  • one fresh chicken egg;

  • 20 grams of hard cheese;

Step-by-step cooking process

  1. All proportions of ingredients are given per serving. You simply multiply them by the number of members of your family.
  2. Grate a piece of hard cheese on a coarse grater and transfer it to a suitable container.
  3. Wash several sprigs of any greenery (I used parsley), dry and finely chop.
  4. Place thin pita bread (it can be either round or rectangular) on a suitable shallow dish. , read on our website.
  5. Advice. If the pita bread is dry, grease it with water using a silicone brush.
  6. Beat one chicken egg into a small bowl, beat well with a fork or whisk, and pour into the middle of the pita bread.
  7. Using a silicone brush, coat the edges of the pita bread with egg: then the egg will not leak out during frying.
  8. Salt the egg, sprinkle it with herbs and grated cheese on top.
  9. If the pita bread is round, then roll it into a triangle. If you have a square pita bread, roll it into an envelope.
  10. Add oil (butter or vegetable) to a well-heated frying pan.

Preparation

1. Wash the eggs and break them into a deep bowl. Lightly beat with a fork or hand whisk (no mixer needed) until the eggs are combined into a smooth mixture.

2. Pour milk over the eggs. Mix with the same whisk.

3. Add finely chopped greens. Add a little salt and ground pepper to taste. Stir.

4. Now you will need a sheet of pita bread of any shape. It can be prepared at home or bought. Line a high-sided pan with this sheet. The edges should hang down. Add half the butter to the bottom of the pita bread.

5. Carefully pour the omelette mixture into the center.

  3. Fry one side until golden, turn it over and immediately break an egg onto it. Spread it over the surface with a fork, pepper, season and sprinkle with grated cheese.
  4. Without waiting for everything to set, we wrap the edges of the pita bread inward, forming a square or triangle, or simply folding it in half.

If it seems like it won’t be possible to quickly spread the egg over the pita bread and immediately grate the cheese, we’ll prepare everything in advance.

  • While the pita bread is frying on the first side, whisk the egg in a cup and rub the cheese into it. Stir and pour the prepared egg mixture onto the fried side.
  • For those who like juicier dishes, we recommend adding 1-2 tsp to the cheese-egg mixture. mayonnaise.
  • It’s good to add fresh chopped herbs not only on top of the finished omelet in pita bread, as in the photo, but also inside, mixing dill and parsley with a raw egg.
  • For anyone who wants to get lunch or a full dinner, we recommend flavoring the filling with chopped ham or sausage. We will need literally a couple of pieces - chop them finely and add them to the raw egg and grated cheese during the cooking process.

  2. In a separate cup, make an omelette as usual - combine 1 egg with 3 tbsp. milk, salt and pepper.
  3. Pour the egg mixture over the vegetables and fry covered until cooked.

  3. Since we don’t need a fluffy omelette, we immediately close it with a lid and keep it on medium heat for 4-5 minutes.
  4. While the omelet is cooking, wash the lettuce and cut the smoked chicken breast or ham and cheese into slices.
  5. Place the pan without opening it on a cold surface and after 3 minutes carefully remove the omelette in one piece.
  6. We transfer it to a plate to let it cool, and if we plan to serve the rolls warm, immediately place them on the unrolled pita bread.
  7. Then layer the slices of cheese first, then ham or chicken, and finally add lettuce leaves.
  8. We twist the roll tightly enough so that it does not unwind and cut it into bars 4-5 cm wide.

Serve the omelette roll with lavash, garnished with homemade mayonnaise, mustard or sprinkled with herbs and chopped egg.
