3. Place the flour on a board in the form of a slide with a depression, pour water with yeast into the middle and begin kneading, gradually adding the remaining water. Preparation


Dissolve the yeast with warm milk and place in a warm place for 45 minutes. Add salt, eggs, yeast to the sifted flour and knead the dough. Also put it in a warm place for fermentation for 3 hours, covered with a thick napkin. Knead every hour: When the dough is ready, cool it a little by putting it in the refrigerator for 15 minutes. Then roll out a round cake 1 cm thick and grease with softened butter.
Soak the salted mushrooms (in a small amount of water) for 10 minutes. Cut them into small strips and place them in a frying pan with heated butter. Preparation

Soak the mushrooms in cold water for 1 hour, then cook them over low heat. Cool and cut into strips. Melt melted butter in a small frying pan, fry onions, mushrooms and pour sour cream sauce over it.
Roll out the dough into a round cake. With wet hands, press it tightly into the pan, lifting the edges. Prick the dough several times with a fork and place in the oven at 200°C for 10 minutes. Place the filling on the flatbread, sprinkle with grated cheese and pour over melted melted butter.

36. Pizza "Gourmet"


For the base : 400 g flour, 100 ml water, 90 g ghee, 2 eggs, 39 g sugar, salt.


For filling : 200 g of champignons, 30 g of butter, onions and dry white wine, 70 g of sour cream and tomato puree, salt, cilantro, ground red pepper, 60 g of breadcrumbs, 1 bunch of parsley and dill.


For the baking sheet : 1 tbsp. spoon of vegetable oil.


Preparation


Melt the butter, put the champignon caps in a clay pot, pour the butter over them and simmer in the oven until soft.
Fry the mushroom legs and chopped onions together. Mix breadcrumbs, parsley and dill, add flour, wine and sour cream. Place the mixture over low heat and simmer for 5 minutes. Then pour in tomato paste, salt and pepper. Put the mixture on the fire and cook until it thickens.
Place 1 teaspoon of the prepared mixture into the cap of each mushroom, smooth the surface with a knife, sprinkle with crushed breadcrumbs and place in an oven preheated to 180°C for 10 minutes.
Pour half the flour specified in the recipe into the pan, pour in the yeast dissolved in water, mix everything well and put in a warm place for 2-3 hours. The dough is ready when it increases 3 times in volume, and then begins to slowly fall. Add the remaining flour and salt, add melted butter, sugar and eggs. Knead the dough and put it in a warm place for 2 hours. After 1 hour, knead it.
Divide the dough in half and roll out into 2 layers according to the size of the baking sheet (one should be larger). Place a large layer of dough on a baking sheet greased with vegetable oil and sprinkle with fat. Place a small layer on top and also sprinkle with fat. Place the stuffed mushrooms on a small layer. Pull out the edges of a large layer of dough slightly and form a border.
Bake the pizza in a preheated oven at 200°C for 25 minutes.

37. Pizza with mushrooms and sauerkraut

Scald the cabbage with boiling water, squeeze and simmer in oil. Fry the mushrooms.
When the cabbage has cooled, place it on a flatbread, place chopped onion on top, and fried mushrooms on top of the onion. The last layer is tomatoes cut into slices.

38. Mushroom pizza with vegetables


For the base : 500-600 g flour, 40 g yeast, 2 eggs, 100 g butter (or margarine), 500 ml milk (or water), salt.


For filling : 100-150 g mushrooms, 2-3 bell peppers, 200-300 g cheese, 2 fresh cucumbers, 120 g tomato sauce, 60 g butter.

Preparation


Knead the dough from flour, eggs, salt and water, roll it out on a baking sheet into a flat cake 1 cm thick and put it in the refrigerator for 2 hours.
Peel the zucchini and cut into 1 cm thick slices, fry them in oil until half cooked. Place peeled porcini mushrooms or champignons in boiling water for 5-7 minutes, then drain them in a colander, cut into thin slices and lightly fry in oil. Pour sour cream sauce over them and simmer until done. Cut the tomatoes into thick slices and sprinkle with pepper.
Remove the dough from the refrigerator and place the filling on it in this order: zucchini, mushrooms, tomatoes. Put the pizza back in the oven and bake for 5-7 minutes at 200°C. Finely chop the onion and fry in margarine until golden brown. Add salt, sour cream and tomato sauce. Cut the champignons into cubes and place them in a frying pan, putting them on high heat for 2-3 minutes. When the mushrooms are ready, add salt and mix well. After pouring boiling water over the tomatoes, remove the skin and cut into cubes.
Roll out the finished dough to the size of the baking sheet and make high, but not thick sides along its edges. Place the prepared sauce on the crust and spread it over the entire surface. Place tomatoes on top, mushrooms on them and sprinkle with grated cheese.
Place the pizza in the preheated oven for 35-40 minutes. Transfer the finished dish to a board covered with parchment paper.

42. Pizza “Fox”


For the base : 1 kg flour, 20 g yeast, 1 egg, 150 g margarine, 250 ml milk, 100 ml water, 50 g sugar.


For filling : 50 g cheese, 200 g chanterelles, 50 g sausage, 60 g each of tomato sauce and mayonnaise, egg, salt, dill and parsley.


For the baking sheet : 1-2 tbsp. spoons of vegetable oil.


Preparation


Cut the washed chanterelles into small pieces and cook for 1 hour. When the mushrooms are cooked, salt them. Dissolve the yeast in water, sift the flour, mix it with margarine and, adding sugar, chop the resulting mass with a knife. Pour milk into the dissolved yeast and, after mixing well, mix with flour and margarine. Place the dough in a warm place for 10-15 minutes, then take it out and form a ball out of it, roll it in flour and put it back in a warm place, covered with a towel, for 40-50 minutes.
Cut the sausage into cubes. Mix mayonnaise with egg, add salt. Finely chop the dill and parsley. Place the prepared dough on a greased baking sheet and roll it over its entire surface in a layer 5 mm thick.
Pour tomato sauce onto the crust and spread it over the entire surface. Place chanterelles on the sauce in the 1st layer, pour mayonnaise and egg over them and put the 2nd layer - sausage. Sprinkle the filling with grated cheese and herbs.
Place the pizza in the oven and bake for 20 minutes at 230°C.

43. Pizza di Napoli


For the base : 300 g yeast dough.


For filling : 200 g of pickled champignons, 100 g of fresh tomatoes and cheese, egg, 50 g of pickled onions and mayonnaise, salt, ground black pepper.


For the baking sheet : 1 tbsp. spoon of vegetable oil.


Preparation


Roll out the dough on a cutting board. The shape can be round or rectangular, but the width should not exceed the size of the baking sheet. Leave the dough to proof in a warm place and prepare the filling.
Mix the raw egg thoroughly with mayonnaise. Chop the onion into rings, cut the mushrooms into halves or quarters. Pour boiling water over fresh tomatoes and remove the skins. Salt and pepper everything.
Arrange the filling, starting with mayonnaise mixed with egg. Then arrange the tomatoes and evenly place the pickled mushrooms on them. Fry the minced meat in vegetable oil until cooked, cut the tomato into thin slices and add to the minced meat at the end of frying, pepper and salt. When the meat has cooled, spread it evenly over the surface of the flatbread. Place marinated mushrooms cut into halves on top. Grate the cheese on a fine grater, dry it a little and sprinkle it evenly over the entire filling. Carefully place the pizza on a baking sheet lined with a thin layer of flour. Cooking method:

  • Sift the flour and mix it with yeast, salt and sugar.
  • Pour in warm water and oil, knead the dough. You will have to knead for at least a quarter of an hour, as you need to get a homogeneous consistency, without lumps.
  • When the dough stops sticking to your hands, roll it into a ball and leave it for an hour, covering it with cling film.
  • While the dough is rising and rising in volume, prepare the tomato paste for the pizza. To do this, scald the tomatoes and remove the skin from them, grind the pulp in a blender. Finely chop the onion and garlic, fry them, sprinkled with basil, until soft. Whisk together with tomato puree. Lightly salt and pepper. Return to the pan and simmer over low heat until the tomato puree turns into a thick tomato paste.
