With apples and dried apricots (it is better to use turkey breast fillet for this dish), baked under foil - the dish is not quite ordinary due to the use of fruit, but interesting and tasty.

Fruits give turkey meat not only an amazing aroma and unusual flavor notes, but also make the meat softer and juicier. The number of apples in this dish can vary from 2-3 to 5-6. If you put fewer apples, it will only give flavor and aroma, but if you add more, then “stewed” baked apples can be used as an unusual side dish; in our photographs there is an option with a large number of apples.

Need to:

  • Turkey fillet (breast) – 1.5 kilograms
  • Apples (sour or sweet and sour) – 4-5 large pieces (6-7 small ones are possible)
  • Dried apricots – approximately 1.5 cups (250-300 grams)
  • Mustard (ours is “Russian”) – 1.5 teaspoons, optionally “heaped”
  • Honey – 3 tablespoons
  • Salt – about 30 grams (about 3 teaspoons)
  • Ground black pepper (or a mixture of peppers) - to taste, we have about 10 grams (about 2 teaspoons)
  • Butter or margarine – 15-20 grams (grease the baking dish)

Preparation:

The apples need to be washed and dried, dried apricots should also be washed (or better yet, scalded with boiling water) and allowed to dry slightly.

Wash the turkey fillet under running cold water, pat dry with a paper towel, remove films if necessary and cut into large pieces.

Place the turkey pieces on a cutting board and season them with salt and pepper on one side.

Grease the baking dish with butter or margarine. Place the pieces of turkey fillet into the pan in one layer, salted and peppered side down, then add salt and pepper on the other side.

Prepare the filling sauce, mix honey and mustard in a small cup until smooth.

Pour this sauce over the turkey fillet in the pan, distributing the filling evenly.

We remove the core from the apples and cut them into not very small pieces (we cut each apple into 8 slices, and each slice in half crosswise, but larger ones are possible).

Place dried apricots on top of the turkey, distributing them evenly: there is not so much dried apricots that it forms a continuous layer ( watch our video recipe!).

Place apples on top of dried apricots.

Cover the pan with foil, secure the foil to the pan, pressing the edges. Can be placed in the oven on a baking sheet or on a wire rack at medium height. If you have a metal or silicone mold, you can preheat the oven to 200 degrees (this is a medium heat level if your oven does not have a thermometer), place the dish in a hot oven and bake for 40 minutes. If the mold, like ours, is made of heat-resistant glass or ceramic, it needs to be placed in a cold oven, set the temperature to the same - 200 degrees, but add 15 minutes to the specified time to preheat the oven.

After the specified time, remove the pan from the oven, remove the foil and put it back in the oven for another 10-15 minutes so that our dish is slightly browned.

  • pomegranate sauce - 200 gr.

Recipe:

First you need to choose the right bird. We go to the market and try to buy a fresh, home-made, steamed carcass. If you don’t have one, then buy chilled poultry. Preferably medium size 5 - 6 kilograms.

Homemade turkey baked in the oven turns out very tasty, juicy and attractive in appearance. It is better to bake it whole.


The carcass should be meaty, the breast and legs should be thick. The skin should be light, without dark spots, with a yellowish tint. Check the freshness by pressing your finger on the carcass; if the dent is quickly restored, then the meat is fresh.


In order for us to get a juicy turkey, it needs to be marinated. To prepare the marinade, take salt, sugar, spices. Dissolve in water. Take a large container, place the bird, and pour in enough brine. Leave for 10-12 hours. This soaking will preserve all the flavor and juice of the meat during its cooking.

While our bird is marinating, it's time to prepare the filling. Since we are preparing the dish for guests for the holiday, we will choose a tasty filling. We will cook apples in walnut and pomegranate sauce.


Peel the walnuts and grind them using a rolling pin or blender. Cut the onion into small cubes, fry in sunflower oil until golden brown.


Take a sunny ripe apple, cut it into slices, and fry it in boiling butter with sugar, add cinnamon, cloves, and black pepper. This combination gives an unimaginable Persian aroma.

In a large bowl, add chopped nuts, fried onions, add pomegranate sauce and mix well.

Turkey fillet with apples baked in foil

Take note of the recipe for preparing low-calorie and dietary turkey fillet with fruit. Fruits not only add aroma and taste to meat, but also make it juicier and softer.


Ingredients:

  • turkey fillet ̶ 4 servings
  • bacon ̶ 4 slices
  • green apple ̶ 1 pc.
  • vegetable oil - 3 tbsp. l.
  • butter ̶ 50 gr.
  • tomato paste or ketchup ̶ 2 tbsp. l.
  • salt, pepper to taste

Preparation:

  1. Beat the poultry fillet moderately; it should not be very thin. Salt and pepper.
  2. Heat vegetable oil in a frying pan and fry the fillet on both sides until golden brown, and transfer to foil. Place bacon on top.
  3. Cut the apple into 4 parts and fry in butter.
  4. Place on bacon, top with tomato paste, drizzle with melted butter used to fry the apple, and wrap everything in foil.
  5. Bake in a hot oven. When the foil is inflated, cut it and immediately serve the dish.

This is not the only way to cook turkey with fruit; you can bake turkey fillet with pineapple and cheese and oranges, or with cranberry sauce.

Turkey with honey in a baking sleeve

Turkey with potatoes in French


This is an exquisite second course that can be prepared for both everyday lunch and festive dinner. It's quick and easy to prepare.

Ingredients:

  • turkey fillet ̶ 1 kg.
  • potatoes ̶ 8 pcs.
  • tomato - 2 pcs.
  • red onion - 2 pcs.
  • parmesan ̶ 200 gr.
  • sour cream ̶ 100 gr.
  • salt to taste
  • vegetable oil - 2 tbsp. l.
  • seasoning for poultry (thyme, rosemary, thyme, basil).

Preparation:

  1. Cut the turkey fillet into small pieces, pound lightly on both sides. Pepper and salt the meat, add your favorite seasonings. Heat vegetable oil in a frying pan and lightly fry the fillet on both sides.
  2. Peel the onion and cut into thin rings. Pour 1/2 cup water into a bowl, add 1/2 teaspoon salt and sugar, add vinegar. Place chopped onion in this marinade for 15 minutes, then gently squeeze it out.
  3. Cut the potatoes into slices 1 centimeter thick. Season with salt and pepper, and if desired, add garlic squeezed through a press.
  4. Cut the tomato into slices 1 centimeter thick.
  5. Grate the cheese on a coarse grater.
  6. Take a baking sheet with high sides, grease with vegetable oil, and lay out in layers: fried meat, pickled onions, potatoes, tomatoes. Grease everything generously with sour cream, cover the top with baking paper.

Turkey drumstick stewed with vegetables in the oven

Turkey drumstick in the oven prepared according to this recipe is a truly exquisite dish, with tender juicy meat and a crispy crust. The drumstick can also be cooked in foil or in a baking sleeve.

Ingredients:

  • turkey drumstick - 2 pcs.
  • potatoes ̶ 6 pcs.
  • tomato - 2 pcs.
  • onion ̶ 2 pcs.
  • zucchini ̶ 1 pc.
  • bell pepper ̶ 1 pc.
  • carrots ̶ 1 pc.
  • salt to taste
  • ground black pepper ̶ 1/2 tsp.
  • butter ̶ 50 gr.
  • olive oil ̶ 1 tbsp. l.
  • poultry seasoning

Preparation:


First prepare the marinade. Place melted butter in a bowl and all your favorite poultry spices. Mix everything.


Finely chop the onion into cubes and add to the seasonings.


Take the drumstick. In order for the marinade to saturate the meat well, the skin must be carefully pulled off, try not to damage it. Trim the film and pull the skin off the shin.


Prick the drumstick meat with a knife or make small cuts. Rub the prepared marinade onto the leg, pressing the marinade into the cuts.


Then pull the skin back over the shin and rub it over the top.


Spread the remaining marinade generously onto the meat and leave to marinate for 1 hour.

Our drumstick is ready for baking. It can be baked this way. A good side dish for this drumstick is mashed potatoes and sour cream sauce.

Today we are preparing drumsticks with vegetables. Chop all the vegetables. Cut the zucchini, potatoes and carrots into rings, the onion into half rings, and the tomato into quarters. Salt, pepper, add olive oil.

Grease a baking dish with vegetable oil, place the turkey drumstick and place in the oven for 40 minutes at 180 degrees. As it bakes, baste the drumstick with the juices released and turn it over.

When a slight crust appears, remove the pan from the oven and place the prepared vegetables around the meat. Bake for another 20 minutes, do not forget to baste with juice.

  • white wine - 3 tbsp. l.

  • cinnamon ̶ 1 tsp.
  • pepper ̶ 1/2 tsp.
  • sugar ̶ 1 tbsp. l.
  • breadcrumbs ̶ 1 tbsp.

Preparation:

  1. Put your favorite spices and seasonings in a bowl, add sour cream, mix everything. Rub this mixture all over the bird inside and out.
  2. Cut the apples into medium cubes.
  3. Rinse the prunes well in hot water and mash them a little with your hands.
  4. In a separate bowl, place chopped apples, prunes, crackers, cinnamon, sugar, add white wine and mix gently.
  5. Stuff the turkey with this mixture. The hole can be sewn shut or held together with wooden sticks.
  6. Place back down on a baking sheet, brush with sour cream.
  7. First brown the bird in the oven at 200 degrees, then reduce the temperature to 180 degrees.

  4. To do this, put them in a saucepan and fill with cold water, after the water boils, cook for 4 minutes, then take out one at a time and immediately peel and remove the inner film. Nuts can be roasted in the oven. Cover a baking sheet with baking parchment, lay out the nuts and bake at 200 degrees. The peel will open up and peel easily. Leave some of the roasted chestnuts to decorate the dish.
  5. Next, prepare the sweet potato puree. Cook like regular potatoes, puree, salt, pepper, add butter.
  6. In a large bowl, carefully combine chestnut puree, mashed potatoes and roast.
  7. Fill the turkey with this stuffing and secure the edges of the belly with chopsticks.

To check for doneness, pierce the turkey with a thin skewer. If a clear liquid comes out of the hole, then it is ready; if it is blood, then it is raw. Another sign: the meat should be soft and easily come away from the bones (this is clearly visible on the legs).

Cook the turkey in the oven at 180 degrees for two and a half hours. After the time has passed, cut the sleeve and let the bird acquire an appetizing crust for another half hour. The turkey is ready, let it cool slightly, then transfer to a platter and serve.

Turkey with apples, prunes and figs

Required ingredients:

  • turkey – 1 carcass up to 6 kg;
  • prunes – 15 pcs.;
  • figs – 7 pcs.;
  • apple – 5-6 pcs.;
  • champagne – 0.5 bottles;
  • honey - 2 tbsp. l.;
  • mustard – 1 tbsp. l.;
  • grape oil - 2 tbsp. l.;
  • butter – 1 tbsp. l.;
  • herbs, salt and spices - to taste.

Cooking process:
