It is enough to grind the tablets in a coffee grinder or crush them in a mortar, then sift and add to the batch. In some cases, it is suggested to dissolve activated carbon in water.

Burgers are made in a round shape, so the buns are formed from balls of dough. Before putting them in the oven, you need to wait a while - let them sit for 15-20 minutes.

List of ingredients for the test: 3 tablets of activated carbon; one and a half glasses of rye flour; 1 glass of sour cream; one and a half teaspoons of sugar; 100 g butter; teaspoon baking powder; 0.5 teaspoons of salt. For sprinkling the buns: white sesame seeds.

Let's start kneading the dough by putting the sour cream in a large container. Then:

  1. Add sugar and salt, stir until the crystals dissolve.
  2. Pour in vegetable oil.
  3. Grind the activated carbon in a coffee grinder, adding a little rye flour to the bowl.
  4. Sift the mixture into a bowl, followed by the rest of the flour and baking powder.
  5. Knead elastic dough. If it turns out that the consistency is runny, add more flour. This happens when low-fat sour cream is used.
  6. Do not cut the dough immediately; it should stand under a napkin for 10-15 minutes.
  7. In the meantime, preheat the oven and prepare a baking sheet. To prevent baked goods from sticking to the bottom during baking, grease it with vegetable oil or cover it with special paper.
  8. For the buns to be ready, it will take 20 minutes and a temperature of 200 degrees.

Black buns made from yeast dough with milk

Black yeast baked goods are prepared with the addition of activated carbon tablets. In addition to the round shape, you can choose another one, for example, oblong. The black shade of the treat attracts and fascinates.

If you want to intrigue your guests, then prepare the following products: 3 cups of wheat flour; half a glass of milk; 8 coal tablets; 40 g butter; salt and sugar to taste; 1 egg; half a glass of water; 7 g dry yeast; sesame seeds.

Recipe:

  1. Pour the water and milk into a saucepan and put on fire.
  2. Heat the liquid to a temperature of 38-40 degrees and remove from the stove.
  3. Add a spoonful of sugar and yeast. Stir and set aside. If you don’t have dry yeast, use pressed yeast, but you will need 3 times more, that is, 20 g.
  4. Grind activated carbon in a coffee grinder, mix with sifted flour and place in a bowl with the dough.
  5. Salt the dough and stir with melted butter. First, knead the mass with a spatula, then on the table with your hands. You should have a smooth dough without lumps.
  6. To make the mixture rise, cover it with a napkin and place in a warm place for 2 hours.
  7. When the time comes, divide the dough into 7-8 balls and place them on the oiled deco. Flatten the pieces slightly with the palm of your hand and let them rise for 20 minutes. Then spread melted butter and sesame seeds on the surface of the buns.
  8. Turn on the oven in advance, it should warm up to 180 degrees. The hamburger base will be ready in a quarter of an hour.

Water bun dough

The method of kneading the dough is not much different from the usual one. You only need to add crushed activated carbon tablets (5-8 pieces) to achieve the desired shade.

Take: 70 ml of oil; 0.3 l of water; half a teaspoon of salt; 3 spoons of granulated sugar; one and a half teaspoons of fast-acting yeast; 7 drops of black dye (or 7 charcoal tablets); sesame.

Step-by-step dough preparation:

  1. Heat the water to about 40-50 degrees, so salt and sugar will dissolve in it faster.
  2. When there are no crystals left in the liquid, add black food coloring. You can also use activated carbon, but first you need to grind it to a powder using a coffee grinder or rolling pin. Sift the powder and grind with a small amount of apple cider vinegar, add to the water.
  3. Add dry yeast, it must be of good quality, otherwise the dough will not work.
  4. Sift the flour and add a little into the bowl.
  5. Knead the dough with your hands for about 10 minutes, then roll it into a ball and place it back into the bowl sprinkled with flour.
  6. Cover the top with a towel to prevent a crust from appearing and place in a warm place for 1.5-2 hours.
  7. Punch down the dough, divide into pieces weighing approximately 100-120 g, roll into balls.
  8. Place them on the deco, maintaining a distance of 4-5 cm, press down with your palm, giving it a flattened shape.
  9. After proofing, brush the pieces with egg and sprinkle with sesame seeds.
  10. Cook the baked goods in a hot oven for about 20 minutes and use for hamburgers or burgers.

Dough buns with sunflower seeds

A few seeds and crushed nuts will give the baked goods a special taste.

To knead the dough you will need: a package of activated carbon (10 tablets); 15 g yeast; a glass of water and milk; three tablespoons of granulated sugar; 2 tbsp. spoons of peeled sunflower seeds and chopped walnuts; three tablespoons of oil; wheat flour. For sprinkling, prepare sesame seeds.

When kneading the dough, follow the following procedure:

  1. Dissolve sugar in a warm mixture of milk and water.
  2. Add the yeast and stir thoroughly with a spoon.
  3. Add vegetable oil to a bowl.
  4. Grind the activated carbon with a rolling pin or in a mortar. Mix the resulting powder with a spoonful of flour and sift through a sieve.
  5. Pour into a mixing bowl and stir until smooth.
  6. Sift the rest of the flour, add salt, then mix with the rest of the ingredients.
  7. Knead a soft dough, adjusting the amount of flour yourself. There is no need to achieve a steep mass; it will rise slowly and poorly.
  8. Finally, add the nuts and seeds, then roll the dough into a ball and cover with a napkin, placing it in a saucepan or bowl.
  9. When the mass “grows” and doubles in volume, begin to form buns.
  10. Roll into a “sausage” and cut it into small pieces. If the bun is intended for hamburgers, make oblong pieces and place them on the prepared baking sheet.
  11. When they have risen and become taller, brush the surface with a beaten egg and sprinkle with sesame seeds.

Bake the hamburger base at 180 degrees.

Black hot dog buns

Soft pastries for making hamburgers or hot dogs are made from dough mixed with:

a teaspoon of loose yeast; 220 ml milk; 1 teaspoon instant coffee; five tablets of activated carbon; two eggs; three tbsp. spoons of sugar (preferably brown); 40 g butter and two and a half glasses of flour.

Preparation:

  1. Heat the milk over low heat in a saucepan.
  2. Add sugar, yeast and three tablespoons of sifted flour.
  3. After mixing the mixture well, leave it for a quarter of an hour to activate the yeast.
  4. When a foam of small bubbles appears on the surface, add charcoal tablets ground into fine powder, salt and instant coffee.
  5. Melt the butter, pour into a bowl. You can also use vegetable dough, the dough will be less rich.
  6. Beat in the eggs and whisk the mixture.
  7. Next, pour in the yeast mass, which is already covered with a foamy “cap,” and stir.
  8. Add flour little by little. As soon as it becomes difficult to stir the dough with a spatula, continue working with your hands.
  9. Let the dough rise. Expect 2 hours, maybe more. Create comfortable conditions so that the yeast begins to “work” in full force. Avoid drafts in the room where the dough is located, and also maintain silence.
  10. After two hours, look under the napkin; if the mass has doubled in volume, you can form it into oblong-shaped products. This is the base that is used to make hamburgers and hot dogs.
  11. After proofing, do not forget to brush the surface of the buns with melted butter or beaten yolk, and only then sprinkle with sesame seeds.
  • Black baked goods do not develop a golden brown crust while in the oven. Periodically check the readiness of the baked goods with a dry match.

Yes - yes, these are exactly those black buns that are now fashionable in all snack restaurants. These are buns made with flour and activated charcoal. As I told you earlier, if it is not possible to purchase ready-made charcoal flour, then we do all the miracles with the dough using regular flour, but we add activated carbon, ground into powder, in a proportion of 4 grams of powder per 250 grams of wheat flour. Well, let's run to the kitchen.

Ingredients:

black flour - 150 grams

flour - 50 grams (another 50 for kneading)

sugar - 10 grams

honey - 0.5 tsp

fresh yeast - 10 grams

water - 125 ml

olive oil - 1 tbsp

beaten egg for brushing

sesame seeds for sprinkling

So let's go, first you need to dissolve fresh yeast in warm water, then add sugar and honey here, dissolve it again. Pour in 150 grams of black and 50 grams of regular flour and begin to knead the dough, in the process add olive oil and add a little wheat flour for kneading. Knead for 10 minutes until the dough is homogeneous and smooth.

We collect the dough into a bun, cover it with film and leave it in a warm place for one hour, whatever suits it.

When it fits well, we divide it into parts, I got 5 pieces and buns of 70 grams each.

Form the buns and leave for another 30 minutes until they fit. Then brush with beaten egg and sprinkle with sesame seeds. Bake the buns for 15 minutes at 200 C degrees.

3. Activated carbon – 3 tablets
4. Vegetable oil -0.5 cups
5. Sugar
6. Sesame
7. Baking powder - 1 teaspoon
8. Salt - 0.5 teaspoon

How to make cherry burger buns with rye flour (baking powder):

Place sour cream in a bowl. Add salt and granulated sugar. Add vegetable oil, stir with a spoon until all lumps are completely dissolved.

2. Throw activated carbon tablets into the coffee grinder and add a little flour. Turn it on. We grind.

3. Sift this and the remaining flour into a bowl, add baking powder, stir.

4. Add the dry mixture to the sour cream, stir well, the dough is ready! If suddenly there is not enough flour, you can add a little more. This happens if the sour cream is liquid.

5. Leave the dough for about fifteen minutes.

6. While you can preheat the oven to 200 degrees, lay out a baking sheet.

7. Divide the dough into five parts. We form round buns from each with our hands. Flatten it a little.

8. Place on a baking sheet, making the distance between the products at least five centimeters. Spread sour cream on top and sprinkle with black or white sesame seeds.

9. Let the black rolls bake. They will take about twenty minutes to prepare.

2. Option for yeast black burger buns.

The dough is the simplest and most common using water and vegetable oil. Instead of food coloring, you can again take charcoal, about 5-8 tablets.

Products:

1. Water - 300 ml.
2. Vegetable oil - 70 ml.

4. Salt
5. Dry yeast - 1.5 teaspoons
6. Black dye - 7 drops

How to make a version of yeast black burger buns:

We heat the water to about 50 degrees. Add granulated sugar and salt to it. Stir with a spoon.

2. Add liquid black food coloring. Or grind the coal tablets, add them and stir with a spoon until they are completely dissolved. Sometimes they are first mixed with apple juice or vinegar. Then they throw it into the dough, that’s also possible.

3. Add regular powdered yeast. If they are good and fresh, then one teaspoon is enough. Dissolve.

4. Add flour. Knead the black dough. Cover the bowl with a kitchen towel. Leave for a couple of hours, keep at room temperature.

5. Take out the dough, divide it into pieces of 120 grams each, so that the baked goods turn out to be black rolls of 100 grams each.

First we form balls, then flatten them slightly and place them on a baking sheet.

7. Leave for half an hour, let them rise a little.

8. Now is the time to lubricate. You can use an egg or plain water. Sprinkle with sesame seeds.

9. Send the black rolls to bake. At 180 degrees approximately 15 or 17 minutes.

1. Heat the milk with water. Or simply dilute the milk with hot water from the kettle, throw in a couple of pinches of sugar, salt, about 0.5 tsp. Stir.

2. Place yeast in warm milk. If you use fresh yeast, add 12-15 grams. Stir.

3. Melt the butter and add it to the dough.

4. We are engaged in coal. We grind it in a coffee grinder or put it in a bag and tap it on top with a hammer and roll it with a rolling pin. There should be no lumps left.

5. Mix flour with coal, add liquid mixture. Knead the smooth black dough thoroughly. We send it to a warm place, cover it with a towel.

6. After two hours, divide the dough into 7-8 buns. This is for standard burgers. If necessary, we do more or less.

7. Shape it and place it on a baking sheet. Leave for 20 minutes.

8. Brush the surface with egg and sprinkle with sesame seeds.

9. Black rolls are baked for about eighteen minutes at 180 degrees.

A recipe for very tasty and black buns with seeds in the dough. Sunflower and some nuts are used here.

Products:

1. Milk - 1 glass
2. Water - 1 glass
3. Yeast - 15 gr.
4. Activated carbon – 10 tablets
5. Peeled seeds - 2 tbsp. spoons
6. Chopped nuts - 2 tbsp. spoons

8. Vegetable oil - 50 gr.
9. Salt, sesame
10. Wheat flour

How to make black buns with seeds:
1. Heat milk with water. Add yeast mixed with granulated sugar and dissolve.

2. Add salt and add oil.

3. Crush the charcoal tablets into powder, combine with three glasses of flour, and sift. Add seeds and nuts, stir.

4. Pour the black flour mixture into the dough, stir first with a spoon. Then add regular flour and knead with your hands. But there is no need to make a steep mass. Let the dough be soft, it will rise faster.

5. Put it away in a warm place for a couple of hours.

We take out the black dough, divide it into pieces, and make rolls. If they are not intended for burgers, then they can be given absolutely any shape.

How to make black buns with charcoal and coffee:

1. Pour yeast and granulated sugar into warm milk, add 0.5 cups of flour. Stir and wait about fifteen minutes for foam to appear.

2. Add instant coffee, crushed charcoal tablets, half a teaspoon of salt and dissolve everything well.

3. Melt the butter. But you can add vegetable oil to this dough, it will work too. Fill it up.

4. Beat the eggs with a fork and also add to the total mass.

5. Stir everything well, start adding sifted white flour. As soon as it becomes difficult to stir the dough with a spoon, we begin to make it with our hands.

6. Remove the finished dough with coal to rise in a warm place.

7. As soon as the mass triples, you can make rolls. Let them rise well again on the baking sheet.

8. Before baking, brush with water or egg and sprinkle the top with sesame seeds.

Have you suffered from obsessive ideas, so-called “fixed ideas”? I wanted to find the recipe for these black buns at all costs! Well, interesting! I really wanted to cook them myself, and not go somewhere to a catering for something exotic. There were different options for how to depict “blackness,” but in the end everything turned out to be much simpler than you might think. I'm revealing all the secrets!

When I found out what black color produces, I didn’t invent anything, but simply took my favorite and proven recipe for hot dog buns and calculated the amount of coal for it.

I didn’t bother with cuttlefish ink, because in the vastness of our country you can’t buy this component everywhere, and it’s not cheap. The charcoal turned out great - neutral taste, the amount of charcoal is small, so it won’t cause any harm, unless of course you have any special health problems and don’t eat kilos of these buns.

Just in case, let me remind you that the harmless norm for consumption of activated carbon is considered 1 tablet per 10 kg of person’s weight.

I’ll tell you the important points right away. Be sure to take them into account for a good result.

Firstly, the coal needs to be wiped off into dust. No pieces - the smallest crushed dust, otherwise the buns will not be black, but gray with black pieces.

This can be done in a mortar in a few seconds.

Second— you need to buy good coal. The first time I used the one you see in the photo next to the mortar, in regular paper packets. Simply because it was in my home medicine cabinet. And I must say, I was disappointed with the buns - they very clearly “smelled like a pharmacy.” I thought the recipe was bad and sent it to the recipe graveyard. But this obsession is fixed! I decided that I wouldn't lose anything if I tried with a different brand of coal. And - oh, joy! - he didn’t disappoint!

This coal turned out to be odorless.

Necessary:

  • Flour - 360 g
  • Milk – 200 ml
  • Egg - 1 pc.
  • Sugar - 1 tbsp.
  • Salt - 3/4 tsp.
  • Yeast - 1 tsp. without slide (3 g); fresh 6-7 (g)
  • Vegetable oil - 1 tbsp.
  • Activated carbon - 14-16 tablets (at 16 the color is more intense, naturally, but 14 is also good, so choose the quantity yourself)

Egg white and sesame seeds for greasing and topping

Preparation:

We grind the coal, as I already said, no pieces.

Mix coal with flour.

Heat the milk until warm.

Place all the ingredients in a bowl and knead the dough. It will be soft, and it is quite difficult to knead this dough by hand, so I use a mixer with hooks. I don’t add flour to make the dough airy and soft. The mixer works for me for 5-7 minutes.

See, the dough seems too soft.

Cover and place in a bowl of warm water until the dough has doubled in size.

The second time I mix with a mixer for 3-4 minutes. And again I leave it to rise.

That's it, the dough is ready.

Now you can lightly sprinkle the ball with flour or work with oiled hands.

Divide the finished dough into pieces.

Yield: 8-10 fairly large rolls.

It also turns out very interesting if you make small buffet buns with 15 g of raw dough.

The dough needs to be formed into koloboks.

Flatten into a flat cake about 1 cm thick.

Place on a baking sheet. Cover from airing and leave in a warm place for about 30-35 minutes to rise.

Grease the risen buns with egg white and sprinkle with sesame seeds.

Preheat the oven until 150 degrees.

It is important not to let the buns brown so that the crust retains its black color without a brown tint.

To do this, we put the buns on 5 minutes in the oven, then take them out and cover them with foil. And bake at low temperature until fully cooked. In my oven this is approximately 12-15 minutes. Of course, you look at your oven.

  • Water – 230 ml.
  • Butter – 3 tbsp. spoons;
  • Milk – 2 tbsp. spoons;
  • Sugar – 2 tbsp. spoons;
  • Chicken egg – 1 pc. (plus one more for lubrication);
  • Dry yeast – 1 teaspoon (details below);

First you need to dilute the yeast. Pour warm water into a cup, add 2 tablespoons of warm milk, a pinch or two of salt and 0.5 tbsp. spoons of sugar. Stir well, then add dry yeast. Stir again and leave for 15 minutes until the yeast foams.


Place softened butter in a cup with flour, pour in the yeast liquid, beat in the egg and add the remaining flour.


You can also mix the egg with butter and sugar in advance - the order does not have much effect here.

As the mass becomes thicker, we begin to knead with our hands (or one hand). Knead for a few minutes until you get this elastic consistency. The dough has become more homogeneous and less sticky.


Cover the cup with the dough with a towel and leave it warm for about 1 hour. During this time, the dough should rise well and increase in volume by at least 2 times.


Sprinkle the table with flour so that nothing sticks. Carefully lay out the dough (all or just part). Knead lightly and then divide into equal parts. You should have at least 8 equal pieces of dough.

Gently roll each piece of dough into a smooth, soft ball. To make the surface of the bun as smooth and even as possible, you can lightly pinch the back side, as if rolling this ball of dough on the table.
