Rolls recipe for beginners. How to make sushi at home? Recipe, tips

Of course, sushi has become the most popular and best-selling dish of Japanese cuisine. They quickly spread and entered the gastronomic maps of most countries of the world. And if eight years ago we preferred to order this dish only in specialized establishments, now we can easily prepare it at home. Our article on how to make sushi at home will be of interest not only to beginners, but also to those who have already had such experience. Let's get started!

How to prepare sushi: preparing key ingredients

In order for the classic rolls to turn out perfect, you will need the following products (it is best to buy them in specialized corners in large supermarkets):
  • shari. Special rice that is mixed with vinegar dressing. We have already talked in detail about how to cook correctly. We very conservatively believe that fish is the main product for sushi. The Japanese will argue with us. In the Land of the Rising Sun, it is rice with dressing that is key, and there may not be fish in the recipe at all.
  • nori (seaweed);
  • smoked or raw fish (for example, salmon. You can use shrimp, crab sticks and more);
  • vegetables (cucumber or avocado);
  • cheeses (the best option is Philadelphia cream cheese, but it can be replaced with cream cheese from any other manufacturer. Also, at home, sushi is often prepared using Fetaki or Feta cheese. Another option is unsalted feta cheese).

What you need to know about types of sushi

How to choose fish for sushi?

There are no strict restrictions: you can choose both frozen and fresh fish. But we still recommend paying attention to the latter: its price will be higher, but you will also be pleased with the taste of the rolls. If you will be preparing sushi in a few days and buying frozen fish is a necessary necessity, then store it in the freezer on ice. The appearance of the fish should be neat and there should be no unpleasant odor. Do not take fish with damage or strange spots. You should take a whole piece: it is much easier to cut.

A short excursion: how to properly cook sushi rice

Only hard rice is suitable for sushi. Our advice: don’t look for rice on a standard counter; the right varieties are sold in specialized outlets or shops.

Before cooking, rice must be washed at least five to ten times. The water should be clear, not cloudy. It is advisable to dry the rice: you can put it in a bowl and leave for thirty minutes.

Now about the proportion of rice and water: it is standard - it is 1 to 1.5. That is, if you have 200 grams of rice, then you need to fill it with 300 milliliters of water. Place the rice and water over high heat and wait until it boils. As soon as the water boils, reduce the heat to low, cover the rice with a lid and cook until the cereal absorbs the water. Typically, the cooking time is fifteen minutes. After cooking, remove the pan from the stove and, without opening the lid, leave it for fifteen minutes. We can call the rice ready for rolls only after we sprinkle it with vinegar dressing.

How to make sushi: a recipe for beginners

If you have never made rolls, then this homemade sushi recipe will be ideal. It is simple and quite quick: everything will take you about twenty minutes. So, the necessary ingredients:

  • special mats for preparing sushi (one is enough);
  • two hundred grams of sushi rice;
  • two hundred and fifty grams of salted salmon;
  • one cucumber or avocado (when buying an avocado, choose a ripe, soft fruit);
  • one sheet of nori seaweed;
  • fifty grams of Philadelphia cheese (or any other cream cheese).

Let's start cooking:

First, cook the rice as described in the article above. Next, unroll a sheet of nori seaweed and carefully distribute our products on it. Keep in mind that there should be a distance of about two centimeters from the edge of the nori. Tip: Wet your hands with water before preparing the rolls.

We placed a layer of rice on the nori, then carefully spread a layer of cheese. The consistency of the cheese is very soft, so we recommend using a butter knife. The length of the cheese track should be about five centimeters.

As for the salmon, we cut it into fairly oblong strips and place it on the cheese. Peel the cucumber or avocado and also cut it into oblong strips. However, avocados can also be cut into cubes. Place a piece of vegetable on the fish.

Now we can form the roll. To do this, you need to grab the edge of our rug and begin to carefully roll it up (you can see photo instructions below). The sushi is almost ready, all that remains is to cut it. Remember that the rolls must be the same size, the approximate quantity is eight pieces. Bon appetit!

Philadelphia sushi recipe

This type of sushi is the most popular. Philadelphia rolls are based on red fish, thanks to which this sushi has such a delicate taste. To prepare you will need:

  • four hundred grams of sushi rice;
  • five hundred grams of trout or salmon (preferably chilled);
  • one cucumber or avocado; one and a half tablespoons of granulated sugar;
  • two hundred and fifty grams of Philadelphia cheese;
  • three sheets of nori seaweed; a little wasabi sauce.
Let's start cooking:

As with any sushi recipe, we start by cooking the rice. Carefully peel the vegetable (avocado or cucumber) and cut it (if it’s a cucumber, then into strips; if it’s an avocado, then into cubes).

It is advisable to wrap the sushi mat in cling film before cooking. Firstly, it is more hygienic, and secondly, the mat will last you much longer. Place half a sheet of nori on the mat (the shiny side should be at the bottom). It is better to moisten your hands with water. The rice is distributed over the sheet, and fish cut into oblong pieces is carefully placed on top.

Now we turn the sheet over so that the salmon is on our mat. Place vegetables (cucumber strips or avocado cubes) on one edge of the seaweed. Coat the sheet with cream cheese. Wrap the roll and cut into approximately seven equal pieces. Bon appetit! For homemade sushi recipes with photos, see the article below.

Sushi with crab sticks

This version of sushi is not only simple, but also inexpensive: there is no fish or shrimp in the recipe. However, the taste of these rolls will not disappoint you if you follow the recipe.

Ingredients:

  • several sheets of nori seaweed;
  • two hundred grams of special sushi rice;
  • about eighty grams of cream cheese (preferably use Philadelphia);
  • two cucumbers;
  • a small package of crab sticks (best chilled, not frozen).

Let's start cooking:

First, cook the rice: two hundred grams is enough. As we told you, this amount of rice requires two hundred and fifty milliliters of water. We rinse the rice at least five times until the water becomes completely clear, and boil it, following our advice above. After cooking, the rice must be seasoned with special Japanese vinegar, or you can make the sauce yourself. A variety of ingredients are used for this, ranging from lemon juice to sea salt, sugar and honey.

Advice! The simplest recipe for dressing rice is this. We take fifteen milliliters of vinegar and the same amount of clean water. You will also need half a teaspoon of sugar and sea salt. All this is thoroughly mixed and heated until the salt and sugar dissolve. Drizzle dressing over warm rice.

Let's start with the rolls. We will need half a sheet of nori. Place it on a special mat wrapped in cling film. The smooth side of the seaweed should be at the bottom. If there is no special mat, then it can be replaced with a regular wooden plank.

Now put the rice on the nori. Please note that one centimeter of the sheet should remain free, and the rice should retreat from the edge by about one centimeter. Now spread the cream cheese, crab and cucumber onto the rice using a butter knife. The last two products are cut into strips.

Now the rolls can be carefully rolled and cut with a sharp knife dipped in water. It is recommended to serve sushi with crab meat with soy sauce and ginger. If you want to diversify the recipe, then feel free to add red caviar, sesame seeds or processed cheese. Bon appetit!

Shrimp sushi

Ingredients:

  • about five hundred grams of frozen shrimp (one pack);
  • three hundred grams of short grain rice for sushi;
  • two teaspoons of rice vinegar (rice dressing);
  • two tea spoons of sugar;
  • one cucumber;
  • six sheets of nori seaweed;
  • about fifty grams of flying fish caviar;
  • about one hundred grams of cream cheese (preferably Philadelphia);
  • one pinch of sea salt; half a lemon.

Let's start cooking:

Place all the necessary ingredients on the work surface. Let's start cooking the rice. First, rinse the cereal thoroughly in cold water. You need to rinse at least five times until the water becomes completely clear. Without a lid, put the pan on maximum heat and wait until the water boils. After boiling, turn the heat to minimum and cook for another fifteen minutes with the lid closed: all the water should evaporate. As soon as the rice is cooked, do not immediately remove the lid, but let the rice sit for another twenty minutes.

Now about refueling. Take a separate bowl, preferably a small saucepan, and mix a little water, vinegar and sugar together. If desired, you can add sea salt. Season the prepared hot rice with the resulting sauce and let the dressing absorb. The rice must be carefully turned over so that the dressing is absorbed evenly. To do this, we use a wooden spoon and do not interfere in any way.

We proceed to the shrimp, rinse them thoroughly under cold water. Place the shrimp in a saucepan, fill with water, add a little and put on maximum heat. You should also add lemon juice to the water (half a lemon is enough). Bring to a boil and cook the shrimp for about five to seven minutes. Let the prepared shrimp cool and clean them.

While the shrimp are cooking, you can peel the cucumber and cut into thin strips. We can form the rolls ourselves. Take sheets of nori seaweed and place a layer of boiled rice on them. Keep in mind that you need to leave a couple of centimeters of rice free at the top of the sheet. Then a strip of flying fish roe, shrimp, cucumber and cheese are laid out on the rice. The cheese can be spread using a piping bag or a butter knife. Now you can carefully roll the foxes, and run a wet finger at the junction of the nori sheet - this will hold the roll together more firmly. We immediately advise you not to cut our rolls, but to let them sit for about five minutes. After cutting, serve with wasabi and ginger. Ready!

Sushi and rolls have long been a favorite dish of oriental cuisine. They are eaten in special restaurants, or ordered delivered by courier to your home or office. Some lovers of Japanese food organize themed parties where these dishes are the main treat. You can also prepare them at home, which will be more profitable financially. True, not everyone knows what is needed to prepare sushi and rolls and how to make them yourself.

What do you need to buy for cooking?

If you decide to throw a Japanese party at home and want to surprise your guests with dishes of this cuisine, prepare rolls and sushi. At first glance, it may seem that this is a very tedious process that requires special preparation. But in reality there is nothing complicated about it.

As a rule, everything you need to make rolls or sushi is located in one department in supermarkets. This is very convenient because it makes it possible to select all the necessary ingredients in just a few minutes and save time on shopping. You will need a package of premium quality nori seaweed, about 1 kilogram of Japanese short grain rice and about 300 grams of flying fish caviar.

Soy sauce is indispensable for sushi and rolls. When choosing this ingredient, it is important to ensure that the label does not contain the words “mushroom”, “shrimp flavored” and other flavoring additives. To prepare rolls and sushi, you need to choose only classic soy sauce, and always in a glass bottle. To season the rice you will need rice or wine vinegar. We must not forget about the seasoning for the finished dish - pickled ginger and Japanese wasabi mustard.

As a filling you can use fried or smoked eel, salted red fish. You will also need fresh cucumbers and ripe avocados. Depending on what kind of roll you are going to prepare, chicken eggs (for preparing a Japanese omelet), lemon, crab meat, and caviar may be useful. Sesame is often used for decoration.

What to do with rice?

To properly cook rice, you must first rinse it very well under running water. This must be done at least 7 times until, after washing, the liquid becomes transparent, without white sediment. Then the rice grains are poured with water in a 1:1 ratio and set to cook over high heat under a closed lid. You can use a slow cooker. There is no need to salt the water, since the finished rice is then seasoned with rice vinegar. Cooking time is 20-25 minutes.

The cooked cereal should be transferred from the pan to a wooden bowl. It is allowed to use porcelain and glass, but not metal. When seasoning rice with vinegar, the metal can oxidize, making the dish dangerous to eat. If you wet the walls of the dish with water, the rice will not stick to them. While it is hot, you need to add rice dressing to it and mix thoroughly with gentle movements from bottom to top. This way the rice will not turn into porridge and will absorb the marinade well. After this, you need to collect it in a slide, cover it with a waffle towel and let it cool a little.

Before starting preparation, you should make a special solution for your hands. It is necessary for disinfecting hands during work so that rice does not stick to them, as well as for better gluing of rolls and sushi. This solution is prepared from water, rice vinegar and lemon juice. The volume of water used should be such that the palm can freely plunge into it, this is approximately 400 grams. Rice vinegar is taken in the amount of two tablespoons, and lemon juice is squeezed from a quarter of the fruit.

It is advisable to form rolls and sushi only from warm rice, the temperature of which is slightly higher than body temperature. This is exactly how it is best sculpted. But sushi made from cooled rice will fall apart.

To dilute wasabi, you need to take the prepared powder and add cold water to it in a 1:1 ratio. When stirred, a sharp, specific odor should appear. You should not dilute too much powder at once, as it loses its taste after a few hours. It's better to do this in small portions.

How to form sushi?

To prepare a portion of sushi you will need the following set of products:

  • seasoned rice;
  • red fish fillet;
  • nori seaweed;
  • sesame;
  • wasabi;
  • soy sauce;
  • pickled ginger.

You should start making sushi by preparing the filling. If you are going to cook them from fish, then use fillets from the abdominal part. Here the meat will be most elastic and will not fall apart. The pieces are cut diagonally, their thickness is about 3-5 millimeters. Shrimp also works well as a filling.

Before you take a handful of rice, you need to dip your fingers into the prepared solution. This procedure will prevent pathogenic bacteria from getting into the roll. Then scoop out about 20 grams of rice with your right hand and form it into a small ball. Take a piece of fish in your left hand, put rice on it, press down lightly, and then turn it over and smooth out the sushi. You can use strips of nori and sesame seeds for decoration. To cut seaweed, it is better to use scissors, as the knife can become dull very quickly.

How to form rolls?

To prepare the rolls you will need:

  • seasoned rice;
  • nori seaweed;
  • red fish fillet;
  • sesame;
  • wasabi;
  • soy sauce;
  • pickled ginger.

To form rolls, you need to purchase a makisa - a special mat with which you can twist the roll. The peculiarity of such a device is that it is flexible in one direction and rigid in the other. The makisa needs to be wrapped in cling film so that the rice does not stick to it and does not get clogged between the reeds. The rug is first wrapped in the transverse direction, and then in the longitudinal direction. This technique will prevent the film from slipping off during operation.

For rolls, you can use the back part of the fish fillet; you need to cut it into regular cubes. The base is nori seaweed. They have glossy and matte sides. Rice should be placed on the matte side. It has microvilli that will hold the entire contents of the roll and prevent it from falling apart when cut. To prepare one serving you will need half a sheet of nori.

For rolls, you will need more rice than for sushi, approximately 80-90 grams per serving. When distributing it over the surface of the seaweed sheet, you need to ensure that the rice layer is smooth and uniform, about 0.5 centimeters thick. You need to leave a blank strip at the top edge. The filling should be placed in the center in one layer so that it does not fall out when twisted. When rolling the roll, you need to check that the nori strips match each other and stick together well.

All that remains is to cut the roll. It is advisable to use a sharp knife, and to prevent rice from sticking to it, it is moistened in prepared water with vinegar and lemon. The roll is first cut in half, and then the two parts are folded towards each other and two more cuts are made. This way all the pieces are the same size.

Preparing the Philadelphia roll

To prepare the well-known Philadelphia rolls, you will need a little more ingredients:

  • seasoned rice;
  • nori;
  • red fish fillet;
  • sesame,
  • Philadelphia cream cheese;
  • cucumber or avocado.

For the filling you need to use a cucumber without seeds. It is cut into four parts and a strip with seeds is cut off, this will avoid excessive moisture in the roll. The cucumbers are then cut into thin slices and soaked in cold water to crisp them up. It is better to choose avocado with pimples on the skin, because it is easier to peel. Cut the fruit into thin slices 2-3 millimeters thick (their width should be equal to half the nori).

Rice is spread over the entire surface of the seaweed sheet. Then sprinkle generously with sesame seeds. Now you need to turn the nori and rice down onto the mat and generously coat the reverse side with cream cheese. Then fish, cucumber and avocado are laid out. To roll the roll more accurately, the edges of the nori and makisu are aligned, and then rolled so that the ends of the nori and rice are connected. All that remains is to cut the roll into pieces.

Sushi is a Japanese dish traditionally made from specially cooked rice, thinly sliced fresh fish, vegetables, cheese and other ingredients, sometimes wrapped in nori - seaweed leaves. Recently, it has gained enormous popularity not only in the Land of the Rising Sun, but also in Russia. In this article we will tell you how to make sushi at home.

How was sushi invented?

The history of the dish goes back to the distant past. In the 8th and 9th centuries, for better storage of raw fish, squid, and shrimp, ancient cooks peeled them, cut them into pieces, salted them generously and placed them in wooden barrels in layers, sprinkling them with rice. Stones were then placed on the seafood to prevent air from entering. After some time, the press was removed and the fish was covered with a lid. This storage method made it possible to eat seafood even a year later. Rice was not consumed for a long time. Only pickled fish was eaten. Much later, in the 16th century, fermented rice became an integral component of sushi. In the 17th century, vegetables, rice malt and other ingredients began to be added to sushi. Until the 19th century, sushi with pickled fish dominated Japanese tables.

It wasn't until 1900 that a chef named Yehei Hano came up with the idea of using raw fish to make this dish, adding rice vinegar and seasonings. This is how an appetizing and healthy snack was born, the taste of which is so popular with many connoisseurs of Japanese cuisine. Nowadays, the technology of making sushi continues to change and enrich itself, new interesting ingredients are added to the recipe.

Sushi "California" at home

One of the most popular types of uramaki are California rolls. They are always prepared with crab meat and flying fish roe. Such sushi looks very appetizing and has a pleasant, fresh taste. To create two servings of this delicious dish, you will need the following ingredients:

  • Japanese rice - 240 g;
  • nori - 1 sheet;
  • crab meat - 60 g;
  • Japanese mayonnaise - 50 g;
  • flying fish caviar - 50 g;
  • fresh cucumber - 1 pc.;
  • avocado - 1 pc.

When serving the appetizer, you will need wasabi, soy sauce, pickled ginger and a few slices of lemon. Here's how to make sushi at home:

First, boil the rice and pour vinegar mixed with sugar and salt over it. Next, take the makisa and cover it with cling film. Place half a sheet of nori on a bamboo mat, glossy side down, and rice on top. Next, cover the workpiece with the second free edge of the makisu and compact the rice. Then carefully turn it over so that the nori sheet is on top. Spread a thin layer of wasabi in the middle. Place crab meat, Japanese mayonnaise, and thin strips of peeled avocado and cucumber on top of the mustard. Now let's start forming the roll. We combine the edges and give the workpiece a square shape. Remove the mat and film. Spread the roll with an even layer of Tobiko caviar. Once again we compact the roll with a mat. First cut the roll into two parts. Then we put the halves together and make two more cuts. By analogy, we make the second roll from the remaining half of the nori sheet. That's it, California sushi is ready!

Hot tempura rolls with shrimp

Recently, hot rolls have become very popular. They have an excellent creamy cheese flavor and an appetizing crust. Making hot sushi at home is actually not that difficult. We offer you a recipe for tempura with shrimp and cheese. You will need Japanese rice (170 g), unpeeled shrimp (500 g), nori sheets (2 pcs.), cucumber (1 pc.), rice vinegar (3 tbsp.), Philadelphia cheese (100 g), caviar tobiko (50 g). For frying you will need a Tempura mixture and breadcrumbs. The technology of work is as follows. First, wash and boil the rice, add a standard dressing of rice vinegar, salt and sugar.

Next, boil the shrimp for 5-7 minutes in salted water, cool and peel. Cut the cucumber into thin slices. Cut 1/3 of the nori sheet and set it aside. Place most of the sheet on the makis, matte side up. Then apply a thin layer of rice onto the nori, retreating about 2 cm from the edge. Next, place tobiko caviar (2 tsp) in the center of the workpiece. On top are slices of cucumber and shrimp. Place soft cheese on top of the ingredients. It is convenient to do this using a cooking bag. If you don’t have such a device at home, you can replace it with an ordinary thick plastic bag. Now carefully roll the nori into a roll. We dilute the Tempura mixture in a small amount of water so that the consistency becomes similar to homemade sour cream. Coat the roll with the mixture and roll it in breadcrumbs. We send the roll to fry in vegetable oil in a very hot frying pan. After a beautiful golden crust has formed, take out the roll, place it on a napkin and let it cool slightly. Finally, cut it into six equal parts and serve.
