Let's make simple chicken pies. They require a minimum of time and effort, but they turn out very tasty.

The dough for pies is simple both in taste and composition. For 600-700 g of flour - 60 g of butter, a packet of yeast, 500 g of warm water, 1 tsp. salt, 1 tbsp. Sahara.

Pour 10 g of dry yeast (or 40 g of ice cream) with a small amount of warm! water. The packet of yeast should say that it is suitable for 1 kg of flour. Add a spoonful of sugar and a spoonful of flour. Stir and let stand for 15 minutes in a warm place to activate the yeast.

During this time we will prepare the filling. We cut up the finished smoked chicken (you can grill it) from the store, remove the meat from it and grind it in a blender.

We also chop four medium-sized onions in a blender.

Fry the onion in a frying pan until slightly golden and add the chicken meat. Mix everything, fry for another 5 minutes and turn off the stove. Cover the frying pan with a lid and set aside.

Now let's knead the dough. Add salt, butter, remaining warm water and flour to the dough. We will sift the flour through a sieve. Let's knead the dough. It should not be hard!

Cover the dough with a towel and leave in a warm place for an hour. And we will forget about it for a while, for example, we will go for a walk, like me.

After an hour, the dough will be ready and you can make pies from it. But first we will add 200-300 g of cheese to the filling - grate it on a coarse grater and mix it with the chicken.

We transfer the dough onto the table with flour, cut it into portioned balls, and make pies out of them. While the pies are waiting to be fried, to prevent them from drying out, cover them with a towel.

Serve the finished pies on the table piping hot. This amount of dough makes approximately 25-30 pies. They are delicious, remain soft, as if they were just baked, even on the second day. If they have cooled down, it is better to reheat them in the microwave before serving.

  • 500 ml kefir;
  • 350 gr. flour;
  • 100 ml vegetable oil and a couple more spoons for frying;
  • 3 eggs;
  • 1.5 teaspoons sugar;
  • 2 teaspoons baking powder;
  • 1.5 teaspoons salt;
  • 1 chicken breast, pre-boiled;
  • 2 boiled potatoes;
  • 1 onion;
  • 0.5 bunch of dill;
  • spices and to taste;
  • for the form - vegetable oil and semolina.

Let's start by preparing the dishes; for this pie you should use a one-piece pan. Coat its inner surface with oil and sprinkle with semolina. You can immediately turn on the oven at 200 °C.

The dough is prepared simply: pour kefir, raw eggs, vegetable oil into a deep bowl, add sugar and salt. Baking powder. Beat everything, then add flour and finely chopped herbs, mix everything. The mass will be thin.

Cut chicken and potatoes into small pieces. Fry the chopped onion in oil, mix it with chicken meat and potatoes. Season the filling to taste. A simple closed pie made from yeast dough that rises in the cold. The recipe is a little unusual, since it is usually recommended to keep yeast dough warm to rise. But it’s worth trying to prepare the dough using this simple recipe to make sure that it turns out no worse than the one kneaded in the traditional way.

  • 11 grams of dry instant yeast (1 sachet);
  • 500 ml milk;
  • 5 glasses of flour;
  • 2 tablespoons sugar;
  • 0.5 teaspoons salt;
  • 2 tablespoons of vegetable oil for the dough and the same amount for the filling;
  • 500 gr. chicken fillet;
  • 3 potatoes;
  • 2 onions;
  • spices to taste.

Sift four cups of flour, mix it with instant yeast, sugar and salt. Then add milk and vegetable oil. Knead the dough. Knead it on the board, adding about another glass of flour. If the dough no longer sticks to the board and fingers, it is ready. Wrap it in a bag and put it in the refrigerator for three hours.

Advice! You can knead the dough the night before, put it in the refrigerator overnight, and make the pie in the morning.

We will make the filling with raw chicken and raw vegetables. Cut the fillet into thin slices, approximately like beef stroganoff. Three potatoes on a grater for preparing Korean salads, onions - into thin halves of rings. Mix everything, add salt and other spices to taste. Add oil and mix well.

We take out the proofed dough and form two layers out of it. Transfer the first one to a baking sheet lined with parchment. On it, evenly spread the prepared filling, but the edges of the layer must be left free. Cover with another layer and pinch well.

Traditional kurnik pie used to be baked only for weddings or other big celebrations. But, of course, it can be prepared on a regular day, if you have free time, since it will take at least 2.5-3 hours to prepare the chicken.

Dough:

  • 3 cups flour;
  • 3 tablespoons butter (melt);
  • 1 tablespoon sugar;
  • a third of a teaspoon of soda;
  • 0.5 glasses of milk;

Pancakes:

  • 0.5 cups flour;
  • 1 egg;
  • 1 teaspoon sugar;
  • 0.5 teaspoon of soda;
  • 0.5 glasses of milk;
  • 5 tablespoons of vegetable oil;
  • 1 tablespoon table vinegar (6%).

Chicken mince:

  • 1 teaspoon flour;
  • 2 tablespoons butter;
  • 500 gr. boiled chicken meat;
  • 4 tablespoons broth.

Mushroom mince:

First we will make three different fillings. Boil the chicken, divide the finished meat into small pieces. Fry the flour in butter, dilute with broth. Pour this sauce over the chicken and season the filling to taste.

For minced mushrooms, you need to finely chop the champignons, fry them and season with the same sauce as the chicken. If the mushrooms are dry, then they should first be soaked in milk, then boiled and cooked in the same way as champignons.

To make minced potatoes, you need to boil the potatoes. Cut the root vegetables into small cubes, season with melted butter and chopped herbs. Add spices to taste.

Now let's prepare the pancakes. Grind the eggs with sugar and salt, add flour and milk, mix everything thoroughly, getting rid of lumps. Add baking soda and vegetable oil. We bake thin pancakes, you will need 12-15 of them.

The main dough for chicken is prepared like this:: dilute sugar and salt in warm milk, then add flour and sour cream, in which we stir the soda in advance. Knead elastic dough. When kneading it, it is very important not to overdo it with flour, otherwise the cake will turn out tough. Let the dough sit for about twenty minutes, then divide it into two unequal parts. Roll out a third of the dough (this will be the bottom of the chicken) into a circle. Place several pancakes (2-3) on it and distribute the chicken filling on top of them.

Separate a small piece from the remaining dough. Roll out the rest into a round cake and cover the chicken with it. We make four radial cuts on the surface. We pinch the edges along the perimeter, and then the dough along the cuts. Cut out decorations from the remaining dough and place them on the pie. Grease the surface with egg. Baking is carried out at two hundred degrees for about forty minutes.

Shortbread open pie with potatoes and chicken

Let's prepare an open sand pie with chicken. It is a little similar to quiche, but still it cannot be called quiche, since the cooking technology is different.

Dough:

  • 250 gr. flour;
  • 1 tablespoon sour cream;
  • 90 gr. butter;
  • 1 egg;
  • 0.5 teaspoon salt;
  • 0.5 teaspoon sugar.

Filling:

  • 3 large potatoes;
  • 200 gr. chicken fillet;
  • 1 onion;
  • 1 tablespoon oil;
  • salt and spices to taste.

Fill:

  • 2 eggs;
  • 50 gr. sour cream;
  • 50 ml milk;
  • 1 tablespoon of finely chopped greens;
  • 50 gr. cheese;
  • salt and spices to taste.

Boil chicken and potatoes separately. Cool.

Grind the flour with soft butter, then add the beaten egg and sour cream. Add salt, sugar, and favorite spices. Knead the dough, roll it into a ball, wrap it in film and put it in the cold for half an hour.

Cut the boiled meat into small cubes, mix it with potatoes cut into the same small cubes. Chop the onion, fry it in oil, pour it into the filling along with the oil. Mix everything and season.

Beat all the filling ingredients - eggs with milk, sour cream and spices to taste. Add chopped herbs to the filling.

Transfer the rolled out dough into a mold (22-24 in diameter) (don’t forget to grease the mold with butter first). We form a flat cake with high sides. Place the filling on the dough and pour over the filling. Cook at two hundred degrees for half an hour beforehand. Sprinkle the hot pie with grated cheese.

Butter pie without yeast

If you don't like working with yeast, then bake a cake from butter dough prepared without using this ingredient.

  • 180 gr. butter;
  • 500 ml kefir;
  • 500 gr. flour;
  • 300 gr. chicken fillet;
  • 3-4 potatoes;
  • 1 onion;
  • 1 egg;
  • salt, bay leaf and other spices to taste.

Melt the butter and cool it slightly. Add kefir and salt to the butter, then stirring constantly, add flour.

Advice! Do not pour out the flour all at once, add it in parts, kneading the dough each time until completely homogeneous.

Knead until a non-sticky, but tender and soft mass is obtained. Form a ball out of the dough, cover with an inverted bowl and let rest for about thirty minutes.

Peel the potatoes and cut them into small, pea-sized cubes. Wash the fillet and cut into small pieces. Mix potatoes with meat, add chopped onion. Salt and add spices to taste.

We separate about two-thirds of the dough, roll it into a round cake, it should not be too thin, the optimal thickness is 0.7-0.9 mm. Transfer the cake to a pre-oiled pan. The dough should cover both the bottom and sides.

Advice! You can add both raw and pre-fried onions to the filling. The taste of the finished baked goods will vary.

We spread the filling, which we cover with the second flatbread. Cut a hole in the top cake to allow steam to escape. Trim off excess dough and pinch the edges. If desired, you can cut out figures from the remaining dough and decorate the pie. We grease the top of our workpiece with egg.

We put it in the oven, cook at two hundred degrees for about one hour. Half an hour after the start of baking, you can remove the pie and pour about a third of a glass of boiling water or broth into the hole in the top lid. Cover the finished baked goods with a napkin and let it stand for half an hour, so it will become softer.

Pie made from ready-made puff pastry

You can quickly make a puff pastry pie if you buy the dough in the store and use pre-boiled potatoes and chicken for the filling.

  • 500 gr. puff pastry (you can use either yeast or unleavened dough of your choice);
  • 500 gr. chicken meat;
  • 2-3 potatoes;
  • 1 onion;
  • 1 egg;
  • 2-3 tablespoons of vegetable oil;
  • 2 tablespoons flour;
  • salt and spices to taste.

If you only have raw chicken on hand, then you need to fry it in a frying pan with oil or boil it. Let the meat cool and cut into small pieces. Grate the boiled potatoes or cut them into cubes. Chop the onion finely and scald it with boiling water. You can fry the onion in oil instead. Mix potatoes with onions, salt and add your favorite spices.

Let the dough defrost, then separate two-thirds of the volume from it. Roll out this piece and transfer it to a deep pan so that it covers the bottom and sides. We spread the potatoes with onions, distribute the pieces of chicken meat on top. Roll out the remaining dough and transfer it to the mold, placing it over the filling. We pinch the edges. We trim off the excess dough, roll it out and use it for decoration. Brush the surface with beaten egg and cook in the oven at 200-220 degrees for 20-25 minutes.

Yeast cake made from batter

Yeast pie can be prepared with liquid dough, it turns out very tender and fluffy.

  • 1 egg;
  • 1 glass of milk or whey, you can mix milk and whey in equal volumes;
  • 20 gr. fresh pressed yeast;
  • 1 teaspoon sugar;
  • 2 tablespoons vegetable oil;
  • 0.5 teaspoon salt;
  • approximately 2 cups flour;
  • 300 gr. pre-boiled or baked chicken (boneless and skinless);
  • 2-3 potatoes;
  • 1 onion;
  • 2 tablespoons sour cream;
  • 1 teaspoon mild mustard;
  • spices to taste;
  • 1 teaspoon butter for greasing the finished cake.

Heat the milk or whey, stir in sugar, yeast and salt, add a couple of tablespoons of flour, stir. Leave the mixture for fifteen to twenty minutes until a light foam forms on the surface.

Then pour the beaten egg, vegetable oil into the mass and begin to gradually add flour. We gradually introduce flour one or two spoons at a time, we need to get a homogeneous mass similar in thickness to dough for making pancakes. Cover the bowl with the prepared dough with film or a napkin and let it stand warm for forty to sixty minutes.

Cut the finished chicken meat into cubes, and cut the boiled potatoes into the same pieces. We cut the onion thinly, put it in a sieve and scald it with boiling water. Mix everything, add spices, add sour cream, mustard and other spices to taste.

It is convenient to cook in a disposable form, but you can also use regular baking utensils. Cover it with parchment. Transfer some of the dough with a spoon and level it out. Then distribute the finished filling, stepping back from the edges of the mold by about 0.5-0.7 cm. Next, spread the dough that is still left. Cover the dishes with a napkin for a quarter of an hour. Cook in the oven at 180 degrees for approximately thirty-five to forty minutes.

Upside-down pie with chicken and potatoes

It's easy to make a delicious upside-down chicken pie.

  • 1 kg of chicken meat without bones and skin;
  • 800 gr. potatoes;
  • 3 eggs;
  • 2 onions;
  • 1 glass of kefir;
  • 1 cup flour;
  • 0.5 teaspoon of soda;
  • 4-5 tablespoons of oil;
  • salt and seasonings to taste.

Cut the chicken meat into small pieces, fry it in a frying pan in 3 tablespoons of oil. Salt and add your favorite seasonings. Fry until almost fully cooked. Slice the potatoes and onions thinly; you can use a special shredder. Sprinkle potatoes and onions with salt and spices and mix.

Mix eggs with soda, salt and kefir. Then add flour and knead until smooth. Take a large mold with high sides and coat it with oil. Place half of the potato slices on the bottom. Then lay out half the onion, over which we distribute pieces of fried chicken meat. Place the remaining onions on the meat. And then we distribute the potato slices. The filling for the chicken and potato pie can be prepared. The most fragrant baked goods will be if you take wild mushrooms, which must first be boiled. But you can take champignons or oyster mushrooms.

  • 3 potatoes;
  • 300 gr. chicken meat without bones and skin;
  • 300 gr. mushrooms;
  • 1 onion;
  • 2-3 tablespoons of vegetable oil;
  • 3 eggs;
  • 1 tablespoon of finely chopped greens;
  • 250 gr. flour;
  • 200 gr. sour cream;
  • 90 gr. butter;
  • 50 ml milk;

Cut the peeled potatoes into small cubes. Cut the chicken meat into pieces of similar size. Place the chicken and potatoes in a saucepan, add salted boiling water and cook until tender at a low simmer.

Mix soft butter with sifted flour, grind, you should get fine crumbs. Add a spoonful of sour cream and a beaten egg, knead the dough. Place it in a baking dish, spread it along the bottom with your hand and form sides about five centimeters high.

Heat the oil in a frying pan and fry the onion and mushroom slices. Place the champignons in the pan raw, and the wild mushrooms – pre-boiled. Meanwhile, the potatoes and chicken are cooked, drain the water and place the cooked products in a frying pan with mushrooms. Stir, salt and season to taste. Fry everything together for about five minutes. Cool the filling. Place it on the dough.
