    Master class: how to properly chop walnuts

    Chopped walnut

    Difficulty of use walnuts consists of a fairly dense and difficult to crack shell. This moment in many ways prevents the sufficient use of this useful and many of our readers available product. The question of how to quickly and correctly crack walnuts at home becomes more acute before the holidays, when it is necessary to prepare a sufficient number of kernels for the celebration. Harvesting nut fruits has always been a profitable and guaranteed income, but industrial enterprises prefer to purchase ready-made and already peeled raw materials.

    Walnuts: a product of high nutritional value for yourself and for sale

    As a small digression, we will reveal a few secrets of farmers who are professionally involved in harvesting. With their help, you can better understand the features of this type of activity or provide for yourself at home high quality product nutrition, since kernels are a component of many confectionery and are considered one of the best ingredients in cooking.

    There are a number of ways you can easily, quickly and efficiently crack walnuts at home, with or without a variety of available equipment. However, to put this work on stream, you need to understand the varieties that are used for harvesting. The thickness and hardness of the peel and, accordingly, the choice of cleaning method depend on the variety.

    Varieties of walnuts: features of choice

    Walnut refers to cultivated trees cultivated for growing fruits. The nut family, growing in temperate latitudes, has at least 20 species of trees, which differ in the consumer properties of the resulting fruits. The tree bears fruit with cyprus drupes, so before harvesting and purchasing, you need to take into account the size of the fruit and the characteristics of the peel. It is recommended to choose large-fruited varieties with a rather fragile fruit rind; they are in greatest demand among confectionery enterprises and are usually easy to process.

    On sale you can find rock nuts, Volzhsky, Toporovsky, Pridnestrovsky, and low-growing early-fruiting varieties. The most popular variety is Ideal, which produces fruits the size of a matchbox, and Tien Shan, whose fruits, when properly cultivated, reach the size chicken egg. Black walnut is considered the most common and unpretentious, at the same time very useful for treating a number of diseases.

    Unripe fruits have long been the raw material for tasty and healthy nut liqueurs. Waste that is not used for food is also used to prepare medicines and cosmetics.

    Harvesting walnuts

    Choosing a method for cleaning walnuts depends on the availability of equipment and the quantity you need to process. The gold standard is the whole form of the fleshy and lightly dried core, which is purchased at a higher price and is also a favorite product on the market. home desk. We recommend preparing chopped nuts with whole kernels, and only then taking steps to grind them for personal use or hand over the product to the purveyors.

    Stage 1: Preparing for cleaning at home

    The first stage is the sorting of raw materials. Usually it does not take much time; the fruits are collected from the same tree or from a planting; accordingly, they have similar characteristics. The main task is to separate raw materials based on the size and structure of the peel. Must be processed separately small fruits, large and nuts with a “muscular” and very dense shell

    Large-fruited walnuts

    The hard crust requires additional preparation and is not so easy to crack. “Fine” is also quite difficult to split due to its small size. These fruits will have to be further prepared before cleaning. The more fragile peel of those nuts that were peeled after harvesting by heating in the oven, roasting or drying. The fruits are also better peeled in the season with warm and hot August; in this case, they reach maturity, and the peel remains dense, but acquires the necessary fragility.

    Stage 2: preparation of raw materials

    Preparation of raw materials includes boiling or drying them in the oven. This step is necessary in the following cases:

  • small-fruited and hard large-fruited raw materials;
  • large volumes of workpieces in the absence of specialized tools; to increase cleaning speed.
  • Natural sun drying

    Preparation options:

    • natural drying in the sun;
    • pouring boiling water over the raw materials for 10 minutes;
    • heating the fruits in the oven for 10 minutes at a temperature of 200C (in small volumes, in the summer kitchen you can dry the nuts in large frying pans);
    • soak in hot salted water for 30 minutes (salt is added by eye, as when preparing food, 1 tablespoon or dessert spoon for 2-3 liters of water, it is better to use rock salt).
    • Stage 3: shell splitting

      The third stage and the choice of method for splitting the shell at home depends on the volume of the workpiece and the availability of specialized tools.

      Nuts can be cracked:

    • using a sharp knife;
    • hammer;
    • using a nut cracker;
    • bottles and hammer.
    • Method 1: splitting with a knife and a hammer

      Using a sharp knife, the raw materials are cleaned after preliminary preparation(boiling, frying or soaking), piercing between the halves in the middle part. Hammering is a relatively quick and easy cleaning method with fairly high quality. In an evening you can clean up to 6 kg of finished raw materials, 35% of which will be kernels. In other words, to obtain 2 kg of nut kernels using the hammer cleaning method, 5-6 hours of work are required. You can clean them a little faster if you use a knife after preliminary preparation.

      Method 2: splitting on the bottle

      One of the most interesting and available ways obtaining whole nut kernels, which are raw materials highest quality, is a split on the bottle. A bottle of beer or champagne is used for this. In this case, the choice of neck depends on the size of the fruit. For regular size, imported beer bottles are chosen. For large-fruited ones - a champagne bottle, for small-fruited ones - water bottles.

      The basic principle used in this method cleaning consists of uniform distribution of impact force. Also, the recoil effect from the neck on which the nut fruit is installed has a significant influence. The base of the nut is placed on the neck. If everything is done correctly and thoughtfully, even a dense peel will be easier to prick, while keeping the core intact.

      Method 3: cracking with a nut cracker

      You can find a number of devices for cleaning nuts on sale. The most effective is the Nutcracker or bottle V-shaped nut cracker. The high efficiency of this device lies in the distribution of the force transmitted from the handles to almost the entire surface of the nut peel, as a result, even with slight pressure, it splits while maintaining an intact core.

      Nutcracker Nutcracker

      The effectiveness of these nut crackers may vary due to their shape. It is worth choosing a model that “envelops” the entire nut. Due to this, you will have to apply less force during work, and you can chop the fruits in less time.

      Step 4: Sorting the chopped nuts

      Cracked nuts are cleared of jumpers, which are a separate harvesting product, and peel. Some manufacturers accept not only the core and lintels, but also the peel, which is used to produce various eco-fillers and make scrubs. Chipped nuts can be stored at home for at least several months until the next season.

      Conclusion

      You can choose for yourself how to properly and quickly chop walnuts using one of the proposed methods. Also watch the video showing step by step process. This will help you make your own nutrition richer, maintain good spirits and a sharp mind until old age.

      Walnuts help prevent Alzheimer's disease, protect blood vessels from atherosclerosis and preserve vision. This product is a natural energy booster, and when combined with prunes, it allows you to protect yourself from radiation, which is especially important for owners of private houses with poor-quality underground ventilation, living in areas with uranium deposits.

      How to crack a coconut

      Today, even residents of the northern regions have access to Exotic fruits. In many stores and supermarkets you can see coconuts for sale. But not everyone knows how to “open” them, which is why they refuse to buy these tasty and useful fruits. In fact, such a task as cracking a coconut is easy to do.

      What is coconut

      Coconut is often called a nut, but it is not. The fruits of coconut palms are a rounded drupe, which is covered on top with an incredibly thick layer of fibers. Coconuts arrive in our stores already cleaned.

      Coconut is prized for its juicy pulp and healthy juice, which is very often called milk. The liquid contained inside the coconut has a salty-sweet taste, and with its help you can easily quench your thirst even on the hottest day.

      What does it take to crack a coconut?

      Anyone who thinks about the question of how to properly open a coconut, first of all understands that if you simply break it, then all the liquid will flow out and you will drink coconut milk It won't work anymore. That is why it is very important to follow the technology that was invented by people who consume coconuts every day.

      First of all, you should prepare necessary tools. We will need:

    1. A glass or other container to collect coconut milk;
    2. A sharp metal object, such as a nail, knife, screwdriver or scissors;
    3. Hammer or stone. You can also use any heavy object that is at hand.

    Now you can pick up the coconut itself and carefully examine it. It looks very hard and unapproachable, but to crack a coconut at home, you just need to know its “weak points.”

    Vulnerabilities

    On one side of the coconut there are three dark spots- peephole. It is necessary to make a hole in one of them through which you can drain all the internal liquid into a prepared container. If possible, you can make two holes, then draining the juice will be more convenient. This is exactly what the inhabitants of the African continent advise to do, who know better than others how to split a coconut.

    In order for the coconut to split into two neat halves, it is necessary to strike in a certain place. To find it, you need to visually divide the fruit into three parts. The coconut should be split along a line separating one-third from the rest of the coconut husk.

    What do you eat in a coconut?

    Every person who bought a coconut and wants to try it needs to know not only how to properly split a coconut, but also how to use it. The fact is that coconut juice is drunk only when the coconut is still unripe. When the fruit begins to ripen, oils from the pulp pass into the juice and it becomes cloudy. It is at this point that the liquid inside the coconut becomes like milk. Drinking it is like eating fat with a spoon: it is tasteless and very cloying.

    Only ripe fruits are exported to our country, because green coconuts do not last long. The pulp and juice of fully ripened coconuts are used in cooking or for preparing confectionery dishes.

    Step-by-step instruction

    If you follow the instructions exactly, you can peel coconut at home without any problems. The process can be divided into several main stages:

  • Using a nail or other sharp object, make a hole in the eyes of the coconut and drain the liquid. You can use a cocktail straw. With its help, you can drink the juice directly from the fruit, if it is suitable for this;
  • then you need to determine the split line and start gently tapping it with a hammer. The force of the blow should be strong, but not too strong. It is necessary to strike until a crack appears on the coconut shell;
  • now, using the same nail or knife, we split the coconut into two parts along the fault line.
  • Now you can enjoy the tender and healthy pulp coconut!

When the walnuts have cooled, break them one by one using a hammer and a regular wooden board. You won’t have to make any special efforts, so be sure that no frightening sounds will reach your neighbors.

    When the kernel is freed from the shell, the next problem arises: how to remove the brown, bitter peel? Peeling a young nut is easy and pleasant, because the husk peels off on its own. But the longer it is stored, the more difficult the task will appear before you.

    There are two ways to clean the husk:

    • pour boiling water;
    • fry.

    Method 1.

    Pour boiling water over the nuts for 5 minutes. After such bathing procedures, they will easily be cleared of the bitter skin, and a pleasant “milky” taste will return to them.

    Method 2.

    Fry the nuts in a frying pan for just 5 minutes, and the skins will begin to fall off while frying. Watch the color and smell carefully so that the nuts do not burn. Cleaning them after this procedure is easy.

    As you can see, you can peel nuts not only with a hammer, stone or any heavy object. This can be done safely and carefully if you know certain tricks. By performing all the procedures correctly, you will not only easily crack the hard, stubborn shell, but also remove the thin, bitter skin.

    Nuts are a storehouse of vitamins and minerals, nutritious product, and also just a great delicacy. But all this wealth is not so easy to obtain, because nature has reliably hidden it behind hard and powerful armor. We will tell you how to easily handle this wooden secret box and get whole, beautiful nuts.

    The simplest and most familiar way to get a kernel from childhood is to crush the shell with your foot or the leg of a chair. You can also place a nut between the door leaf and the jamb and slowly close the door. But these methods are not very good: if you don’t calculate the force, you’ll end up with a mush of shells and kernels, and you can also damage shoes, chairs, and even tear doors off their hinges. A small hammer is what you will need. Place the nut on a board with a notch to secure the fruit. Slowly hit the shell from all sides until it cracks in several places, and then simply remove it. Many people are unable to immediately calculate the force of the impact, but after a couple of approaches to the projectile, everything gets better. Fresh and damp nuts are much more difficult to crack, so it is advisable to dry them in the oven. Preheat it to 200°C and place the fruits in it for 5-20 minutes. How larger nut and the thicker the shell, the longer it will take. Then remove the nuts, cool and get to work. For chopping walnuts in large quantities at home, a regular champagne bottle is often used. Place the nut on the neck of the bottle with the pointed tip facing down and hit the fruit with a hammer. It is advisable to hit the center so that the hammer does not slip onto the bottle. As a rule, the shell splits into several petals, and removing the kernel is easy. Pull out the partitions, and in your hands you will be left with a beautiful half - the so-called butterfly. Don't have a hammer at hand? No problem! Use a sturdy knife or a simple can opener. Insert the point into the small crack at the top of the nut between the two flaps and turn - the shell will split into two halves. Then remove the kernel by slightly prying it with the same knife edge. This method has two drawbacks: you can accidentally injure yourself with a knife, and you can often only get the nut out in pieces. For greater safety, it is still better to use a special metal pointed stick to remove the nut. To get whole nuts, pour boiling water over the fruits and leave for 5-15 minutes. As a result, the shell and partitions will soften, but the kernel itself will not change in any way. After soaking in water, some types of nuts can be peeled without any equipment at all. For example, after scalding with boiling water, the shell of almonds can be easily removed with bare hands. Do you want to clean quickly? a large number of pine nuts, pistachios, almonds or hazelnuts? After heat treatment, place them in a fabric bag or plastic bag and roll them out with a rolling pin, and then simply select the centers. If you quite often extract goodies from their armor, then industrial nut crackers can greatly facilitate your work. Now there are a huge number of them on sale: there are both universal ones and those tailored to a specific diameter of the fruit. Few, however, can cope with the smallest nuts – pine nuts. But this is where an ordinary garlic press comes to the rescue.

    Peeled nuts deteriorate much faster than their natural counterparts, and they also lose some of their vitamins during storage. Therefore, it is better to chop nuts immediately before consumption. If you want to have a small supply of peeled ones, then you need to store them in a dark, airtight container in a cool room or refrigerator.

      Here, in the Krasnodar Territory, walnuts grow where they don’t get caught; this is facilitated by amateur agronomists (gardeners don’t call them amateurs, they call them obscenely, since these birds drop nuts on garden plots, then try to get rid of this growth!) crows.

      Okay, let's get to the point.

      The simplest and most rational way to crack nuts is to hold two pieces in your palm, clench your fist slightly, and crush the shell in several places. Then separate the shell from the kernel. Change the second nut as you crack it, always one of the subsequent ones will be stronger than the previous one. The shells are either thrown into the scraps or into the oven (stove heating is still common in our country), the main thing is not to overdo it in quantity, there is a lot of heat and the stove may burst. Cores separately. We store partitions. They make an excellent tincture. On farms, partitions are filled with alcohol, some with vodka, and some with moonshine. They stand, the longer the better. The drink turns out no worse than a good skate.

      Why is this method good?

      Firstly: with this method the kernels remain intact.

      Secondly: there is no need to use an expander; the muscles of the hands and the entire arm are pumped.

      Thirdly: finger motor skills are developed.

      From the experience of living in places where there is a lot of such materialism, I will say the following; in addition, it is better to store walnuts in their purified form in canvas bags or in paper bags in a dry place. In the shell they deteriorate very quickly.

      Filling them with water before chopping will ruin the product into trash forever.

      I have a fairly simple method for peeling walnuts. I insert the knife into the butt of the nut and twist until it crunches. Then I use my hands to separate the nut into two parts. I take out the partitions and take out the nut kernel. If I can’t get the nut kernel out with my hands, I do it with a knife.

      For sale special devices for cracking walnuts, really quickly and easily. If you chop walnuts with a hammer, the nut may accidentally be flattened and the kernel will break apart. And the chopping device only cracks the nut in the shell, you just need to practice a little.

      The fastest way is to simply split them, for this I use a small hammer, a couple of blows and everything is ready, the only thing is that the nut kernels do not always remain intact, but are often damaged.

      There are also special devices on sale that can help you cope with this task much more efficiently, although the prices for them are quite high; I personally didn’t buy them; I simply feel sorry for the money for such a thing.

      But my husband simply inserts a small knife into the bark and hides it this way, it turns out quickly and neatly.

      That's it, I agree with the author of Dolfanik, there are special devices for peeling walnuts. Initially, I fiddled with the hammer for a long time, especially if I didn’t calculate the force, I could simply crush it. Once, just for fun, I tried to do this with pliers and it turned out great!

      Later I learned that there is a similar device, thanks to which you can quickly and easily crush/clean nuts from their hard (most often) shells.

      Unfortunately, in our time there is no such machine that could peel walnuts for you. It’s a shame, of course... because peeling walnuts is inconvenient and requires physical effort.

      You can crack walnuts using a nut cracker or a garlic press.

      This tool has special recesses on the handles.

      You can also crack nuts using a hammer, but this method is less convenient, since you can accidentally hit your fingers...

      I personally peel walnuts from my garden using a knife, just insert it into the place where the nut was attached to the stalk on the branch and turn it slightly. Usually the nut splits into two halves, and removing the nut itself from them is quite simple and quick. The truth still depends on the type of nut. The easiest variety to clean is Ideal.

      The simplest thing is to chop the nuts. It's always quick.

      It takes much longer to separate the husk-film from their kernels.

      We love you very much nut filling for rolls or bagels, and halva too. Yes, and in kharcho they also put crushed nuts without the husks.

      So you need a lot of nuts.

      Yes, you can pour boiling water over the already extracted kernels and then remove the skin with your hands. But when you need dry, toasted nuts, this is not a very good way. And it takes a long time to peel this way.

      I have adapted to heat the oven (namely the oven, not the microwave!) to 200 degrees, place a baking sheet with nuts there and immediately turn off the oven heat. Then clean them after the temperature in the oven drops to tolerable for your hands. In this case, the husks are separated from the kernels with normal peeling.

      Then I go out into the street or terrace with the bowl, close my eyes and blow into the bowl of kernels - the husks fly away, the bare nuts remain.

      Have you ever tried chopping walnuts with a small bench vise? I tried it once and was simply amazed. It's so easy and fast, it's simply impossible to imagine. If there are no small vices, then you can use large ones, the essence does not change. We insert the nut with seams to the walls of the vice.

      I take a small vice in one hand, put the nut in there and press it a little. Then I make one revolution and it cracks. We turn it one more turn and the thin inner walls crack. We loosen the vice and the nut falls on the table with the shell already collapsed. The insides remain intact.

      The number of rotations of the vise spinner depends on the size. If you make two turns on a large bench yew, the nut will crush.

      If there are no vices, then there are doors. True, marks may remain on wooden ones. So we use iron ones. We clamp the nut between the jamb and the doors on the hinge side. We hold it with two fingers of one hand, and with the other, holding the handle, we slowly press until the nut crunches.

      It must be said right away that the nuts need to be shelled in the quantity that you will need in the coming days. When stored without shells, nuts lose their beneficial properties and become unpalatable. The best way which I found 2-3 years ago before the New Year.

    How to wash nuts

    Before consuming walnuts, they must be processed - washed, split the shell, remove the kernel, and remove the shell. Even unshelled nuts you need to rinse thoroughly in warm running water or pour boiling water over it.

    1. Pour boiling water over the nuts for half an hour.

    2. Rinse under running water.

    3. Place on a towel and wait until dry.

    4. Remove the kernels.

    You should always wash unshelled walnuts

    How to peel nuts

    To peel walnuts from their shells, you can choose one of the following methods:

  • bag and hammer;

  • hammer;

  • nutcracker;

  • soaking in boiling water;

  • brine;

  • frying in a pan;

  • baking in the oven;

  • door.
  • Never try to crack the shell with your teeth, this is dangerous and harmful to your teeth.

    Pouch and hammer

    To work you will need:

    • hammer;

    • towel or cloth;

    • wooden plank.

    Use the hammer carefully to avoid damaging your fingers. Calculate the impact force correctly so that the shell cracks, but the kernel remains unharmed.

    1. Wrap the fruit in a towel or place it in a fabric bag so that the shell does not fly apart when hit.

    2. Place on a board and hit the side of the nut with a hammer. Do not overdo it, otherwise you will crumble the kernel.

    How to crack nuts with a hammer

    You can crack the nut even more in a simple way using only a hammer. However, it should be noted that cracking nuts with a hammer is unsafe. In addition, without a bag, the shell will scatter to the sides.

    An interesting way to remove the soft shell is to place the nut on the neck of the bottle and use a wooden mallet to remove the shell. The core will not be damaged.

    Video: how to remove the soft shell without damaging the kernel and divide it into two butterflies

    How to peel fruits with a nut cracker

    Simple and quick way nut cracker - nut cracker or, as it is also called, nutcracker. It is a metal tongs that is convenient for chopping nuts. You need to work carefully with the tool, practice first, otherwise you can get your fingers pinched. A nut cracker can easily crack the shell without using much effort. If you don’t squeeze the nut too hard, you will get the kernels almost intact. The undoubted advantage of this method is that the shells do not scatter around the room.

    As a rule, the nut cracker is often replaced with other available tools:

    • pliers;

    • pliers;

    • gas wrench;

    • garlic press.

    The principle of splitting is the same as using a nut cracker. But instruments not intended for chopping are much more dangerous to use; extracting the kernel intact with their help is much more difficult. In general, a garlic press may not withstand the load and break, so weigh the pros and cons when choosing a cleaning method and tool.

    How to quickly and accurately peel nuts - video

    An easy way to split nuts into two halves is to soak them in boiling water.

    Boiling water makes the shell pliable. If you hold the fruits in it, you can easily split them with a fork or knife.

    1. Insert a knife or prick a fork into the small hole in the nut.

    2. Turn it in different directions.

    This way you can crack a nut and successfully get out whole halves - butterflies. Be careful when working with sharp objects. A nice bonus of this method is that the nuts acquire a milky taste.

    Soaking in boiling water is great for peeling nuts.

    How to prepare brine to soften shells

    You can also soften the shell using brine: 1.5 tbsp. l. salt per 1 liter of water.

    1. Place the nuts in a deep bowl and cover with salted water.

    2. After half an hour, place on a napkin and dry.

    3. Carefully split the nut in half using a knife or fork.

    4. Will soften the walnut shell saline solution water

      Oven and pan frying

      Drying in the oven will quickly get rid of the shell.

      1. Place the nuts on a baking sheet or other oven-safe dish.

      2. Place in an oven preheated to 200°C for 10 minutes. You should not subject nuts to longer heat treatment, otherwise the kernels will dry out and become hard and tasteless.

      3. Cool the fruit and, with a gentle blow of a hammer, crack the pliable shell.

      4. Drying nuts in the oven will help crack the nuts.

        Another way to remove the shells is to dry the nuts in a heated frying pan. The principle of operation of the method is similar to oven drying. Heat will make the shell more pliable. Do not increase the recommended processing time to preserve the flavor of the kernel.

        1. Place the nuts in a preheated frying pan and fry for about 20 minutes, stirring constantly to distribute the temperature evenly.

        2. Cool and peel off the shells.

        3. After frying walnuts in a frying pan, you can easily peel them

          Door

          There is another, very controversial way to crack walnuts - using a door.

          1. Place the nut in the gap between the jamb and the door.

          2. Close the door and open it again.

          By peeling the fruits this way, you may end up with crumbled kernels and shells scattered across the floor. There is also a risk of pinching your fingers and damaging the door surface. It's better to choose an alternative.

          Hitting a nut with a door is not the best way

          Three ways to peel walnuts: pliers, boiling water, oven - video

          Peeling nuts from husks (skins, skins, films)

          You can remove the bitter thin shell from the nut in different ways:

    • keep the nuts in salted water (1 liter - 1.5 tablespoons of salt) for 12 hours, and then rinse and dry;

    • put the fruits in a deep bowl and pour boiling water for 2-3 minutes, then drain the water, transfer the nuts to a hard towel and rub with your hands through the material;

    • fry without oil over low heat for about 5 minutes, wrap the fruit in a cloth and roll in your hands - the husk will come off during the frying process.

    When soaking nuts in salted water, you will have to wait several hours, but the express method with boiling water can be used, especially in emergency cases. In addition, this way you can restore the taste of even slightly stale fruits. Experts agree that heat treatment preferable as it simplifies cleaning and reveals the quality of the nuts. If you smell rot or mold during processing, do not eat the product. Bad odors indicate a violation of storage rules. Even if the fruits look attractive, they are dangerous to health.

    How to disinfect peeled fruits

    There is no need to wash nuts purchased in shell again with water after cleaning. And if you purchased already peeled fruits, then you need to disinfect them in one of the following ways:

    1. Rinse in warm water, but never boiling water, and dry on a towel. Remove the nuts from the water using a slotted spoon or ladle. Do not drain the water, otherwise dirt will rise from the bottom of the bowl and end up back on the nuts.

    2. Rinse and dry in the oven.

    3. Heat in a frying pan.

    Useful properties of walnut shells and partitions

    Walnut shells and husks are used for body peeling, for removing tartar, and for preparing folk medicines. Infusions and decoctions are rich in vitamins, so they are taken when immunity is weakened and to regulate hormonal levels. The popularity of the nut is due to the tannins contained in its shell and husk. They help fight diseases such as:

    • diabetes;

    • mastopathy;

    • fibroids, fibroadenoma, prostate adenoma;

    • polyps in the intestines and stomach disorders;

    • joint diseases.

    Folk remedies from walnut shells and skins
