Compound

About three hundred components are contained in the fruits of the chocolate tree, which are divided into three groups:

  1. vitamins;
  2. microelements;
  3. macroelements.

Real cocoa has a calorie content of more than 500 kilocalories per hundred grams of fruit. The amount of fat is amazing, it is more than 50 grams, proteins are slightly inferior - more than 12 grams, more than 9 - carbohydrates, more than 6 - water, more than 2 grams of organic acids.

  • phosphorus (P, Phosphorus) – 500 mg;
  • magnesium (Mg, Magnesium) – 80 mg;
  • sulfur (S, Sulfur) – 83 mg;
  • calcium – 25 mg;
  • sodium – 5 mg.

  • copper – over 2 thousand mcg;
  • molybdenum – more than 40 mcg;
  • cobalt – about 30 mcg;
  • zinc – over 4 mcg;
  • iron – more than 4 mcg.

Benefits and harms

Painstaking scientific research at the University of Münster has shown the presence of cocohil in crude fiber, a substance that stimulates growth and promotes the regeneration of skin epithelial cells. At the turn of the 21st century, Harvard employee Norman Gollenberg, while studying cocoa beans, discovered the presence of epicatechin in the biomaterial. This compound can prevent heart attacks, strokes, and cancer.

Recent research aimed at skin rejuvenation has led to the emergence of new drugs based on melanin, which is present in cocoa beans. Its ability to protect skin cells from exposure to ultraviolet rays remains unrivaled.

The saturation of organic raw materials with vitamins, antioxidants and minerals is striking in its qualitative-quantitative ratio. An expanded “range” that helps correct body functions contributes to:

  • improving mood;
  • stabilization of the nervous system;
  • normalization of blood circulation;
  • stimulating brain function;
  • improving memory;
  • strengthening the heart;
  • pressure balance;

Substances contained in cocoa beans help stimulate the production of endorphin in the human body - the hormone of happiness. This feature makes cocoa a unique product that gives good mood, activity and stamina. The invigorating effect of a drink made from the fruits of the chocolate tree is equal in intensity to a drink made from coffee, but does not contain caffeine, which in some cases can be harmful.

Do not forget about other substances, for example, purine, which causes the deposition of salts in joint tissues and the accumulation of uric acid. Also, high fat content and, accordingly, calorie content are not always beneficial. Therefore, cocoa has contraindications:

  1. obesity;
  2. age (except for children under three years of age);
  3. presence of diabetes mellitus;
  4. allergy;
  5. liver and kidney problems;
  6. chronic constipation;
  7. increased acidity.

How to cook?

From the Middle Ages to the present day, descriptions of a drink that is popular in the circles of European nobility, which is still in demand today, have come down to this day: cocoa. Experts recommend preparing it correctly to have true taste. It is customary for true connoisseurs to brew cocoa at home in a coffee maker or Turk. This preparation allows you to brew the drink in a way that follows traditional technology.

You can ensure constant monitoring of the process only at home if you have free time. With this approach, there can be no question of a coffee machine, although such a possibility also exists. If you need a quick way to prepare a drink, you can also brew it in the microwave.

The variety of methods for preparing a drink of the required quality is explained by different possibilities and local conditions. Those who focus on taste prepare cocoa with milk. People on a diet prepare a “pasty” form - with water.

One of the first steps in proper brewing is choosing a high-quality cocoa variety. The high quality of cocoa is indicated by the presence of butter, which implies the presence of fat in the mixture (at least 15%). You can determine the fat content by rubbing a pinch of powder between your fingers. Easy adhesion and retention of the mixture on the fingers indicates the high quality and naturalness of the product.

It is necessary that he:

  • was fresh;
  • did not contain sugar;
  • did not contain milk powder;
  • was from a well-known reliable manufacturer.

On the water

Components:

  • fresh cocoa powder;
  • water (preferably purified);
  • sugar.

You only need to use fresh cocoa powder. This will provide excellent taste and unique smell.

In a small container, mix equal parts sugar and cocoa. Pour a small part of the water into a bowl, grind the mixture thoroughly until smooth, avoiding the formation of lumps. When the mixture acquires a characteristic shine and smoothness, add more water and stir until the consistency of kefir is obtained. Pour the mixture into a container with water and cook over low heat, remembering to stir. After boiling for three minutes, the drink can be poured into cups.

With milk

You will need:

  • natural cocoa from a trusted manufacturer;
  • milk (volume and fat content as needed);
  • sugar (to taste).

We use a vessel to boil milk. Pour cocoa powder onto the bottom (optimally 2 tablespoons per person), add sugar to taste. Mix everything until smooth. The heated milk must be poured into the resulting mixture so that it is barely covered. Stir the contents until the ingredients are completely dissolved, add milk, continuing to stir. Having received a homogeneous mass, bring it to a boil over low heat, stirring thoroughly. We make sure that the milk does not “run away” for several minutes (about 3 minutes).

At the initial stage, options are possible. The mixture of cocoa powder and sugar is poured into water and stirred, and then mixed with milk.

What can I add?

There are a lot of exotic additives: vanilla, cloves, whipped cream, cocoa butter, pink pepper. Creative solutions are limited only by the imagination of the cook.

With rolled oatmeal flakes

Rolled oats flakes are pre-cooked - 40-50 grams per 100 g of boiling water. Pour one and a half glasses of milk into the prepared container, add two tablespoons of sugar and one nutmeg (grated). After heating the mixture, mix with rolled oatmeal puree and cook for 5 minutes. Now the time has come to add the required amount (optimally 2 tablespoons) of cocoa. Mocha

What it is? The main difference from “analogue” drinks is that coffee is mixed with cocoa and sugar and nutmeg are added. This contradictory mixture must be filled with cold water only. All this is gently brought to a boil and cream is added at the end.

Emperor's drink

Among the many incarnations of this delicacy, the “Drink of Emperor Montezuma” occupies a special place. To achieve an original effect, in which vigor is flavored with a subtle taste, we grind the fruits into powder. The resulting consistency is mixed in a blender with salt, natural vanilla and honey. The resulting mixture is poured with cold water and mixed for one minute. Add hot water and beat. Can be poured into containers. Connoisseurs know that this liquid is consumed in small glasses, which are sprinkled with pepper.

In this version, a drink familiar from childhood makes you think about the correctness of your personal attitude towards cocoa. Everyone can experience the sensations that the Aztecs and ancient Mayans experienced when tasting this dish.

Hot chocolate with marshmallows

  • 800 g milk;
  • cocoa powder – 3 tbsp. spoons;
  • sugar if desired;
  • small marshmallow marshmallows in a volume of about two glasses;
  • a pinch of vanillin per serving.

Cook over medium heat, stirring occasionally, until the marshmallows melt. When signs appear that the contents have become a homogeneous mass, we stop the process. Ready!

Nuances

When storing the powder, you can place a vanilla pod in a container with it. The smell will permeate the mixture and give the drink an amazing subtlety.

Useful facts

Cocoa is boiled in any convenient container: a saucepan with a wide neck. The powder does not absorb water well, so during cooking it is necessary to stir constantly so that it dissolves evenly in the water and does not form lumps.

  • When choosing a powder, you should pay attention to the smell: it should be pleasant and chocolatey, so that you immediately want to quickly prepare an aromatic and delicious drink.
  • There should be no lumps in the powder. Caking into lumps indicates a low-quality product. When you rub the powder with your fingers, it should feel oily and not dusty.
  • Cocoa contains a substance - the “hormone of joy and happiness” - serotonin and caffeine, which invigorates and increases performance.
  • The product contains a lot of iron and zinc, which are necessary for health, in particular, improving hormonal balance. Cocoa prolongs youth thanks to antioxidants, lowers blood pressure, improves performance and blood supply to the brain.

Story

The history of cocoa goes back centuries. The plant was known even before the advent of the Mayan civilization, but it was they who set up plantations of the evergreen tree and produce the drink in an artisanal way. For them, it was considered sacred, and cocoa beans replaced money.

The first European to bring the product to Europe was Christopher Columbus. The drink gradually began to spread, first in Spain, then throughout Europe. The drink was expensive and accessible only to people of the upper classes.

Historians write that cocoa comes to France along with the delivered luggage of a Spanish lady who was to become the wife of Louis XII. The monks transported the product from country to country. Later, the government of Charles V, realizing the benefits of beans, tried to establish a monopoly, but smugglers literally flooded Europe, and only the Italians invented a license for chocolate production. “Chocolate houses” have become more popular than coffee shops or tea houses.

With the development of industrial production, it became an accessible and cheap product. They began to add milk and spices, sweets, wine, etc. to it. In 1674, they began to add it to rolls and cakes. In 1828, the production of cocoa powder was patented in Holland, and the first chocolate bar appeared in the mid-19th century in England. Chocolate bars were supplied to the navy; it was believed that chocolate was the best remedy for scurvy.

Where do cocoa trees grow?

The cocoa tree grows only in the humid tropical climate of the equatorial regions of the globe. The fruits of the tree are of an unusual shape, similar to a cucumber, 30 cm long, 12 cm in diameter. Various in color: yellow, orange or red, depending on the variety. The weight reaches 600 grams, inside, surrounded by pulp, there are fruits, slightly elongated almond-shaped. There are about 60 of them there.

Cultivation of the crop is labor-intensive. The height of the tree reaches 12-15 meters and bears fruit all year round. The harvest is harvested by hand twice a year, and the beans are separated from the pulp by hand. The first fruits on the tree appear in the 5th year, the active fruiting period lasts 50 years.

How much cocoa can you drink?

Some are afraid to drink cocoa, caring about their figure. It's in vain! It is impossible to get fat from it! Unlike chocolate, cocoa does not affect your figure. It does not contain as much saturated fat as chocolate (chocolate contains 20 g of fat per 100 g of product); a mug of cocoa contains only 0.3 g of fat.

The drink is very nutritious; one cup drunk at breakfast makes you feel full.

It is better to drink in the morning or afternoon. Drinking a cup during the day will give you strength and vigor. It is better not to drink at night; there is a risk of having a sleepless night, since one cup contains approximately 5 mg of caffeine.

Cocoa is a very tasty and healthy drink. Perfectly invigorates, tones and lifts your spirits. There is nothing complicated in the classic recipe for its preparation. But in order for the drink to be tender and aromatic, it must be prepared with milk.

Cocoa brewed with milk alone has a softer and more pronounced taste. But using water will get rid of the lumps. Let's figure out step by step how to prepare cocoa with milk and water.

Required ingredients:

  • 2 tsp. cocoa powder;
  • 200 ml water;
  • 100 ml milk;
  • 2 tsp. Sahara.

Cooking method

  1. Mix cocoa powder with sugar, dilute with a small amount of hot water until the sugar is completely dissolved and a homogeneous mass is obtained.
  2. In another bowl, bring the milk to a boil and set aside.
  3. Add the remaining water to the cocoa and sugar mixture and cook over low heat, stirring constantly.
  4. Gradually pour milk into the boiling drink in a thin stream and bring to a boil.
  5. To form foam, whisk the prepared cocoa with a whisk and pour into a cup.

If desired, you can add cinnamon, vanilla or condensed milk to the finished drink.

Before cooking, check the packaging for the expiration date. Expired cocoa powder completely loses its taste. You need to cook it in a pot or enamel container.

It is best to use milk with a fat content of 3.2%.

The amount of sugar may vary depending on your preferences.

If you use pasteurized milk, then at the last stage of preparation you do not need to bring the drink to a boil.

To prevent the foam from settling, you need to preheat the cup.

It is not necessary to consume cocoa hot. When cold, it does not lose its taste and quenches thirst well. Diluting milk with water makes the drink dietary.
