Elderberry juice with lemon:
- 1 kg of black elderberries;
- 2 tbsp. granulated sugar;
- 1 tbsp. water;
- juice of 1 lemon.
Rinse the berries, add water and boil for 15 minutes. Then squeeze the juice from the elderberry, add the juice of one lemon and granulated sugar and cook for another 10 minutes.
Black elderberry kvass:
- 8 liters of water;
- 12 elderberry inflorescences;
- 4 lemons;
- 1 kg of granulated sugar.
Wash the lemons, dry and cut into slices. Boil water with granulated sugar, cool, put lemons and elderflowers in it and leave for fermentation for a week. After the specified time, pour the drink into a bottle with a screw cap and put it in a cool place. This kvass should be consumed as soon as possible; it cannot be stored for a long time.


Aromatic drink made from elderberry juice with spices:
- 1 tbsp. water;
- 1 tbsp. elderberry juice;
- 1 lemon;
- 2 tbsp. honey;
- 1 clove bud;
- 1 cinnamon stick;
Rinse and dry the lemon. Cut the zest from half a lemon and squeeze the juice from the pulp of the whole fruit. In a saucepan, mix elderberry juice with water and lemon juice, add honey, zest and cloves with cinnamon. Mix everything well, then bring to a boil over medium heat and remove from the stove. Black Elderberry Syrup:
- 1 liter of elderberry juice;
- 0.5 kg granulated sugar;
- juice of 1 lemon.
Mix elderberry and lemon juices, add granulated sugar and bring the mixture to a boil in enamel pan. When heating, stir constantly and skim off any foam that appears. Pour the finished syrup into bottles.


Black elderberry wine:
- 4 liters of water;
- 1 kg of granulated sugar;
- 10 elderberry inflorescences;
- 2 lemons;
- wine yeast.
Wash the flowers, separate them from the stalks and leave them to dry briefly from the water (you can tip them into a colander). Prepare a syrup from water and sugar, cool until warm and pour it into the flowers in a glass bottle. Wash the lemons, cut into slices (you don’t need to peel them), remove the seeds from the pulp and place the slices in syrup with flowers. Add wine yeast there. Cover the bottle with gauze and leave for 7 days to ferment. After the specified time, carefully drain the liquid, strain it and pour it into a clean bottle. Build a water seal and leave the wine to ferment. When the fermentation process is over, pour the drink into bottles with screw caps.
Refreshing elderberry drink:
- 1 liter of water;
- 2 elderberry inflorescences;
- 4 tsp. honey;
- juice of half a lemon;
- a sprig of lemon balm.
Dissolve honey in water. Place elderflower flowers, lemon balm in a glass jug, add lemon juice and fill everything with water and honey. Then put the drink in the refrigerator for a day.

Healing drinks with elderberry

General strengthening drink:
- 1 liter of hot water;
- 5 tbsp. honey;
- 2 tbsp. dried elderberries
Pour over the berries hot water, bring to a boil, boil for about 5-6 minutes and add honey. Then strain. Consume during the day, moderately hot.
Elderberry tea for colds:
- 10 g black elderberries;
- 10 g chamomile flowers;
- 10 g linden flowers;
- 10 g peppermint.
Mix the above ingredients, take 1 tablespoon of the mixture and brew it with 1 glass of boiling water. Cover the drink with something warm and leave to steep for half an hour. Then strain and drink hot.
Healing drink from black elderberry:
- 250 ml vodka;
- 1 tsp. buds or flowers of black elderberry.
Fill the buds with vodka and leave to steep for a week. Take the finished tincture 30 ml before bed for 2-3 weeks. Then you need to take a break for 2 months and you can repeat the course of treatment. It is especially good to use this medicine in combination with elderberry baths (15 minutes after the bath).

WITH CITRIC ACID

If you want to get a lot of kvass from elderberry inflorescences or berries at once, use the recipe for 10 liters:

  • Sugar - 1 kg;

  • Water (mineral without gas, settled or from an artesian well) - 1 large bucket.

Soak thoroughly washed inflorescences in a bucket of water and add sugar and citric acid. Cover the dishes with multi-layers of gauze or a clean rag and wait 2 days. On day 3, filter the liquid and pour into brown plastic bottles. Take the container into a dark room for 40 days. From day 41, drink kvass at any time.

OPTION WITH MINT

Dissolve 300 g of sugar in 3 liters of water and boil. Add 1 tsp to the sweet liquid. citric acid and pour the syrup into a bowl with elderflowers and mint sprigs (100 and 5 g, respectively). Let future kvass ferments for 5 days, but visit it every morning and stir it.

On day 6, strain the drink and pour it into a convenient glass container that can easily fit in the refrigerator. The lids on the dishes should fit tightly so that air does not get inside. This drink is useful for bloating and upset stomach. nervous system.

KVASS FROM ELDERBERRY AND LEMON FLOWERS

For 3 liters of water take:

  • Granulated sugar - 300 g;
  • Inflorescences - half a glass;
  • Citric acid - 1 tsp;
  • A small lemon weighing about 100 g.

Weld sugar syrup in 5 minutes and dissolve in it lemon powder. Cool. Then chop the lemon along with the skin as finely as possible and remove the seeds. Pour syrup over the citrus and flowers and cover with a lid. Kvass should steep for 4 days, but it should be shaken daily. After filtering the drink, it is bottled, leaving a little space at the necks.

When you start tasting, do not shake the dishes. Otherwise, the kvass will “shoot” like champagne. Store the drink in the refrigerator or basement for no longer than a week so that it does not have time to lose its taste.

For 3 liters of filtered water, take 200 ml of sugar, 2 cups of black elderberry flowers, 30 grams of sour cream. All products are thoroughly mixed and left to ferment in a dark place for about 14 days.

  • sugar – 1.5 kg;
  • raisins – 1 kg;
  • lemon – 2 pcs.;
  • alcohol yeast – 100 g;
  • water – 5 l.

Cooking technology:

Wash the elderberry flowers and separate them from the stalks. Let them drain thoroughly and fill with warm water, previously boiled and diluted with sugar.

Cut the lemon into slices (remove the seeds) and, together with the washed raisins and alcoholic yeast, put it in a bottle filled with elderflower syrup.

After fermentation is complete, pour the liquid into bottles, tightly sealed with corks. Wine must be stored in the refrigerator or cellar.

You will need:

  • elderberry inflorescences – 10 pcs.;
  • sugar – 500 gr.;
  • wine vinegar – 1.5 tbsp. spoons;
  • zest and juice of 2 lemons;
  • water – 1.5 l.

Cooking technology:

Mix all ingredients in one bowl, heat to a boil (but do not boil) and leave to steep for 48 hours. Stir the infusion periodically.

Strain the infusion. Pour the resulting drink into plastic bottles and put in a cool place for a couple of weeks.
