Grated shortcrust cake with jam - Step by step recipe with photo

Homemade baked goods bring a special warmth and soulfulness to the tea-drinking process. And it is not at all necessary to bake a cake or other complex pastries, you can cook something simple and quick, for example, grated shortbread cake. It is prepared from products that do not need to be bought in advance, since almost every housewife always has them in stock. Simple and delicious - that's the exact description of this cake.

Ingredients for making grated shortcrust cake with jam:

  • wheat flour - 300-330 g
  • margarine - 200 g
  • chicken eggs (medium-sized) - 2 pcs.
  • sugar - 160 g
  • baking powder - 6 g
  • thick jam - to taste

Recipe grated shortcrust cake with jam:

First, mix the flour with the baking powder (baking powder). And then sift the resulting dry mixture into an ordinary capacious bowl.


On a coarse grater, rub the margarine frozen in the freezer and grind the mass with your hands until crumbs.


Make a depression in the grated mixture and add eggs, beaten with sugar.


Quickly knead the shortcrust pastry for the grated pie. At first it will cling to your hands, but then it will knead and become soft and elastic. Flour can be added, but only just a little, otherwise the dough will become "hammered". Roll the dough into a ball, from which you separate about a quarter. Wrap both balls in foil and put away: the big one is in the refrigerator, and the small one is in the freezer.


After half an hour, take out the main ball, the dough has cooled and become even more elastic. Take a baking dish, the bottom of which is either lined with parchment, or greased with oil and sprinkled with flour. Then use your fingers to stretch the shortcrust pastry into a rimmed cake. Make sure that the dough lies evenly, without bumps.


And spread a layer of jam on it. You can take any jam for this grated pie, as long as it is thick and slightly sour. Then the cake will not turn out sugary sweet.


Then you take out a small piece of dough from the freezer, which has hardened slightly from frost. And quickly rub, until it softens again, on a coarse grater. Spread the resulting shavings over the jam and send the cake to an oven preheated to 180 degrees.


Such a shortbread cake with jam is baked for about 25-30 minutes. Watch the side of the pie, it should brown. But don't overdry!


Take out a fragrant and appetizing cake from the mold, let it cool to warmth and start drinking tea. This pie with jam stays soft even the next day, although it rarely "survives" to it.
