  • Mix cherry juice with sugar, bring to a boil.
  • Add vanillin and agar juice.
  • Simmer for no more than 2 minutes, stirring constantly.
  • When the liquid has cooled slightly, pour it into the molds. You can use one large one, pouring liquid 2 cm high, and then cut the finished dessert into pieces. Or immediately pour it into silicone molds.
  • Allow the candies to cool completely in the mold, if you take them out too early, they will break.

It is not necessary to clean in the cold, it will harden at room temperature. You can sprinkle the finished sweets with sugar, colored sprinkles, or leave them as they are.

Also try making bright and delicious gummy candies with fresh strawberries. What products you need:

  • Fresh strawberries - 700 g.
  • Agar - 20 g.
  • Boiled water - 1 stack.
  • Sugar or sweetener to taste.

Before preparing the marmalade with agar agar, it must be soaked in a glass of water for at least 20 minutes. During this time, chop the washed strawberries without leaves with a blender into a homogeneous puree.

Add agar water, stir and put on low heat. Bring the mixture to a boil, boil for a couple of minutes after bubbles appear.

As you cook, add sugar, fructose, or other sweetener, stirring and tasting until there is enough for your taste.

Let the mixture cool for 5 minutes. and pour into molds. You can leave it on the table or put it in the refrigerator, there it will harden after 20 minutes. Remove carefully from the molds and taste.

The benefits and harms of marmalade on agar

Agar is an extract from red and brown algae, it is rich in vitamins, minerals and pectin. Thanks to this, sweets on agar are good for the body, remove toxins and improve bowel function.

Sweets can be harmful if they contain artificial colors or flavors.

Of course, sugar-free people are best served with candy with or without safe sweeteners.

We put the berries in a saucepan, take a blender and begin the direct production of marmalade. We interrupt the berries with a blender. I have this strawberry - homemade marmalade with it turns out bright red, very beautiful. Add agar-agar to the puree, mix thoroughly and heat to a boil. The key word is BEFORE, the mixture should not boil, we wait for the bubbles and turn it off (about 95 degrees).

While homemade marmalade with agar-agar is heating, dissolve maple syrup, honey, fructose or stevia, which I wrote about at the beginning. Put in 1 teaspoon each (if stevia, then less), stir and taste, stop when the strawberry puree becomes sweet. Making fruit jelly without sugar will be much healthier.

Leave the finished mixture out of the fire for 5 minutes, then pour it into a candy mold. Agar candies are easier to pour over with a tablespoon. Fruit jelly is a low-calorie product, it does not contain fat. If you are on a diet, you can make a sugar-free diet marmalade - fruits contain the required amount of fructose. The sweetness is rolled in sugar to reduce the moisture content of the finished product, and so that it does not stick together during storage.

Marmalade at home can be made from any fruits, juices or compotes, from jam or fruit purees.

Fruit assorted marmalade with pectin

To prepare a fruit jelly assortment, you need silicone molds with recesses in the form of slices, but you can use ordinary shallow containers, and then cut the finished marmalade into cubes.

Pectin is a natural vegetable thickener. It is produced in the form of a grayish-white powder. It is activated during heat treatment, therefore, when making marmalade on pectin, the solution should be warmed up. You can buy it at any store.

In the human body, pectin works as a soft sorbent, normalizes metabolism and has a beneficial effect on the digestive system.

The thicker the fruit puree, the less time it takes to warm it up.

Cooking time - 1 hour + 2 hours for solidification.

Ingredients:

  • fresh oranges - 2 pcs;
  • kiwi - 2 pcs;
  • strawberries (fresh or frozen) - 400 gr;
  • sugar - 9-10 tbsp;
  • pectin - 5-6 tablespoons

Cooking method:

  1. Peel the oranges, squeeze out the juice, add 2 tablespoons of sugar and 1 tablespoon of pectin. Stir to avoid lumps.
  2. Pour the orange mixture into a preheated saucepan. While stirring, heat until thick for 15 minutes, but do not boil. Cool it down.
  3. Peel and grind the kiwi in a blender, add 2 tablespoons of sugar and 1.5 tablespoons of pectin to the resulting mass. Heat the resulting mass in a separate saucepan, stirring constantly, until thick for 10 minutes.
  4. Mash the strawberries with a fork or in a blender until smooth, add 4-5 tablespoons of sugar and 2-3 tablespoons of pectin. Prepare strawberry puree like orange puree.
  5. You should have three containers of warm fruit puree with the consistency of thick sour cream. Lubricate the marmalade molds with butter; it is not necessary to grease silicone molds. Pour the marmalade mass into molds and place in a cold place to set for 2-4 hours.
  6. When the marmalade hardens, remove it from the molds and roll in the sugar. Place on a flat dish and serve.

Ingredients:

  • cherry juice - 300 ml.;
  • regular gelatin - 30 gr.;
  • sugar - 6 tablespoons + 2 tbsp for sprinkling;
  • juice of half a lemon.

Cooking method:

  1. Dissolve gelatin in 150 ml. cherry juice at room temperature, stir and leave to swell for 30 minutes.
  2. Pour the remaining cherry juice over the sugar, bring to a boil, stirring occasionally. Cool the syrup a little, and add lemon juice to it.
  3. Pour the gelatin into the syrup, mix until smooth.
  4. Fill the molds with liquid marmalade and put in the refrigerator for 1.5-2 hours to solidify.
  5. Remove the finished marmalade from the molds and sprinkle with sugar.

Fruit jelly with agar-agar

Agar agar is obtained from seaweed. It is produced in the form of a yellowish powder or plates.

The gelling ability of agar-agar is higher than that of gelatin, as is the melting point. Dishes cooked on agar-agar will thicken faster and will not melt at room temperature.

Cooking time - 30 minutes + hardening time 1 hour.

Ingredients:

  • agar-agar - 2 tsp;
  • water - 125 gr;
  • fruit puree - 180-200 gr;
  • sugar - 100-120 gr.

Cooking method:

  1. Cover agar-agar with water, stir and let sit for 1 hour.
  2. Pour the agar agar into a heavy-bottomed saucepan, place over low heat and bring to a boil, stirring constantly.
  3. Once the agar agar has boiled, add sugar to it. Simmer for 1-2 minutes.
  4. Remove the saucepan from the stove and add the fruit puree to the agar agar, stirring the mixture thoroughly so that there are no lumps, cool slightly.
  5. Pour the finished marmalade into silicone molds of different sizes, leave to harden at room temperature, or refrigerate for 1 hour.
  6. The marmalade is ready. Cut it randomly or in different shapes, sprinkle with sugar or powdered sugar.

Leafy apple or quince marmalade

The composition of this dish does not include gelling agents, since natural pectin is contained in apples and quince in sufficient quantities.

Ingredients:

  • apples and quince - 2.5 kg;
  • sugar - 1 kg;
  • water - 250-350 g;
  • parchment paper.

Cooking method:

  1. Rinse the apples and quince, cut into wedges and remove the seeds.
  2. Place the apples in a deep saucepan, add water and cook, stirring occasionally, until softened.
  3. Cool and chop the apples with a blender or strain through a sieve. Add sugar to the puree and cook again, stirring occasionally, over low heat for 30 minutes. Cook the puree in several approaches until thick.
  4. Line a baking sheet with parchment paper, place a thin layer of applesauce on it and place in the oven.
  5. Dry the marmalade for 2 hours at a temperature of 100 ° C, turn off the oven and leave the marmalade overnight. Repeat this procedure.
  6. Cut the finished layer of marmalade into strips, wrap with parchment paper and store in the refrigerator.

"Summer" marmalade sweets

For such sweets, any fresh berries are suitable, if desired, you can prepare from frozen fruits.

For sweets, any form is suitable, such as silicone, plastic, and ceramic.

Cooking time - 30 minutes + 1 hour for solidification.

Ingredients:

  • any seasonal berries - 500 gr;
  • sugar - 200 gr;
  • water - 300 ml;
  • agar agar - 2-3 teaspoons.

Cooking method:

  1. Wash the berries, mash with a fork or chop in a blender, add sugar and stir.
  2. Pour agar-agar into a saucepan, cover with cold water, let stand for 15-30 minutes.
  3. Place the agar pan over low heat, stirring occasionally, bring to a boil, and simmer for 2 minutes.
  4. Mix berry puree with agar-agar, cool slightly and pour into molds.
  5. Leave the candies to harden at room temperature or in the refrigerator for 1-1.5 hours.

I suggest you prepare a wonderful, delicious, natural and beautiful marmalade - on agar. There is nothing superfluous in such a delicacy, but only syrup or juice and agar-agar. You don't need to sprinkle it with sugar. Marmalade on agar will appeal to both children and adults. Today I made it in the shape of hearts - a wonderful gift for my beloved. And if made in other molds - such marmalade will be a wonderful decoration for any holiday! And even a novice housewife can handle the preparation of marmalade on agar.

So, to make marmalade on agar at home, we need: syrup (I have cherry), agar-agar and a little sugar.

Since I have cherry juice harvested from summer (boiled with sugar), I will not add sugar. To make marmalade, you need 1 tsp. mix powder with 1 glass of liquid. I have just 200 ml of syrup, so I will mix agar-agar and syrup without adding water.

Stir the powder, it may first pick up a little in lumps, but they quickly dissolve.

Let the agar swell in the syrup for 40 minutes (as indicated on the package). If you have a different time indicated on the package, follow the instructions. After the time has elapsed, put our mixture on fire and, stirring so that it does not burn, bring to a boil and immediately remove from heat. If foam has formed, you can remove it to make the marmalade more transparent. Agar-agar hardens at 40 degrees, so prepare the molds in advance. Pour the syrup gently into molds and set to set.

Fruit jelly on agar agar hardens very quickly. If you didn't have time to pour it hot, just heat it up a little over the fire. If you put the marmalade to freeze at room temperature, it may take an hour, if in the refrigerator - 20 minutes, if in the freezer - 10 minutes. Carefully take out our marmalade, that's how beautiful they are!

The agar marmalade is ready! You can serve it straight without sprinkling with sugar.

  • 350 grams of mango. This fruit is ideal for making delicate and delicious marmalade. In this case, the amount of fruit already peeled is indicated.
  • 15 grams of gelatin. It is best to use instant gelatin as the cooking process will take much less time.
  • 250 grams of water
  • 2 measuring spoons of fitparada

Pour gelatin with 100 ml of water, warm it up a little and put the fitparad. The sweetener must dissolve properly in the gelatin.
Whisk the peeled mango with a blender. We need to get a smooth consistency of fruit puree. Pour the remaining water into the resulting puree, mix thoroughly and combine with a gelatinous mass. Now all that remains is to pour our dietary marmalade into molds and put them in the freezer.

Homemade agar-agar marmalade

  • 200 grams of currants. You can use any other berry of your choice.
  • 1 teaspoon agar agar. This natural product is an excellent substitute for gelatin. Agar agar is obtained from seaweed and is used in cooking for the preparation of various desserts and dishes.
  • 250 ml water
  • Any sweetener.

  • 200 grams of milk. You can use 1% or 0.5% fat milk.

  • A little bit of vanilla essence.
  • 100 ml of water. We will dissolve gelatin in it.

First, soak the gelatin in water for 20-30 minutes.
Add a sweetener to taste and a little vanilla to skim milk. Heat milk and add gelatin to it and mix thoroughly. It remains to pour the low-calorie marmalade into tins and you can enjoy the milk dessert.

Pumpkin marmalade with agar-agar

To make this dessert, you will need:

  • 250 grams of boiled pumpkin puree. It is best to whisk the puree in a blender until it is completely smooth.
  • 1.5 teaspoon agar agar. It needs to be soaked in 50 ml of water for several hours.
  • Any sweetener of your choice.
  • A little cinnamon for flavor.

Put the agar-agar on low heat, put the sweetener there and cook a little, without bringing to a boil. Then remove from heat and pour the mixture into the pumpkin puree, stirring constantly. You can do this with a mixer. Put some cinnamon there. We pour it into molds and send it to the refrigerator for 1 hour!

Orange marmalade - agar agar recipe

Do you like oranges? Then here is a great recipe for pp dessert:

  • 2 large oranges. We squeeze out the juice, on average you will get about 150-200 ml. You can take a ready-made juice, but most likely it will contain sugar, and if you stick to PP, then it is better to use healthy products.
  • Any sweetener of your choice.
  • 5 grams agar agar.

Divide the juice into two parts, so that one gets 50 ml. Add agar-agar to the smaller part and leave it to swell a little. Mix the rest of the juice with the sweetener and put it on fire. As soon as the mixture begins to boil, add the second part of the agar-agar juice. Bring to a boil and remove from heat. It remains to pour the pp marmalade and send it to the refrigerator!

Sugar-free apple marmalade - recipe

For applesauce lovers, there is a great sugar-free marmalade recipe:

  • 700 grams of apples. Mine, peel, peel and bake in the oven. Then beat in a blender until smooth.
  • Any sweetener of your choice.
  • 7 grams agar agar.
  • 250 ml of water.
  • 100 grams of orange juice. In it we will breed agar-agar.

First of all, put agar-agar in juice and leave for 30 minutes.

Put the applesauce in a separate container, add water and sweetener according to your taste. Cooking over low heat. As soon as it starts to boil, add agar-agar and let it simmer for another 4-5 minutes. Then pour it into molds and put it in the refrigerator.


Sugar Free Gummies

Do you like gummies? You can always make it at home in seconds!

  • 1 cup of any natural juice. You can take lemon juice if you like sourness, or orange juice.
  • 3 tablespoons of gelatin.
