Everyone's favorite dessert with airy delicate cream. It was invented by the Italians, but is prepared all over the world. Tiramisù means “take me up” in Italian. This may be due to the invigorating effect of coffee and cocoa included in the dessert. Or maybe the Italians mean an emotional state and this translation should be understood as “cheer me up.” However, it doesn't matter. The main thing is that Tiramisu is very easy to prepare in your home kitchen and delight your family and friends!

You will need:

  • Mascarpone cheese 250 gr
  • Savoyardi cookies 12 pcs
  • eggs 2 pcs
  • sugar 1 tsp
  • powdered sugar 3 tbsp.
  • cocoa powder
  • Martini glasses 4 pcs

I usually cook- without whipped cream and egg whites. This wonderful dessert can be prepared in portions and served in Martini glasses. Look how beautiful it is!

To prepare this beauty, you will need strong coffee. From it you will cook impregnation for Tiramisu. You can brew coffee, use an instant drink, or simply pour boiling water over finely ground coffee .


1 tsp coffee and 1 tsp. sugar, pour boiling water (half a glass) and cool.

Add 1 tbsp to cold coffee. liqueur. I usually add Amaretto, but it can be replaced with cognac.

Impregnation for Tiramisu is ready. Now handle the cream and, above all, carefully wash the eggs since the dessert is not cooked. Separate the yolks from the whites. This can be done using a special separator or by pouring the egg from one half of the shell to the other.

Beat the egg whites with a mixer into a strong foam, so that the whipped mass does not drip from the whisk.

Add to proteins 1 tbsp. powdered sugar and continue whisking until foamy.

Now beat the yolks with 2 tbsp. powdered sugar until whitening and increasing in volume. The mixer whisk does not need to be washed.

Mascarpone cheese Sold in different packages. For this version of Tiramisu it is convenient to take a small package 250 gr.

Combine Mascarpone with whipped yolks and whisk. The mixer whisk does not need to be washed.

Add 1 tsp to the cream. liqueur and beat again.

Mix the cream with the whipped egg whites, stirring gently with a spatula or spoon.

Cream for Tiramisu ready.

Savoiardi cookies also comes in different packages and looks like this:

You will need 12 sticks - 3 Savoyardi sticks per glass: Break 2 pieces into pieces and leave 1 piece whole for decoration.

Start assembling the dessert. Place it in a glass Savoyardi stick. Place at the bottom of the glass two broken into 3-4 parts Savoiardi sticks. Pour coffee impregnation - 4 tsp. Using a spoon, carefully fill the glass with cream to the very top.

Do this with all the glasses.

Tiramisu is always dusted with cocoa powder on top. It is convenient to sprinkle through a tea strainer.

But before you do that, put on dessert. refrigerate for at least 4 hours, preferably overnight, and sprinkle with cocoa powder before serving. If you sprinkle it right away, the cocoa will get soggy in the refrigerator and lose its velvety effect.

Cream
Separate the egg white from the yolk.
Beat the whites with a mixer, gradually pouring two-thirds of the total volume of powdered sugar (about 70 grams) under the mixer blades.
The whites should be whipped to soft peaks.




Remove the cords (chalaza) from the yolk.




Beat the yolk with the remaining powdered sugar (~30g) until white.




Place Mascarpone in beaten yolk.




Mix at the lowest speed of the mixer blades.




In three additions, add the whipped egg whites into the resulting mass.




Stir with smooth movements only with a spoon so as not to destroy the air bubbles.
The cream should be neither solid nor liquid; its consistency should resemble thick condensed milk.




Dessert assembly
Brew strong coffee, cool it to room temperature and pour in Amaretto liqueur.
(The second preparation option is to stir the liqueur into the cream, not into the coffee.)




Using a fine-toothed knife, cut (or rather, file) one Savoyardi stick into pieces. Place them tightly on the bottom of the glass.




Sprinkle 4~5 teaspoons of coffee evenly over the cookies.




Place 1~1.5 tablespoons of cream (approximately 40g) on ​​the moistened cookies and smooth them out.




Slice a second Savoyardi stick and place a second layer of cookies.
Pour over the coffee.
Add a second layer of cream.
Then cut, place and soak the third layer of cookies.




In the same way, collect 2 more glasses of dessert.
Distribute the remaining cream evenly among glasses.

Cooking

1. Beat the cream with a blender (you can add a little strawberries), then add sour cream, beat again. It turns out to be a very thick cream.

2. Add the yolk, grated with powdered sugar, and mix everything until smooth. Soak the savoiardi sponge cake (very quickly) in a solution of coffee and cognac. Place 1 tablespoon of cream in a glass, then 1 savoiardi sponge cake soaked in coffee.

4. Place the tiramisu in a glass in the refrigerator for a couple of hours. Before serving, decorate with cocoa and strawberries.

60gr. granulated sugar

60 gr. instant coffee

50 gr. cocoa

600 gr. whipping cream 33%

250 gr. cream cheese "Mascarpone"

5 yolks

60 gr. granulated sugar

1. Cook the yolks with sugar in a water bath, stirring constantly, until the sugar is completely dissolved

2. Add chopped Mascarpone cheese, vanilla sugar and when the mass becomes homogeneous, remove from the stove and cool.

3. Whip the cream until fluffy.

4. Combine with the egg mixture and mix.

5. Cook from 60 gr. sugar and 60 gr. water sugar syrup. When it cools down, add coffee (you can add coffee liqueur - 50 grams, I didn’t have any liqueur, since children took part in the eating).
