Let's seriously prepare for the fruit season this year and make the most of nature's gifts. To do this you need to select several interesting ideas and recipes and keep them ready, because summer passes so quickly. “Culinary Eden” has already compiled a small selection of original fruit desserts that will help you use up excess fruit when there is a lot of it.

Let's start, perhaps, with apples - the most common Russian fruit. For ideas, let’s go to the famous researcher of Russian cuisine, William Pokhlebkin, and the author of the “culinary bible” of the late 19th century, Elena Molokhovets. At Pokhlebkin we found three original, but very simple fruit desserts made from apples, and one of them (Russian sweet) was developed personally by the author and is not found anywhere else, which is quite unfair. Judge for yourself:

Bake the Antonov apples until the peel separates from the pulp and the pulp turns into puree. Wipe, remove peel, seeds, etc. For each glass of puree, add at least one tablespoon of honey, stir, and serve hot for dessert. You can also lightly bake in the oven (3-5 minutes).

Belyovskaya pastila

Puree from baked Antonov apples is mixed with whipped egg whites and powdered sugar, poured into paper gauze molds, dried in the oven and rolled in powdered sugar drying in air (in a sieve).

Ingredients:
3-4 Antonov apples,
3-4 tbsp. granulated sugar,
0.5 cups baked milk,
4-5 prunes (optional).

Preparation:

It would seem that in baked apples there is nothing special, why is it loudly called the author's recipe? There is one point. In Russian cuisine, and indeed in all cuisines of the world, there is a ban on mixing sour and dairy products. I don't think it's worth explaining why. But Pokhlebkin nevertheless insistently advises mixing Antonov apples with milk. And this is what motivates this: “baked Antonov apples (and only them!), although they remain sour in taste, have a huge content of pectins, that is, a natural glue that, when boiling (baking) apples without water, binds malic acid and keeps it in jelly state. On the other hand, baked and, moreover, fatty (4-6%) milk is also deprived of the opportunity to actively interact with malic acid, especially since it is bound, in addition to pectins, by the sugar we add (you need to add more of it!). Thus, no souring or curdling of the food will occur in the dish: we will have time to eat it before that. The combination of sweet-sour and milky-creamy-fresh taste turns out to be extremely subtle, refined, rare and pleasant.”

In the book by Molokhovets, a dozen pages are devoted to desserts with apples. There are relatively simple ones:

Ingredients:
1 cup grated apples,
0.5 cups eggs,
0.75 cups sugar,
0.5 cups heavy cream,
0.5 cups crushed crackers,
0.25 cups of heated oil.

Preparation:
Mix everything well, pour into the mold and put in the oven.

There are more complex dishes:

But most of them are intricate recipes that require time and experience. What are they worth, for example?

Ingredients:
500 g large apples,
0.5 lemon,
1 tbsp. Roma,
0.75 cups sugar,
0.5 tsp cinnamon,
1.25 cups deep fat (0.65 cup fat and 0.6 cup oil),
1 tsp vodka.
1 cup of batter (put sugar, salt, sour cream, flour into the yolks separated from the whites, mix thoroughly, add milk, whipped in thick foam whites and stir gently).

Preparation:
Peel and core the apples, rub with lemon, cut into slices, place on a plate, sprinkle with rum, sprinkle with half the sugar, mix carefully, cover with a plate, and let stand.

Heat the deep fat, add a spoonful of vodka so that the fat is less absorbed into the dough. Take each apple slice with a fork, dip it in the batter, and lower it into the deep fryer. When browned, remove with a slotted spoon onto a sieve, onto a piece of paper, hold for a few minutes, turn over to the other side, onto another sieve. After 10 minutes, when dry, place on a plate, sprinkle with sugar mixed with cinnamon, put in the oven for 10-15 minutes until covered with a shiny crust.

The recipe is definitely difficult for home use, but if you need to treat and surprise guests at your dacha, it will fit perfectly. Firstly, the cost of food is minimal, and secondly, guests can prepare their own fruit dessert based on the fondue principle, just give them batter, deep fat, apples and other fruits or even vegetables, so that there is room for experimentation.

Russian cuisine is not very rich fruit desserts, which cannot be said about Ukrainian cuisine. This is where gourmands have fun! Let's try to prepare the simplest one first

Ingredients:
10-15 ready-made pancakes,
5-6 apples (or pears, peaches, plums),
80-100 g butter,
50 g sugar,
2 tbsp. ground crackers.

Preparation:
Peel the fruits and cut into slices. Grease a baking dish with butter, sprinkle with breadcrumbs, lay out pancakes, alternating with fruit. Upper layer- pancake. Sprinkle with breadcrumbs and sugar and bake in the oven.

Kapama with fruits

Ingredients:
4 cups wheat flour,
2 eggs,
3 tbsp. warm water,
5-6 apples,
100 g cherries or sour cherries,
100 g plums,
100 g sugar,
100 g raisins,
1 tsp cinnamon,
1 tbsp. sunflower oil.

Preparation:
Knead a thick dough from flour, eggs and water. Peel the apples and cut into thin slices, pit the plums, cherries and cherries, cut into halves, pour boiling water over the raisins for a few seconds. Mix fruit with sugar and cinnamon. Roll out the dough, grease with oil, lay out the filling, roll up using a napkin, place on a greased baking sheet and bake for 45 minutes.

5-6 fresh peaches,
50 g macaroons or grated almonds
200 g soft unsalted cheese,
1 tbsp. Sahara.

Preparation:
Place the pitted peach halves cut side up in the pan, sprinkle with cookie crumbs or almonds, and top with a spoonful of cheese. Preheat the grill and place the pan with the peaches under it for 5 minutes until the top is lightly browned. Then sprinkle with sugar, turn up the heat and bake for another 2-3 minutes until the sugar caramelizes.

You can do the same with fresh figs, if you suddenly get tired of eating it just like that.

Ingredients:
12-15 figs,
2 tbsp. light honey,
2 tbsp. pine nuts,
100 g mascarpone cheese.

Preparation:
Preheat the oven to 180°C. Make cross-shaped cuts in the figs from the stem side so that they open like a flower. 3 firm pears,

Roll out the dough to a thickness of 3-4 mm and cut out a circle slightly more frying pan. Place the dough on top of the pears, tuck the edges in and brush with leison (a mixture of egg and milk). Place the pan in the oven preheated to 190°C for 20 minutes. When the dough turns brown, remove and cool slightly. Cover the pie with a flat plate and carefully turn over using an oven mitt.
