Rinse the rice first and boil until tender, but do not overcook. Drain the rice and leave to cool. Finely chop the onion into cubes. Add onion, rice, salt and spices to the minced chicken. Of course, it’s up to you to decide whether to take store-bought minced meat or roll it yourself, but remember that for juicy cutlets, minced chicken should not be dry. You can add a little fresh lard to it if you have it.

Mix the ingredients thoroughly in a bowl.

Now we will prepare a bowl of cold water in which we will wet our hands so that we can easily form the minced chicken cutlets. With wet hands we form round balls and place them on a table or board moistened with cold water.

Cooking process:

1. It is necessary to boil the rice until completely cooked. It should be soft and crumbly. It is best to use round or parboiled rice.

2. Prepare minced meat.

3. Combine minced meat with rice. Mix well.

4. Break the chicken egg into the meat mixture.

5. Add salt.

6. Add flour. Stir well. You should get a homogeneous, thick mixture.

7. Pour breadcrumbs into a separate plate. Form the minced meat into balls and roll them in breadcrumbs.

Step 1. Grind the thoroughly washed and dried fillet to a “crumb” state, as for preparing cutlets.

By using a regular knife instead of a standard meat grinder for these purposes, you will leave the pieces denser and larger, as a result of which they will retain more moisture in the cutlets and the cutlets will not be dry.

Step 2. To add even more softness and richness (and extra volume, of course) to our chicken meatballs, finely chop the onion and knead it with your hands until semi-soft. So, in addition to the meat’s own moisture, the juice from the onion will be added to the dish.

Step 3. We do not wash the boiled rice until ready, but cool it to room temperature and mix it into the minced meat to give it density and uniformity, due to the starch contained in the rice.

Step 4. In a container, mix everything that we prepared earlier, namely: chopped chicken fillet, chopped onion, boiled rice until tender, and also add black pepper and salt to all this so that our recipe for chicken meatballs does not turn out to be inedible.

Step 5. Knead the resulting minced meat with your hands for 5-7 minutes, after which we shape it and roll them in breadcrumbs.

You can make the breading yourself from stale bread crusts. Depending on taste preferences, it can be white breading from a loaf, black breading from rye bread, gourmets can experiment with grain or pepper bread.

Step 6. Fry the breaded chicken pieces in a preheated frying pan on both sides for 5-10 minutes on each side.
