Jellied pie with minced meat and potatoes recipe. Hearty jellied pie with meat and potatoes in the oven

Kefir jellied pie with minced meat is a simple and quick option for preparing a tasty and satisfying pie that will perfectly complement lunch, dinner, or is suitable for a snack. Perhaps the only drawback of this pie is that it is advisable to eat it hot or warm, since in the refrigerator the pie hardens a little and becomes dense. This is due to the fact that the dough is prepared with kefir. However, kefir dough has many more advantages than disadvantages. The taste of a pie made from this dough is very tender, with a pleasant milky aroma. The pie dough is reminiscent of the dough for kefir pancakes: the same soft, smooth and slightly moist. Any salty or sweet filling is suitable for this version of the dough. Recently we prepared a jellied pie with kefir with canned fish, today I want to offer a recipe for a jellied pie with minced meat. If you have ready-made minced meat, preparing this pie will only take about 1.5 hours. Moreover, most of the time is needed for baking it.

Cooking time: 1 hour 15 minutes.

Number of servings: 6.

Ingredients:

for test:

  • 2 eggs;
  • 0.5 l. kefir;
  • 2 tbsp. flour;
  • 1 tsp without a hill of salt;
  • 2 tsp baking powder for dough;
  • 2 tbsp. vegetable oil;

For filling:

  • 1 large or 2 small onions small onions;
  • 0.5 kg minced meat (pork + beef);
  • 50 g hard cheese;
  • a small bunch of dill;
  • green onion feather;
  • refined vegetable oil for frying;
  • salt, pepper to taste.

Recipe for kefir jellied pie with minced meat

1. First of all, prepare the minced meat filling for the jellied pie. Peel the onion, chop and fry for a minute over medium heat in a small amount of vegetable oil.

2. Add the minced meat to the onion, knead it thoroughly with a spatula and fry over medium-high heat until an appetizing golden crust appears on the meat lumps.

3. Wash the dill under running water and chop finely.

4. Add half of the dill to the filling, the other half to the kefir dough, but that’s a little later. After adding the dill, stir the contents of the pan and remove from the heat. The minced meat filling is ready, now it needs to cool completely.

5. Let's move on to preparing the dough for the jellied pie. Break the eggs into a deep bowl and pour in the kefir.

6. Mix with a whisk until smooth. For convenience, you can also use a mixer.

7. Add 200 g of flour and baking powder. Mix.

8. Pour in vegetable oil and mix the dough again.

9. The consistency of the jellied pie dough should be like liquid sour cream.

10. Pour the remaining half of the chopped dill into the dough and mix. Dill in the dough will give the pie an amazing aroma.

If you want to diversify the pie a little, you can add other fresh spices to the dough to taste: basil, parsley, cilantro. The main thing is to dry them well first so that excess moisture does not get into the dough.

11. Grate the cheese on a coarse grater. Pour half of the dough into the mold.

12. Add minced meat with onions.

13. Grate the cheese on a coarse grater and sprinkle it over the minced meat.

14. Pour out the remaining dough.

15. Bake at 180°C for about 40-50 minutes (depending on the height of the pan).

16. Cool a little and turn it over onto a flat plate or serving board - you get something like an upside-down pie. If you want, you can serve it as usual, with the delicious cap facing up. We cut it and call everyone to the table, the kefir jellied pie with minced meat is ready in a hurry! Sprinkle chopped green onions on top and place on the table hot or warm. It is very tasty to serve a glass of kefir or milk under the pie. Bon appetit!

Good afternoon, dear readers! We all love to eat delicious food. However, often when we come home tired from work late at night, we only have enough energy for macaroni and cheese or an omelet. And I really want to surprise my family with home cooking. I remembered one of my favorite dishes - jellied pie with minced meat. Today you will find a delicious selection of different variations of this recipe.

The uniqueness of this baking is that all the ingredients necessary for cooking can be found in the refrigerator of any housewife. And it doesn’t take much time and effort to prepare.

The dough can be made with different products: milk, sour cream, kefir, mayonnaise, yogurt, etc. And you can add any products you have and love to the filling.

Try preparing a dish with different minced meat: pork, chicken, beef or fish. It will be especially tasty if you add something other than meat to the filling. For example, fresh potatoes, onions, cabbage, rice, mushrooms and other products. Get creative and try different combinations. I even made 2 fillings at once - I filled half with minced meat, and the other with green onions and eggs. What a surprise my husband had when he cut off a piece and got 2 fillings at once :)

Recipe for jellied pie with raw minced meat and potatoes on kefir

This is the most traditional version of baking, my favorite since childhood. The combination of meat and potatoes gives the dish juiciness and satiety. The dish will especially appeal to those who like a lot of meat and little dough. My men especially like it.

You will need:

For the test:

  • 1 cup flour;
  • 1 glass of kefir;
  • 1 egg;
  • 0.5 tsp salt;
  • 0.5 tsp sugar;
  • 0.5 tsp baking soda.

For filling:

  • 250-300 g of any minced meat;
  • 1-2 pcs. bulbs;
  • 1 large potato;
  • salt and pepper to taste.

Step-by-step cooking process:

1. First knead the dough. Take an egg, add kefir to it and mix well. Then add the flour and remaining dry ingredients (sugar, salt and baking soda) to the mixture.

Knead the dough thoroughly until the lumps disappear. It should have a consistency similar to liquid sour cream.

2. Leave the dough to rest while you prepare the filling. Add finely diced onion to the minced pork for juiciness. You can adjust its quantity to your taste. If you don't like onions, add less. If you want a juicy filling, add more.

3. Cut the potatoes into small cubes too. This is necessary so that the filling is baked well. Add potatoes to meat and onions. Season all ingredients with salt and pepper to taste and mix thoroughly with your hands.

4. After preparing the filling, turn on the oven and set the temperature to 200 degrees. While the oven is heating up, take a baking pan and line it with parchment or simply grease it with vegetable oil. The parchment tails should be trimmed so that they do not burn during baking.

5. Pour half the dough into the mold, spreading it evenly over the entire bottom.

7. Next, pour out the remaining dough, spreading it over the entire diameter with a spoon.

8. Bake in a preheated oven at 180 degrees for about 40 minutes.

Determine readiness by looking at the potatoes. If it is baked, then the dish is ready. All that remains is to cut it and enjoy the taste.

For lovers of potato filling, I described it step by step in a separate article. You can add not only minced meat to the filling, but also chicken, mushrooms, sausage and even canned saury. I really like the last option for its simplicity and speed of preparation.

Bulk pie with minced beef and cabbage on kefir with mayonnaise

This baking option is lighter and more tender due to the presence of cabbage in it. I add not only white cabbage, but also Chinese cabbage. You just don’t need to blanch it, just chop it and combine it with the minced meat.

Ingredients:

For the test:

  • 8 tbsp. flour;
  • 1 glass of kefir;
  • 1 glass of mayonnaise;
  • 3 eggs;
  • 1 tsp baking soda.

For filling:

  • 300-400 g minced beef;
  • 400-500 g of cabbage (white or pecan);
  • 1 large onion;
  • salt to taste;
  • spices and herbs to taste;
  • vegetable oil for frying.

Cooking steps:

1. White cabbage must first be blanched. To do this, take cabbage and cut it into thin strips. Place the water in a saucepan on the fire and bring to a boil. Place the slices into already boiling water and let it boil for a minute. Then turn off the heat and drain the liquid from the cabbage using a colander.

2. Cut a large onion into half rings or cubes. If you don't like a lot of onions, you can reduce the amount.

3. Heat vegetable oil in a frying pan and fry the onion until soft. Then add ground beef and your favorite spices. I like the mixture of coriander, dry garlic and peppers.

4. While the filling is preparing, make the dough. Mix kefir and mayonnaise together, add eggs and soda to them. Mix everything thoroughly.

5. Gradually stir in the flour in parts, achieving a homogeneous consistency.

6. Add cabbage to the fried minced meat and onions. And at the very end, frozen or dried greens. Simmer until done.

7. Grease the baking dish with butter or vegetable oil. Place half of the dough on the bottom of the mold, and spread the filling on top of it so that the latter does not touch the walls of the mold. Dip the filling a little into the dough so that the future pie does not fall apart.

8. Place the remaining dough on top of the filling, spreading it over the entire surface with a spoon.

9. Place in an oven preheated to 180 degrees for 25-30 minutes.

Check readiness with a toothpick. If after piercing its middle it remains dry, then you can turn off the oven. While the baked goods are cooling, brew some aromatic tea and invite your family to the table for a tasting.

Lazy pie with minced lavash on sour cream batter

A quick option when guests are approaching and you need to quickly prepare something tasty and quick. This dish can be used as an appetizer or main course. Soft, tender with a golden cheese crust that any gourmet will love :)

You will need:

  • 1 package of thin pita bread;
  • 400 grams of minced meat with onions;
  • 3 eggs;
  • 100 g sour cream;
  • 150 g tomato sauce;
  • 100 g cheese;
  • salt and spices to taste.

Step-by-step cooking recipe:

1. Salt and pepper any minced meat with onions to taste, mix well. Place on sheets of pita bread and distribute the meat filling evenly over them.

2. Roll the pita bread into a roll and leave to soak for 5 minutes.

3. Then place the rolls in a baking pan on parchment paper.

4. Prepare the sauce: break the eggs into a bowl, add sour cream and tomato sauce. Salt everything to taste and mix well. Pour the resulting sauce over the soaked pita rolls.

Lavash here acts as a dough; you will need 2 sheets of it for this amount of minced meat. And the egg-sour cream filling will give it the necessary softness.

5. Bake the pie in an oven preheated to 200 degrees. After 35 minutes, sprinkle the dish with cheese and leave in the oven for another 3 minutes. During this time, the cheese will melt and the baked goods will acquire an appetizing golden brown crust.

This dish is very beautiful both outside and in cut. It will be a wonderful decoration for the holiday table.

Jellied minced meat pie with kefir is a quick and quite tasty option for lunch or a snack. In addition, it is quite simple and quick to implement. In order for such baked goods to please you and all your household members, you should follow a few simple rules.

You can often hear that the jellied pie was not baked and remained damp inside. To avoid this problem, you should always remember to leaven the dough. The best way to do this is to use baking soda. By reacting with the fermented milk product, it will make the dough loose. With this dough the cake will bake without any problems.

The next important point is preparing the filling. Whatever you add to the pie, remember that the ingredients must first be heat-treated and not contain excess liquid.

Jellied pie with minced meat on kefir

Ingredients

  • wheat flour - 2 cups;
  • kefir (yogurt) - 0.5 liters;
  • butter - 120 grams;
  • chicken eggs - 3 pieces;
  • sugar - 1 tbsp. spoon;
  • baking soda - 1.5 teaspoons;
  • salt - 1 teaspoon.
  • minced meat - 0.5 kg;
  • onion - 1 head;
  • garlic - 2 cloves;
  • vegetable oil - 1 tbsp. spoon;
  • salt - 1 tbsp. spoon.

Preparation

1. To prepare the jellied dough, break 3 medium-sized chicken eggs into a deep enough bowl. Add granulated sugar and a little table salt to them.

2. Lightly beat the mixture of eggs, salt and sugar using a whisk. The ingredients must be well mixed.

3. Kefir should be heated in the microwave, pour it into a container with dough, and immediately add baking soda. By the way, to prepare this dough you can use almost any fermented milk product with a liquid consistency. If you have sour milk or yogurt in the refrigerator, then you can safely replace kefir with them.

4. Add a handful of flour and mix well so that there are no lumps in the dough.

5. Add all the wheat flour measured in advance in small portions. The consistency of the dough should resemble sour cream.

6. Butter should be melted in a water bath or using a microwave oven. Pour warm oil into the dough.

7. Mix the mixture well with a whisk again and set aside for now.

8. For the filling, you need to take minced meat and place it in a frying pan. Peel the onion, cut it into small cubes and add to the minced meat.

9. Fry it over medium heat without a lid with the addition of vegetable oil. The mixture should be dry enough so that the cake does not remain raw inside. At the end of cooking, add table salt and garlic squeezed through a press to the filling.

10. Half of the dough should be poured into a greased pan. Immediately pour the filling onto the base. By the way, you shouldn’t take oil from the frying pan; it’s better to try to make the filling as dry as possible.

11. Pour the remaining amount of dough over the minced meat filling.

Jellied pies are easy to prepare. The dough for them does not have to be kneaded and rolled out for a long time, since it should be liquid.

Check the readiness of the pie with a toothpick. It should come out dry from the center of the baked goods.
