How to cook lazy dumplings in a frying pan

  1. Sift the flour through a sieve into a deep bowl or directly onto a work surface and shape into a mound. We make a small depression in its top and break one large egg into it. Mix everything lightly.
  2. Next, pour in cooled boiled water, sprinkle salt on top and begin stirring, collecting flour from the edges to the middle.
  3. When the dough starts to come together into a ball, we begin to knead it with our hands. Knead the dough for at least 7-10 minutes so that it absorbs as much flour as possible. Properly kneaded dough turns out very smooth and elastic, tight, but at the same time soft. Place in a bag and leave to rest for 15-20 minutes. The bag is needed to create a kind of greenhouse effect, in which the dough will become even smoother, more elastic and pliable.
  4. While it arrives, prepare the filling. Mix minced meat, chopped onion, salt and spices. Mix everything well.
  5. Mix the standing dough again, then divide it into two halves and roll each part into a rectangle about 1 mm thick. The thinner it turns out, the tastier the lazy dumplings will be.
  6. Until now, everything was exactly the same as when preparing ordinary round or crescent-shaped dumplings. Now let's see how we can make a lazy version of them. Place half of the minced meat on the rolled out layer and level it over the entire surface. Then roll the filling into a tight roll.
  7. We cut the resulting roll into columns, about 2.5-3 cm high. Our preparations for lazy dumplings are ready, all that remains is to boil them properly.
  8. We will do this in a frying pan. It should be of a fairly large diameter and with high sides, and the height should be sufficient to accommodate the lazy dumplings themselves and the sauce in which we will cook them. Cut the peeled onion into small cubes and fry in vegetable oil. Together with the onions, you can also fry carrots and other vegetables if desired.
  9. Then we place our lazy preparations cut side down on top of the fried onions. We do not place the dumplings tightly; there should be some space between them so that the dumplings do not stick to each other.
  10. Now let's prepare the sour cream filling. Mix sour cream with a glass of boiled (or warm) water, add salt and spices (Provencal herbs or a mixture of cumin and coriander) to taste. Mix everything vigorously so that the sour cream is completely dispersed. Then pour the prepared sour cream sauce over our lazy dumplings. The liquid should reach approximately 2/3 of the height of the dumplings.
  11. Place the frying pan over medium heat and, while the contents are heating, place a small piece of butter on each dumpling.
  12. After the liquid boils, reduce the heat, cover the pan with a lid and simmer the dumplings for about 35-40 minutes, until the sauce thickens and almost evaporates.
