Very simple and delicious sauce, but most importantly natural, no chemicals. The ingredients for the sauce are very simple and affordable.

  • 2 kg. red ripe tomatoes
  • 6 cloves garlic
  • 3 tbsp. spoons of sugar
  • 0.5 tsp salt
  • 0.5 teaspoon black ground pepper
  • 5 pieces. black allspice
  • 5 pieces. carnations
  • 1 tbsp. spoon of vinegar 9%

My volumes are quite small, because I want to prepare sauces according to different recipes. Therefore, I cook, try, and will cook the recipes I liked most again. And in the future, prepare 2-3 servings.

Tomato and garlic sauce

To prepare the sauce, I used red tomatoes. We recently cooked tomato juice and we still have tomatoes, so they all different shapes and size, but mostly this is the “cream” variety.

I would also like to note that redder tomatoes, the more rich and vibrant the sauce. Do not prepare tomato sauces if you have brown tomatoes, let them ripen.

Tomatoes must be washed under running water. Remove the stems from the tomatoes and cut them into pieces. My tomatoes are juicy and I don’t add additional water.

I put the tomatoes on the fire. Simmer the tomatoes over low heat for about 45 minutes. After boiling, the heat must be reduced.

Meanwhile, I prepared the spices. I used the spices specified in the recipe, although you could add any spices you wanted.

I prepared the cloves allspice peas, salt, sugar, ground black pepper. I add spices to the tomatoes. You can also add cinnamon to this sauce. For this amount of ingredients, half a teaspoon or a cinnamon stick will be enough.

I simmer for another 20 minutes. Meanwhile, while the tomatoes were boiling, I peeled the garlic and crushed it using a press.

I peeled 1 large head of garlic, which consisted of 6 cloves. I continue to simmer the tomatoes over low heat for another 15 minutes.

Then I set the pan aside to let the sauce cool slightly. I will grind the tomatoes through a fine sieve. I put the tomatoes in a sieve in portions and grind them with a whisk, it’s very convenient for them to do this.

After I rubbed the tomatoes through a sieve, all that was left was tomato puree, the tomato skins and spices remained in the sieve.

I pour the finished sauce into a saucepan (it is advisable to use a thick-bottomed container) and put it on the fire; after boiling, reduce the heat to low.

IN homemade sauce from tomatoes for the winter I add a tablespoon of 9% vinegar and carcass 15 - 20 minutes. Can be replaced regular vinegar apple If using apple cider vinegar, add a few tablespoons. We have 5% apple, that’s why I say we need more.

I evaporated the water from the sauce quite well, so my sauce was reduced. From this amount of ingredients I got 700 ml. sauce. But it turned out to be thick, of course not as thick as the ketchup turned out to be a very thick puree.

If you want to cook more sauce from tomatoes for the winter, then you can make it by increasing the amount of ingredients by 3-4 times. Depending on how much sauce you need.

The big advantage of homemade preparations is the naturalness of the products, you are sure of what you are consuming natural products, prepared with your own hands. You know exactly the ingredients included in the sauce or homemade ketchup.

The sauce turned out very tasty, piquant, with an aftertaste of cloves and garlic. The consistency of the sauce is very homogeneous, there are no pieces or spices, with the exception of ground black pepper. If you like the sauce spicier, add 1/3 - 1/2 part hot red pepper or half a teaspoon of ground red pepper.

I did not add any other spices other than those indicated in the recipe, taking into account the fact that children will eat the sauce. By the way, the taste of the sauce was not spicy at all.

But you shouldn’t add more garlic; if you want to make the sauce spicier, it’s better to add red pepper.

Let's start preparing the tomato sauce

1.As you can see, our ingredient list includes only natural products. Some components will have to be purchased in supermarkets, and let's take vegetables from your own garden or dacha. Surely, every housewife grows tomatoes and onions, because these plants do not require too much care.


2.Those who cooked tomato paste at home, they know that vegetables need to be stewed first. This procedure is not needed for the sauce; we will pass the tomatoes through a meat grinder. If spoiled areas are observed on vegetables, we must remove them.


3. We also chop the onions using a meat grinder.


4.Place the tomato paste in a saucepan. Choose larger dishes, as we have a large number of tomatoes.


5.Add onion, cloves, allspice and bay leaf to the total mass. It is recommended to add all the spices at this stage so that they release all their aromas during stewing.


6. Turn on low heat and cook the tomato mass for about 60 minutes, stirring from time to time so that it does not burn.


7. This time will be enough to completely soften the vegetables. Next we will pass them through a sieve.


8. Try to do this efficiently so that there is practically no cake left. Personally, I got a little over half a kilogram. Bay leaf and the peppers also came here because they are no longer needed in the sauce - they gave up all their smells during stewing.


9. We already have a liquid mass that slightly resembles a sauce, but is still far from it. The mass should be evaporated so that it does not look like juice. It should be thicker.


10. Place the pan with the tomato mass on the stove and cook for at least 2 hours. After some time, add granulated sugar.


11.Also add salt to the dish to make the taste balanced.


12.Wait for the mass to thicken, then add vinegar and mix thoroughly. It is better to take 9% vinegar, but it is not always on hand. Replace it with a weaker analogue, but add a larger amount. Afterwards you can take a sample and add salt or sugar to your taste.


13.It's time to pour hot sauce by banks. They should be sterilized in advance in any convenient way. Lately I've been using the microwave for this purpose. First, I wash each one with baking soda, then pour in water and put it in the microwave for 5 minutes, setting the power to maximum.


14. Let’s move on to the process of sealing the cans. Then we turn each one upside down and cover it. As soon as the sauce has cooled, it should be placed in a dark, cool place - the basement. Our quantity of tomatoes yielded about 4 liters. If you cook it longer, it will come out around 3 liters.

Tomato chili sauce

Ingredients:

To prepare 1 kg of tomato sauce you will need:

  • tomatoes – 2-3 kg,
  • sugar – 200 g
  • salt – 50 g,
  • vinegar essence - 3 teaspoons,
  • garlic – 1 head,
  • peppercorns (bitter or allspice) – 5-6 pcs.,
  • cloves – 5-6 pcs.,
  • ground cinnamon – 0.5 tsp.

How to cook:

The washed, dried fruits are cut into slices and placed in a pan or basin. A meat grinder is used to grind the fruits.

Cook for 1.5 hours, stirring occasionally. During this time, the mass in volume decreases by almost half due to the evaporation of the liquid.

To give homogeneity, the contents are mixed with a submersible blender or rubbed through a sieve. Using a blender is very convenient, this way even all the seeds are crushed, they become invisible. Tomato puree becomes more homogeneous.

After about 1.5 hours, salt and sugar are added to the boiled mass. Cook until the mixture is reduced by half. We continue to cook for another half hour, not forgetting to stir the tomato mass. The total cooking time will take 2 hours.

For aroma, add a gauze bag with spices and chopped garlic to the tomato mass. The bag of spices is removed at the end of cooking. A few minutes before the end of the process add vinegar essence, let it simmer for a few more minutes. The finished tomato sauce is poured into sterile jars and covered with boiled lids. They roll it up right away. The jars are turned over to ensure they are sealed tightly.

Sweet tomato sauce

For cooking you will need products:

  • 2.5 kg tomato,
  • 2-3 onions,
  • 250 g sugar + 1.5 tbsp. l. salt (adjust to your taste)
  • 60 ml vegetable oil (for frying onions),
  • 100 ml 9% table vinegar,
  • 2 tbsp. l. starch (it is necessary as a thickener),
  • Spices – 0.5 tsp. ground red pepper, 0.5 tsp. ground black pepper, 1 tbsp. l. hops-suneli, 1 tbsp. l. ground coriander.

How to cook:

  1. Grind tomatoes in any convenient way. We remove the skins, you can first scald the tomatoes with boiling water, and then cold water. Or we put it through a juicer, but to get juice with pulp.
  2. Coarsely chop the onion and fry until golden color in a frying pan. When the onion turns golden, it gives off its aroma to the oil, remove it from the pan. Combine the chopped tomatoes and the remaining oil from frying the onions.
  3. We put tomato puree on medium heat, cook for 30 minutes.
  4. At this time, chop the fried onions with a brander and add to the tomato mass.
  5. After 30 minutes, add salt, sugar, vinegar and cook for another 30 minutes. Don't forget to stir.
  6. We dilute starch in cold water and add in a stream to the tomato sauce, stir, and boil for 15 minutes.

Pour the finished sauce into sterile jars and seal immediately. This quantity of products yields approximately 1.5 liters of sauce.

The recipe is quite simple, and the sauce for this recipe is prepared quickly.

For preparation you will need:

  • tomatoes, better ground (they taste better) and fleshy, so that there is less liquid;
  • apples - a third of the number of tomatoes;

For 4 liters of finished product you will also need:

  • 3 tbsp. l. table vinegar,
  • 1 large head of garlic,
  • 1 tbsp. l. salt,
  • 2 tbsp. l. Sahara,
  • Spices – 0.5 tsp. nutmeg, 0.5 tsp. ground cinnamon, 1 tsp. ground red pepper.

How to do:

We cut apples and tomatoes into quarters, cutting out the stalks of the tomatoes and the core of the apples. We put them together in a saucepan and put it on the fire. When the tomatoes and apples are soft, use an immersion blender to blend them into a homogeneous mass. The skins will be finely crushed, they will not be noticeable. Then add spices, salt, sugar, garlic, and mix again with a blender.

Turn on the stove and boil for 2 minutes. The sauce is ready. Place it in sterile jars, cover with boiled lids, and roll up.

Spicy tomato sauce (Georgian style)

This recipe is without vinegar. You will need 5.2-5.3 kg of tomatoes. After removing excess from the fruit, net weight 5 kg will remain. In addition, prepare:

  • 2 -3 heads of garlic,
  • Hot chili pepper 1 pc., for those who like it spicy - 2 pcs.
  • 1 tbsp. l. salt + 1.5-2 tbsp. l. sugar (adjust to your taste)
  • Spices - a tablespoon of ground coriander and suneli hops.

How to cook:

Remove the skin from the tomatoes. To do this, make a cross-shaped cut on the fruits, lower them in a colander into hot water, pour over with cold water. The peel can then be easily removed. Grind the tomatoes through a meat grinder. Place on the fire, stir, skim off the foam.

Cook for 2 hours. Shortly before the end of cooking, add salt, sugar, spices, and garlic. Stir and boil for another 10 minutes, taste for salt and sugar. Pour hot tomato sauce into mason jars and immediately seal.

Ingredients:

  • Tomatoes - 4 kg.
  • Garlic - 2 large heads or 3 medium ones.
  • Sugar - 6 tbsp. l.
  • Salt - 0.5 tbsp. l.
  • Black pepper coarse grind- 1 tbsp. l. with a slide.
  • Allspice - 10 peas.
  • Carnation - 10 inflorescences.
  • Vinegar - 2 tbsp. l.
  • Hot pepper - 2 pods.
  • Paprika - 1 tbsp. l.

How to make hot sauce

Wash the tomatoes, remove all rotten and bruised areas. Cut them into large pieces. Place in a deep saucepan and bring to a boil.

After boiling, reduce the heat under the pan and simmer the future tomato sauce for half an hour.

Cut the pepper into rings and send it to the tomatoes. Stew tomatoes with hot pepper another 30 minutes. Add all the specified spices and cook the sauce for another 15 minutes.

While the sauce is cooking, peel and pass all the garlic through a garlic press. Add it to the tomato mixture and simmer for another 10 minutes. Remove the sauce from the heat and rub it through a sieve. Return the mixture to the pan and bring to a boil. Add vinegar and simmer for another 10 minutes.

Pour the sauce into pre-sterilized jars and seal them. Place the jars on the floor covered with a towel, lids down, and cover them with a warm blanket. Leave them like this for 12 hours. Afterwards we put the jars in a cool, dark place.

From the given amount of ingredients you should have about three half-liter jars of ketchup. If you want to cook this homemade tomato sauce in more, then take 2-3 times more of all products.

Sweet and sour sauce

Can be cooked unusual sauce from tomatoes for the winter. The recipe for this seasoning is given below.

Ingredients:

  • Tomatoes - 5 kg.
  • Sour large apples (for example, Antonovka) - 2 pcs.
  • Coarsely ground black pepper - 1 tsp.
  • Cinnamon - on the tip of the knife.
  • Nutmeg - 0.5 teaspoon.
  • Honey - 1 tsp.
  • Hot red pepper - 1 tsp. no slide.
  • Garlic - 1 head.
  • Vinegar - 2 tbsp. l.

Making an excellent seasoning

Let's prepare the tomatoes - wash them and clean them from spoiled areas. Cut the tomatoes into large cubes. Remove the core and seeds from the apples and also cut them into cubes. Mix apples and tomatoes in a saucepan. Place them on medium heat for 30 minutes (until the apples and tomatoes soften).

Grind the resulting mixture through a sieve and return it to the pan. Boil the tomato sauce for another 10 minutes. Add salt, black pepper, cinnamon to the brew, nutmeg and hot red pepper. Mix thoroughly and leave to simmer for another 5 minutes. Then add honey, vinegar and garlic and boil for another 5 minutes.

Distribute the sauce into pre-sterilized jars. Let's roll them up. Place the jars, lids down, on the floor, covered with a towel, and cover everything on top with a blanket. Let's leave them like that overnight. In the morning we will put it in the pantry or cellar.

This world-famous masterpiece was invented in North America, and his recipe spread all over the world. Not a single outdoor picnic in the United States is complete without his participation.

Tomato barbecue sauce enjoys its popularity not only due to its unusual and bright taste, but also because of its versatility: it can be used as an addition to the main dish and as a marinade for meat, poultry, fish or even vegetables.

Here is the classic recipe for this sauce, but you can change it depending on your own taste and the ingredients you have on hand.

Ingredients:

  • Puree from fresh tomatoes- 1 kg.
  • Tomato paste - 200 g.
  • Large onion - 2 pcs.
  • Odorless vegetable oil - 0.3 cups.
  • Honey - 2 tbsp. l.
  • Grain mustard - 2 tbsp. l.
  • Granulated garlic - 2 tbsp. l.
  • Ground chili pepper - 1 tsp. with a slide.
  • Worcestershire sauce - 30 ml.
  • Apple vinegar - 100 g.
  • and salt - to taste.

Cooking process

Boil the tomato puree (without seeds or skins) so that all excess moisture evaporates. Cut the onions into small cubes and fry them in vegetable oil in a deep saucepan until transparent. Crush in a mortar. Add pepper, sugar and chili to the onion. Mix the mixture thoroughly.

Add honey and tomato paste to the pan. Mix thoroughly again and simmer for 5 minutes. Add evaporated tomato puree to the mixture and simmer over low heat for 15-20 minutes.

Add vinegar and salt. Puree the mixture using a blender. Boil the sauce for another 20 minutes. Spill finished product into sterilized jars and close them. Leave to cool on the floor under a blanket, upside down. After a day, put the jars in the cellar (if it is a cold season) or in the refrigerator.
