I offer my mother’s signature recipe for shortbread, very practical, quick and tasty. These cinnamon and nut shortcakes contain virtually no fat, they are delicious and aromatic. Shortbreads made with kefir can be stored for a long time, they go great with tea, coffee, milk, cocoa, you can give your kids a snack at school during recess. In general, I recommend it.

  1. Mix one glass of kefir or sour milk, sugar and one yolk. You can put a whole egg, but then the shortcakes will not be so soft.
  2. Add salt, half a teaspoon of soda, which we first quench with vinegar. There is no need to add more baking soda than is indicated in the recipe; the shortbread will work just fine.
  3. Stir, then pour in two tablespoons of sunflower oil.
  4. Add three cups of flour to the resulting mixture. Then we will still need about half a glass of flour for kneading.
  5. Mix everything well and leave the dough for 45 minutes, an hour, so that it rests a little.
  6. If desired and if possible, add half a glass of chopped walnuts to the dough. You can quickly chop the nuts using a regular rolling pin: put the peeled nuts on the table, lightly sprinkle with sugar, then roll out the nuts with a rolling pin, and you're done!
  7. Divide the dough with nuts into several parts. Roll out each part into a cake about a centimeter thick.
  8. Sprinkle the top of the cake with cinnamon, and then use a mold to squeeze out our future cakes.
  9. Grease a cold roasting pan with margarine and sprinkle with flour.
  10. Place the shortbreads on the prepared roasting pan.
  11. Place the roasting pan with the shortcakes in a preheated oven. Bake the shortcakes for 10 minutes at 180°C, then lower the temperature to 160°C and bake for another 15 minutes.
  12. In total, baking time is approximately 25 minutes. Of course, the time may vary depending on the thickness of the dough and the temperature of your oven.
  13. To check the shortbread for doneness, lightly press the surface of the shortbread with your finger. If the shortbread has regained its shape, it is ready and it’s time to remove it from the oven.
  14. That's all the preparation, delicious kefir shortcakes are ready.

All the time I was thinking about what to give my daughter to school. These shortcakes are just right! She loves shortcakes, but I don’t like store-bought ones. I'll be cooking this week. Thank you very much, Alena!

Alyona
Yes, these shortcakes are perfect for school. Sometime, try these cookies with oatmeal and nuts, they are very tasty, you wouldn’t be ashamed to put them on the table for your guests)))

These shortcakes are just a great way to snack. Plus, sometimes the milk goes sour. I put it in a warm place and make curdled milk, and use it for baking. The shortbreads are prepared quickly and always turn out great! My daughter simply adores them, and I also like to have them for breakfast; I really like the taste of cinnamon in the shortcakes.

I also remembered my school years, when I saw delicious shortcakes in the picture, how we loved to feast on them during breaks). Shortbreads made with kefir are a great idea; firstly, they won’t be so heavy in terms of calories, and sour milk will also come in handy. Secondly, baked goods made with kefir are usually very soft. You can also add nuts, they fit everywhere, and cinnamon will only add its own special flavor; I really love this aroma in baked goods).

Victoria 02/18/14
It’s a great idea to use kefir for shortcakes; for example, I use it very little. I’ll take note of the recipe, since these shortcakes are low-calorie, and now this is very popular. In any case, those who watch their figure and love shortcakes).

They turn out tasteless. Some kind of rubber. In general, we didn’t like it.

Alyona
Marina, perhaps the recipe was accidentally violated, for example, they forgot to put soda, or one of the ingredients let you down, there is simply no other explanation. Honestly, I don’t buy industrial baked goods, there are so many chemicals in them... but I bake these quick shortcakes quite often, and the recipe has never let me down)))

I have a list of weekend dishes. I can say with confidence that kefir-based shortcakes will take pride of place in it. I love baking, but avoid yeast dough, and here are the perfect ingredients. Particularly attractive in the composition is sour milk. Often milk turns sour and you don’t know what to do with it, but here’s a solution. Tasty, healthy, festive!

Ekaterina 05/29/15
What delicious shortcakes! The unique aroma is simply lovely! I had never worked with such dough, I stirred it in a bread machine, rolled out the incomprehensible mass with disbelief and surprise. Out of fright, I dried out the shortcakes a little))) But they still turned out very tasty. Thank you!
