The chicken turns out very tasty, rich, truly festive. Be sure to prepare this pancake chicken during Maslenitsa week. You will surprise all your family and guests and they will definitely ask you for this recipe.

    for pancakes: the specified amount of ingredients yields 7 large pancakes

    • chicken egg - 3 pcs.
    • milk - 300 ml.
    • flour - 3-4 tbsp. (to the desired consistency)
    • salt - 0.5 tsp.
    • green onions - 5 feathers (or any other greens (dill, parsley, cilantro) to taste)
    • boiled chicken fillet (from one breast) - 500-600 gr.
    • hard cheese - about 500 gr.
    • ripe tomatoes - 5 pcs.
    • boiled eggs - 6 pcs.
    • fried mushrooms with onions (we use butter) - 300 gr. + 2 onions
    • salt, ground black pepper - to taste
    • greens - for serving

    How to cook chicken pancakes with chicken, tomatoes and cheese:

    First, let's bake thin pancakes with young green onions. To do this, simply combine warm milk with eggs and beat. Add salt and ground black pepper if desired. Add flour to the required consistency and beat again. Add finely chopped green onions. The pancake dough is ready. We bake thin pancakes in a large diameter frying pan. Ours is 24-26 cm. It turns out to be only 7 large pancakes - that was enough for us. If you want to make more layers of pancake chicken, make more pancake batter and bake more pancakes.

    Place the pancakes on a plate. All that remains now is to start assembling the pancake chicken pot.

    To prepare the chicken we will use a springform pan with a diameter of 26 cm. Place parchment paper on the bottom of the pan, grease it with vegetable oil if necessary, and lay out the first pancake. On it we place a ripe tomato cut into thin slices, a grated boiled egg on a coarse grater and grated hard cheese on a coarse grater.

    Cover the top with a second pancake.

    And again add chopped tomatoes and boiled chicken, cut into pieces.

    Grate hard cheese on top. Cover with the third pancake. And then we repeat another layer, which we did initially with boiled eggs, tomatoes and cheese. Cover the chicken with the fourth pancake.

    Place chopped tomatoes and fried mushrooms and onions in vegetable oil on top.

    Sprinkle everything with finely grated cheese. There should be enough cheese.

    Bake the pancake chicken in an oven preheated to 180 degrees for 20-30 minutes. It took us 25 minutes. As soon as a crust forms on the chicken, it is ready. We take out the fragrant chicken from the oven.

    Pancake chicken can be served either hot or cold. It will perfectly decorate your holiday table and absolutely everyone will like it. Decorate the top of the dish with sprigs of fresh herbs and serve. Cut it like a regular cake, into pieces.

    And here is our pancake chicken in a section. If desired, you can place mushrooms in each layer. We only have mushrooms in the top layer for the reason that not everyone in our family eats mushrooms and the top layer can be easily removed.

    As for the filling, it is not necessary to prepare it exactly as in this recipe. For example, you can replace rice with cheese, herbs, or vegetables. I like to add red bell pepper sometimes.

    • Milk – 1 liter
    • Eggs – 2 pcs.
    • Sugar – 1 tbsp.
    • Flour – 370 grams
    • Vegetable oil – 3 – 4 tbsp.
    • A pinch of salt
    • Butter for greasing the pan
    • Boiled rice – 200 grams
    • Chicken – 400 grams
    • Mushrooms – 250 grams
    • Carrots – 1 large
    • Onion – 3 medium heads
    • Salt, spices to taste
    • Oil for frying
    • Sour cream – 300 grams
    • Mustard – 0.5 tsp.
    • Salt, spices to taste

    Cooking kurnik pie with pancakes and chicken - step-by-step recipe with photos

    First, let's prepare the base for our chicken pancake and fry the pancakes. For the pie you will need 10 pancakes. You can fry pancakes according to your own recipe, but if you don’t have your own pancake recipe, I offer my own, classic version of pancakes with milk.

    So, pour the milk into a saucepan and heat it up a little.

    Break the eggs into a separate container, add salt, sugar, soda and mix the mixture thoroughly.

    Pour sunflower oil into the eggs and mix.

    Pour 300 ml into the egg mixture. milk and stir everything.

    Pour flour into the liquid mass and mix the dough until smooth.

    Then, pour in the remaining milk in small portions, stirring the mixture thoroughly each time. Leave the finished dough for 15-30 minutes, after which you can fry thin pancakes.

    Heat the frying pan well, grease it with oil, pour in a little dough and fry on both sides.

    When the pancakes are ready, you can start preparing the filling for our pancake pie with chicken.

    For the filling, you need to boil the chicken, rice and eggs in advance.

    Fry carrots and onions in a frying pan.

    And add to the rice, salt, pepper and stir the mixture thoroughly.

    Fry the mushrooms in a frying pan as well.

    Mince the chicken and mushrooms separately, or you can cut them into small pieces.

    Grate the eggs onto a coarse grater.

    Add mustard, salt, spices to the sour cream and mix everything thoroughly. Instead of sour cream, you can use regular mayonnaise, with it our chicken pancake will turn out even tastier. But I took sour cream, because it is not as high in calories as mayonnaise and does not affect the figure so much.

    Now place one pancake in a greased pan and grease it with sour cream sauce.

    Then, place four pancakes in the pan so that part of the pancake fills the pan, and part hangs over the edge of the pan.

    Grease our pancakes with sour cream sauce again.

    Place the rice filling on top.

    Cover the filling with a pancake, which we grease on top with sauce.

    We put minced chicken and mushrooms on the pancake and cover everything again with a pancake, which we grease with sauce.

    And add the last layer of eggs.

    We wrap the pancakes hanging from the edges of the pan inward, covering the egg filling. Spread the sauce on top of the pancakes and cover everything with the last pancake.

    Kurnik was called the royal pie in Rus'. It was baked mainly for big celebrations and festivals, for weddings on Trinity. For a wedding, the kurnik was baked in a “great” size. Two chickens were made: one for the groom, one for the bride. The pie was broken over the heads of the newlyweds. By the grains that fell (by their quantity) they judged whether the young people would have wealth or not. The name presumably comes from the fact that kurniki were traditionally stuffed with chicken. The most popular was considered a kurnik of pancakes with chicken and mushrooms.

    Tsar Kurnik: a look from the inside

    You can prepare kurnik using yeast dough. And you don't have to make the dough yourself. The pie comes out great with store-bought puff pastry. The filling is prepared from raw ingredients. It's easier to use chicken fillet. It cooks faster and is easy to cut. Mushrooms can be used based on your personal preferences. The easiest way is to buy champignons, since they are sold everywhere. The most delicious chicken dish is made from pancakes with chicken and mushrooms, which uses oyster mushrooms.

    For the test:

    Flour - 545 g;

    Regular yeast - 65 g;

    Sugar - 65 g;

    Milk - 60 ml;

    Butter - 85 g;

    Flour - 250 g;

    Sugar - 65 g;

    Yolk - 1 pc.

    Champignons - 300 g;

    Round rice - 250 g;

    Parsley - 10 g;

    Cream 33% - 120 ml;

    Technology:

    1. First you need to prepare the yeast dough so that it has time to rise while the further process is underway.

    2. Place the yeast in a bowl and add granulated sugar to it. Stir until the contents turn into liquid. There is no need to add water.

    3. Combine sifted flour with salt, add eggs.

    4. Heat the milk until it is lukewarm. Pour milk into yeast mixture.

    5. Knead the dough. roll it into a ball. Add softened butter. Knead the dough further until the butter is completely evenly distributed throughout the dough. This will take no more than five minutes in a food processor, and ten minutes if kneading by hand.

    6. If the dough is ready, it will not slide off the processor hook. It will hang on it.

    7. Take the dough from the hook. Give him a hug. Roll into a ball.

    8. Place in a bowl and close with a lid. You can put the bowl in the oven and close the door - let it settle there. If you use freeze-dried yeast, then the oven would need to be heated to 30°Ϲ.

    9. Leaving the dough alone, you should start filling. There will be three of them: mushroom, rice and meat.

    10. Make the third filling. Finely chop the chicken breast. Process the onions and carrots and cut them very finely. Mix all.

    11. At the same time, make the second filling. Rice needs to be boiled in a large volume of salted water. This will take 7-8 minutes.

    12. Place the rice in a colander. Let everything cool down.

    13. Prepare the first filling. Wipe the mushrooms with a damp cloth or sponge (no need to wash). Cut into thin slices. Fry in a mixture of fats (vegetable oil + butter). Add some salt.

    14. Remove the mushrooms from the pan. Place leek rings (white part) in it.

    15. Combine fried mushrooms with leeks. The first filling is there. Leave it to cool.

    16. Boil soft-boiled eggs. Chop. Combine with chilled rice.

    17. Wash the parsley, dry it, chop it, add it to the rice. Pour heavy cream into rice. There is a second filling.

    18. Combine chicken breast with chopped dill. Salt and pepper. There is a third filling.

    19. Now it’s the turn of the pancakes. You need to knead the dough from eggs, salt, sugar, milk (200 ml) and flour. Mix everything thoroughly with a whisk or mixer. After the dough reaches complete homogeneity, add the rest of the milk. Add vegetable oil.

    20. You need to cook seven pancakes. The diameter should be approximately 20 centimeters.

    22. The largest is the lower part of the chicken pot made from pancakes with chicken and mushrooms. It must be rolled out into a circle, the diameter of which will be five centimeters larger than the diameter of the pancakes.

    23. Place the rolled out bottom part on the frying sheet and place the pancake on it. The mushroom filling is placed on it. Cover it with the second pancake. It is filled with rice filling. On top - another pancake. It's stuffed with chicken. Place the remaining pancakes overlapping on it.

    24. Roll out the middle part of the dough. She should cover the top of the pie. Connect and pinch the edges of the two pieces of dough to form a kind of large “dumpling”. Make a small hole in the top center to allow steam to escape.

    25. Coat the surface of the pie with yolk and two tablespoons of heavy cream.

    26. From the third part of the dough, make a decoration to your taste. Pigtail, leaves - whatever you want. Place over the surface of the pie.

    27. Bake kurnik of pancakes with chicken and mushrooms for half an hour in the oven at 180°Ϲ.

    Chicken meat - 400 g

    Champignons – 250 g

    Carrots – 80 g

    Onions – 225 g

    Vegetable oil (for frying).

    For the sauce:

    Sour cream – 300 g

    Mustard – 15 g

    Technology:

    1. First of all, you need to fry the pancakes. You will need 10 pieces. You can bake pancakes according to your proven recipe, as you are used to. If it is not there, then bake as follows.

    2. Pour milk into a saucepan and heat slightly.

    3. Beat chicken eggs into a separate bowl. Add salt, sugar, soda and whisk until the mixture is homogeneous.

    4. Pour vegetable oil into the resulting mixture. Mix again until smooth.

    5. Add warm milk to the bowl. Mix again.

    6. Pour sifted flour into a bowl in a thin stream. Knead the dough thoroughly without lumps.

    7. Pour the remaining milk into the bowl in parts. Stir the mixture every time. When the dough is completely ready, set it aside for a quarter of an hour. After time, bake a dozen thin pancakes. Place the finished pancakes on a plate and cover with foil or film.

    9. Boil hard-boiled eggs in salted water. Immediately put them under cold water, otherwise cleaning them will be problematic.

    10. Process carrots and onions and wash. Grate the carrots on a coarse grater. Cut the onion into small cubes. Sauté vegetables in a hot frying pan in vegetable oil.

    11. Place the sautéed vegetables into a bowl. Add boiled rice there. Add some salt and pepper. Mix well.

    12. Wash the mushrooms well and dry. Cut into slices. Fry in vegetable oil.

    13. Grind raw chicken meat and fried mushrooms separately through a meat grinder or in a blender. If you don’t want to wash the equipment later, you can simply chop the ingredients finely with a knife.

    14. Grind the boiled eggs with a coarse grater.

    15. Add mustard to sour cream. Add some salt and pepper. Add spices. Stir well until smooth. Sour cream can be replaced with mayonnaise.

    Thin pancakes - 15 pcs.

    Technology:

    1. Bake 15 pancakes according to the recipe you like best.

    2. Finely chop the chicken meat and onion with a knife.

    3. Add ½ of the chopped onion to the pan. Fry. Pepper, salt. Pour in 30 g of sour cream. Cook, stirring, for a quarter of an hour.

    4. Process the oyster mushroom, wash it, and chop it finely. Fry in another frying pan with the remaining onions.

    5. Peel the boiled eggs. Chop with a knife. Mix with washed and processed dill.

    6. Cover the bottom of the springform pan with foil. Coat it with butter.

    7. Place the pancakes overlapping so that they cover the pan well. The edges of the pancakes should hang over the edge. Place a couple more pancakes in the center of the pan.

    8. Coat the bottom pancakes with sour cream. Place onion and mushroom filling on it. Cover it with two pancakes. Place raw chicken meat on them. Cover with two more pancakes. Press. Coat with sour cream. Place chopped eggs with dill on top. There are two pancakes on them again.

    In order for the cake to retain its shape and not crack, you must make a hole at the top to allow steam to escape;

    During the baking process, you can carefully pour a little broth into this hole in two or three batches - this will make the pie very juicy;

    Chicken fillet should be placed in the pie raw, finely chopped - this way it will end up juicy, but not too dry;

    Soda must be quenched with vinegar or lemon juice;

    It is better to use short-grain rice - it makes the pie more juicy;

    Chicken meat can be pre-marinated to enhance the flavor;

    You can use any meat you like in the chicken chicken filling;

    The pie can even be baked in a slow cooker.

    Kurnik is the king of all pies and pies in Russian cuisine and this is not surprising. Because they prepare this closed, domed pie with a huge number of fillings. Real kurnik is traditionally prepared with buckwheat and chicken meat. I decided to replace buckwheat with rice, and chicken meat with minced meat. Choose the filling for chicken pancakes according to your taste: mushrooms, potatoes, onions, rice, cabbage, eggs, etc. I wish you delicious experiments!

    To prepare puff pastry chicken from pancakes with chicken and mushrooms, we will also need:

    flour, milk, egg and vegetable oil - for pancakes

    To measure the products, I used a 200 ml glass.

    I will cook the rice for the filling in a slow cooker, but you can also boil it on the stove. Grind the mushrooms in a blender.

    Place washed rice in the multicooker bowl, add water, salt and mushrooms. Mix. Cook on the "Rice" mode.

    While the multicooker is preparing rice and mushrooms, let's bake pancakes. Mix the pancake dough. Important! There should be no flour lumps. We bake pancakes in the traditional way in a frying pan.

    This amount of ingredients makes 7 pancakes; we will need 4 for the filling.

    Fry the minced meat with onions in vegetable oil.

    Our rice with mushrooms is ready, the dried mushrooms have turned it brown.

    Divide the dough into 2 equal parts. Roll out one part into a circle 7-8 mm thick. I roll it out immediately on baking paper, dusting the dough a little with flour.

    We transfer our preparation to a baking sheet.

    Finely shred potatoes into the meat filling using a special grater. Salt and add spices to taste, mix.

    We spread the first layer of filling - rice with mushrooms.

    Place the pancake and grease with sour cream. You can grease it without regret, it will only taste better.

    Then add potatoes and meat.

    Pancake with sour cream again.

    We repeat the layers.

    Roll out the second part of the dough into a circle, cut out a circle in the center and transfer to the pie.

    Cut off excess dough along the edge of the pie.

    Fold the dough over the pie, pressing lightly. Use a fork to go over the seam again, pressing down so that the dough does not open during baking.

    We use the leftover dough to make decorations for the pie. Using a brush, brush the pie with egg yolk mixed with water.

    Bake in a preheated oven at 180 degrees for 40-45 minutes.
