Vareniki. What you need: one liter of sour milk, a quarter of a teaspoon of quenched soda, a little salt and sugar, flour - whatever you need, so that the dough does not stick to your hands. You can make a sausage, cut off pieces, roll them out, put in a couple of pitted cherries and pinch the edges. It takes about ten minutes in a double boiler, no more. Sprinkle the finished dumplings with sugar and sour cream.

Cupcakes with sour milk.

Cake. What you need: two cups of flour, 2/3 cup of sugar, a glass of sour milk, one egg, half a glass of vegetable oil, a tablespoon of cocoa, one teaspoon of soda, quenched with vinegar, vanillin, nuts, raisins to taste. This is a national Uzbek dish with sour milk. It is a meat soup with the addition of rice and a large number of various vegetables. To prepare it you will need:

  • half a kilo of lamb;
  • 4 tomatoes;
  • 100 milliliters of sour milk;
  • a couple of large spoons of rice;
  • 6 potatoes;
  • one medium carrot and one onion;
  • small turnip;
  • dill, parsley and cilantro;
  • ground red pepper, salt and vegetable oil.

First you need to deal with turnips, onions and carrots. They are washed, cleaned, crushed and lightly fried in a small amount of vegetable fat. Pour vegetable oil into a separate thick-walled pan, heat it thoroughly and add pieces of lamb to it. As soon as the meat is browned, add water and boil it, not forgetting to remove any foam that forms.

After an hour, fried vegetables are loaded into the pan with meat, and after another fifteen minutes - fresh tomatoes. Shortly before the completion of heat treatment, chopped potatoes and washed rice are added to the future. All this is boiled until the vegetables are soft, sprinkled with chopped herbs and removed from the stove. Before serving, mastava is seasoned with sour milk.

Flatbread

This sour milk dish can be a replacement for your usual bread or an excellent addition to tea. It can be eaten with soups or dipped in jam or honey. To make these versatile flatbreads you will need:

  • 200 grams of wheat flour;
  • 250 milliliters of sour milk;
  • 70 grams of butter;
  • ½ teaspoon each of soda and salt;
  • vegetable oil (for frying).

Sour milk is combined with soda and salt, and then mixed with melted butter and oxygenated flour. The finished liquid and viscous dough is poured in portions onto a hot, greased frying pan and fried on each side. The browned flatbreads are placed in a stack on a plate and served to the table.

Homemade cottage cheese

This is a classic example of a simple and healthy dish made from sour milk in a slow cooker. Such cottage cheese does not contain a single gram of harmful additives, which means it is ideal for baby food. To prepare it, you only need 1 liter of sour cow's milk.

The main and only ingredient is poured into the multicooker bowl and cooked in the “Warming” mode for an hour. Then the contents of the cooking container of the device are thrown onto a sieve lined with clean gauze and put aside. After a few hours, the fabric is tied into a bag and lightly squeezed to get rid of the remaining whey.

Manna

This recipe for a sour milk dish will certainly arouse considerable interest among lovers of home-baked goods. Manna prepared in this way has a pleasant taste and retains its original freshness for a long time. To create it you will need:

  • a glass of semolina;
  • ½ teaspoon of soda;
  • a glass of sour milk;
  • 3 eggs;
  • a glass of sugar;
  • 170 grams of good butter;
  • a glass of wheat flour.

Semolina is poured with sour milk and left for at least an hour. Then they add eggs, soda, sugar, ghee and oxygenated flour. The finished dough is intensively whipped with a mixer and poured into a greased multicooker container. Cover the device with a lid and activate the “Baking” mode. After about an hour, the browned manna is removed from the multicooker bowl and served. If desired, steamed raisins, any berries, pieces of fruit, grated chocolate, chopped nuts or any other fillers can be added to the dough from which such a pie is baked.

Cucumber soup

This easy sour milk first course is perfect for a summer lunch. It is served cold and prepared without any heat treatment at all. To make this soup you will need:

  • a couple of fresh cucumbers;
  • a large spoonful of chopped walnuts and vegetable oil;
  • a clove of garlic;
  • 100 milliliters each of filtered water and sour milk;
  • ½ boiled egg;
  • salt and fresh dill.

Washed cucumbers are peeled, cut into small cubes and placed in a suitable saucepan. Garlic, crushed with salt, chopped dill and vegetable oil are also added there. All this is poured with sour milk and filtered water. The fully prepared cucumber soup is cooled in the refrigerator and only then placed into portioned plates. Immediately before use, it is sprinkled with chopped walnuts and decorated with pieces of boiled egg.

Recipe for cream dessert with sour milk

You will need: 500 ml sour milk, 1 cup sour cream, 1 orange (zest), 2/3 cup sugar, 1 tsp. gelatin.

How to prepare cream dessert with sour milk. Mix sour milk with sour cream, add sugar, orange zest, gelatin dissolved in 0.5 cups of water, mix, beat until thickened, placing the bowl with the ingredients in a large container filled with ice. Place the cream in bowls, place a mug of orange on top, sprinkle with powdered sugar, and refrigerate for 2 hours before serving.

Recipe for manna with sour milk

If it suddenly happens that the milk turns sour in the evening, then try baking this manna in the morning. This is my grandmother’s signature pie, she has been baking it for many years and it always turns out delicious and never gets boring.

That's all, then I pour the dough into the mold and put it in the oven to bake for 20 minutes at 180 degrees.

Recipe for fluffy pies with sour milk

I usually take one liter of sour milk, half a stick of butter, one glass of sugar, a little soda, literally on the tip of a spoon, and flour.

So, first I add soda to the sour milk (there is no need to extinguish it), beat in the eggs, add sugar, pour in the melted butter, then the flour. I don’t add as much flour as needed, because usually I sprinkle as much flour as I can by eye. The dough should turn out like for dumplings.

I knead it and roll it into a flat cake half a centimeter thick. I cut it into pieces (you can cut out shapes), you can squeeze out circles with a glass and fry on both sides in vegetable oil

Homemade cottage cheese

You can make tender cottage cheese, which turns out much tastier than store-bought. If the milk has just begun to sour, speed up the process by adding a couple of tablespoons of kefir or sour cream. Let the milk turn into curdled milk and start making cottage cheese.

Pour the yogurt into an enamel pan and place it on the stove. Heat over low heat until the contents of the pan begin to separate into curds and whey. Do not heat the mixture too much and do not let it boil under any circumstances. Do not cook the cottage cheese for a long time, otherwise it will become dry and hard.

Strain the contents of the pan through cheesecloth placed in a colander. Tie the cottage cheese in cheesecloth and hang the bundle over the sink to drain off excess liquid. In 5-8 hours the product will be ready. Serve it with sour cream, jam, honey or fresh berries

Do not discard the whey formed during cooking of cottage cheese - it will be useful for preparing dough or diet drinks.

Tarator soup recipe

This dish of Bulgarian cuisine is a cold soup also popular in Macedonia. It is served, as a rule, before main courses or simultaneously with them. The main ingredients of tarator soup are sour milk, cucumber, walnuts and garlic. To prepare this dish you will need:
- ½ glass of sour milk;
- ½ glass of water;
- 1-2 fresh cucumbers;
- 1 tbsp. l. walnut kernels;
- 1 clove of garlic;
- ½ egg;
- 1 tsp. greenery;
- 1 tbsp. l. vegetable oil;
- salt.

Combine sour milk with water and beat well. Peel the cucumbers and cut into small cubes. Peel the garlic clove, pass through a press and grind with salt. Chop half a hard-boiled egg with a knife. Grind the walnut kernels in a mortar. Then pour the chopped cucumbers with a whipped mixture of sour milk and water, add garlic crushed with salt, chopped egg, season the soup with vegetable oil, sprinkle with chopped herbs and crushed walnuts. Tarator soup is served cold.

Cupcake recipe

By far, baking is the most popular way to use sour milk. To make a cupcake with sour milk, you will need:
- 3 glasses of sour milk;
- 2 glasses of sugar;
- 1 glass of semolina;
- 3 glasses of flour;
- 4 eggs;
- ½ tsp. soda;
- any fruits, berries or nuts.

Mix dry ingredients in a deep bowl: flour, baking soda and granulated sugar. Pour semolina with sour milk and set aside for 15-20 minutes to swell. Then connect all the components. Pour the swollen semolina into the flour mixture, add fruits, berries or nuts of your choice. These can be pitted cherries and raisins, dried apricots, canned pineapple pieces, black and red currants, plums, apples, chopped walnut kernels, etc. Beat the eggs into the prepared mass and mix everything thoroughly. The dough should be the consistency of thick sour cream. Pour it into a silicone or heat-resistant mold and place it in an oven preheated to 200°C. Cake baking time is 50-60 minutes.

How to make chocolate muffins with sour milk

Ingredients:

Wheat flour - 300 g
Cocoa powder - 80 g
Baking powder - 1 tsp.
Soda - 0.5 tsp.
Salt - 0.25 tsp.
Sugar - 200 g
Butter - 100 g
Milk - 250 ml
Chicken egg - 2 pcs.
Bitter chocolate - 200 g

Preparation:

Now let's make muffins. Preheat the oven to 200 degrees. Place paper muffin cups into the pan. You can, of course, do without them. But it’s prettier with molds. Prepare them in advance - the finished dough should be laid out on them immediately after kneading. The dough should not “rest” and stand - because otherwise all the flour will interact with the liquid, and we will not get large air bubbles.

Chop the chocolate into pieces. There is no need to grind - the chocolate should be felt in the cupcakes. Set aside 50 grams.

In a large bowl, mix eggs with sugar.

Melt the butter.

Add melted butter to the egg-sugar mixture, and also add our sour milk. There is no need to beat the liquid ingredients for the muffins - just stir gently until combined.

In another bowl, sift the flour with cocoa, soda, salt and baking powder.

Mix well.

Pour the liquid ingredients into the dry ones and mix gently with an ordinary spoon. We stir briefly - we want the flour to be only slightly moistened. That's why all the dry ingredients need to be mixed very well separately.

If you mix the dough intensively and for a long time, you will get a crumb with small holes, with an almost bread-like texture. If you mix the dough “quickly”, the holes in the cupcakes will be large, and the cupcakes themselves will be airy, with a crispy crust and a high top.

15-20 movements with a spoon are quite enough.

Add 150 grams of chopped chocolate to the muffin dough. Again, stir quickly, just so that the chocolate is more or less evenly distributed.

Pour the dough into the molds, filling them completely. Sprinkle the reserved chocolate on top.

Bake for 20 minutes. You can check readiness with a toothpick. Bon appetit!

Sour milk pie

Milk – 1 glass

egg – 2 pcs.

flour – 2 cups

sugar – 1 cup + 2 tbsp. l.

margarine – 50 gr.

baking powder – 1 tsp.

vanilla sugar – 1/2 tsp.

raisins – 150 gr.

orange – 1 pc.

lemon – 1 pc.

Beat eggs with sugar, add sour milk, vanilla sugar, margarine and sifted flour with baking powder. Stir, add raisins and pour into a mold greased with margarine. Bake in an oven preheated to 180 degrees for 35-45 minutes, check readiness with a toothpick. Squeeze the juice from the fruit, mix with two tablespoons of sugar and bring to a boil. Reduce heat and cook over low heat for 10 minutes. Let the finished pie cool slightly, soak in syrup and sprinkle

Pancakes made from sour milk?

Compound:

  1. Sour milk - 0.5 l
  2. Flour – 8 tbsp. l.
  3. Eggs – 2 pcs.
  4. Sunflower oil – 2 tbsp. l.
  5. Salt – 0.5 tsp.
  6. Sugar – 2 tbsp. l.
  7. Soda – 0.5 tsp.

Preparation:

  • Add salt and sugar to the sour milk, stir, beat in the eggs and stir until a homogeneous mass is obtained. Now add baking soda and stir. There is no need to extinguish the soda, because lactic acid will replace the effect of vinegar.
  • Take a separate bowl and sift the flour. Add the resulting mixture to the dough and mix until the last lumps disappear. Then add butter to the dough. The dough should not be too liquid and not too thick.
  • Grease a frying pan with oil and heat over high heat. Pour the dough into the pan with a ladle, and after twisting the pan a little, distribute the dough so that you get a circle.
  • Once the bottom of the pancake is golden brown, flip it over to the other side. You can grease the finished pancake with butter.
  • Serve pancakes with sour cream, honey, jam, condensed milk. They can be stuffed with cottage cheese, liver, meat or fruit.
  • To prevent the pancakes from burning and becoming lumpy, heat and grease the frying pan well before frying.
  • Before preparing the dough, it is necessary for the sour milk to reach room temperature, leave him in the room for an hour.

Milk has gone sour - this is not a reason to be upset! Pour the milk into a 3-liter jar and place in a large pan of water - a water bath. There should be at least half of your jar of water. Turn the stove on to low heat and let the pan heat up. But don’t let it boil, otherwise the cottage cheese will turn out dry. When the yellowish cloudy liquid begins to separate from the white curdled flakes, the curdling process has begun.

The flakes should “settle” at the bottom, then the pan can be removed and the resulting curd thrown into a colander, which must first be covered with gauze folded in several layers. Don't forget to place a container under a colander to allow the whey to drain into it. Next, you need to shake the cottage cheese, mix it, pull the ends of the gauze into a “knot” and hang it over the container with the whey. Keep it like this for at least two hours, after which it is ready for use!

Pancakes

Children will be delighted if you give them a conspiratorial wink in the morning and tell them that they will get pancakes for breakfast.

Prepare the ingredients:

  • 0.5 liters of sour milk
  • 1 cup wheat flour
  • ½ teaspoon baking soda
  • Salt (to taste)
  • 2 tbsp. spoons of granulated sugar
  • Vegetable oil (as needed)

Add milk, sugar, salt to the pancake container and mix. Add baking soda to flour and pour into liquid. Let the contents of the container stand for a while - the soda should “quench out”. Stir the mixture thoroughly so that there are no lumps. By the way, we haven’t forgotten about adding eggs - they are simply not needed in this recipe.

Heat the frying pan. Pour in a small amount of oil and let it spread over the entire area of ​​the pan. Fry the pancakes until golden brown on both sides. Serve in a large beautiful bowl. Fresh sour cream, jam, preserves or condensed milk are perfect for pancakes. Eat for your health!

Would you like to spoil your loved ones with apple pie? Then sour milk is good for you! Prepare for the pie:

  • 2 chicken eggs
  • 1 cup granulated sugar
  • 1 stick of margarine (can be replaced with butter)
  • ½ teaspoon baking soda
  • 1 glass of sour milk (yogurt)
  • 2 cups wheat flour
  • 2 green sweet and sour apples

Place margarine (butter) in a warm place in the kitchen. While it is softening, make the dough. Add sugar to milk, stir and beat in eggs. Beat the mixture with a mixer until the sand is completely dissolved. Add margarine, cut into pieces. Stir.

Wash the apples, cut them in half and remove the core. If desired, the skin of the apples can be removed. Cut them into cubes or slices, but not too thin. Add them to the milk mixture and stir. Pour soda into the flour and mix it all into the dough. It should be creamy.

Line a baking tray with baking paper. The edges of the paper should not extend beyond the baking sheet. Pour the dough onto the prepared baking sheet and smooth it out. Place in the oven with the timer set to 180°C.

The pie will be ready in about 35-40 minutes. But it is better to check its readiness with a toothpick so that the dough does not stick to it. Remove the baking sheet from the oven and cover the pie with a dry kitchen towel. After a little while, cut it into even pieces, sprinkle it with a little powdered sugar and place it in a neat “stack” on a beautiful flat dish. Serve with milk or mint tea!

Sour milk and semolina casserole

This dessert is very healthy and delicious! To make the casserole you will need:

  • 1.5 liters of milk soured to curdled milk
  • 2 chicken eggs
