I often remember the moment when for the first time in my life (being already quite a young age) I tried a cocktail of sea creatures (mussels, squid, shrimp and octopus). It took me so long to persuade me to try them. And how stubbornly I refused. But now I have a hard time passing them by when visiting supermarkets - the prices are steep. Therefore, I decided to start preparing such delicacies myself. Today, as a first experiment, I will prepare marinated squid. Having studied the sea of ​​recipes that are replete with the Internet, I came up with some of my own recipes. So let's see what comes of this. I think marinated squid will be suitable as an appetizer for special occasions for both drinkers and those who lead a “dry” lifestyle (that’s me).

Let's prepare the following set of ingredients:

1 lemon;
vegetable oil – 50 ml;
squid carcasses – 3 pcs.;
bay leaf – 5-6 small leaves;
salt - dessert spoon;
sugar - teaspoon;
allspice and black pepper – 6-7 peas each;
cloves – 3 pcs.;
paprika - a quarter of a teaspoon;
water – about 400 ml;
garlic – 2 cloves;
apple cider vinegar - a tablespoon.

It will take you at least 3 hours to prepare marinated squid according to the photo recipe.

First, let's prepare the squid for marinating.

Pour boiling water over them (directly unwashed and not defrosted).

We count 20-25 seconds, and, taking it out of the water, rinse thoroughly under running cold water. Thanks to boiling water, the squid skin immediately curls up and is much easier to remove from the carcass. Don’t forget to take out the insides (if any) and also rinse everything inside the “stocking” well. Boil water in a small saucepan and throw in half of the prepared spices (peppercorns and bay leaves), boil for a couple of minutes and add clean squid.

After boiling, cook for no more than one minute, then close the pan with a lid and leave for five minutes alone. Now you can safely eat the squid meat - it is ready. We cut the squid into rings and strips (as is more convenient) with a width of at least 3 mm, and the garlic into very thin slices.

Place the chopped products in a glass or enamel bowl (or in a jar). Squeeze the juice from half a lemon; the other half will be useful later.

Let's prepare the marinade for the squid.

In principle, you can use the broth left after boiling squid. But it seemed unsightly to me - somehow cloudy and ugly - so I still decided to use clean water. So, pour water into a ladle, add salt and sugar, oil with lemon juice and the rest of the spices (paprika, peppers, cloves and bay).

Boil all this for about two minutes, pour in vinegar and immediately pour the resulting squid solution in a bowl, mix well and leave to cool and soak for at least two and a half hours.

Ready. You can eat. After cooling, I put the bowl in the refrigerator overnight. In the morning, I put a quarter of a lemon slice at the bottom of a clean jar, then a decent layer of squid, again a piece of lemon and poured the strained marinade over it.

All three squids fit into a 500 ml jar.

P.S. Now, having received the end result, which I am not entirely happy with (it turned out too spicy), I would...
…didn’t add any cloves or garlic at all;
...I would use one of vinegar and lemon juice - both ingredients together give excessive pungency to tender squid;
...I would replace apple cider vinegar (it gives some kind of unpleasant aftertaste) with regular table vinegar.

  2. To make the brine, add bay leaf, salt, sugar and spices, lemon juice and vegetable oil to the water.
  3. Boil the brine and add the prepared squid. Turn off the burner and cool the snack under the lid.
  4. The dish is immediately ready to eat. But it’s better to marinate it for 16–18 hours in the refrigerator.

Store the finished snack in a tightly closed jar in the refrigerator, put a slice of lemon on the bottom and pour vegetable oil on top.

Korean marinated squid

Ingredients:

  • Squid – 0.5 kg;
  • Onions – 2 pcs;
  • Carrots – 1 piece;
  • Vinegar – 3 tbsp;
  • Vegetable oil – 2 tbsp;
  • Sugar – 1 tsp;
  • Salt to taste;
  • Paprika – 1 tsp;
  • Garlic – 2 cloves.

How to cook:

  1. Clean the carcasses and boil for 1–2 minutes. Cool immediately in ice water. Do not increase the cooking time, otherwise the fillet will become tasteless and chewy.
  2. Cut the finished carcasses into rings or strips.
  3. Grate the carrots on a Korean grater, cut the onion into half rings. Mix everything, add sugar and salt.
  4. Lightly fry the vegetables with paprika, add squid, vinegar and garlic. Place in the refrigerator for 2 hours.

The taste of the snack is sweet and sour. If you want to make a spicy dish, add a shot of soy sauce to the recipe. For those who prefer a spicy snack, use coriander seeds.

Ingredients:

  • Squid carcasses – 3 pcs;
  • Paprika – 1 tsp;
  • Vegetable oil – 100 g;
  • Provençal herbs – 1 tsp;
  • Allspice – 2–3 pcs;
  • Ground black pepper – 0.5 tsp;
  • Salt – 1 tsp;
  • Bay leaf – 1–2 pcs;
  • Lemon juice – 1 tbsp;
  • Garlic – 1–2 teeth.

How to cook:

  1. Clean the carcasses and cut into strips or rings.
  2. Heat vegetable oil, add coarsely chopped garlic, all spices, salt and lemon juice. Bring the mixture to a boil.
  3. Place the rings in the marinade and simmer for 1 minute. Turn off the burner and leave covered for another 2 minutes.
  4. Place the appetizer in a container with a lid, pour over the marinade and place in the refrigerator for 2 hours.

squid carcass - 4 pcs.;

bay leaf - 1-2 pcs.;

onion (I cooked with red onion) - 1 pc.;

salt - 1 pinch;

vinegar 9% - 4 tbsp. l.;

vegetable oil (or olive) - 2 tbsp. l.

Boil water and add 1-2 bay leaves.

Place the squid carcass in boiling water and cook for 10 seconds from the moment it boils, then remove.

As soon as the water boils well again, lower the next carcass. Cook all the squids this way. Allow the boiled squid to cool. The squid will be very soft.

Cut the boiled squid into long strips.

Peel the onion, cut into thin half rings and add to the squid.

In the recipe I will share with you the secret of properly preparing squid, but for now I will give advice on how to choose squid in the store. It is best to take squids that have already been peeled; they are white; unpeeled ones are pinkish-purple. Heat 1 tbsp in a frying pan. olive oil and fry the squid for literally 2-3 minutes.

SECRET: it’s very easy to overcook or overcook squid, to prevent this from happening, just cook them for a very short amount of time - 3-5 minutes maximum.

Add the marinade to the fried squid, mix all the ingredients together and let the squid marinate for at least 1 hour. It’s better to cook the squid the night before and refrigerate it overnight; the next day the marinated squid will be even tastier.

Place the squid in a dish along with the sauce. You can serve slices of fresh bread so your guests can dip the marinade, which they'll definitely want to do!

  • salt (one tsp);
  • two bay leaves;
  • one tbsp. l. lemon juice;

Clean the carcasses and cut into rings or strips. Heat the sunflower oil, add spices, coarsely chopped garlic, lemon juice and salt. Bring the mixture to a boil. Place the rings in the marinade and simmer for one minute. Turn off the burner and leave it covered for another couple of minutes.

Place the appetizer in a container with a lid, cover with marinade and place in the refrigerator for a couple of hours. Seafood marinated in this way will please every gourmet.

In soy sauce

What is the marinated recipe? The dish is prepared with preliminary boiling of the carcasses, cut into rings. It turns out to be sharp, but at the same time tender.

So, to create this simple dish you need to have on hand:

  • five squids;
  • ginger (0.5 tsp);
  • two tbsp. l. soy sauce;
  • 1 tbsp. l. ground sweet pepper;
  • honey (0.5 tsp);
  • salt;
  • sunflower oil (three tablespoons);
  • a pinch of red hot pepper;
  • vinegar (2 tbsp);
  • one clove of garlic.

Clean and boil the squid: place in salted water for half a minute, no more. Then cool the carcasses and cut into rings. Now make the marinade: mix seasonings with salt and sunflower oil in a bowl. Pour the marinade over the squid rings and stir thoroughly, distributing evenly. Let it sit for 20-30 minutes and start tasting.

We present to you a recipe for delicious squid marinated in Korean style. To create the dish you will need:

  • 4 squid;
  • paprika (one tsp);
  • 1 tsp. sesame;
  • sugar (one tsp);
  • two carrots;
  • a couple of cloves of garlic;
  • salt (0.5 tsp);
  • two onions;
  • five tbsp. l. sunflower oil;
  • two tsp. 9% vinegar.

Clean the carcasses and boil, but do not overcook. Cut the cooled squid into rings. Peel the onion and chop finely. Next, fry the onion in oil with sesame seeds. Wait until it turns golden and beautiful. Then take care of the carrots: grate them, fry them, add sugar and paprika. Fry until golden over high heat.

Mix squid with fried onions and carrots, add garlic and vinegar. The garlic, of course, needs to be chopped first. Keep the snack on the table for one hour, and then put it in the refrigerator for a couple of hours.

With pickled onions

Consider a recipe for squid with pickled onions. To prepare this dish, first pickle the onions. To do this, cut the onion into cubes and place in a sieve or colander. Next, boil the kettle and scald the onion with boiling water, pouring it over the sink from the kettle for 5 seconds. The onion will become less bitter and harsh, its taste will soften.

This is a great recipe. It’s easy to prepare marinated squid at home. So, next, put the onion in a bowl, add a pinch of salt and crushed (or ground) black pepper. Pour in lemon juice or vinegar. You can, of course, do without lemon here. Mix everything well and put it in the refrigerator for half an hour.

Cool them down. Cut the squid into strips and place in a salad bowl. Cut the pickled cucumber into thin strips and send it there. Grate the boiled eggs on a coarse grater and place them in a bowl. Remove the pickled onions from the refrigerator, drain excess liquid through a sieve and add them to the salad. Before serving, season the dish with mayonnaise.

If you are preparing the dish at home, add a little more lemon juice. If you bought the salad in the store, then also add a couple of drops of lemon to it - it goes great with squid.
