The most delicious apple charlotte. How to make a fluffy apple and banana pie

Charlotte is rightfully considered the favorite dessert of both those who love to eat delicious food and those who love to stand at the stove all day long. The first people like it because it has a great taste and aroma, and the second - for its ease of preparation. And indeed, even the most inept housewife cannot spoil this dish, so few ingredients are included in its composition. Interestingly. Although preparing charlotte is as simple as shelling pears, in fact this pie has a long and very interesting history. Our task, of course, is to acquaint you with the recipes for its preparation, and not with its origin. However, before I tell you how to bake charlotte, I would still like to say a few words about what this delicious apple dessert is.

Who came up with it?

It is impossible to answer this question unequivocally. The age of charlotte dates back centuries, but at any time it was a simple but incredibly tasty pie with apples. It was originally prepared from slices of bread, not only white, but also black. What were they cooking there! The pieces were soaked in syrup made from apples, pears or berries and laid in layers, leaving to soak for a while. And they called it nothing more than pudding. In general, the dish received the name “charlotte” from the name of the wife of King George III. And some sources claim that the pie was invented by an unknown and hopelessly in love chef from England and named it in honor of his unattainable lover. There is also such a version: the name of the dish was actually invented by the Russians, back in the nineteenth century. At that time, many Germans lived in St. Petersburg, whose wives the townspeople called Charlottes. The Frau were extremely thrifty, so they prepared bread pies for their husbands. And the Americans generally (probably out of habit) announced that they invented charlotte. And for what reason the pie was named, they didn’t even bother to explain. By the way, Stalin really loved this pie. To such an extent that, in order not to be declared a fan of foreign cuisine, he ordered the pie to be called - no less than babka in Russian. However, what difference does it make who, how and when called this delicate and tasty dessert. The main thing is that our compatriots really like it, housewives cook it with pleasure, each modifying it in their own way, and grateful eaters admire it. However, before we talk about how to bake charlotte in various ways, a few words about the classic version. What if someone finds it useful?

Classic recipe

Which, by the way, despite all the twists and turns with the name, is still considered English. So, classic charlotte. Pieces of bread (preferably white) need to be soaked in butter (butter, heated and mixed with sugar), then placed on the bottom of a baking dish, topped with baked, mashed or boiled apples. Then comes another layer of bread. And like this, alternating the bun with apples, fill the form to the very top. The last layer is bread. Bake in the oven until the top of the pie is golden brown. You can decorate this charlotte with anything - ice cream, whipped cream, berries.

The easiest way

Preparing charlotte according to this recipe couldn’t be easier. Stocking up:

How to cook

Beat the eggs very carefully with sugar, add flour to them, and then beat them in again. It is not necessary to peel apples. We cut them arbitrarily - into cubes, slices, etc. Take a baking dish, grease it with oil, put apples there, fill everything with the resulting dough. Since this charlotte with apples is baked in the oven, we send it there for 30 or 40 minutes (until a golden crust appears on top of the pie). The oven must be preheated. Here is a simple recipe for charlotte.

Revealing secrets

As you know, charlotte with apples is traditionally prepared. But... To make it really tasty, the apples must be sour. They are the ones that go best with the sweet taste of a delicate biscuit. Therefore, if for some reason you don’t have Antonovka or another similar variety on hand, you can dilute the sweet apples with sour berries or plums.

To make the dough good, it is advisable to separate the whites from the yolks. And first beat the first with sugar and flour. And then, at the end of the process, add the yolks into the dough. A sponge cake prepared in this way will never sag, and the cake itself will turn out tender and fluffy.

How to bake charlotte correctly? Many housewives make a mistake at this stage. Remember! Be sure to carefully preheat the oven for at least fifteen minutes. And only then send the pie into it. The optimal temperature for cooking is considered to be one hundred and eighty degrees. Baking time is from thirty to forty minutes. But! Under no circumstances should you open the oven while the charlotte is cooking! Otherwise, you will end up with a sticky and inedible mass.

To prevent the charlotte from burning in the oven, you can use one trick. Place the same one under the baking sheet with the pie, but with salt. Thanks to this trick, the charlotte will bake evenly and will never burn.

And one last thing. Classics are, of course, sacred. But there is no need to be afraid and add something different to each recipe. As for charlotte, various flavorings such as vanillin, cinnamon, etc. are quite appropriate in this dish, which will diversify and make even better the already familiar taste of this amazing pie.

Charlotte on kefir

Remember how we recently said that if there are no sour apples, you can add berries or plums to the pie? But there are some people who prefer the classic version of the sponge cake - only with apples. What to do in this case? As a way out, we offer the option of preparing dessert using kefir dough. It is this fermented milk product that is designed to dilute the sweetness of apples. To prepare this pie we will need:

Preparation

The butter needs to be softened, then carefully beat it with sugar, gradually adding one egg at a time to the mixture. Add kefir, then flour (preferably sift it), baking powder. Add salt. Mix the resulting dough with chopped apples, pour the whole mass into a greased and sprinkled with breadcrumbs mold. Bake traditionally - in the oven, at one hundred and eighty degrees, but a little longer - forty-five minutes.

Variations on a theme...

If desired, you can replace kefir with sour cream. This type of pie is also called Tsvetaevsky. Based on the fact that Marina Tsvetaeva allegedly loved to cook it. And treat your guests to such charlotte. True, this version can hardly be called reliable, because, according to contemporaries, the poetess did not particularly gravitate toward cooking. But the name turned out to be beautiful, and therefore it stuck. And quite popular. So, we think we need to say at least a few words about how to cook charlotte in the Tsvetaev style. Why we stock up:

  • flour (you will need one and a half cups);
  • sour cream (also one and a half tbsp.);
  • butter;
  • slaked soda;
  • sugar (two hundred grams);
  • one egg;
  • a kilogram of Antonovka (or other, but certainly sour apples).

Cooking process

From flour, half a glass of sour cream and butter, not forgetting to add slaked soda, you need to carefully knead the dough. Then put it in the refrigerator for about thirty minutes. Then take the mold, grease it with oil, and then “stick it” with dough, leaving “allowances” for the edges. In this case, it is advisable to peel the apples, then cut them into thin slices and place them on the dough. Mix the remaining glass of sour cream, egg and sugar, pour over the apples. Use the “allowances” to form beautiful sides, after which you can send the cake to an already preheated oven, where it is baked for about an hour at one hundred and eighty degrees. This charlotte is served cold. They say it tastes better this way.

In principle, there are a lot of recipes for making apple pie. And not only apple. Charlotte (photos of it are presented in the article) turn out no less tasty with berries, apricots, and even cabbage or chicken. In addition, you can cook it not only in the oven, but also in the microwave, and in the dream of all current housewives - a slow cooker. More on the last method below.

Charlotte in a slow cooker

I must say that in the miracle pan the charlotte turns out simply amazing. And all because of the features of the multicooker. Thanks to many modes, the cake is baked perfectly, and the non-stick coating of the bowl prevents it from burning. You can prepare charlotte in this unit according to the recipes described above and others. We will discuss one of them now.

Caramelized charlotte

The name is somewhat inaccurate, because only the top will be caramelized, but, as you know, you can’t erase the words from the song.

Ingredients:

  • eggs (three or four pieces);
  • sugar (a glass plus two and a half spoons);
  • flour (also a glass);
  • butter (fifty grams);
  • apples (five or six pieces);
  • salt;
  • cardamom, cinnamon or vanilla - according to preference.

Cooking

Set the “Baking” mode and put butter in the bowl. After it melts, you need to take a brush and smear it on the walls. Then we fill two with the floor. spoons of sugar (very good if it is brown). Dissolve it by constantly stirring with a spatula. The apples need to be cut into slices, sprinkled with any of the selected flavors (vanilla or anything else to taste), mixed, and then placed in a thin layer on the bottom. Then fill it with a layer of dough. To prepare the latter, you need to beat the eggs with sugar, gradually adding flour to the mixture. Then another layer of apples, then a layer of dough. And so on to the top of the bowl. Close the multicooker and cook in the same “Baking” mode. Cooking time depends on the power of the unit. This is usually from forty to sixty minutes. After the signal rings, indicating the end of the process, you need to wait another ten minutes, then open the multicooker and, turning the bowl over the dish, take out the pie.

How to serve

In principle, charlotte is a dish that is so tasty in itself that it does not require any additional ingredients. It is enough to offer a cup of tea or coffee with the cake. However, you can diversify the dessert. This aromatic pie goes great with, say, ice cream. Or with sour cream, which can be prepared quite quickly. Why do you need to beat a glass of rich sour cream with a mixer, after adding a few tablespoons of powdered sugar and a bag of vanillin to it. By the way, except for Tsvetaevskaya, other types of charlotte are served hot - just ten minutes after the end of cooking.

Perhaps we can end here. However, in the end I would like to offer a recipe for, so to speak, an alternative charlotte. Not with the usual apples, but with a more substantial filling.

Hearty charlotte

To prepare this somewhat unusual pie, we stock up on:

  • raw and boiled eggs (two pieces each);
  • mayonnaise (three tablespoons);
  • flour (100 g);
  • butter (40 g);
  • sugar (one tsp);
  • cabbage (400 g);
  • onion (1 pc.); salt.

How to cook

We will make the pie in a slow cooker. We put it in the “Baking” mode, put the butter in the bowl, as soon as it melts, add the finely chopped onion. Simmer, stirring, until soft. Then add finely shredded cabbage and coarsely grated eggs. Then fill the mass with dough made from eggs beaten with sugar, mayonnaise and flour. Mix everything, leave to cook in the same mode for an hour or a little more. If you wish, you can take not white cabbage, but Chinese cabbage. Or, let's say, colored. Instead of mayonnaise, put sour cream.

In principle, charlotte is a dish with which you can experiment endlessly. Our housewives came up with a great many variations on this theme. So don't be shy, join the ranks of innovators and create! Who knows, what if you come up with some kind of your own version of this pie, which - and why not - grateful gourmets will call it after your name.

Each housewife has her own baking secrets, which has contributed to the emergence of a large number of delicacy recipes. Apple pie is combined with a variety of fillings; in some you can even find a cocoa-based filling.

Calorie content of charlotte

The issue of calorie content cannot be called accidental, because many people love pie.

Classic charlotte has the lowest calorie content - 160 kcal per 100 grams. Provided that the composition includes only apples, eggs, flour, sugar and no margarine. For comparison, for a dessert with sour cream, the energy value increases to 220 kcal per 100 grams.

How to knead dough correctly

Charlotte is a common treat, the taste of which largely depends not only on the filling, but also on the dough, which is kneaded from the simplest ingredients, but not every cook turns it out light and airy.

Ingredients:

  • Sugar – 1 glass.
  • Flour – 1 cup.
  • Eggs – 3 pcs.
  • Vinegar, soda.

Preparation:

  1. In a deep bowl, combine the yolks with sugar and grind until they turn white.
  2. Beat the whites thoroughly with a whisk until a thick foam appears. The masses are carefully mixed, vanillin, soda and vinegar, and sifted flour are added. The correct result is a viscous mixture.
  3. To prevent the dessert from burning, place regular parchment on the bottom of the baking dish.
  4. To preserve the splendor, place it in a preheated oven and do not open the door until done.

Some housewives make the dough a little differently. When kneading, they do not separate the eggs and beat the mass with a mixer. Others solve the fluffiness problem with baking powder. The main thing is that the dough rises high. This is the main secret of a delicious pie.

  2. Add sugar and vanilla, stir. Gradually add flour in small portions. Add baking powder and stir.
  3. Cut the fruit into medium-sized cubes, cubes or slices. Sprinkle the filling with vegetable oil and sprinkle with sugar to keep its shape when baked. Place the prepared fruits into the flour base.

  5. Pour the dough into the mold, smooth it out, and place it in an oven preheated to 180 degrees for half an hour. A toothpick will help determine readiness. If after the puncture there is no dough left on it, the dessert is ready.
  6. Remove the finished pie from the oven and, after cooling, transfer it to a large flat dish. I recommend sprinkling with cocoa powder or powdered sugar.

Be sure to sprinkle with powdered sugar before serving. If one charlotte is not enough for a complete tea party, make a sausage from cookies and cocoa.

Apple pie with kefir

Apple charlotte with kefir is another option for delicious pastries. The recipe has several features - the use of warm kefir and sweet fruits. The first factor promotes a rapid reaction with baking powder and has a positive effect on fluffiness, and the second one compensates for the sour taste of the dairy product. Instead of kefir, you can use yogurt, the result will be just as tasty and fluffy.

Ingredients:

  • Kefir – 1 glass.
  • Flour – 2 cups.
  • Eggs – 3 pcs.
  • Sweet apples – 5 pcs.
  • Sugar – 1 glass.
  • Soda – 1 teaspoon.

Preparation:

  1. Rinse the apples with water, peel, core, and cut into thin slices.
  2. Mix sugar with eggs, beat, add soda. Add kefir to the resulting mixture.
  3. Add sifted flour to the dough, mix carefully. Do not stir for a long time or make intense movements, otherwise too much air will escape.
  4. Pour half of the batter into a greased pan and place the filling on top. Sprinkle with cinnamon and sugar if desired. Fill with the remaining dough.
  5. Send the kefir preparation to bake for 45 minutes at 180 degrees. If you're short on time, use a round cake pan. It will reduce baking time.

For decoration, use powdered sugar, coconut flakes, fresh berries, sprinkles or whipped cream.

Original version with sour cream

The classic version of charlotte is an airy sponge cake made from eggs, milk and fruit. The disadvantage of the original dessert is that it is only good when served hot. Later it falls off and loses its taste. The modern version has no flaws and contains sour cream.

Ingredients:

  • Sour cream – 200 ml.
  • Sour apples – 5 pcs.
  • Flour – 1 cup.
  • Eggs – 1 pc.
  • Soda – 0.5 teaspoon.

Preparation:

  1. Wash the fruit, peel, core, and cut into slices. If they are too sour, add a little sugar.
  2. Combine sour cream with soda. In a separate container, beat sugar and egg. Mix.
  3. Add sifted flour to the resulting mixture and mix well. The dough should be without lumps, like for pancakes.
  4. Place half the apples on the bottom of the greased pan and pour some of the dough on top. Repeat the process. This will make the best apple layer pie.
  5. Bake at 180 degrees for 40 minutes. A toothpick will help make sure it is ready.

Video recipe

Before serving, garnish with powdered sugar and crushed walnuts. Please note that low-fat or too fatty sour cream is not suitable. In the first case, a sour product is obtained, and in the second - porridge. I think 10-20% sour cream is the best option.

Cottage cheese pie

If there are some apples and fresh cottage cheese in the refrigerator, why not make a wonderful dessert? Apple pie with cottage cheese will appeal to both adults and little gourmets.

Ingredients:

  • Cottage cheese – 250 g.
  • Apples – 3 pcs.
  • Eggs – 4 pcs.
  • Flour – 3 tablespoons.
  • Butter – 150 g.
  • Sugar – 300 g.
  • Soda – 0.5 teaspoon.

Preparation:

  1. Cut the butter into small pieces, add 100 grams of sugar. Grind the mixture until the sugar is completely dissolved. Add cottage cheese and another 100 grams of sugar to the butter mass, mix.
  2. Beat the chilled egg whites with 50 grams of sugar with a whisk or mixer. Grind the yolks with the remaining sweet powder. Add the yolks and beaten whites into the curd mass and mix. Add flour, slaked soda, mix.
  3. Peel the fruits, cut into cubes, add to the dough, mix. Place the resulting mass in a pan with a parchment-lined bottom.
  4. Bake for 30 minutes at 180 degrees. Sprinkle the finished charlotte with powdered sugar.

Like the previous options, charlotte with cottage cheese is prepared at home quickly and effortlessly. For those who cannot imagine a diet without cottage cheese dishes, I recommend trying aromatic cheesecakes.

Quick charlotte with milk

I often use the recipe with milk. It's simple, quick and doesn't require fancy ingredients. The taste and incredible tender filling of charlotte bring a lot of joy and lift your spirits.

Ingredients:

  • Egg – 1 pc.
  • Milk – 1 glass.
  • Sugar – 1 glass.
  • Apples – 3 pcs.
  • Flour - 3 cups.
  • Soda – 1 teaspoon.
  • Vegetable oil – 3 tablespoons.

Preparation:

  1. Knead the dough. Beat eggs into a deep bowl, add sugar, beat well. Add slaked soda, pour in milk, stir, gradually add flour and mix again.
  2. Peel the washed fruits, remove the core, and cut into medium pieces.
  3. Place the filling on the bottom of the greased pan and pour the batter on top. Leave the workpiece for 10 minutes.
  4. When the time is up, place in the oven. You need to bake at 180 degrees for 40 minutes.

If the fruit has a soft skin, I advise you not to remove it. It contains many substances that are beneficial for the body and immunity. Use what you like to decorate. Powdered sugar, cream, or other toppings will do.

Diet charlotte without eggs

If you watch your figure and strictly control the number of calories consumed per day, pay attention to the dietary option. Although it does not contain eggs or flour, its taste is not inferior to its more high-calorie counterparts.

  • flour (you will need one and a half cups);
  • sour cream (also one and a half tbsp.);
  • butter;
  • slaked soda;
  • sugar (two hundred grams);
  • one egg;

  • eggs (three or four pieces);
  • sugar (a glass plus two and a half spoons);
  • flour (also a glass);
  • butter (fifty grams);
  • apples (five or six pieces);
  • salt;

  • raw and boiled eggs (two pieces each);
  • mayonnaise (three tablespoons);
  • flour (100 g);
  • butter (40 g);
  • sugar (one tsp);
  • cabbage (400 g);
