Zucchini is truly a versatile vegetable. You can prepare a huge number of dishes from it. One of them is squash caviar. There are many ways to prepare squash caviar.

I offer a simple and less labor-intensive recipe for making caviar from zucchini for the winter. Its peculiarity is that there is no need to fry the vegetables included with the caviar.

Ingredients included in the caviar composition:

Zucchini – 3 kg. (three medium zucchini);

Onions – 1 kg. ;

Carrots – 1 kg. ;

Pickling salt – 2 tbsp. spoons;

Sugar – 1 tbsp. spoon;

Tomato paste – 3 tbsp. spoons;

Vegetable oil (refined) – 0.5 liters;

Garlic – 6-7 cloves;

Dill, parsley - to taste (optional);

Ground black pepper - to taste;

Table vinegar (9%) – 1 dessert spoon.

For the resulting caviar you will need six 0.5 liter cans.

1. Wash, dry and peel vegetables.


Prepare vegetables.

2. Grind the zucchini, carrots, and onions in a food processor or meat grinder using the smallest attachment, as finely as possible.




Chop fresh onion.

3. Mix all the chopped vegetables.

4. Pour oil into a thick-walled dish (saucepan, cast iron).

5. As soon as the oil is hot, add the twisted vegetables.

6. As soon as the vegetable mass boils, reduce the heat, cover with a lid and simmer for 3 hours over low heat.


Mix the twisted vegetables and place in a heated bowl with oil. As soon as the vegetable mixture boils, cover with a lid.

7. While the vegetables are stewing, you need to prepare the herbs and spices.


8. 10 minutes before readiness, add salt, sugar, pepper, herbs and garlic, pepper, tomato paste.




Tomato paste, pepper. We add vinegar at the very last stage, before putting the finished caviar into jars.

9. Mix everything well, cover and simmer for about 10 minutes.

10. At the very end (before putting into jars) add vinegar. Mix thoroughly again.

11. Place hot caviar into sterilized jars and roll up.

12. Check the jars for leaks. (Put on its side, roll, turn upside down).


13. Wrap the jars “under a fur coat.”

3. Cut the zucchini and carrots into medium-sized pieces to grind in a blender bowl or pass the vegetables through a meat grinder.

3. My zucchini is young, so I peeled it and cut it into smaller cubes without removing the seeds. If you already have large fruits, then the core needs to be cut out.

4. Place the prepared chopped vegetables in a heated frying pan with vegetable oil in order. First, simmer the onion a little, then add the carrots and bell pepper. Simmer over low heat for 5-7 minutes.

5. Then add the zucchini cubes, stir, cover and continue to simmer for about half an hour.

6. Tomatoes need to be cut into large pieces, place them in a frying pan with vegetables, add salt, bay leaf, mix. Simmer over low heat until tender, usually another 10 minutes.

If desired, you can grind the prepared vegetables in a blender to make the snack uniform, but then boil for an additional 5 minutes after that.

  • Mayonnaise - 250 ml

  • Vegetable oil - 150 ml
  • Tomato paste - 150 gr
  • Mayonnaise - 200 grams
  • Sugar - 0.5 cups
  • Salt - 2 tbsp. spoons
  • Ground black pepper - 0.5 teaspoon
  • Vinegar 9% - 2 tablespoons

Preparation:

1. Wash the zucchini and remove the skin and seeds (if you have a young vegetable, this is not necessary). Grate it. Peel the onion and chop finely.

You can also pass everything through a meat grinder or blender.

2. Then place the vegetables in a saucepan, stir and place over medium heat. Simmer for 1 hour, remembering to stir. During this time, almost all the liquid released by the zucchini should boil away.

3. Then put mayonnaise, tomato paste, vegetable oil, salt, sugar and pepper there. Mix everything and put on low heat for another half an hour, stirring constantly. The bite should be added 2 minutes before the end of stewing.

4. Next, remove from heat and pour into pre-sterilized jars (from the ingredients presented, 2.5 liters of the finished product is obtained). Screw on the lids and turn them over. Wrap in a warm towel or blanket and leave until completely cool. This is about a day. Then you can put it away in the pantry. Such preparations can also be stored at room temperature.

Using this method, it turns out to be very tender, incredibly tasty and no worse than store-bought. But what am I talking about, homemade always turns out better, not worse. Try cooking this way, you will like it. From the proposed amount of ingredients, a little less than 3 liters is obtained.

Ingredients:

  • Zucchini - 2 k
  • Carrots – 1 kg
  • Onions – 1 kg
  • Tomato paste – 150 gr
  • Sugar - 100 gr
  • Salt - 60 g
  • Vegetable oil - 200 gr
  • Vinegar – 9% – 50 ml
  • Garlic, pepper spices - to taste

Preparation:

1. Peel the zucchini, even if it is young. This will make it even more tender. Cut it into medium pieces. Peel the onions and carrots and also cut them into medium cubes.

2. Take a cauldron or pan with thick walls to use. Put it on fire. Pour vegetable oil into it, add sugar and salt. Stir, bring to a boil with the lid closed and simmer for another 10 minutes.

3. Then add the zucchini, stir and simmer for 10 minutes. After this, add the onion, stir and simmer until all the vegetables are soft. This is approximately 30 minutes.

Don't forget to stir periodically.

4. When the vegetables become soft, add tomato paste, stir and simmer for 10 minutes without a lid. Then add vinegar, bring to a boil and turn off the heat. Leave to stand for 10 minutes.

If you have vinegar essence, then just add 1 teaspoon.

5. While the caviar is stewing, sterilize the jars in any way convenient for you. For example, I do this in the microwave. I pour about 1.5 cm of water into each jar and leave it there for 5-15 minutes at full power. It depends on the size of the jar. Then I take it out, pour out the water and set it on a clean towel to dry. I boil the lids on the fire for 5 minutes after the water boils.

6. Bring the prepared vegetables to a puree using a blender or meat grinder. Then bring to a boil and cook for 3 minutes. Preferably with the lid closed.

7. Place the finished product into jars, close the lids and turn over. Wrap in a towel and leave until completely cool, then put away in storage.

Well, we’ve come to the recipe for that same Soviet caviar from childhood. Remember that mushroom flavor? Simply incredibly delicious. And the cooking method is different from the usual. In general, I recommend trying it!

Ingredients:

  • Zucchini (you can take squash or zucchini) – 4.5 kg
  • Carrots – 300 gr
  • Onion – 240 gr
  • Tomato paste – 270 gr
  • Salt – 45 g
  • Sugar – 25 g
  • Ground black pepper – 1.5 g
  • Ground allspice – 1.5 g
  • White roots (parsnips 50%, parsley 25%, celery 25%) – 75 g
  • Fresh herbs (parsley, dill, celery) – 15 g
  • Vegetable oil – 315 g (340 ml)

Preparation:

1. Wash and dry the zucchini. Cut them into round pieces, approximately 1.5-2 cm. Pour oil into a frying pan and fry them on both sides. Transfer to a deep dish.

2. Peel the remaining vegetables and roots, cut into large pieces (cut the onion into rings). Fry alternately in a frying pan and add to the zucchini.

3. Then grind everything into a puree mass. I prefer to use an immersion blender for this, but you can also use a meat grinder or a stand blender. Transfer the mixture to a saucepan, add salt, sugar, black and allspice. Also add tomato paste and chopped fresh herbs, mix everything. Place on the fire and bring to a boil.

4. Next, put everything into dry and clean jars and cover with lids. Take a pan, put a cotton napkin in it and place the jars. Pour water up to the shoulders, turn on the heat and sterilize for 75 minutes per 0.5 liter jar. If the jar is 1 liter - then 100 minutes.

5. Carefully remove from the pan, turn over and leave for a day. Then put it away in your storage.

It has long been known that it is recommended for use in the diet of young children and the elderly, as well as for those who have problems with the gastrointestinal tract. And for patients with hepatitis, this is generally a real salvation. Much of the benefit to the body lies in the main ingredient - the power of zucchini, known as an excellent cleanser, as a low-calorie product, as a vegetable that provides the body with most important vitamins and minerals. And the “bouquet” of beneficial properties of caviar is complemented by carrots and onions. As a result, a simple recipe that even a beginner can handle becomes not only a favorite delicacy, but also a real potion.

However, there is also a problem. Today you can find a lot of recipes for zucchini caviar. But in most cases, no one really wants to eat the food prepared according to these recipes. Ingredients:

  • 1 kg of zucchini;
  • 300 g carrots;
  • 500 g onions;
  • 30 g garlic;
  • 3 tbsp. without a slide of tomato paste;

  • 150 ml odorless vegetable oil;

The onion should be crispy, and the carrots and zucchini should be soft, but not fall apart. Salt and pepper are added at the end of cooking and can be adjusted to your taste. This also applies to tomato paste, because manufacturers are different and each has its own concentration of tomatoes. And one more thing - the recipe does not use vinegar to preserve the product, which gives the caviar a pleasant sour taste.

How to prepare the most delicious squash caviar for the winter, step-by-step recipe

If you want to roll caviar from zucchini in jars for the winter, then the first step is to thoroughly wash the containers. It is advisable to use baking soda for this, rather than the usual dishwashing detergents. Soda is safer and kills germs better. While various gels, although they provide squeaky cleanliness, do not guarantee complete disinfection. In addition, you need to rinse dishes after using chemicals for at least 20-30 minutes. Does each of us do this?
Then we sterilize the jars, it is written in more detail. The sterilized jars should be hot when you fill them with caviar (step by step photo 17).

1. For convenience, first prepare all the vegetables. Peel the carrots, rinse them and grate them on a coarse grater.

2. Cut the zucchini. In principle, the size of the cubes does not really matter; in the future, we will grind everything anyway. Zucchini should be chosen young, with fresh green skin. If the fruits are overripe, they must be peeled and the hard seeds removed.

3. We also chop the onion coarsely. Pour a third of the total amount of oil into the frying pan, heat it and add the onion.

4. Fry over medium-high heat until half cooked; we won’t fry it too much. The onion should become rosy and golden, but remain crispy.

5. Transfer the onion to a deep pan, in which we will cook the squash caviar.

It is advisable to take a pan with a thick bottom, made of stainless steel or with a non-stick coating. An enamel pan is not suitable for cooking caviar, as the vegetables may burn in it.

6. Add oil to the same frying pan (another 1/3) and add grated carrots. We won’t overcook it either, we’ll just bring it to softness.

7. We also move the carrots into the pan.


8. Now add the zucchini to the frying pan along with the remaining vegetable oil. Also fry until soft.

9. Add it to the rest of the vegetables.

10. Puree the resulting mixture. Due to the fact that all the vegetables are fried until half cooked, the mass is not puree-like, but with small pieces.

11. Add tomato paste.

12. Salt and pepper.

13. Homemade caviar turned out to be thick and can easily burn, so add 1-1.5 cups of boiled water to it.

14. Now you have exactly the consistency you need.


15. Add greens and finely chopped garlic to the mixture.

16. Turn on very low heat and boil the caviar for about 10-15 minutes, covering the pan with a lid.

17. A delicious snack is ready. It can be eaten hot right away, but it tastes better cold. Or you can roll up squash caviar in jars for the winter. To do this, put hot caviar with a ladle into a hot sterilized jar (so that the glass does not crack).

18. For the winter, squash caviar must be sterilized in jars. For some reason, many housewives are afraid of this point. In fact, there is nothing complicated about this.
You will need a large saucepan. We’ll put a towel on the bottom, put the jars with the preparations on top, cover them with lids (it wouldn’t hurt to process them, at least just immerse them in boiling water for a couple of minutes), pour water up to the shoulders.

19. Lightly cover the jars with lids (without twisting) and turn on low heat. Half-liter jars should be sterilized at low boil for 40-50 minutes, those with a volume of 750 ml - 60-70 minutes, and liter jars - 90 minutes. Time is counted from boiling. As the water evaporates, you can add boiling water.

20. All that remains is to roll up the cans, turn them upside down, wrap them well in a blanket and leave them for a day.

21. Zucchini caviar is ready at home. We put it away for storage in a closet or cellar. When it sits, the taste will become richer, but at the same time more delicate. You can simply eat it with some bread or add it to any side dish. And if you make a sandwich with butter, you will get a real delicacy.
