Mushrooms are a great addition to hot dishes and an excellent substitute for meat. And, conveniently, you don’t have to wander outside the city for hours to find them; you can just drop into a nearby store.
Spicy seasonings are not added to mushroom dishes so as not to drown out the pleasant mushroom taste. For the same reason, it is not customary to salt them heavily. Mushroom dishes are well seasoned with vegetables, add onions, dill, parsley, apple.

Potato salad with pickled mushrooms

Take potatoes, rinse, boil and peel. Cut into small cubes. Also cut pickled mushrooms and pickled cucumbers into small slices, and onions into half rings. Mix everything and pour over salad dressing. Before serving, place in a salad bowl and add finely chopped green onions and parsley.

For the recipe you will need:

canned green peas - 100 g

Dutch beef with marinated mushrooms
For the recipe you will need:
beef - 1.5kg
carrots - 1 pc.
onion - 1 pc.
celery - 1 pc.
black pepper - 15-20 pcs.
bay leaf - 5-6 pcs.
oil - 1-2 tbsp
grated horseradish
pickled mushrooms (mushrooms and boletus) - 3 tbsp.

Take 1.5 kg. fillet, salt. Cut 1 carrot, 1 onion, 1 celery into slices, put in a pan, and on top - beef, 15-20 grains of black pepper, 5-6 pcs. bay leaf, pour 1-2 tablespoons of oil, fry in the oven. Then cut it, add grated horseradish fried in oil, pour over roast sauce with 3 tablespoons of pickled saffron milk caps or boletus, and boil.

Salad of marinated mushrooms with fish
For the recipe you will need:
pickled mushrooms - 150g
fish - 150g
potatoes -150g
sweet capsicum - 100g
onions - 50g
vegetable oil - 2 tbsp. l.
lemon juice

To the pickled mushrooms and red capsicum, cut into strips, add finely chopped boiled potatoes, chopped onions and cooked fish, boned and finely chopped. Season the mixture with salt, pepper, oil and lemon juice to taste and stir. For the recipe you will need:

rice - 1/2 cup

First the rice is boiled. The main thing is not to overcook it. You can put chicken cubes in the water. Finely chop the mushrooms. Then an egg is added to the rice and mushrooms, everything is mixed. Then small cutlets are molded, a little larger than meatballs.

For the recipe you will need:
fish - 1.5kg
beets - 4 pcs.

Remove the fish fillet from bones and skin, cut into thin, wide slices, holding the knife at an angle. Start cutting pieces from the widest part of the fillet, i.e. from the head. Place the pieces of fish in a large enamel dish, greased with oil, pepper each piece, add salt, lightly sprinkle with lemon juice and white wine, put in the oven over low heat and bring the fish until cooked. Cool.

Boil beets and potatoes separately, cool, cut into even circles, and then into long, even strips. Cut the trimmings into small cubes, add chopped pickled and fresh cucumbers (without skin) to them. Season the finely chopped vegetables with the sauce: grind the mustard, salt and sugar into a homogeneous mass, gradually, 1 teaspoon at a time, rub in all the oil, pour in vinegar to taste.

Place the seasoned vegetables on a plate in the form of a roller, grease it with thick Provencal sauce, arrange fish, chopped beets, potatoes, pickled and fresh cucumbers, mushrooms and pitted olives tightly across the top in rows. Grease with sauce again so that the food is not visible. Sprinkle chopped herbs on top and refrigerate until serving.

1. Pork neck - 4 slices 1 cm thick.

Cooking method. The pork slices are well beaten (the thickness of the meat should be several millimeters). You also need a meat grinder. Peel and boil the potatoes in salted water. While it is still hot, mash it into a puree. Add butter to melt. Cut the meat into small pieces, put in a pan, add a small amount of water, salt, add seasonings and cook until tender. This is about half an hour. (The broth can then be used for soup). Rinse the pickled mushrooms. Pass the meat and mushrooms through a meat grinder and mix with puree. Add cottage cheese, sour cream, eggs and seasonings, salt to taste.
