Capercaillie nest with ham recipe. Capercaillie's Nest salad - food of the “bourgeoisie” in a modern interpretation

Recently, the Wood Grouse Nest salad has become quite popular, and you can often find it sitting at a party, at a set table. And this is not at all accidental. After all, it turns out to be truly festive - it is very beautiful, original in execution, and extremely tasty!

Since our favorite holiday, New Year, is just around the corner, everyone will be looking for interesting recipes to surprise and delight your guests. So, with such a beautifully decorated dish, you will definitely surprise and delight everyone present.

IN classic version The salad is made from chicken fillet with the addition of ham. But now the Year is coming Fire Rooster, and it’s somehow inappropriate to serve chicken meat on the table. There is no way the Rooster will be offended, but this cannot be allowed! Therefore, we will make it with meat.

Capercaillie Nest salad - recipe with meat

We will need:

  • boiled beef or veal - 350-400 g
  • raw potatoes - 2-3 pcs
  • eggs - 7 pcs
  • pickled cucumbers - 2 pcs.
  • champignon mushrooms, or any other, marinated - 200 gr
  • green peas - 100 gr
  • cheese - 70 gr
  • mayonnaise -6-7 tbsp. spoons
  • garlic - 1 clove
  • salt - to taste
  • black ground pepper- according to desire and taste
  • cherry tomatoes -3-4 pieces for decoration

The recipe also uses pancakes. You will need to bake 2-3 of them.

For pancakes:

  • flour - 2 tbsp. spoons
  • milk - 100 ml
  • egg - 1 pc.
  • sugar - 0.5 tbsp. spoons
  • vegetable oil- 1 teaspoon
  • soda - on the tip of a knife
  • salt - a pinch

Preparation:

1. Make dough for pancakes. Let it sit for 30 minutes to allow all the ingredients to combine.

2. Fry 2-3 pancakes. If you don’t know how to do this, then you can read a special article on the topic -. Namely thin pancakes we will need it to prepare the dish as a whole.

I have a frying pan with a very large diameter. Since everyone in our family just loves pancakes, we had to buy such a huge frying pan. That's why I bake only two pancakes. On regular frying pan You will need to bake three pancakes.

3. Cool the hot pancakes a little, fold them in half and roll them into a tube. Then cool completely. Once cooled, cut into thin slices as we cut the roll. Then the pancake will roll out and you will get long narrow strips.

4. If you have pickled cucumbers, that’s good, we’ll use them in the recipe. I also have them, and in large quantities, preserved different ways. You can look at the recipes in my articles in the “Preparations” section. But because of two cucumbers, I felt sorry to open a three-liter jar.

And I decided that I would pickle fresh cucumbers in a fast way. To do this, I cut the cucumbers into barrels. I added chopped dill and garlic to them, added a little more salt than usual and a little pepper.

I placed all this in a container with a tightly closed lid and shook vigorously. These cucumbers will be salted within an hour. During this time, they must be actively shaken every 15 minutes.

An hour later we open the container, and the cucumber-garlic smell, and even with the aroma of dill, simply knocks you off your feet. These cucumbers will come in handy! Tasty, fragrant - this note will not be superfluous. And they will be even tastier than pickled or fresh ones.

5. Cut the cucumbers into thin strips.

6. You will also need to boil the meat in advance. Cook it over low heat. There is no need to add salt throughout cooking, so that the salt does not draw out all the delicious juice from meat. Add salt 10 minutes before the end of cooking. Cool the finished meat and cut into thin strips.

We try to cut all ingredients approximately the same thickness and length. Since we will build a nest from them, it is better to cut them in the form of twigs, that is, into strips.

7. Eggs should be boiled and also cooled. Then separate the whites from the yolks. Cut the whites into thin strips.

8. We will also need mushrooms. We use marinated mushrooms, just as they are. We also pickled mushrooms - and recipes for how to do this are also in the preparations section. And we pickled boletus mushrooms. I rolled some of them into jars. And I store some in the refrigerator. They are really delicious, and I want to enjoy them every day.

So, we also cut the mushrooms into strips, to match other products.

Mushrooms, as I already indicated, what you can use, what you have. Usually everyone uses champignons, and they are no worse than the rest.

9. Another one important stage in preparation is to prepare a blank for the nest itself. And we will build a nest from French fries.

For this raw potatoes cut into very thin strips. Sometimes it is recommended to grate potatoes for Korean carrots.

I’ll say right away that I don’t practice this, since the grated potatoes stick together a lot when fried. And if you grate it on a larger grate, it will turn out to be large. Therefore, I cut the potatoes into strips of the size I need.

We will have a nest that looks like a real one.

10. Once the potatoes are cut, they need to be fried. To do this, heat the oil in a cauldron or frying pan, and place the potatoes there in small portions, fry, stirring constantly.

Since the potatoes are cut very thin, they will cook very quickly. And therefore, do not leave it while frying, stir, and as soon as it becomes beautiful golden color, immediately take it out and place it on paper towels so that all the oil drains off.

11. In a large bowl, combine cucumbers, meat, mushrooms, egg whites and pancakes, cut into strips. Add canned green peas, from which the brine has been carefully drained.

12. Add mayonnaise. If you don’t really like mayonnaise, then add sour cream, or sour cream and mayonnaise 50 to 50%.

13. Mix everything carefully. Test to see if there is enough salt. We have pickles, mushrooms, meat, green peas and mayonnaise. That's why I don't salt anything anymore. You can add one or two pinches of ground black pepper for added spice.

14. Now we need to make eggs for the nest. My brother, who especially likes the eggs in this salad, refuses to call it "Groecaillie's Nest" and calls it exclusively "Gercaillie Eggs." Therefore, we will make them beautiful and appetizing.

15. Grate hard cheese on a fine grater, I use Russian cheese. Chop the garlic and mix with mayonnaise. Place some mayonnaise in a small cup. Dip the yolk in mayonnaise and roll in the cheese-garlic mixture.

Place on a separate plate and place in the refrigerator for the time being.

Now that we have prepared everything, we can begin to create our culinary masterpiece.

How to beautifully decorate and arrange a dish

To make the dish look most impressive, it is better to place it on a large flat dish. Then it will look exactly like a nest. Only more beautiful and bright. If the real nest is discreet, disguised as tree branches. Our “nest” is bright, flashy, just right for any holiday!

1. Place lettuce leaves on a large flat dish or plate.

2. Place the ingredients mixed with mayonnaise on the leaves in the form of a small mound. We make a small depression in the center where we will place the eggs.

3. Cover the entire surface of the laid out ingredients with French fries. Don’t forget the edges; when placing them on them, lightly press down the potatoes so that they don’t fall.

This is what a beautiful and cozy “nest” we have created.

4. Carefully place the eggs in the center where we formed the bowl. Place sprigs of dill or parsley around them. Or both together. We also decorate the spaces between the leaves at the base of the dish with twigs.

5. Now you need to let the salad brew so that all the ingredients are saturated with the juice and aroma of each other and mayonnaise. To do this, you need to put it in the refrigerator for 3-4 hours.

6. Remove the finished dish from the refrigerator, decorate with cherry tomato halves and place on the festive table. Be sure to let us enjoy the view of our beautiful culinary masterpiece. And eat healthy!

Such beauty will certainly surprise everyone with its appearance, and most importantly, its taste! Once you prepare it, you definitely won’t go wrong!

And now I’ll tell you how to cook the classic version with chicken fillet. After all, not every year is the Year of the Rooster! You can cook it with chicken, either boiled or smoked!

Capercaillie's Nest salad - a classic recipe with chicken

We will need:

  • boiled chicken fillet – 250 g
  • ham - 100 gr
  • raw potatoes - 2-3 pcs
  • eggs - 7 pcs
  • fresh cucumbers - 2 pcs.
  • processed cheese - 1 piece
  • hard cheese - 100 gr
  • mayonnaise -6-7 tbsp. spoons
  • garlic - 1 clove
  • salt - to taste
  • sunflower oil- for frying potatoes
  • lettuce, dill, parsley - for decoration
  • ground black pepper - optional

Preparation:

The salad can be prepared in the same sequence as the previous one. You can make some changes to the cooking process. Thanks to this, you can change its taste. I suggest you focus on this.

1. Boil the chicken fillet, cool it and cut it into strips.

2. Also cut the eggs into strips, fresh cucumbers(in winter you can use pickled ones) and ham. Grate the cheese onto coarse grater.

IN classic version mushrooms are not added during preparation, but you can use them if you really want to! There are also options where onions and carrots are fried. And these components are also added.

3. Combine the ingredients and mix with mayonnaise.

There are recipes where the ingredients are not mixed, but laid out in layers. In this case, first lay out the chicken fillet, then cucumbers, egg, ham and grated cheese.

If you prepare the salad in layers, then layer each of them with mayonnaise.

4. Grate the processed cheese on a fine grater. To make it easier to grate the cheese, put it in the freezer for a while.

5. Add chopped garlic and dill to the grated mass. Mix the contents and form small eggs. Place them on a plate and put them in the refrigerator.

6. Cut the potatoes into strips and fry in vegetable oil, stirring constantly. Place potatoes on a paper towel to drain excess oil.

7. Place in a dish decorated lettuce leaves, all ingredients mixed with mayonnaise. Or lay out the layers as indicated above. Form an egg bowl in the center.

8. Cover the base with french fries in a thick and even layer.

9. Remove the eggs from the refrigerator and place them in the central part.

10. Decorate as your imagination dictates.

11. Place the dish in the refrigerator for 3-4 hours. Serve chilled.

Here are two different options. You can choose any one to your liking. I usually always choose the first one on big holidays. There are more ingredients, and the salad turns out richer and richer in taste. I cook the second option when I just want to eat it without any reason. Or when my family asks me to cook it because they miss it.

The second option is easier and more dietary. Especially if you don’t add mushrooms to it. But both options are delicious.

Replacing meat in the first recipe with chicken fillet and leaving everything else unchanged is also great option. You can cook it this way too. In general, try, cook, and I’m sure that you will succeed.

And in conclusion, I bring to your attention a video recipe for this delicious dish in an interesting design.

If you use this design idea, you can also prepare small portioned salads. It will look just great! Each guest will receive a small piece culinary arts! And everything will be eaten, I’m just sure, quickly and without a trace.

In general, there are a lot of ideas and options. Even with the appearance, you can even dream up. But only one thing will remain unchanged - unique taste! You don't have to worry about him!

The Wood Grouse Nest salad belongs to Russian cuisine of the last century. During the times of Ancient Rus', hunting this feathered bird was very popular, and it was the main component in preparing the dish. The recipes for creating this salad are very diverse - there are simply a great many of them. The main characteristic of this dish is its decoration and shape, which resembles a bird's nest, with eggs laid on top. Nowadays, the cooking recipe has changed, and they began to put boiled chicken meat in the salad. Very unusual in taste, bright food will be a wonderful addition to your holiday.

Let's look at how to prepare the Wood Grouse Nest salad with photos step by step in the four most famous variations.
