Shortcrust pastry jam

Good day!
Today we will cook with you, a pie with jam from shortcrust pastry.
This pie has another name - grated jam pie.
All I can say is that it is delicious.
I do not add baking soda or baking powder to the shortcrust pastry. To understand whether you still need to add or not, you have to prepare two options. So you will understand if there is a difference and how you like it best.
We take the jam to our liking. I had an open jar of apricot, so I made with apricot.
What else I want to say, it is desirable that the jam is still homogeneous, something like jam. Then the shabby dough on top of the pie will not partially sink into the jam, as I did. This will not affect the taste in any way, just the cake on top is not so fried ???? If this is not a problem for you, then you can take liquid jam with whole berries.
Jam pie recipe, of course with step by step photos.

Ingredients

3 cups flour
0.5 cups of sugar (I don't think I need more, since there is still jam in the pie)
200 gr butter
2-3 eggs
200-250 gr jam
0.5 teaspoon salt

Let's start making the pie.
Put flour, sugar, salt, softened butter in a bowl and grind until smooth.
It is most convenient for me to do this with a good metal spoon.

Then add 2 eggs and knead the dough.
If you get a little crumbly dough and you see that you cannot distribute it normally on the baking sheet, then add another egg to the dough.

Divide the finished dough into two parts, 1/3 and 2/3.
Flatten the smaller part a little, give the shape of a cake so that the dough is evenly frozen.
Well, and accordingly put it in the freezer, for 30-40 minutes.

Then take most of the dough and distribute it evenly over the baking sheet. Be sure to make the sides 2-3 cm so that the jam does not flow out onto the baking sheet and does not burn.
The thickness of the dough should be 0.5-0.7 cm, and the size of the cake is approximately 30 by 30 cm.
You do not need to grease the baking sheet.
Next, lay out the jam and distribute it evenly.

After that, we take out the frozen dough from the freezer and rub it on a coarse grater, sprinkling the jam evenly.
Then we put the pie in the oven at 200 degrees for about 30-35 minutes.

Grated pie with shortcrust pastry jam, ready.
We take the cake out of the oven, let it cool slightly and cut it.
I got 16 pieces.
If you want to make something else from shortcrust pastry, then you can see the recipe.
Bon Appetit!
