Preparation

To prepare such a dish you will need two hundred fifty to three hundred grams of meat (pork or beef pulp), one onion and carrot, a celery stalk and a medium tomato. In addition, use a couple of tablespoons of vegetable oil, two hundred and fifty grams, one bay leaf, some herbs and salt.

Grind the meat into small pieces. Fill it in a saucepan with one and a half liters of cold water. Place the pan on the fire, and after the broth boils, skim off the foam, add salt and cook for half an hour.

Peel and chop the onion and celery. Peel the potatoes, wash and cut into medium cubes. Grate the peeled carrots on a fine grater. Pour two liters of water into the pan, after it boils, dissolve the chicken broth cubes in it and add the potatoes.

In heated butter, sauté the onions and carrots until golden. After about ten minutes, add the roast to the soup being prepared.

Chop the mint and add to the boiling broth.

How to make green pea soup

As I already said, there is not much to do here. Pour vegetable oil into a frying pan or saucepan with a thick bottom. Wash the onions and garlic, peel them and chop them quite roughly - anyway, everything will then be ground into puree. Fry the vegetables in oil until a characteristic aroma appears - 3-4 minutes over high heat, stirring continuously so that nothing burns.

Fill with water, bring to a boil, turn the heat down to low so that it gurgles but does not boil over, and cook for 15 minutes.

Then take a slotted spoon and remove a quarter cup of peas from the soup for decoration when serving. We arm ourselves with a blender and turn the soup into puree. Salt, pepper, add thyme (you can do without it). I smashed the soup for about 5-7 minutes until it turned into a homogeneous mass.

But alas, particles of pea shells are clearly visible in this mass. And we will remove them now. For this we need a fine sieve. Place it on an empty pan or large bowl. Pour the soup into a sieve in portions and mash with a spoon until a bright green pulp remains. It makes about 2 tablespoons. Not much, right?
