Therefore, it is best to buy a fresh turkey weighing up to 4 kg for baking. Another sign that the meat belongs to a young bird is a not too thick white skin (in an old bird it has a yellow tint).
  • When using meat that has not been frozen, you are more likely to get a juicy dish. However, you can cook the same from a frozen turkey if you defrost it correctly. Defrosting meat at a low temperature is considered optimal, ideally on the top shelf of the refrigerator.
  • A cooking sleeve or foil prevents juice from leaking out, resulting in more juicy meat. When cooking turkey directly on a baking sheet or in a baking dish, it is advisable to use a fairly rich sauce, for example, based on sour cream or mayonnaise.

  • turkey fillet – 0.5 kg;
  • soy sauce – 50 ml;
  • olive oil – 50 ml;
  • salt, spice mixture, basil - to taste;
  • garlic – 4 cloves.

Cooking method:

  • Wash the turkey fillet and pat dry with a kitchen towel. Use a knife to make deep, narrow cuts in several places.

  • Wash and dry the turkey drumstick with napkins. Rub it with a mixture of vegetable oil, salt, seasonings and garlic passed through a press. Leave to marinate in the refrigerator for 2 hours.

Cooking method:

  • Wash and dry the fillet. Cut each piece lengthwise into 2-3 pieces and beat them with a culinary hammer.
  • Sprinkle each piece with salt and herbes de Provence.
  • Grease the baking dish with butter, after softening it. If desired, it can be replaced with vegetable one.
  • Place the fillet pieces in the mold, leaving a small distance between them (a centimeter will be enough).
