Dumplings with cottage cheese recipe without eggs. How to make dietary lazy cottage cheese dumplings: delicious recipes, calorie content and health benefits

Quite often, beginning vegetarians give up meat products and animal products, but they cannot stop consuming dairy products so quickly. In addition, some people are allergic to egg whites and therefore cannot eat dishes containing it; it is for them that we present eggless lazy dumplings. There are several variations of this dish; below are the most successful of them, which are sure to become frequent guests on your table.

In fact, the presence of chicken eggs in lazy dumplings is somewhat redundant. The fact is that the mass obtained by mixing cottage cheese and flour is itself quite thick and holds its shape well. Of course, eggs, when rolled, thicken the dumplings even more, but they also make further digestion difficult.

This problem is especially relevant in cases where we are talking about baby food - the child’s digestive system is much more delicate and therefore it is quite difficult for it to cope with such heavy food.

We all know that cottage cheese is extremely beneficial for a child’s body, since it contains a large amount of calcium, and when it is part of lazy dumplings, it also becomes incredibly tasty. So let's make this dish a little easier so that you can delight your loved ones with it as often as possible.

Lazy dumplings: recipe without eggs

Ingredients

  • Cottage cheese – 700 gr.;
  • Wheat flour – 200 g;
  • Salt – 0.5 tsp.

How to make lazy dumplings without eggs

1. Pour about one and a half liters of water into a fairly large saucepan, add some salt and put on fire. While it is boiling, we will prepare the dough.

2. Place the cottage cheese in a deep container; a bowl is perfect for this. It should first be ground or chopped with a fork; the structure of future dumplings will depend on this.

3. Start adding flour little by little. Its quantity directly depends on how wet the cottage cheese you use.

4. Knead our dough, it should be dense enough to be sculpted from.

5. Cover the work surface with a small amount of flour and form one or two sausages with a diameter of 2-3 centimeters.

6. Now, using a knife, we divide our roller into small pieces approximately one centimeter wide.

7. By this point, the water should already be boiling and bubbling well. Place our dumplings in it and mix.

8. After 3-4 minutes the dish is ready. Remove the dumplings using a slotted spoon and place on plates.

This dish can be served with almost any sweet sauce. Use jam, preserves, maybe even honey! Excellent taste can be achieved by pouring sour cream or melted butter over the dumplings - there is no limit to your imagination in this regard.

Recipe for lazy eggless dumplings with semolina

If you think that the flour in the dumplings overpowers the very pleasant taste of the cottage cheese, then you will like this recipe. Here we will not only exclude eggs from the composition, but also replace wheat flour with semolina, which will make our dish truly light and airy.

Ingredients

— Cottage cheese – 250 gr.;
— Semolina – 40 gr.;
- White granulated sugar - 1 tbsp;
— Starch – 3/4 tbsp;
— Salt – 3/4 tsp.

How to cook lazy dumplings without eggs with semolina

1. Place a pan with a liter or two of water on the fire, add some salt and leave to boil. At this time we are doing our own test.

2. Grind the cottage cheese with a sieve, or use a blender for this purpose.

3. Transfer the resulting mass into a relatively deep bowl, add salt, sugar, starch and mix thoroughly.

4. Add semolina and knead our dough with your hands, it should turn out quite dense.

5. Pinch off a small piece from the total mass and roll it into a ball with a diameter of a couple of centimeters. Place the formed balls on parchment paper or on a board sprinkled with semolina.

6. If the water is already boiling well, then put our balls into it and mix everything well so that the balls do not stick to the bottom of the pan.

7. After surfacing, wait a couple more minutes, after which we either drain the water or remove the dumplings with a slotted spoon.

8. Pour sour cream or melted butter over the resulting delicious balls and serve.

Since in this recipe lazy dumplings without eggs are prepared with the addition of a minimal amount of semolina, you should carefully monitor the density of the dough and the moisture content of the cottage cheese. If it is too soft, our dish will simply boil over. That is why, when you use wet cottage cheese, add a little more semolina so that the balls turn out dense and well-formed.

Greetings to all those who love to simply cook and eat delicious food! 😉 Recently, my son has practically stopped eating dairy products (with rare exceptions in the form of yogurt), and therefore I decided to remember my youthful love for lazy dumplings. True, this time I experimented and made them without eggs. It turned out quite well. Now that it’s on, I, of course, don’t eat them myself. But my son and husband enjoy having breakfast on weekends lazy dumplings without eggs and every time they ask for more.

Let's take:

  • 500 g of cottage cheese;
  • 3 table. spoons of starch;
  • 4-6 table. spoons of flour;
  • 3-4 table. spoons of sugar;
  • half a teaspoon of salt.

Cooking lazy dumplings without eggs is a pleasure. Just right for breakfast. No hassle at all. 😉

Pour the cottage cheese into a deep bowl, add salt, starch, sugar and flour.

A small clarification: if you want fluffier dumplings with a pronounced curd flavor, add 4 tablespoons of flour. spoons, if you want a stronger dough, more dense, put 6 tablespoons. spoons of flour.

But please note that my cottage cheese is dry. If your cottage cheese is wet, you may need more flour.

So, pour all the ingredients into the cottage cheese and start mixing. I do it right away with my hands - it’s easier and more convenient. At first, it mixes rather poorly - after all, everything is almost dry, but after a while, sugar and starch mix into the cottage cheese, dissolve, and the mass becomes more plastic.

After about a couple of minutes, you get a fairly dense ball of cottage cheese.

Put water on the fire and, while it boils, form balls from the dough.

From half a kilogram of cottage cheese I got this amount of lazy dumplings without eggs.

When the water boils, salt it and you can add a little sugar (this is to taste), I add about a tablespoon. Cook carefully in small portions: I cooked about 20-30 pieces at a time. I don’t recommend it anymore - they might stick together.

Dip the dumplings into boiling water, let them “set” a little and only after a minute stir carefully, with smooth movements. Cook without a lid. There is no need to stir them often - literally a couple of times during the entire cooking time.

After surfacing, hold the curd balls for another three minutes and remove them with a slotted spoon into a plate.

And this is where the fun begins. 🙂

Because these lazy dumplings without eggs can be served with jam or jam.

So it is with fresh fruits, for example, bananas.

Or you can do it with honey and sour cream. I personally especially liked the last option.

A stereotype has formed that it is impossible to sit on two chairs; you always have to choose - either eat deliciously, forgetting about your figure, or limit yourself in everything and eat without pleasure. This is just a horror myth.

Experienced losers and supporters of proper nutrition know that the diet allows for variety in the diet. In addition, if you eat unsightly and tasteless dishes, even the most healthy ones,... You need to eat tasty, but healthy.

Cottage cheese for a healthy diet

Dietary nutrition is a well-developed, complete diet in which the amount of proteins, fats and carbohydrates is balanced and is optimally suited to satiate a person.

There are not so many fats and carbohydrates in healthy foods, but these products are rich in protein. Thanks to proteins, you can not only lose extra pounds, but also gain a sculpted, strong body during physical activity.

Among protein products, milk and its fermented milk derivatives are especially popular. The most common is cottage cheese. It is not only very healthy, but also tasty, has enough fat content options, is widely used in cooking and is suitable for both hot dishes.

Advantages of cottage cheese:

  1. High content of easily digestible proteins.
  2. The presence of phosphorus and calcium, necessary for healthy teeth and bones, especially for children and pregnant women.
  3. Presence of important amino acids. Their deficiency in the body can cause problems with hematopoiesis, liver function, and nervous disorders. Regular consumption of cottage cheese is the best prevention of these conditions.

Cottage cheese is especially popular as a breakfast or snack dish. But whatever one may say, fresh cottage cheese, even with different serving options, can quickly get boring at the beginning of the day. And when a dietary product gets boring, a person involuntarily looks for an easy replacement, not always from the permitted menu. To avoid breakdowns and addiction, pure cottage cheese can be replaced with cottage cheese dumplings.

Benefits and calories

A natural question may arise: how are dumplings related to the diet? Is it really possible to eat this childhood favorite dish without harming your figure? It turns out that it is not only possible, but even necessary.

Only instead of the usual dumplings in dough and with a lot of sugar, you need to prepare dietary lazy dumplings. They were called lazy because the filling is not wrapped in dough, but mixed with flour to a dense consistency, cut into portions and cooked in this form.

Dietary lazy cottage cheese dumplings, allowed with proper nutrition, cannot be prepared with wheat flour. This ingredient increases the calorie content of the dish.

Carbohydrates in the diet should be kept to a minimum; it is advisable to replace easily digestible ones with “long-lasting” ones so that the body spends as much effort as possible on processing these components. You can, for example, make dietary lazy dumplings from cottage cheese without flour, replacing it with rolled oatmeal or oatmeal.

The fat content of the cottage cheese, which will be used to prepare dietary dumplings, is important. If for a regular recipe we allow cottage cheese and 18% fat content, then in lazy low-calorie dumplings the maximum is 9%, and it’s better to take 5% altogether. These dumplings are an excellent option for dessert or a full-fledged meal on their own on a protein diet.

It is not recommended to use completely low-fat cottage cheese for lazy dumplings, because it is very dry, which will negatively affect the taste of the dish.

Recipes

There are several options for how to prepare dietary lazy dumplings. They do not contain harmful flour and do not abuse sugar. A serving of this dish will keep you full and alert for a long time.

Low calorie

Ingredients:

  • 0.5 kg of cottage cheese with 9% fat content;

  • 100 g whole grain flour.

Cooking process:

  1. Mash the cottage cheese with a fork until softened, mix with eggs and add salt, knead thoroughly.
  2. Then add whole grain flour and knead the dough with your hands. Whole grain flour is much healthier than regular flour because it also contains grain shells, which consist of complex carbohydrates. Whole grain products take a long time to digest and do not negatively affect weight.
  3. When the dough is ready, cover it with a towel and put it in the cold for a while.
  4. After this, the mixture is kneaded again and divided into 3-4 parts. Roll out each sausage and divide it into equal dumplings. You can leave them round, or you can flatten them a little.
  5. Dumplings cook very quickly. They are thrown into boiling water. After just 2-3 minutes the dish can be served.

Calorie content of a 100 g serving is 210 kcal.

Important! There is no sugar in the diet dumplings recipe. The necessary sweetness to the dish is given by the fruits and vegetables with which they are served, sour cream mixed with a spoon of honey. If unsweetened dumplings are not to your taste at all, a small amount of fructose in the composition is acceptable.

With oatmeal

Ingredients:

  • 300 g cottage cheese 5% fat;
  • 200 g oatmeal;
  • 100 g kefir 1% fat;
  • 2 tbsp. corn starch;
  • 2 tbsp. honey;
  • a pinch of salt.

Cooking process:

  1. Knead the cottage cheese, gradually adding salt and honey. Thanks to him, dietary dumplings with cottage cheese will turn out sweet and aromatic.
  2. Then carefully add corn starch. It will replace eggs and prevent dumplings from falling apart in water.
  3. Kefir and oatmeal are added last and knead thoroughly.
  4. If the dough turns out watery, add more flakes.
  5. The mixture is cooled, then divided into several portions and sausages are rolled out, from which small dumplings are then cut.
  6. They need to be cooked in boiling water for no more than 7 minutes. If the dumplings float to the surface, it means they are ready.

Dumplings with oatmeal are especially delicious if served with Greek yogurt. The calorie content of the dish without sauces is 213 kcal/100 g of product.

Important! Rolled oats can be added in a variety of ways. Some people like whole oatmeal. For greater softness, it is pre-soaked in kefir for about 15 minutes. But if you want the dish to have a soft, uniform consistency, the flakes are ground in a coffee grinder to flour.

With semolina

Ingredients:

  • 0.5 kg of cottage cheese with a fat content of 5 to 9%;
  • 200 g semolina;
  • 2 eggs;
  • 100 g sugar (or 2 tablespoons honey);
  • a pinch of salt.

Cooking process:

  1. The cottage cheese is kneaded to break up large lumps, mixed with eggs, then salt and honey or sugar are added.
  2. Semolina is added gradually, in small portions, without ceasing to knead the cottage cheese. Perhaps you will need a little more or less semolina than indicated in the recipe for dietary cottage cheese dumplings - it all depends on the dough. It should not be liquid or too hard.
  3. When the dough has settled, dumplings are formed from it.
  4. Cook for 5-7 minutes in boiling water.

Dumplings with semolina are very tasty, soft and tender, almost airy, because the cereal swells very well in water. The calorie content of the dish is 220 kcal/100 g of product.

Important! Although semolina is the same as wheat, its benefits are much greater than flour. Cooked cereal has a calorie content of less than 90 kcal. It removes excess fats from the body and effectively cleanses the intestinal walls. But semolina is rich in gluten, so consuming it too often on a diet is not recommended.

Important nuances of preparation and serving

The calorie content of dietary lazy dumplings is low. And the dish itself is very tasty, healthy and extremely simple: it will not cause difficulties for a novice housewife, and will allow busy women to very quickly prepare a nutritious dish for the whole family.

One of the main advantages is the ability to cook dumplings for future use and store them in the freezer. When it's time for breakfast, all you have to do is boil water and throw in the curd balls.

Subtleties of preparing and serving lazy dumplings:

  1. They go well with natural dietary sweet sauces and jams. The sauce is very easy to prepare: grind any fruit or berries into a puree, add a little sugar or honey, a little water and starch, and boil until thick. Cottage cheese and fruit complement each other well.
  2. Instead of sugar, you can add a handful of raisins or other chopped dried fruits to the cottage cheese.
  3. To make the dumplings airy, it is better not to mash the cottage cheese with a fork, but to beat it with a mixer. The dessert will turn out very tender.
  4. Dumplings will not stick to the bottom of the pan if you cook them in salted water.
  5. Rich juices and purees will help awaken children's appetite and interest in the dish or simply serve it in an original way. Pumpkin and carrots will turn the dumplings orange, beet or berry juice will turn them pink and red, and culinary herbs will turn them green.

Everyone knows about the great benefits of cottage cheese: it speeds up metabolism, improves digestion, and has a beneficial effect on the immune system. Cottage cheese is especially useful for children, and it will not be harmful for adults either.

Personally, I can’t imagine my life without cottage cheese; I love it simply because it’s delicious. However, I know that not everyone likes cottage cheese in its pure form as much as it does to me. Therefore, I offer a simple and quick recipe for lazy dumplings! This is a great option for breakfast, afternoon snack or dinner.

Instead of flour, we will use only semolina, which means that the dish will be more satisfying and healthy. In addition, such lazy dumplings can be considered dietary if you take low-fat cottage cheese and add a minimum of sugar. I like this dish because despite the fairly large amount of semolina, the taste of cottage cheese is still perfectly felt in the finished dish, which cannot be said about lazy dumplings with flour. The consistency of my dumplings turned out to be quite dense, but they did not fall apart during cooking.

An obligatory stage in the preparation of this dish is that after cooking it is necessary to flavor the lazy dumplings with butter in order to feel the taste and aroma of childhood. And of course, eat the finished dumplings hot, dipping them in cold sour cream or jam.

So, to prepare lazy dumplings without flour (with semolina), we need the following ingredients.

Mash the cottage cheese with a fork. You can rub it through a sieve if you don’t like lumps. Usually store-bought cottage cheese in packs is quite homogeneous and this is not required. In any case, lumps will not spoil the taste of the finished dish.

Let's add sugar. A tablespoon is enough for me to taste. And also add salt.

Let's break the egg. Mix everything thoroughly. Depending on the amount of sugar and the size of the egg, the mass will become more or less liquid.

Let's add semolina. We take tablespoons without a slide.

Mix thoroughly and leave for half an hour. The mass will turn out quite thick, but more time is needed for the semolina to swell and the dough to become denser.

Sprinkle the board with semolina and form dumplings from the swollen dough. You can roll out the sausage and cut it into pieces, or you can simply form balls of any size. Keep in mind that in boiling water they will increase in size a little.

Carefully place our lazy dumplings with semolina into boiling salted water. Cook until they float to the surface, this will take no more than 5 minutes. Use a slotted spoon to place on plates. But it’s better to drain the water with the dumplings into a colander, so there won’t be any excess moisture left.

I advise you to serve lazy dumplings without flour in deep plates, so they will stay hot longer. Season the resulting products with butter and enjoy a tasty and healthy dish.

Of course, it will be much tastier to eat lazy dumplings with sour cream, jam, condensed milk or honey... Or better yet, with everything at once! Bon appetit!

Do you know the game “Never Have I Ever,” which heroes of all kinds of films love to play? Where does each participant admit to something he has never done in his life? Now I’ll defeat everyone, because until this day I’ve never eaten lazy dumplings in my life! And you certainly are. Admit it, I won, right?

However, the winner does not have long to celebrate. I want to make lazy dumplings without eggs and finally explain this dish to myself. Moreover, it is so easy and quick to prepare that it simply has to be in my collection.

For lazy dumplings without eggs we will need:

  • 700 grams of cottage cheese;
  • 200 grams of flour;
  • 1/2 tsp. salt;
  • 1.5 liters of water.

We start to get lazy. Slowly put flour and cottage cheese into the dish for future dumplings.

Slowly combine one with the other until you get a soft, soft dough.

Slowly pinch off pieces of dough without eggs and roll them into sausages about 2-2.5 centimeters thick.

Making just one downward movement with the knife, we cut our sausages into not very neat rectangles.

Bring the water to a boil and add salt to it (dumplings are less likely to stick together in salted water). And now, one after another, without fuss, add the required amount into boiling water. The rest of the dumplings can be frozen.

We're just waiting for the dumplings to float. This takes approximately 3-4 minutes. Halfway through the process, lazily stir our dumplings with a spoon.

After surfacing, arm yourself with a slotted spoon and place the finished dumplings on plates. It will be very tasty with any jam or syrup. My debut portion of dumplings came with sour cream and sugar. And I liked it! I just kept expecting them to jump into my mouth, like Gogol, but no. One word - lazy. Bon appetit!
