Airy cottage cheese casserole in the oven - cooking features, best recipes and reviews. Airy cottage cheese casserole: recipe with step-by-step photos

The familiar cottage cheese casserole in the oven, fluffy like in a kindergarten, is prepared simply. This delicate sweet taste, which we all remember from distant Soviet times, is unlikely to be forgotten by anyone. There is an opinion that it is impossible to prepare such a casserole from cottage cheese at home. I disagree. Follow my recipe and you are guaranteed excellent results.
In Soviet-era catering, there were strict rules for preparing certain dishes. For example, cottage cheese, so necessary for children’s bodies, was forbidden to be served raw. It had to be subjected to heat treatment. That's how this recipe was born. By the way, this rule still applies today.

My dining room is on the first floor of the building. On the second floor there is a sewing workshop, on the third there is an office for a construction company. The building is a pre-revolutionary building, a former merchant's house. Ventilation leaves much to be desired, but...I put a cottage cheese casserole in the oven.

And after half an hour, the smell of cottage cheese and vanilla spreads across the floors. And the phone calls begin with the same question: “Will there be a casserole today? Leave me a portion, please.” Even those who didn’t like cottage cheese casserole as a child adore this taste as adults. And if you add a spoonful of thick country cream on top, on top of a piece of casserole, no one can resist.

So, get ready to write down the most delicious recipe for a classic cottage cheese casserole.

You will definitely like this excellent recipe for cottage cheese casserole in the oven; you don’t have to look for others. But if you really want to compare, you can look at our others. With milk or sour cream, raisins and dried apricots.

Ingredients for classic cottage cheese casserole:

  • Cottage cheese 500 g (I took wet cottage cheese, the percentage of fat content is not important);
  • Sugar 100 g;
  • Semolina 100 g;
  • Milk 50 g;
  • Butter 50 g (butter should be soft);
  • Egg 2 pcs.;
  • Vanillin 2 g.

How to prepare a tender and fluffy cottage cheese casserole with semolina like in kindergarten - step-by-step recipe with photos:

We rub the cottage cheese through a sieve (if we use soft curd in the “gut”, wet cottage cheese, or curd mass, then we should not grind it. But if we use curd mass, then according to the recipe you need less sugar, because the curd mass is sweet). Transfer to a bowl.

Place cottage cheese, sugar, eggs, softened butter, milk, vanillin in a bowl.

Beat well with a mixer and slowly add semolina, whisking so that there are no lumps.

Leave the finished mixture for 30-40 minutes for the semolina to swell. Then mix again. Place the curd mass in a greased mold (or line the mold with baking paper, you can either grease or not grease the paper.

This way the dough for cottage cheese casserole definitely doesn’t stick. If baking paper is used, then the finished curd mass can be immediately placed in a mold and left for 30-40 minutes to swell, then you can not stir it, but go straight into the oven).

Bake in the oven at 180-200 degrees, about 30 minutes until golden brown, but the baking time will depend on the size of the pan, I mean if you bake the casserole in a small pan, then the baking time will be a little longer.

I have a 26 size pan, the smaller the pan, the higher the casserole.

The dough can be made in the evening and left in the refrigerator until the morning.

Determine readiness with a wooden toothpick.

I usually make a double portion; I like it slightly warm, or when completely cool.

The finished casserole resembles cottage cheese pudding and turns out exactly the same as what we were given in kindergarten. The casserole can be served with sour cream, condensed milk, fruit syrup or jam.

If desired, you can add vanilla, raisins, fruits or any dried fruits to the dough (but this will no longer be a classic casserole).

Secrets and subtleties of preparing lush cottage cheese casserole

How to cook cottage cheese casserole in the oven like in kindergarten? By following these tips, you will end up with just such a dish.
The basis of the recipe is cottage cheese. It must be homemade. And with it sour cream. If you take village ingredients, the result will be the right consistency and taste.

Beat the eggs correctly. A delicious cottage cheese casserole like in kindergarten is obtained not only because of the right ingredients, but also because of the cooking method. If the recipe requires you to beat eggs with sugar, then do it for a long time until a stable foam appears, fluffy and not liquid. Then the cottage cheese casserole, just like in a kindergarten, will come out tall and airy.

No flour. To prevent the pie from falling and maintaining its shape, cook it with semolina. And don't add flour. After mixing all the ingredients with semolina, be sure to let the mixture stand for 15-20 minutes to swell.

Boiled semolina. According to the recipe, raw cereal is used in a cottage cheese casserole in the oven, just like in a kindergarten. But if you prepare baked goods from already prepared semolina porridge, the taste will be even more delicate. And such a cake will not fall off after cooling.

Baking temperature. The maximum temperature for a cottage cheese casserole recipe like in kindergarten or any other cottage cheese casserole is 200 degrees. And on average it is 175-180 degrees. This is the optimal temperature for uniform baking. The bottom layer does not burn, and the top layer does not remain liquid.

Casserole with raisins. The raisins need to be steamed before adding to the dough, otherwise they will be dry. If you pour hot water over it and leave it for a long time, it will become too soft and tasteless. According to the rules, you should steam the raisins in hot tea for 2-3 minutes or pour boiling water over them and drain the water, then they will swell, but at the same time retain both their shape and taste.

What can you add to cottage cheese casserole to make it tastier?

There are few recipe options for this casserole, but the additions to it are very varied. It can be condensed milk, cream, jam, jam, honey. A rather unusual dessert option is ice cream placed on a casserole. Adding berries or fruits on top will add piquancy.

It is best to use natural cottage cheese for this casserole. To make the structure of the casserole more delicate, it can be rubbed through a metal sieve. It is better to use a double portion of cottage cheese, then the taste will be more pronounced.
Some mothers add foam skimmed from boiled milk to the casserole: it’s a shame to throw it away, and children, as a rule, don’t eat it.

Turn on the oven at 170 degrees, no need to go higher. While it is heating up, pour four tablespoons of semolina with milk and add granulated sugar to them. Let it all stand and swell.

Wipe the cottage cheese. Although, many people skip this step and simply knead the product well with a fork, spoon, or beat it with a food processor, which can also be done. Then add the yolks. Place the egg whites in a dry bowl with high sides.

Mix the swollen cereal with cottage cheese, to which the yolks have been added. Add a packet of vanilla sugar to them, usually it is 10 grams. If not, then measure it. When replacing sugar with simple vanillin, one gram is enough.

Beat the egg whites for about three minutes with a mixer. Mix it with the cottage cheese and transfer it all into a greased form. Bake for 40 minutes. At the end we check. Serve the fluffy casserole with sweet sauces, sour cream, jam or just berries.

If you suddenly don’t have milk at home, then you can soak semolina in diluted condensed milk, kefir, sometimes they use some kind of juice, but it can change not only the taste of the baked goods, but also affect the color of the finished casserole.
