A culinary festival took place.

What could be more interesting than trying food from the best chefs and watching them play football under the comments of the main Russian sports journalist Viktor Gusev. “Key-Media” visited the “Welcome Foodball Cup” festival and found out what surprised the chefs, why food trucks are not yet popular in Vladimir, and what new trend may very soon come from the capital to our city? Let's talk.

The main goal of the festival from the “Gastronomic Map of Russia” is to show, or rather to give, a taste of Russian cuisine before the main sporting event of the year - the World Cup. The creators divided the gastronomic festival into three zones: Picnic/Food Trucks/Common Boiler.

The organizers managed to gather top chefs from Vladimir, Nizhny Novgorod, Sochi, Serbia, and Croatia. The level is high, the guests are no lower.

Picnic zone

When was the last time you went on a picnic? And when they put fresh bread, pies, berry juice, fruit and sandwiches in the basket. Gastronomic task No. 1 is for chefs to create a picnic from the products they have in the restaurant. Idea: there will be a lot of fans, sometimes it’s inconvenient to eat in a restaurant all the time. But! You can take food with you. Beautifully packaged, fresh and very tasty. And this is not some kind of packed lunch, but the real flavor of a restaurant where you couldn’t sit longer. The participants' versions of the picnic excite not only the imagination, but also the stomach.

Anna Netyagina, President of the Association of Restaurateurs and Hoteliers of Sochi

“The picnic idea is the right idea. Initially, the World Cup is not a haute cuisine event, it is a street food event. And everyone goes on a picnic with what they are used to eating since childhood. When we hear the word picnic, we think of what grows in vegetable gardens. A Sochi picnic looks something like this: cheese khinkalia, red mullet, horse mackerel, rapana, oysters, wine, smoked cheeses, nuts. The most important thing is our national cuisine.”

Vitaly Mikhailov, chef Nizhny Novgorod

“We are having a picnic in the format of the Nizhny Novgorod province. We suggest taking with you soaked apples, pickled onion sets, handmade printed Gorodets gingerbread, and sourdough bread. We also suggest using our pigskin brushwood. It is both sweet and salty."

Yuri Kovalchuk, chef, Vladimir

The picnic version is the one you can take with you. This is very cool, this way we preserve culture and traditions. You can combine different restaurant products in it, the main thing is that if the guest likes it, he will definitely come back to you and not just for a picnic set.”

Here everyone, as one says, is about the culture of consumption. The main goal of the gastronomic gathering is to give people a taste of delicious and interesting Russian food. So as not to be lazy, drive 200 km on a weekend to meet the best chefs. While some were cooking, others were playing and commenting. We couldn't help but ask the country's chief sports journalist what he loves most. From food.

Viktor Gusev, sports commentator

“I love apples. I love it very much. From food. I love beef stroganoff, cutlets with mashed potatoes and pickled cucumber. I live outside the city, so I'm not a frequent visitor to restaurants. My wife and I buy some, she cooks some, my mother-in-law cooks some when she arrives. You can probably meet me in a “beer bar” rather than in a restaurant. Today at the festival they gave me quail and birch sap to try. Tasty. It was as if I had gone into the forest to eat (approx. laughs). I took the quail and strained the juice. I like everything".

Food truck zone

A food truck or kitchen on wheels has been popular in gastronomic usage for a long time. Especially in Europe and big cities. A kind of fast food is convenient. The machines are equipped with cooking plates. What can you cook there? Depends on the cook. You can boil potatoes, pasta, fry cutlets. At the festival, cozy mobile kitchens offered coffee, tea, buns, and various sweets.

Anastasia Plekhanova, pastry chef, Suzdal

“Food truck is a popular gastronomic thing. This came to Vladimir recently. But, you see, it’s convenient and very relevant in the spring. For example, you are walking around the city, you want to eat, but you don’t want to sit down anywhere. So you take coffee and a bag of food with you, satisfied and happy, you move on. In our food truck we present Russian sweet street food – khvorost. We sprinkle it with cranberries, cocoa, powder, and have cappuccino coffee.”

And if food trucks are echoes of almost the past, then the main culinary ideas of today are again dictated by Moscow. The famous Russian chef and TV presenter Vasily Emelianenko is sure Now there are global trends in the capital: understandable food and food markets.

Last weekend, the traditions of delicious and healthy cuisine of different peoples of Russia merged into a single and harmonious whole at the international Taste of Moscow festival.

In Moscow, on the picturesque Luzhnetskaya embankment, the now annual gastronomic festival Taste of Moscow took place, dedicated to high-quality, healthy and tasty food. The festival positions itself as a celebration of taste and style and takes place in 19 cities around the world on all continents.

This year, 30 of the capital's best restaurants were presented at the Moscow festival, as well as 150 manufacturing companies that offered visitors to try their unique products. In addition, more than a hundred famous chefs from Russia and Europe gathered here, sharing their culinary secrets at special master classes.

We managed to talk with one master of his craft, a famous restaurateur and an amazingly charismatic woman, the owner of Gayane’s and Panaekhali restaurants:

The concept of my restaurant is a return to the roots. In order to move forward, you need to return to your roots, this is very important. All the dishes we prepare in our restaurant are dishes from my childhood. These are the flavors that are absolute perfection for me. This is what my soul and my heart strive for. And I pass this love on to my guests.

At the Taste of Moscow festival, her restaurant is presented for the third time, and Gayane Breiova herself is happy to give master classes on cooking Armenian dishes. This time she cooked for the Shepherd company.

"Chaban" is a North Caucasian brand specializing in dairy products. His peculiarity is that, in addition to commonly used ones, he also creates traditional Caucasian products, for example, ayran or the unique salted cottage cheese Kald.

The company’s slogan is “Products from the Mountains,” and indeed “Chaban” produces all its products in the mountainous ecozone of the Elbrus region, at the Nalchik Dairy Plant. At the same time, as the manufacturers themselves say, it is especially important for them to make their products completely natural, without various external additives.

We make our products very high quality and tasty; they are in demand not only among the end consumer, but also among restaurants and cafes. In addition, we have our own unique products. For example, we are the only one in Russia that produces salted cottage cheese on an industrial scale. This is a national Vainakh product, and we were able to transfer it to production,

— Dinara Urmancheeva, head of the marketing department of the Nalchik dairy plant, said in a conversation with Tsargrad.

At the same time, “Chaban” sees its mission not only to create tasty and healthy food, but also to introduce the culture of the North Caucasus to other regions of our country. Thus, dairy products from the mountains can be found in more than 20,000 retail outlets in 15 regions of Russia. And, of course, they are also in the capital.

Thus, according to Dinara Urmancheeva, Chaban products can be purchased in retail stores or ordered for home delivery in their online store. And in shopping centers and some large markets, such as, for example, Food City, you can not only buy, but also immediately try these products.

Both the Chaban brand and many other manufacturers who took part in the Taste of Moscow festival share its main concept. This, on the one hand, is an attentive and caring attitude towards health, and on the other, the search for new ideas and production solutions based on traditions.

A real holiday for all gourmets, lovers of cooking and simply connoisseurs of delicious and varied products will be held in the capital again this fall! From September 28 to October 7, farmers from all over the country will come to Moscow for the annual gastronomic festival “Golden Autumn”. They will bring the highest quality and freshest products: vegetables, fruits, dairy products (including a wide variety of cheeses!), as well as deli meats and fish. Well, Moscow restaurateurs will surprise visitors with unusual dishes from a special festival menu. You will be able to choose products and taste culinary masterpieces at venues throughout the city: this year the festival will cover not only the traditional Moscow Seasons locations in the center and other city districts, but also fairgrounds.

Product variety awaits guests at the Golden Autumn sites on Revolution Square, Manezhnaya and Tverskaya Squares, Novy Arbat, Gorodetskaya and Profsoyuznaya streets, on Orekhovoy Boulevard and Dmitry Donskoy Boulevard, as well as on Yunosti Square in Zelenograd

The festival will also have thematic areas dedicated to one specific type of product: on Kuznetsky Most Street there will be a festival “Cheese Fair”, and on the transition from Manezhnaya Square to Revolution Square there will be a daily “Fish Fair” with the largest selection of fish and seafood.

The Golden Autumn venues will be decorated with unusual compositions of pumpkins and flowers, dedicated to everyone’s favorite fairy tale stories. For example, on Manezhnaya Square there will be art objects based on the fairy tale “The Wizard of the Emerald City” - a four-meter “balloon”, an impressive “Wizard’s Castle”, a pumpkin and flower field. Next door, on the transition from Manezhnaya Square to Revolution Square, you can see the “Magic Ship” from the fairy tale of the same name and the “space landscape” from “The Secret of the Third Planet.” The “Golden Autumn” site on Revolution Square will be decorated with a “Magic Pumpkin Fountain”, and on Gorodetskaya Street there will be an installation on the theme of the Medieval Fair.

To decorate the festival grounds, designers use more than 100 tons of pumpkins and about 10 thousand living plants (some of them were left over from the Flower Jam festival).

In addition, Golden Autumn guests will enjoy numerous culinary and creative master classes, as well as concerts, interactive programs and other entertainment for the whole family! Entry to all festival events is free for everyone.

The autumn gastronomic festival of the series of urban street events “Moscow Seasons” will be held in Moscow for the fourth time. Last year, “Golden Autumn” was visited by more than 6 million people. In total, festival guests purchased 180 tons of meat, fish and cheese!
