Ingredients

  • 2-2.5 kg pork neck.

How to cook

Ingredients

  • 600 g ready-made puff pastry.
  • 300 g of fresh porcini mushrooms.
  • 1 large onion.
  • 50 g butter.
  • 50 g of pork buck.
  • 100 grams of walnuts.
  • 1 egg.
  • Ground black pepper.
  • Salt.

Preparation

  1. Salt, pepper and fry the meat on lard in a whole piece from all sides until firm crust, cool completely.
  2. Cut the mushrooms into small cubes, peel the onion and cut into thin half rings.
  3. Fry the onion in hot butter until golden brown, add mushrooms, fry together for 5 minutes, cool completely.
  4. We clean the nuts, dry a little in a pan until a pleasant aroma appears, cool and grind in a special mill or grind in a meat grinder.
  5. Roll out the puff pastry so that you get a rectangle of such a size that you can completely wrap the piece of pork to be baked in it.
  6. Put half of the fried mushrooms in the middle of the dough, sprinkle with half of the nuts.
  7. Put the meat on the filling, on it - the remnants of mushrooms and nuts.
  8. Wrap a piece with dough, brush with a beaten egg. Put in preheated to 200 ° C, bake for about 1 hour.

  • Pork baked in a puff pastry piece can be cooked in several stages. This is especially convenient if you plan to serve such a dish on New Year's or any other festive table.
  • First, you prepare the filling, fry the meat. Before the arrival of guests, you wrap the meat together with the filling in the dough and send it to bake in the oven.

Pork in the oven in foil

A very simple, even banal dish. But, - deliciously extraordinary! And most importantly, it requires a minimum of the active participation of the chef. That, in the pre-holiday bustle, you see, is important! A weighty piece should be pickled and sent to the oven at the "X" hour!

Ingredients

  • 2 kg of pork.
  • 500 ml white wine or apple juice
  • 5-6 cloves of garlic.
  • Black peppercorns.
  • Bay leaf.
  • Salt.

Cooking technology

  1. In a non-oxidizing bowl, mix the wine, salt, chives, peeled and chopped into large pieces, bay leaf, black pepper.

My remarks

  • If you bake a scapula, then pour warm water into the baking dish, about an inch by 2. The fact is that collagen, which is found in abundance in the tissues of the meat of the scapula, softens better when heated in the presence of water.
  • It is absolutely wonderful to bake meat in foil in the oven along with skin and lard. Before pickling, you should cut the bacon with the skin cross-to-cross. We must try to get the salt and spices into the cuts. The fat layer should not be large.

How long does it take to bake pork in the oven if there is no thermometer? The guideline for readiness can be a clear flowing juice and a crispy crust - but such signs cannot be too accurate. You can be guided by this rule - for every 500 grams of raw pork, you need 25 minutes of cooking at a temperature of 200 ° C.
