Juicy meatloaf is an excellent alternative to industrial sausages, ham, and boiled pork. It always looks advantageous on the festive table, and adds variety to the everyday menu.

Cooking a delicious meatloaf in the oven is not only not difficult, but also very interesting: by coming up with options for fillings, you can get a new delight every time.

If we talk about the basic recipe, then there are three of them: you can cook from a whole, chopped piece of meat, from finely chopped pulp or from minced meat. When prepared from a single piece, the roll turns out juicy and is easy to cut. But it takes quite a long time to prepare, and choosing a suitable whole piece is not always easy. It cooks quickly, but it is very easy to dry it out.

The golden mean for me and my family is a finely chopped meat roll. Small-sized pieces are quickly brought to readiness, while remaining filled with appetizing juice, and when cut we get a very beautiful dish, reminiscent of a piece of ham.

As for the part of the carcass for making the roll, the best choice is meat that is itself quite soft and not entirely lean (for example, sirloin). Thanks to the fat contained in the meat, the roll will be juicy. Plus, to ensure your meatloaf is never dry, you don't need to cook it for long - just bake it for just 30 minutes, then leave it in the closed oven to cool completely.

Cooking time: 50 minutes plus time to cool in the oven

Ingredients

  • 800-900 grams of pork (any assortment is possible)
  • 2 eggs
  • 1 carrot
  • 100 grams of hard cheese
  • 2 cloves garlic
  • salt, pepper, spices - to taste

You will also need 1-1.5 tbsp. spoons of flour.

Preparation

    First, finely chop the meat, washed and dried with paper towels. The pieces should be about a centimeter in size. Some may think that it is very time-consuming and tedious to cut meat by hand when you can simply grind it in a meat grinder. But this work will only take you 5-7 minutes, provided that you sharpen the knife well. And the pie will turn out more textured than if you make it from minced meat! However, if even 5 minutes is too much, make minced meat.

    Place the chopped meat in a bowl, season generously with salt and pepper, and add spices. The set of spices can be very different - it all depends on your personal preferences. I used a packet of ready-made assorted meat seasonings.

    Then add the eggs to the meat and mix the minced meat thoroughly.

    Add flour to the meat. It is the eggs and flour that will help the meatloaf hold together and not fall apart when cutting.

    For the filling, grate the cheese and carrots on a fine grater.

    Pass the garlic through a press and combine it with cheese and carrots, stirring until the mixture is homogeneous.

    Tear off a long piece of foil and fold it in half. A double layer of foil will hold the roll securely and it will retain its shape.
    Place the meat mixture on the foil and spread it into a layer 1.5-2 cm thick, moving slightly from the edges.

    Place the filling on top.

    Carefully wrap the roll so that the filling is inside. It is very convenient to use a sushi mat for this purpose. Try to wrap the meatloaf as tightly as possible. Then tuck the sides of the foil under.

    Next, you need to wrap the roll in another piece of foil so that there are no gaps anywhere through which the meat or filling can escape during baking. As a result, you should get a dense sausage.

    Place the meatloaf in the oven preheated to 200 degrees and bake it for 30 minutes, then turn off the oven and leave the meatloaf in it until it cools completely.

    Before serving, cut the dish into 1 cm thick slices. Serve it with herbs, vegetables and fresh bread. Bon appetit!

  • Minced meat (pork, pork, mixed with beef) – 500 gr.

  • Onions – 1-2 pcs.
  • Parsley – 1 bunch.
  • Vegetable oil – 1-2 tbsp. l.
  • Chicken eggs – 1 pc.

For filling:

  • Chicken eggs – 4 pcs.

Cooking algorithm:

  1. Boil four chicken eggs hard (if quail eggs, then you need 7-8 of them), cool.
  2. Prepare minced pork or pork and beef, you can take it ready-made.
  3. Peel the onion, rinse, grate, chop, very finely. Wash the greens, pat dry with a napkin, and chop finely.
  4. Beat milk and egg, add to minced meat. Send herbs, onions, spices, and salt there. Knead the minced meat well until smooth.
  5. Line the bottom of a baking sheet with a sheet of foil and coat with additional vegetable oil.
  6. Lay out some of the minced meat and carefully smooth it out. Place chicken eggs in a row.
  7. Cover the eggs with the remaining minced meat and form into a roll. You can wet your hands with water, then the minced meat will not stick, and the roll itself will have a more presentable shape.
  8. Bake for 45-50 minutes.
  9. Carefully transfer to a dish, sprinkle with herbs, serve and rejoice when you see the happy faces of your household!

How to cook a dish with mushrooms

Ingredients:

  • Minced meat (pork or chicken) – 500 gr.
  • Loaf (roll) – 150 gr.
  • Onions – 1-2 pcs. (depending on size).
  • Milk – 1 tbsp. (for soaking the loaf).
  • Egg – 1 pc.
  • Salt.
  • Mixture of spices (for minced meat or at the hostess's choice).

For filling:

  • Mushrooms (champignons are best) – 300 gr.
  • Onions – 2 pcs.
  • Vegetable oil - for frying.
  • Cheese (hard varieties) – 100 gr.
  • Salt.

Cooking algorithm:

  1. For the filling, wash the champignons, boil them, and drain in a colander. Cut into slices, add salt.
  2. Place in a frying pan with a little oil. Simmer, add peeled, washed, finely chopped onion. Fry the filling until golden brown. Grate hard cheese.
  3. Minced meat can be twisted from meat or taken ready-made. Soak the loaf in half the amount of milk, squeeze well, add to the meat.
  4. Put an egg and onions there (peeled, washed, chopped or grated, if that’s how the household likes it). Salt the minced meat, season with spices, and mix well.
  5. Start shaping the meatloaf. Spread cling film. Lay out the minced meat, level it out, and form a square.
  6. Sprinkle the minced meat with a layer of cheese. Carefully distribute the filling (mushrooms with onions) not reaching the edges of the roll by 2 cm.
  7. Lifting the film, roll it up, pinch the edge, and smooth it. Carefully transfer to a baking sheet. Drizzle with remaining milk.
  8. Bake for 30-40 minutes until golden brown.

With cheese

For family and friends who can’t stand boiled eggs, you can prepare meatloaf with cheese filling. The recipe itself includes simple ingredients, is prepared quickly, and looks very appetizing.

Ingredients:

  • Minced meat (any) – 400 gr.
  • Chicken egg – 3 pcs.
  • Onion – 1 pc.
  • Hard cheese – 100-150 gr.
  • Salt.
  • Seasonings (to the taste of the hostess or her family).

Cooking algorithm:

  1. First prepare the egg-cheese dough. For this, grate the cheese on a fine grater. Beat 2 eggs until foamy, mix with cheese, maybe add a little salt.
  2. Place parchment paper on a baking sheet. Pour the dough (eggs and cheese) onto it, carefully spread it with a spoon, level it, forming a square. Its thickness should not exceed 7 mm.
  3. Place this cheese layer in the oven and bake at 200 degrees for 10-15 minutes. Cool, carefully transfer to the table.
  4. While the cheese base is cooling, you need to prepare the minced meat: twist the meat or add salt, spices, grated onion, and 1 egg to the prepared minced meat. Stir until smooth.
  5. Place on cheese cake and level. Roll into a roll. Wrap it in foil, place it on a baking sheet, and put it in the oven for 40 minutes (at a temperature of 190-200 degrees).
  6. Remove from foil and carefully transfer to a plate. Additionally, you can sprinkle with herbs, parsley or dill. But when cut, it already looks amazing and can become a decoration for any holiday table.

How to cook an original roll with meat in dough

This will probably be the most difficult of all the meatloaves, but it looks royal. On top there is delicious baked dough, decorated with a braid, inside there is tender, aromatic minced meat. And the very heart of the roll is boiled eggs.

Ingredients:

  • Puff pastry – 450 gr.
  • Minced meat (ready) – 600-700 gr.
  • Onions – 1 pc.
  • Garlic – 3-4 cloves.
  • Mustard – 1 tbsp. l.
  • Parsley – 1 bunch.
  • Chicken egg (boiled) – 3 pcs.
  • Chicken egg (for greasing) – 1 pc.
  • Salt and aromatic herbs.

Cooking algorithm:

  1. Most housewives today prefer to use ready-made puff pastry (although you can try to make it yourself).
  2. For minced meat, first fry the garlic, onion and parsley in vegetable oil. Add to the minced meat, along with salt, seasonings, and mustard. Mix thoroughly.
  3. Form a rectangle from the puff pastry and mentally divide it into three stripes. Place part of the minced meat on the central part, smooth it out, and cut the egg halves onto the minced meat. Cover the top with the remaining minced meat.
  4. Cut the edges of the dough every 2 cm on the bias. Place them alternately on the minced meat, “braiding a pigtail.” Brush with egg, then when baking the roll will have a golden crust.
  5. Baking time: 40 minutes (preheat oven to 200 degrees). The beauty is indescribable and the taste is amazing - these are the simplest epithets that this dish will receive from household members.

For minced meat, it is best to use a mixture of pork and beef, since pure pork can be very fatty. Cheese or mushroom filling goes well with minced chicken; besides, it is more tender and dietary.

Place the workpiece in a large saucepan, fill it completely with water and place the dish on high heat. After boiling, reduce the flame and cook for 1.5 hours. After this, carefully remove the bag with the roll, take it out into the cold and after cooling, cut it into slices and serve.

How to cook a meatloaf in the oven?

Ingredients:

  • minced meat – 520 g;
  • – 245 g;
  • butter – 45 g;
  • onion – 65 g;
  • egg – 5 pcs.;
  • garlic – 15 g;
  • flour – 115 g;
  • fresh herbs;
  • spices.

Preparation

Boil a few hard-boiled eggs, peel the onion, finely chop it and brown it in butter. Then we put it in the minced meat, throw in the chopped herbs and beat in the raw egg. Mix everything well, squeeze out the garlic to taste and season the mixture with spices. Roll out the dough into a thin rectangle, place it on an oiled baking sheet and distribute half of the minced meat along the length of the dough in the center. Place the boiled egg halves on it, and the remaining minced meat on top. Next, cut the dough on both sides into oblique strips and lift them in pairs, pinching them on top. Coat the resulting roll with the remaining beaten egg and bake for 30 minutes in a preheated oven.

    MEAT ROLLS STUFFED WITH PRUNES

    Wash the meat thoroughly and dry with a paper towel. Cut the pork into chops, into slices about 1 cm thick. Beat well with a meat mallet (so that when beating, pieces and meat juice do not fly in different directions - you need to put a plastic bag on top).

    Wash the prunes for the rolls and pour boiling water over them for 10 minutes to steam them. Then drain the water and dry the dried fruits with a paper towel.

    Cut the onion (1 piece) into cubes and fry in vegetable oil until almost done.

    Take a pork chop, salt and pepper to taste.
    Place 3-4 prunes on one side of the roll, add sautéed onions.

    Roll up the meatloaf as tightly as possible.

    You can serve meat rolls with prunes with any side dish. I suggest you serve it with mashed potatoes. Place some sautéed onions and prunes on top of the rolls. You can decorate with greenery. It is advisable to remove the toothpicks before serving.

    MEAT ROLLS STUFFED WITH CHEESE

    Meat rolls with cheese will turn out delicious not only from pork, but also from beef. I used pieces of cheese as a filling; you can grate it and mix it with chopped garlic. You can diversify meat rolls with cheese filling with chopped herbs or whole basil leaves. To make small meatloaves, use tenderloin, pork neck, boneless cutlet or boneless beef edge. We described how to make meat rolls from chicken breast fillet in the recipe.

    The meat is thinly cut into slices and beaten as usual. If desired, marinate in spices, wine, onions or mayonnaise (meat pieces can be left in the marinade in the refrigerator overnight).

    Cut the cheese into long, thick pieces.
    I also used sauteed onions in the filling; it makes the meat rolls juicy.
    Salt and pepper each chop to taste (if there was no prior marinating).
    Place a block of cheese on one side of the meat, add fried onions.

    We tightly roll up the meat roll, secure it in several places with skewers or tie it with thread.

    Lightly fry pork rolls with cheese in a frying pan, then simmer them for 15 minutes under the lid, adding a little liquid (water, cream, marinade juice or wine).
