With pancreatitis, the method of cooking is of no small importance. It is best to boil, bake or stew it. Frying and using large amounts of fat is contraindicated. It is recommended to consume any products in grated or crushed form.

Other important diet rules for pancreatic inflammation:

  1. giving up bad habits;
  2. the food consumed should not be cold or hot;
  3. you can’t overeat;
  4. food should be taken in small portions up to 6 times a day.

It is best to cook okroshka with kefir, sour cream and mineral water. At the same time, dairy products must be fresh, manufactured no more than 24 days ago, of high quality and have a fat content of up to one percent.

Regarding mineral water, in case of chronic pancreatitis you can drink low- and medium-mineralized drinks. The first category includes water in which the amount of minerals does not exceed 5 g per liter. The second group includes mineral water, saturated with active ingredients up to 17 g per 1 liter.

For pancreatitis, it is recommended to drink table water without restrictions. And the number of medicinal species will have to be limited. It is desirable that the drink contains zinc, sulfur, calcium, bicarbonates and sulfate ion. It is useful to use Luzhanskaya, Borjomi, Essentuki No. 20 and 4.

Add 10 g of Dijon mustard, a pinch of black pepper (these spices will not interfere with weight loss, as they speed up metabolism and promote fat burning), a little 10% sour cream.

Mix the ingredients. Chilled bread (preferably homemade kvass) is added immediately before use.

Kefir

The classic recipe with kefir is prepared in exactly the same way as with kvass (the same ingredients), but in the end everything is filled with low-fat (1% or 1.5%).

Variable recipe. Grind 100 g of green onions, 50 g of parsley and dill. Cut into cubes 200 g of boiled new potatoes, 5 hard-boiled egg whites, 200 g of chicken breast, boiled without salt and skin. Pass 100 g of cucumbers and radishes through a grater. Add a pinch of black pepper. Mustard and sour cream are excluded. Pour 1% kefir in an arbitrary proportion.

Vegetable

Vegetarian is considered the lowest calorie and suitable for weight loss. It can be prepared with both kvass and kefir. The only restriction is that neither meat nor fish are allowed.

Lacto-ovo-vegetarian (what kind of food system are we). Grind 100 g of green onions, 50 g of parsley and dill. Cut into cubes 200 g of boiled new potatoes, 3 hard-boiled whole eggs, 150 g of fresh cucumbers, 50 g of radish and black radish. Add 10 g mustard, a pinch of black pepper. Pour in low-fat kefir or kvass.

Vegan. Grind 100 g of green onions, parsley, dill, 50 g of beet tops. Cut into cubes 200 g of boiled new potatoes, fresh cucumbers, 100 g of radishes and radishes. Add a pinch of black pepper. Pour yeast-free homemade rhubarb kvass, cucumber pickle or beet broth. Eggs and dairy products are excluded.

Raw food. Grind 100 g of green onions, parsley, dill and beet tops. Cut into cubes 200 g of fresh cucumbers, 150 g of avocado, 100 g of radish and radish. Add a pinch of black pepper. Pour in mineral or plain water, possibly with the addition of vinegar.

With beets

Cold beet soup is more correctly called beetroot soup, but for most it is one of the options for okroshka. One way or another, it also fits into the weight loss program described above: it is low in calories, good for health, quenches thirst and hunger.

Recipe 1. Cut into cubes 200 g of boiled eggs, 4 whole hard-boiled eggs, 100 g of cucumbers. Grind 100 g of green onions, 50 g of dill, parsley, cilantro. Mix. Pour 1% kefir.

Recipe 2. Cut raw beets (250 g) into cubes and boil. Strain the resulting broth - this will be the dressing for the beetroot okroshka. Chop 100 g of green onions, press down with mint until the juice releases, add chopped parsley and dill (50 g each). Stir, press down again. Roughly chop 150 g of boiled new potatoes, 3 boiled whole eggs, 100 g of fresh cucumbers, 50 g of radishes, 200 g of boiled chicken breast. Mix everything (together with the boiled beet cubes). Add Dijon mustard, black pepper, and 10% sour cream for taste. Pour in the strained beetroot broth.

Mushroom

Boil and puree porcini mushrooms (300 g) in a blender. Grind 100 g of green onions, crush them with mint to release the juice. Add chopped herbs to it: 50 g each of parsley and dill (you can add cilantro and basil to them). Stir, press down again. Grate 150 g of fresh cucumbers, radishes and black radish. Crush 1 clove of garlic. Fill with homemade kvass.

Fish

Boil 300 g of cod fillet, cut into cubes or blend in a blender until pureed. Roughly chop 100 g of boiled new potatoes, fresh cucumbers, radishes, 3 boiled egg whites.

The dressing is prepared separately: in a blender, chop 100 g of green onions and parsley, mix them with 50 g of 10% sour cream, 20 g of mustard, 4 cloves of garlic, black pepper (based on taste preferences). Pass the dressing through the blender again.

Mix fish and vegetable mixture with dressing. Fill with kvass before use.

Interesting fact. It is believed that the recipe with fish appeared thanks to barge haulers on the Volga. For lunch they were usually given bread kvass and roach. The latter was so hard that they began to pre-soak it in the drink, and then crumbled the vegetables that were at hand into it and ate it all together.
