To prepare chicken meatballs in sour cream sauce in the oven, prepare the ingredients according to the list.

Mix minced chicken with semolina (optional - with boiled rice or oatmeal), finely chopped young dill, garlic (a clove or two) pressed through a fine grater and onion (half a large onion is enough), season with salt and hot pepper. We beat the mass, transferring it from palm to palm. I don't add eggs or bread.

With damp or oiled hands, roll into balls of equal size.

For the sauce, heat the flour in a dry frying pan for 2-3 minutes (until a light golden hue), pour in the vegetable oil, add the other half of the chopped onion and a little garlic. Stir.

Add thick and fatty sour cream, spices, pour in about 100 ml of water - stir until thickened, boil and remove from heat.

Place the sour cream sauce in a large fireproof dish and immerse the meatballs in one layer. Place under a sheet of foil in a hot oven for 25-30 minutes, bake at 180 degrees. Dry for the last 5-7 minutes without foil.

We suggest preparing a dietary option - meatballs in sour cream sauce in the oven. Take:
half a kilogram of minced meat;
sunflower oil;
flour;
salt;

First of all, boil the rice (we do not indicate the quantity, to taste). Prepare the minced meat if you are making it from meat yourself. Add two beaten egg whites, onion, spices and rice to the twisted meat. Stir, put in the refrigerator for 10 minutes. Fry the onions and carrots in a saucepan. Add sour cream and seasoning there. Crush the garlic and add water and flour. Ultimately, the filling should be thick. Roll the minced meat into meat balls, roll in flour and place in the pan. Pour in the sauce and place in the oven, which is already preheated to 200 degrees, for half an hour.

For this recipe we will need:
700 g chicken fillet;
300 g sour cream;
100 ml water;
garlic;
egg;
100 g cheese;

We turn the meat into minced meat. Add salt, pepper, garlic, beat in the egg, mix well. Let's prepare the mold: grease it with oil. Wet your hands with water so that the minced meat does not stick to your hands, and form balls, placing them in the mold. Product set:
400 g beef;
150 g rice;
200 g onion;
100 g carrots;
300 g zucchini;
100 g sour cream;
100 g tomato paste;
3 tbsp. l. vegetable oil;
1 tsp flour;

Finely chop the onion and three carrots. Fry some of the total onion and all the carrots, mix with minced beef. Sprinkle with spices, salt, knead. In a saucepan, sauté the remaining onion, add tomato paste, let our gravy simmer a little, but be sure to cover it. Now add sour cream, cover again and keep on fire for a couple more minutes. All that remains is to dilute the flour in water, pour this mixture into the sauce for viscosity, bring to a boil and you can set the saucepan aside. Place the products in a baking dish and place the chopped zucchini between them. Pour the sauce on top and place in the oven for 30 minutes. Before serving, decorate with greens.

The recipe is for a kilogram of minced chicken. Also prepare:
150 g onion;
bun;
150 ml milk;

half a kilogram of turkey meat;
150 g round rice;
300 ml water;
200 g of onions and carrots;
egg;
olive oil;
spices;
salt;
greenery.
For filling we need:
2 tbsp. l. tomato paste;
6 tbsp. l. sour cream;
half a liter of water.


Grind the meat and vegetables through a meat grinder, and cook the rice until half cooked. Mix all the ingredients for the minced meat and preheat the oven to 180 degrees. Grease a baking tray with olive oil and place the meat balls that we formed from minced meat onto it. For the sauce, simply mix all the ingredients. Pour the sauce over the meatballs and place in the oven for half an hour, forty minutes, everything will depend on your oven.

butter (20 g);
water (150 ml);
flour (10 g);
salt;
pepper.

Pass the fish and onions through a meat grinder. Beat the egg into the mixture, add bread, salt and pepper, mix well. Form into balls and refrigerate for a quarter of an hour. Let's prepare the gravy. Fry the flour in oil. Add hot water and stir quickly to prevent lumps from forming. It's time to add sour cream, pepper, and salt. 50 g cheese;

Meatballs with rice in tomato sauce classic recipe

Let's start with a classic recipe, which is often present in the menu of kindergartens, and simply in home cooking.

Ingredients:

  • minced meat - 500 gr
  • rice - 150 gr
  • chicken egg - 1 piece
  • medium onion - 1 piece
  • salt, pepper - to taste
  • flour - 2 - 3 tbsp. spoons
  • carrot - 1 pc.
  • tomato paste - 4-5 tbsp.
  • sugar - 1 tbsp. spoon
  • paprika - 1 tbsp. spoon

The difference between meatballs with rice and the same ones is that they require pre-frying to maintain their shape and density. But hedgehogs don’t need this, they should look plump with clearly visible rice, sort of disheveled, and in my opinion, they are much easier to prepare. But the meatballs are just a little tastier.

So, to prepare them, finely chop the onion. I take half a medium onion to add to the minced meat and leave the other half for the sauce. My husband is not a big fan of onions, so I keep it to a minimum. If you like onions, you can take more.

I have minced pork + beef. I mix it with chopped onion, rice and egg. I don't forget to add salt and pepper.

As for the rice. Some people prefer to pre-cook the rice for 10 minutes until half cooked. But I don't do this, because... The rice will already be cooked in the half hour it takes for the dish to simmer.

Therefore, you can safely add unboiled, the only thing this leads to is that the meatballs will turn out a little drier inside. For example, this doesn’t bother me, because it will still be incredibly tasty.

But, decide for yourself what is more convenient for you, do so, just make sure that the rice does not boil at all and remains dense.

Mix everything into a homogeneous mass. You should get beautiful, aromatic minced meat.

We begin to form meatballs.

Scoop the minced meat with a spoon and roll it into a ball between your palms. They should be approximately the same size, so that it does not happen that some of them will already be ready, and those that are too large will remain raw.

If you wet your hands with water or oil before molding, the stuffing will not stick to your hands.

Then each ball needs to be rolled in flour and placed on a cutting board. We roll it lightly, without fanaticism.

So my delicious landing is almost ready for further preparation. The meat balls will need to be fried with a little oil so that they “set” and retain their round shape. If you don't do this, you will end up with hedgehogs. 😊

Place our meatballs in the frying pan. Fry over low heat, turning over to another side.

We have no intention of frying them until done. Let's just brown it a little. Turn it off and leave it like that for now.

It's time to prepare the tomato sauce. I don't really like to get a lot of dishes dirty while cooking, but the recipe calls for preparing the sauce in a separate container.

To do this, place chopped onion and finely grated carrots in a frying pan, fry until soft and light golden brown.

When this happens, add tomato paste. Since tomato paste itself is neutral and just has a tomato taste, we immediately add sugar and salt to it.

You can pepper it to taste. And here we add paprika. It will give the sauce an even richer red color, so don't skimp. You can put a heaped tablespoon.

Pour about 2-3 cups of boiling water into the roast. Once you've nailed down the recipe, you'll know exactly how much water to add for your pan.

Next, be sure to taste it (!) and add salt and pepper to taste. You can also add aromatic seasonings. For example, I like to add a little khmeli-suneli or dried basil and garlic. You can also add fresh crushed garlic, but the smell is not for everyone.

And pour the gravy over our fried meat balls.

The gravy should completely or almost completely cover them. At first it may seem like a lot, but I assure you that after 30 minutes of simmering, even with the lid closed, it will decrease by at least half.

So, cover the meatballs drenched in gravy with a lid, set the heat to the lowest setting and simmer until done. This process takes approximately 25-30 minutes, the minced meat cooks very quickly and the rice that we put inside has time to cook.

If the rice was previously boiled until half cooked, then the cooking time can be reduced to 20 minutes. This should be enough.

After half an hour, the meatballs are ready. My sauce thickened and I didn't get much of it. More could have been done.

As a side dish, you can take crushed or whole boiled potatoes, and buckwheat, pasta, and pea puree are also suitable. How fragrant and beautiful they are!

I'll break one ball to show you. The rice inside was completely cooked. The meatballs hold their shape, they are plump and delicious! Both adults and children will be delighted.

Take note of the recipe, it is very easy and simple to prepare. And you can quickly feed the whole family! 😉

Minced meatballs in sour cream sauce

Anyone who has never tried meat balls in sour cream sauce has missed out on a lot! It's fantastically delicious, and if you have a positive attitude towards sour cream, then this dish is for you. They are so tender, they just melt in your mouth. 👍

Ingredients:

  • Homemade minced meat - 500 gr.
  • Dry rice - 50 g.
  • Egg - 1 pc.
  • Onion - 1 small piece.
  • Carrots - 1 pc.
  • Sour cream 15% - 300 gr.
  • Flour for deboning - 2 tbsp. l.
  • Salt, pepper - to taste.
  • Khmeli-suneli (or other seasoning for meat) - 1 tsp. with a slide.

In the previous recipe, I did not boil the rice until half cooked. But this time I decided to boil it to make it a very tender and juicy dish.

Boil the rice as follows - rinse it through a sieve with running water and then place it in a saucepan.

Pour water, preferably boiling water, until it completely covers. Add a little salt and place on low heat. Bring to a boil, stirring constantly; the rice tends not only to “run away” from the pan, but also to stick to it from below and to the walls. Therefore, we stir actively and do not let him misbehave.

After boiling, cook for 7-10 minutes.

Once the rice has absorbed all the water, turn it off. Let it sit for 10-15 minutes, let it cool down to at least a very warm state.

Mix minced meat (I have pork + chicken), semi-boiled rice in one bowl, break one egg, salt, pepper and I add a spoonful of khmeli-suneli. It will be very fragrant!

Mix everything together until smooth. Next, scoop up the minced meat with a spoon and roll it between your palms to form balls.

They should be small. Approximately 4-4.5 cm in diameter. And I immediately put them in a high frying pan with a little oil. And I start frying over moderate heat. They need to “set”, so I additionally cover them with a lid.

Fry until slightly golden and turn over to another side. I do this using these silicone kitchen tongs, it’s very convenient.

There is no need to fry until done, just brown.

Place the finished balls in a separate bowl. Or you can use a separate frying pan for the gravy, as I did in the first recipe.

I grate the carrots finely and chop the onion.

I put them in the frying pan and add a little oil again. By the way, instead of vegetable, you can add cream, it will be even tastier.

Fry until lightly golden, without allowing the vegetables to fry too much. You need to stir. And spread the sour cream.

I've seen recipes where they add only 3 tablespoons of sour cream. In my opinion, this is not enough; it turns out to be just water and not a sauce. Add more, it won’t be much, but the sauce will be rich and incredibly tasty.

Mix sour cream with vegetables.

And add cold water, I added 2 cups, but I have a large frying pan. You need to add enough water so that the meat balls are almost completely covered. Be sure to add salt and pepper to the sauce as desired and taste to adjust the taste.

An awesome sauce, it will make the meatballs great and very juicy!

Place them in the sauce and place on the stove with the lid closed. After boiling, simmer over low heat for 20 minutes.

During this time, the gravy will thicken a little and soak our minced meat balls.

All that's left to do is submit. I have macaroni as a side dish, which I pour over with sour cream sauce, and put meatballs on top. A little fresh cucumber and a great lunch is ready!

Ingredients:

  • Minced meat - 500 gr.
  • Mushrooms - 150 gr.
  • Potatoes - 6-7 large pieces.
  • Cheese - 150-200 gr.
  • Salt, pepper - to taste.
  • Nutmeg - 1/2 tsp.
  • Vegetable oil - 1-2 tbsp. l.
  • Seasoning for potatoes - optional.

Take the minced meat, season it with salt, pepper and nutmeg. And I also always have frozen already chopped champignons in the refrigerator, just for a quick fix. I don't even defrost them, they will melt while cooking.

I make meatballs from this mixture. This recipe does not contain rice, which makes cooking much easier.

I cut the potatoes into slices, add a little olive oil to it (you can use sunflower oil), salt and add a little potato seasoning. I stir and place it in a foil-lined baking dish with high sides.

Meatballs with mushrooms go on top. In this form, put them in the oven at 200 degrees, on the lowest level for 40-50 minutes. We place them right in so that the rounds don’t brown before the potatoes are baked.

And when they are browned, take them out and sprinkle with finely grated cheese. By the way, if you add a mayonnaise mesh under the cheese, it will turn out absolutely delicious! Recipe for meatballs with rice in creamy gravy

Soft and tender meatballs in creamy sauce are always a win-win option. Suitable for any side dish. Today I have it with buckwheat.

Ingredients:

  • Minced meat - 500 gr.
  • Semi-boiled rice - 50 gr.
  • Cream 20% - 500 ml.
  • Butter - 40 gr.
  • Cream cheese - 120 gr.
  • Salt and pepper to taste.
  • Onion - 1 small piece.
  • Carrots - 1 small piece.
  • Suneli hops or other seasonings - 1 tsp.

You can see how I make the meatballs myself in recipes number 1 and 2. I won’t repeat myself.

Here, after the last cooking, I had some left over that didn’t fit into the pan, and I froze them until next time. It’s very convenient to stick it on, freeze it, and then use it in a hurry.

Frozen ones also keep their shape well.

Fry chopped onion with grated carrots in a frying pan until lightly golden. I put the meat balls there too.

I need them to melt a little and set. This will take about two minutes; I won’t fry until black.

Like this, I roll them from side to side until they are lightly blushed. I fry it in butter for a creamy taste.

Now I'm preparing the sauce. Pour all 500 ml of cream into a frying pan. The sauce needs to be salted, peppered, and your favorite seasonings added to it. I take some khmeli-suneli.

Be sure to try the gravy. It should have a creamy, pleasant taste and not be bland. I won't dilute the gravy with water, I like it. when it's saturated.

You can use cream with a lower fat content, it will also turn out good, although not so thick.

Over low heat, stirring regularly, bring our gravy to a boil. It is necessary to stir, the cream loves to stick to the walls and bottom of the dish and will try to fry to it.

At the same time, add finely grated cheese; it will harmoniously complement the taste of the sauce. Cover with a lid and cook over low heat for 20-25 minutes.

During cooking, continue to stir occasionally. The finished gravy will slightly decrease in volume and thicken - just what you need.

Serve the meatballs hot, with plenty of creamy gravy.

It just melts in your mouth, incredibly tasty and very creamy! 😊

Option for meatballs without rice in tomato sauce in a frying pan

Are there meatballs without rice? It's over. In principle, any of the recipes that I showed above can be used without adding rice to the minced meat. And it will turn out amazing!

It's all about the gravy; it's what allows you to diversify this dish so that it never gets boring.

Look what other recipe I have. I usually always cook it without rice and in a hurry. Yummy!

Ingredients:

  • Any minced meat with onions.
  • Tomatoes in their own juice - 650 ml. (1 jar).
  • Onion - 1 small piece.
  • Dried basil - 2 pinches.
  • Ground coriander - 1/2 tsp.
  • Bay leaf - 2 pcs.
  • Salt, pepper - to taste.
  • Dried garlic - 1 tsp.

So, we take minced meat, any homemade one. I have pork + chicken + onions. Everything is twisted together. Minced meat unsalted.

Before cooking meatballs, I salt it, pepper it, I can add nutmeg or meat seasoning to taste, directly into the minced meat. Mix well. I don't add rice.

I roll the bells and finely chop the onion and start frying. The meat balls go first, I roll them out and fry them in a little oil until lightly browned.

And I immediately put the onion on them. I fry them together for another minute and a half, the onion also becomes golden.

I stir, bring to a boil and taste. Having tried it, I’m already looking at how to adjust the taste - maybe I need to add a little salt or, on the contrary, add sugar. Don't be afraid to use it to adjust your taste.

And be sure to have all sorts of aromatic herbs - basil (I rub dry between my fingers), a little ground coriander, a couple of allspice peas, ground black pepper and dried garlic. This is my standard setup for this recipe. You can add or remove anything at your discretion, but basil just has to be there. Oh, and laurel, of course.

I stir and try again. If everything is good, then my meatballs simmer quietly for 20 minutes under a closed lid. Their aroma spreads throughout the apartment!

After the specified time, the gravy will boil away slightly and thicken, but the tomatoes in it remained intact.

These are such beautiful, fabulously delicious meatballs with a rich tomato sauce! With any side dish you will simply eat your mind.

Meatballs with cabbage in sour cream sauce, baked in the oven

A wonderful recipe that allows you to prepare a dish right away with a side dish.

Baked in the oven with sour cream sauce, they will lie on a delicious cabbage bed.

This is a recipe without rice. But if desired, it can be added to the minced meat.

Ingredients

  • any meat - 300 gr
  • white loaf - 1 slice
  • white cabbage – 600 gr
  • onion - 2 pcs
  • salt, pepper - to taste.

For sour cream sauce:

  • sour cream - 5 full tablespoons
  • milk - 1.5 cups
  • flour - 3 tbsp. spoons
  • butter - 3 tbsp. spoons
  • salt, pepper - to taste

For sprinkling:

  • cheese - 50 gr

Preparation

Prepare the minced meat: pass the meat with a loaf of bread soaked in milk and onion through a meat grinder. Salt and pepper.

Roll small balls.

Cut the cabbage into slices like this. The sheets must be held on the stalk so that they do not fall apart during cooking.

Fill the cabbage with water, add some salt and cook until almost done. Then we'll have it in the oven.

When the cabbage reaches the desired condition and is soft enough, turn off the heat and drain the water from the pan.

Grease the baking dish with oil.

We put our cabbage on the bottom, and meatballs on top of it.

Place flour in a dry frying pan, followed by butter.

The flour will be fried in oil until light golden brown, be careful not to start burning, otherwise the sauce will be ruined. You need to stir vigorously so that lumps do not form.

If you want the sauce to have a more piquant taste, add ground nutmeg.

Add sour cream and milk heated to high temperature, as well as spices, to the pan. The mixture must be stirred constantly.

Slowly bring the mixture to a boil (stirring constantly), let it bubble gently for 5 minutes, then turn it off. The sauce will thicken a little.

Pour it into a baking dish; it should completely hide the cabbage and meatballs.

Sprinkle breadcrumbs and grated cheese on top.

Preheat the oven to 180 degrees, place all this beauty there for 30 minutes. Cooking time may vary depending on the oven.

The surface of the dish should be nicely browned.

The dish is ready. Place it for serving along with the cabbage.

Minced chicken meatballs in the oven in milk sauce

Chicken or turkey meatballs are a healthy and dietary dish.

  • garlic - 2 cloves
  • milk - 100 ml

For the gravy (sauce):

  • chicken broth - 400 ml
  • butter - 70 -80 g
  • flour - 2 tbsp. spoons
  • milk - 180 ml
  • salt - to taste

Preparation

Cooking minced meat. To do this, pass the meat, onions and cabbage through a meat grinder. Add spices to taste.

Beat eggs, milk, breadcrumbs in a separate bowl.

Then add to the minced meat. Mix everything together thoroughly.

We form small balls and place them on a baking sheet, on a sheet of foil, greased with oil.

Bake at 210 degrees for 15-20 minutes, until golden brown.

This recipe has a very tasty milk gravy. While the meatballs are baking, we will prepare it.

Melt the butter in a saucepan or frying pan, add flour to it. Lightly fry it for 2-3 minutes, without letting it darken, over medium heat.

Once they are ready, remove them from the oven and place them in the gravy.

Simmer everything together for another 5-7 minutes over low heat. Then we serve it to the table!
