Ingredients:

  • Chicken legs – 1 kg.,
  • Pumpkin – 300-400 gr.,
  • Spices – 1 teaspoon,
  • Balsamic vinegar - 3 tbsp. spoons,
  • Apple cider vinegar – 2 tbsp. spoons,
  • Salt – 1 level coffee spoon,
  • Garlic – 3 cloves,
  • Onions – 2 pcs.,
  • Refined sunflower oil – 80-100 ml.

Any parts of the chicken for baking that you choose should be checked for feathers, and then be sure to rinse with cold water. Before marinating, it is advisable to pat the meat dry with napkins or a paper towel. It is advisable to cut whole chicken legs, consisting of thigh and drumstick, into two parts at the joint. Today I will bake chicken thighs with pumpkin.

Peel a piece of pumpkin and remove seeds. Cut the pumpkin pulp into cubes approximately 2 by 2 cm in size.

Peel the onion and cut it into rings. Cut the onion rings in half. And in half again. The end result should be quarter rings.

Let's move on to the next stage - preparing the marinade. To do this, pour sunflower oil into a bowl.

Add spices.

There are no strict rules for choosing them for marinating chicken. You can buy ready-made chicken or chicken spices, or mix your favorite spices. Most often I prepare spices for meat and fish myself. In this recipe for baking chicken with pumpkin in the oven, I used a spice mixture of paprika, black pepper, curry, and dry adjika.

Pour in balsamic vinegar, but do not confuse it with plain grape vinegar. Balsamic vinegar is very sweet and thick, while ordinary grape vinegar is very close in consistency and taste to table vinegar, but at the same time differs from it in its ruby ​​color and characteristic grape smell. If you don't have it, then replace it with a teaspoon of honey.

Peel the garlic into the chicken marinade and squeeze it through a press.

Pour in apple cider vinegar.

Pour the resulting spicy marinade with vegetable oil, vinegar and spices over the chicken legs (drums, wings or breast). At the same time, leave a little marinade for pickling vegetables. Use your hands to coat the chicken pieces with the marinade until they are completely coated. Combine pumpkin and onion in a bowl. Pour marinade over them. Stir.

Place chicken thighs in a baking dish.

Heat the oven to 180C. At this temperature, vegetables should be baked in the oven for at least 35 minutes. During baking, chicken and vegetables must be watered with the juice formed at the bottom of the pan. Make sure the chicken is done by piercing it with the point of a knife. If clear juice appears instead of blood, it means it is already well baked and you can safely remove it from the oven.

To prepare the dish, you need to choose a beautifully shaped pumpkin. The optimal size is about 20 cm in diameter. You can use a larger pumpkin to accommodate more pieces of chicken and vegetables. However, it takes a long time to bake a large pumpkin, and the dish may fall apart when serving.

To fill the pumpkin, you can use boned legs, cut into pieces. Or you can remove fillets from the legs. But when using pieces with a bone, the filling will be thicker and more flavorful due to the gelling substances.

Cut the legs into two parts - drumstick and thigh. If fillet is used, it must be removed in large pieces. Salt and pepper the legs, fry in vegetable oil until a light crust appears. Leave the fried chicken to cool.

Let's wash the pumpkin. Let's step back 5 centimeters from the tail and cut off the cap. Using a spoon, scoop out the seeds and fibers. Then take out some of the pulp. It needs to be cut with a knife and taken out using the same spoon. You need to be careful not to pierce the pumpkin all the way through, otherwise the juice will leak out through this hole.

As a result, the pumpkin will look like a pot. It is necessary to salt the walls from the inside and lubricate them with vegetable oil.

Wash the tomatoes, cut them into halves, chop the onion into thin half rings. We clean the bell pepper from seeds and cut it into fairly wide strips. Chop the garlic and fresh herbs.

Place a layer of onion at the bottom of the pumpkin pot, then add fried chicken, tomatoes and peppers. Sprinkle with salt, fresh herbs and garlic. Alternate layers of chicken and vegetables until the squash pot is full. You need to act carefully so as not to damage the walls of the pumpkin.

Spread two large strips of foil on a baking sheet, placing them crosswise. Place the stuffed pumpkin in the center. Pour the oil in which the chicken was fried into the pumpkin. Cover the pumpkin pot with a lid and wrap the pumpkin in foil, squeezing tightly. The pumpkin tail should also be wrapped in foil to prevent it from burning. Bake at 160 degrees for about 2 hours. To make sure the pumpkin is ready, you can try to pierce the top of the fruit with a toothpick. If the stick easily enters the pulp, it is ready.

Carefully remove the pumpkin from the oven and unwrap it. You need to act carefully, as you can get burned by the steam and juice. The dish can be served hot or cold.

  • 600 gr. drumsticks or other parts of a poultry carcass;
  • 300 gr. purified;
  • 2 onions;
  • 3 cloves of garlic;
  • 3 tablespoons vegetable oil;
  • 1 tablespoon soy sauce;
  • 1 teaspoon French mustard;
  • 1 teaspoon sugar;
  • 0.25 teaspoon curry;
  • 0.25 teaspoon ground paprika;
  • 0.25 teaspoon of pepper mixture;
  • salt to taste.

Make the marinade: mix soy sauce, vegetable oil, mustard, spices, sugar. Rub the drumsticks with salt, then with marinade.

Cut the pumpkin and potatoes into cubes or slices. Chop the onion into half rings, pass the garlic through a press or cut into small cubes. Place in a bowl, pour over the remaining marinade and stir. You can mix vegetables and chicken. Leave for an hour or more.
