1. Cover the chicken with water, add salt, and boil until cooked, skimming off the foam. If the meat is on the bone, then disassemble and return only the diced fillet to the pan.
  2. Peel and cut the potatoes and carrots into strips. Chop the onion into cubes. Place vegetables in boiling broth.
  3. Prepare the cheese dough. To do this, chop the cheese on a medium grater, combine it with chopped herbs, egg and butter, softened at room temperature. Gradually add flour, mix well. If the consistency is too thin, add more flour.
  4. Place the cheese dumpling dough in the refrigerator for half an hour to allow the butter to set and make it easier to form into balls.
  5. Roll small cheese balls with wet hands. Add to the soup 5 minutes before the end of cooking. As soon as they float to the surface, you can remove the pan from the heat. Let sit for 10 minutes and serve.
