My acquaintance with granola began about two years ago: I bought a bright package of this magical mixture, knowing absolutely nothing about it. It tasted like banana and chocolate chips, but... Having tried it once with hot milk, I was terribly disappointed, because the granola tasted greasy, as if it had been well soaked in vegetable oil.

A year later, I finally decided to make granola at home after reading a lot of recipes (as I usually do). Tormented by the choice between several I liked, I settled on one that used honey, peanut butter and banana as liquid and sweet ingredients. I diligently baked the mixture for more than an hour, then carefully poured it into a tin and waited for the morning to evaluate my work. In the morning, disappointment awaited me again: by the end of breakfast, my jaws completely refused to move, because they had not experienced such a load in their entire life! The granola was incredibly hard...

And only this winter in Vilnius I bought a package of crispy granola, which I fell in love with irrevocably! And then I tried to cook something similar at home. The secret of the perfect granola for me was revealed. It turned out that everything is simple: you just need to take instant cereal, bake it for no longer than 30 minutes and be sure to add something crunchy like cookies or waffles. This is the kind of granola I like the most: when small flakes are churned into lumps soaked in maple syrup or caramel. They are crunchy on the outside, softer on the inside. This granola is especially good with Greek yogurt and fresh berries or fruit.

Ingredients:

  • 2 cups instant oatmeal
  • 1 cup favorite nuts (hazelnuts, almonds, cashews, etc.)
  • 1/2 cup raisins, dried fruits or candied fruits
  • 3/4 cup caramel (or runny honey, maple syrup)

Optional:

  • 3-4 pcs. crunchy biscuits or a handful of small biscuits

We will need:

  • 2 tablespoons of vegetable oil,
  • a glass of freshly squeezed juice (orange or apple),
  • cinnamon and other spices to taste.

Take nuts and seeds and cut them into pieces so that you can easily eat them. For example, you can take cashews, almonds, pistachios, walnuts and pine nuts.
In a bowl, mix chopped nuts and oatmeal.

Attention: you need real cereal, i.e. those where the packaging says "Preparing 2-3 minutes."

Then we take on the liquid ingredients. In a saucepan, combine honey, oil, juice, cinnamon, pepper and salt. Put this potion on the fire, stir and wait until all the ingredients are mixed and the salt dissolves. You don't need to boil anything.
Pour the hot liquid into the dry ingredients (which we have already prepared) and mix everything well, do not be lazy. Lay out on a parchment-lined baking sheet (although this is optional).
Bake the future granola for 40-50 minutes in the oven at 160 degrees. It will be great if you take out the form every 10 minutes and mix the contents - then the granola will bake evenly.
While the granola is baking, take the berries and chop (if large) to the size of nut pieces.
When you take the pan out of the oven, don't be alarmed, your granola will most likely be soft or even damp. But gradually it will acquire the texture that it should be. Add chopped berries to the cooled granola and mix everything well.

  1. Combine 1 cup of cream, 2 egg yolks and 2 tablespoons of agave nectar in a saucepan. Put the mixture on the fire, but do not bring to a boil. As soon as the first signs of boiling appear, remove from heat. Be sure to stir while heating.
  2. Now soften a pack of cream cheese (small, about 250 grams).
  3. Pour the heated mixture into the cheese and mix everything well with a blender until smooth. Put in the refrigerator for a couple of hours.
  4. Take the mixture out of the refrigerator, add lemon zest or 1 tablespoon lemon juice for flavor, a little more cream and stir.
  5. Prepare paper cups - put some granola on the bottom, then 2-3 layers of cream mixture and a small amount of jam. Sprinkle granola on top as well.

Classic granola recipe

This is an American snack, you can call it a basic recipe. Preparing a quick American breakfast is easy.

Ingredients:

    oat flakes (not instant) - a glass;

    rice flakes - ¼ cup;

    by tablespoon:

    brown sugar;

  • - shelled sunflower seed;
  • ground walnut;
    -water;

    cinnamon - on the tip of a knife;

    vegetable oil - 2 teaspoons;

    salt - a pinch.

  1. First, preheat the oven well: up to 130 degrees - optimally. Line a baking sheet with parchment paper.
  2. On low heat, you need to prepare a binder for granola: melt honey in a bowl, add oil and water, cinnamon and salt. In another bowl, combine all the other ingredients for the future snack. Pour liquid binder and mix everything.
  3. Spread the mixture evenly, not in a thick layer, on a baking sheet and put in the oven. Baking is complete when a uniform golden crust appears.

Ingredients:

  • oatmeal - 2 cups;
  • 6 tablespoons of honey;
  • a glass of chopped nuts;
  • 1/3 cup shredded coconut;
  • 3-4 tablespoons of chopped dried fruits (dried apricots, raisins, dried berries, etc.);
  • a tablespoon of grated orange peel;
  • vegetable oil - 7 teaspoons.

Cooking like this:

  1. We heat the oven (maximum 180 degrees) and bake the nuts and cereal until golden brown.

  6. Spread the entire mixture on a baking sheet. The thickness of the cake is from 1 centimeter. It is important to compact the mixture well!
  7. Place the tray in the oven for half an hour.
  8. Remove the baking sheet and cut the granola into bars.

Diet Granola

Whatever you say, no matter how good granola is, its calorie content is quite high! Even the classic version contains from 350 kcal. Where can you lose weight? But a dietary granola recipe will come to the rescue. Diet granola is easy to prepare and provides about 160 kcal per 100 g.

Ingredients:

  • oat flakes - 1/3 cup;
  • rye flakes - 1/3 cup;
  • fiber - a nightingal spoon;
  • apple pomace - a glass;
  • carrot cake - ½ cup;
  • coke shavings - 3 tablespoons;
  • honey - ¼ cup;
  • cinnamon - on the tip of a knife.

Fiber is sold in pharmacies or in the diabetic products section.

Mix all the ingredients and mix well until the mass is homogeneous. Then spread the mass on a baking sheet with a cake. You need to bake at 135 degrees for half an hour. Then cut into bars.

Granola in a slow cooker

Do you know how to cook granola at home without standing at the oven and the incessant “burnt-not-burned” guard? Of course, in a multicooker. This electric saucepan is a real kitchen helper!

Ingredients:

  • a glass of oatmeal;
  • 2/3 cup nuts;
  • a glass of chopped dried fruits (you can figs, dried apricots, raisins, etc.);
  • 3 tablespoons of honey;
  • poppy seeds, sesame seeds, coconut flakes, flaxseed - a tablespoon each;
  • flavorless vegetable oil - 2 tablespoons;
  • cinnamon - a pinch.

Cooking like this:

  1. Mix nuts, oatmeal, sesame seeds, poppy seeds, flax seeds, cinnamon and coconut flakes, pour in oil, mix.
  2. In a slow cooker, line a bowl with foil.
  3. Put the mixture into a bowl, close the multicooker and keep in the “Baking” mode for 45 minutes. It is important to stir the mixture at least 3-4 times.
  4. Mix the finished granola with chopped dried fruits. Cool down. Pour into a jar with a lid and, if necessary, take the desired portion.


Granola in a pan

A very quick option is cooking in a pan. How? As easy as pie!

Ingredients:

  • oat flakes - a glass;
  • 50 g of granulated sugar and honey;
  • any nuts - half a glass;
  • any dried fruits - half a glass;
  • a mixture of aromatic spices for baking (cinnamon, ginger, nutmeg, cardamom and cloves) - a teaspoon.

Nuts need to be crushed: cut or crushed, you can throw in a blender. Rinse dried fruits and cut into small pieces.

Fry oatmeal in a pan, add sugar and nuts to it. You can now turn off the oven. Add dried fruits, honey, spices to the hot oat-nut mixture in a frying pan. Mix everything, let cool and pour into a container for storage.

Granola without honey

No honey or allergic to it? Then you can make homemade granola without this component. Everything is simple, and the taste does not suffer.

Ingredients:

  • oatmeal flakes - 1.5 cups;
  • rice flakes - ½ cup;
  • dried fruits (raisins and prunes 1:1) - 2/3 cup;
  • brown sugar - 3 tablespoons;
  • water - 1/4 cup;
  • olive oil - ¼ cup;
  • salt - a pinch.
  1. Flakes need to be mixed, add crushed nuts to them. Put the mixture in a preheated oven (130 degrees) for half an hour.

  4. When the granola is ready, it can be broken into pieces and stored in a tightly sealed container.

  • 1 ½ cups almond pieces;
  • 1/4 cup unsweetened cocoa powder
  • 3/4 teaspoon ground cinnamon;
  • 1 teaspoon of instant coffee;
  • 1/2 teaspoon salt;
  • 1/3 cup honey;
  • 1/2 teaspoon vanilla extract or vanillin
  • 1 ¼ cups unsweetened coconut flakes;
  • 3/4 cup chocolate chips.

Cooking. Preheat the oven to 160 degrees and prepare a baking sheet lined with baking paper. Mix oatmeal, almonds, cocoa, cinnamon, coffee, salt and vanilla extract (or vanillin) in a bowl and pour honey over it all. Again, mix everything well and spread on a baking sheet in a thin layer.

Ingredients:

  • 4 cups plain oatmeal (not instant)
  • 1 cup almond pieces;
  • 1/2 cup shredded coconut;
  • 1/4 cup pumpkin or sunflower seeds
  • 1/2 cup sugar syrup, agave syrup, or honey
  • 2 tablespoons of vegetable oil;
  • 1/2 teaspoon salt;
  • 1 cup dried fruits (cherries, cranberries, raisins, strawberries)

Cooking. Preheat the oven to 160 degrees and prepare a baking sheet lined with baking paper. In a separate bowl, mix dry ingredients, except for berries, and add honey or syrup.

Again, mix everything well, spread it evenly on a baking sheet and send it to the oven for 25-30 minutes. Break the finished granola into pieces, add dry berries and mix everything well again.

Ingredients:

  • 4 cups plain oatmeal (not instant)
  • 1 cup almond flakes;
  • 1 cup almonds;
  • 1/2 cup shredded coconut;
  • 1 teaspoon ground cinnamon;
  • 1/2 teaspoon salt;
  • 3 tablespoons of butter;
  • 1/4 cup vegetable oil;
  • 1/4 cup honey;
  • 1/2 cup brown or plain sugar
  • 1 teaspoon vanilla extract or a pinch of vanillin.

Cooking. Preheat the oven to 160 degrees and prepare a baking sheet.

Mix oatmeal, almond flakes and almonds, salt, cinnamon and coconut in a bowl. In a separate saucepan, melt butter, vegetable oil, honey and sugar together. When the sugar is completely dissolved and the mixture begins to boil, remove the pan from the heat and mix everything thoroughly again.

Pour the warm mixture into the bowl with the dry ingredients and mix thoroughly. Spread on a baking sheet in an even layer and send to bake for 25-30 minutes. During this time, you will need to mix the granola several times.

Remove the granola from the oven, mix again and cool. Store in the refrigerator in an airtight container for up to two weeks.

This homemade granola goes great with milk, yogurt or as an ice cream topping.
