Summer and frost? Mutually exclusive concepts – you say? Not at all when it comes to the juicy gifts of summer, which are kept safe and sound in the freezer. Fresh berries in supermarkets in winter only pretend to be fresh. Under what electric sun and where were they grown? What kind of exposure were they subjected to to preserve their shape and color? These are all questions to which there are no exact answers. Therefore, you shouldn’t waste time and money - now it’s better to cook from those colorful fruits that have ripened and were collected in due time. Only for the decoration of the finished dish are beautiful currant branches, blueberry buttons and delicious strawberries, which delight us, residents of the era of global trade, all year round.

The main rule is to “pick” the berries either in the freezer of your home refrigerator or in a good supermarket, carefully inspecting the bag of frozen berries. There should not be large pieces of ice in it, and its surface should not be covered with a layer of frost (both of these are symptoms of unfair storage, when the packages were defrosted and frozen again, and the berries lost their usefulness each time).

There is no need to wash the berries before cooking; contact with water will damage them irreparably. Be patient and defrost them at room temperature - in a colander, so that all the liquid drains at once. Before adding the berries to the dough, lightly dust them with cornstarch so that it absorbs excess moisture and the baking turns out perfect.

Which berries to choose is a matter of your taste. They are great substitutes for each other in any recipe. Although, perhaps, the most capricious frozen berry is strawberry, and the most unpretentious are cranberries, lingonberries and gooseberries. Conduct the berry orchestra!

Add sugar and vanillin to the eggs.

Gradually, in parts, add sifted flour and baking powder, continuing to beat the mass. Knead the dough to the consistency of thick sour cream.

Grease the multicooker bowl well with oil; you can also sprinkle it with semolina or breadcrumbs. Pour half the dough, place half of the frozen berries on the dough.

Next - the remaining dough and on top - the remaining berries.

Set the multicooker mode to “Baking” for 90 minutes (you may need less time for baking, check your multicooker). The top of the finished pie should be firm and not sticky. After baking, leave the cake in the multicooker for another 15 minutes, then remove using the steaming bowl. Let the cake cool completely and sprinkle with powdered sugar. Garnish with berries and mint leaves.

Using a mixer, beat the eggs with sugar until a thick consistency is formed and lightened.

Add flour and mix gently with a fork or whisk so as not to disturb the airy consistency of the dough. Since the sponge cake will be prepared with berries, you don’t need to make it too fluffy, otherwise all the berries will fall to the bottom.

Grate the apple on a coarse grater and add to the dough. You can cut the apple into cubes if you wish.

Mix the currants with 0.5 spoon of flour and also transfer to the bowl with the dough.

Cut the strawberries into pieces and sprinkle with flour too.

Peel the cherries and sprinkle with flour, add to the bowl with the rest of the ingredients. You need to roll the berries in flour so that they do not remain at the bottom of the bowl, but are evenly distributed over the dough.

Stir the dough gently so that the filling is even.

Grease a bowl with oil and place the dough into it. Turn on the “Bake” mode and cook for 35 minutes. Once the time is up, leave the berry pie in the bowl for another 10 minutes.

Pie with apples and berries is ready! It will be dense in consistency, but very tasty thanks to the berries.

Sift flour from premium wheat into a bowl, add salt and sugar to it. There you also chop frozen butter or margarine on a coarse grater. Pour in the mixture of chicken yolk, beaten with ice water, and knead a homogeneous, slightly greasy dough. Roll it into a ball and hide it in the refrigerator for 30–60 minutes, having previously wrapped it in plastic.

Meanwhile, pour granulated sugar intended for filling into a deep saucepan. Add potato starch and thawed or fresh clean strawberries and blueberries to it.

Take the dough out of the refrigerator, roll it out into a layer up to two centimeters thick and place it on the bottom of the multicooker, lined with baking paper. Fill the resulting “basket” with berry filling, and grease the edges of the pie with a chicken egg, beaten with a small amount of cold water and three tablespoons of sugar.
Cover the kitchen appliance with a lid and set the “Baking” program for 30 minutes.

After this time, after a sound signal, a circle of aluminum food foil is lowered onto the sweet product, now the baked goods will not burn. Re-cook the pie in the same mode for the same amount of time. Then cool the dessert to room temperature directly in the slow cooker and serve.

Required ingredients:

Dough:

  • butter - 150 g for the dough and 25 g for lubricating the bowl;
  • chicken yolks - 3 pcs.;
  • granulated sugar - 3 tbsp. l.;
  • premium wheat flour - 250 g;
  • vanillin - on the edge of a knife;
  • baking powder for dough - 1 tsp.

Filling:

  • any berries (can be mixed) - 300 g;

Fill:

  • granulated sugar - 5 tbsp. l.;
  • wheat flour - 2 tbsp. l.;
  • egg whites - 3 pcs.;
  • sour cream - 200 ml;
  • pure vanillin - on the edge of a knife.

Cooking process:

Place the chicken whites in the refrigerator. Grind the yolks with granulated sugar. Pour flour, baking powder, vanillin and frozen butter into this mixture. With clean hands, knead a slightly sticky but homogeneous dough. Knead it into a ball and cover it with polyethylene. Place the semi-finished flour product in the refrigerator for an hour.

Next, grease the bottom of the multicooker bowl with the remaining butter and cover it crosswise with three strips of baking paper. Take the dough out of the refrigerator and knead it into a round layer 1 to 1.5 centimeters thick. Place it in a bowl, lay it out so that you get a bowl of dough, the height of which should be at least 4-5 centimeters, and distribute clean, seedless berries of any kind in it.

Now take the whites out of the refrigerator and beat them with a mixer until they form a stable, fluffy foam. Add granulated sugar, flour, vanillin and sour cream. Shake everything again and pour the resulting mass onto the berries.

Cover the kitchen appliance with a lid and prepare the dessert in the “Baking” mode. After 60 minutes the multicooker will turn off. Open it and release hot steam. Let the cake cool and remove it from the machine, holding it by the baking paper strips. Eat the product chilled.

Bon appetit!
