How to cook delicious verguns

Rinse the raw chicken egg under running water. Then we break this egg into a sufficiently deep container in which it will be convenient to knead the dough for verguns.

Now add sugar. To make the verguns sweet and tasty, add 1/2 tbsp to the dough. granulated sugar. Don't forget to add a pinch of salt to the dough. In any dough, even sweet, you must add salt. Using a whisk, lightly beat the sugar and egg.


Now pour kefir into the whipped sugar mixture. Our kefir was removed from the refrigerator in advance. If the kefir is not warm enough, then heat it (to room temperature) over low heat, stirring constantly. Add baking soda to kefir according to the recipe. It’s good if kefir is slightly sour. Then immediately pour the soda into the kefir, mixing it in the kefir. In an acidic environment, soda will extinguish perfectly. If the kefir is very fresh and non-acidic, then quench the soda in a spoon with vinegar, and then add it to the bowl with kefir. Sift the flour needed for the dough through a sieve, and then gradually add it to the kefir. First, mix the ingredients with a spoon, and then knead the thin dough with your hands. The dough sticks slightly to your hands, so grease your hands with vegetable oil.


Place the dough in a bowl, covering with a towel. Leave on the table for 1 hour.


After an hour we get a fluffy, pleasant dough. Roll out the dough on a table that has already been sprinkled with flour. Stretch the dough carefully, without pressing too hard on the rolling pin. The dough layer should be 1 cm thick.


Using a sharp knife, cut the dough into diamond shapes. The diamond size is approximately 10 by 2.5 cm, as shown in the photo.


In each diamond we make a longitudinal cut in the middle. We take one long tip of the diamond, pull it through the cut, returning it back. We do the same with the second opposite tip of the dough diamond. We get a vergun.

We fry the verguns in a fairly large volume of refined oil, choosing a suitable container for frying so that the verguns float in the oil. Place the pieces in well-heated fat. After frying the verguns on both sides, immediately place them on a paper towel to remove excess oil.

I pour the soda prepared for the dough into the kefir. The soda immediately foams, since for verguns I usually take not entirely fresh, but slightly sour kefir.

Now I take flour (wheat, premium). Before using flour to knead dough, I always sift it through a sieve.

I knead the dough for the verguns, which is not stiff and not filled with flour. In the photo you can see that the dough does not stay in the ball, but spreads out. My dough is such that it even sticks to my hands a little. After kneading, I let the dough rest for 1 hour, covering the bowl with a towel.

When the dough is ready, after dusting a clean table with flour, I transfer the dough from the bowl to the table, roll out the dough with a rolling pin, without pressing too much on it.
