Appetizer of eggs and herring with beets. Eggs stuffed with herring

Sometimes you don’t have the time or energy to cook. But if the holiday has already arrived or the guests are very close, you have to somehow get out. In fact, there are quite a lot of quick recipes for holiday dishes that are prepared from a minimum of ingredients with maximum savings of time and sometimes money. And such recipes should be in the piggy bank of every housewife. So, an excellent alternative to the classic “herring under a fur coat” salad would be stuffed eggs with herring and beets - a kind of “lazy fur coat”.

Lazy fur coat

To prepare this salad, you need to stock up on one large herring, two small beets, a couple of medium potatoes, a medium carrot and half an onion. Also use three to four chicken eggs, one hundred grams of mayonnaise, some fresh herbs and regular table salt (depending on your taste preferences).

First, prepare the vegetables: rinse them under cold water, scrubbing them with a sponge. Next, place them in saucepans and fill with cold water so that the liquid completely covers them. Place the containers on the fire and cook the vegetables until fully cooked. After finishing cooking, drain the hot water, rinse the vegetables with ice water and leave until cool.

Place the eggs in a separate saucepan, cover them with cold water, salt them well (so that they don’t leak if they suddenly burst), put them on the fire and boil them hard-boiled. Pour ice water over the prepared eggs and leave until cool.

Remove the skin from the herring and carefully gut it. Remove the backbone and bones to obtain a tender fillet. Cut the fish into small pieces.

Peel the boiled eggs, rinse so that no shell remains, and cut into halves. Place the yolks in a separate medium-sized container and mash thoroughly with a fork.

Peel the boiled vegetables and grate them on a fine grater. Place these ingredients in a separate bowl of appropriate size.

Peel the onion and place on the board. Chop into smaller pieces and add to vegetables. Add the prepared yolks there (leave a little to decorate the finished dish). Mix these ingredients thoroughly. Add mayonnaise to them and mix again.

Divide the vegetable filling among the egg halves.

Place the appetizer on a suitable dish. Build around a fan of onion, cut into thin half-rings. Place fish fillets on top of each egg half.

Sprinkle the finished appetizer with egg yolks and serve.

Stuffed eggs "lazy coat"

To prepare such a lazy fur coat, you need to stock up on five chicken eggs, three tablespoons of mayonnaise, one hundred grams of herring (pickled fillet), one medium beet and one onion. Also use one hundred milliliters of water, a couple of tablespoons of vinegar and a tablespoon of sugar.

First of all, prepare the food: wash the beets thoroughly, put them in a pan of a suitable size, fill with water to the top and boil until tender. Rinse the finished beets with cold water and cool. Boil the eggs hard, cover with cold water and leave until cool.

Peel the onion, chop it into smaller pieces and marinate it in a mixture of water, vinegar and sugar for a quarter of an hour.

Peel the beets and grate them on a coarse grater. Peel the eggs, rinse and cut into halves.

Remove the yolks from the eggs and place them in a suitable sized bowl. Mash them with a fork. Add beets, prepared onions and half a herring to them, chopping it into small pieces. Mix the ingredients thoroughly, add salt and pepper if desired.

Add mayonnaise to the mixture; if you wish, you can also add finely chopped herbs and garlic, passed through a garlic press, into a bowl. Stir again.

Stuff the egg halves with the prepared mixture, garnish them with pieces of herring and serve.

How to cook stuffed eggs with beets and herring in another way?

This recipe does not involve stuffing eggs, but the finished salad is also very tasty and cooks extremely quickly. Of course, it does not look very presentable, but it is quite suitable for a home dinner.

To prepare this salad, you need to stock up on one herring with caviar, one medium onion, several green onions and mayonnaise. Also use three boiled beets and five boiled potatoes.

If you don't have boiled vegetables on hand, the process of preparing the salad will take a little longer. But still, you can cook it much faster than a classic fur coat. Raw potatoes and beets need to be washed and boiled until tender, then cooled and peeled.

Also clean the herring and remove the caviar from it. Chop both fish fillets and caviar into cubes. Grate the beets and potatoes on a coarse grater. Chop the onion into smaller pieces and marinate if desired, for example, as described in the previous recipe.

Place all prepared ingredients in a bowl of a suitable size and season with mayonnaise. You can place the prepared salad on a dish, for example, in the shape of a fish. So it will have an attractive appearance. And if you decorate it with the same onion feathers or crumbled egg yolk, it will become an excellent dish for the holiday.

“Lazy Fur Coat” is an excellent alternative to the classic version of the “Herring under a Fur Coat” salad, which can be easily and quickly created in any kitchen.

I think there are always chicken eggs in every refrigerator. This is not surprising, because you can use them to prepare a huge number of dishes, both for every day and for the holiday table. If you are planning a holiday or want to treat your family with a tasty and satisfying snack, then you are reading the recipe you need. We suggest preparing stuffed eggs with beets and herring. The finished appetizer tastes a little like “herring under a fur coat” salad. But, since it does not contain potatoes and carrots, this snack is lighter.

Ingredients

  • Chicken eggs – 4 pcs;
  • Beets – 50 gr;
  • Lightly salted herring – 50 g;
  • Salt, ground black pepper, mayonnaise to taste;
  • Fresh herbs for decoration.

How to cook eggs stuffed with herring and beets

You will need fresh chicken eggs, which must first be washed in running water. Take a small saucepan, pour cold water and add salt. Place the washed eggs and place on the fire. As soon as the water in the pan boils, set it aside for 10 minutes. After the specified time, remove the eggs and cool in as cold water as possible. Peel off the shell. Salt in water when boiling eggs is needed so that the shell does not crack and can be easily peeled off later.

Wash medium-sized beets to remove dust and dirt. It can be boiled in salted water until tender, or it can be cooked in the oven. Baked beets retain their rich color and have a special taste. To bake it, wrap the vegetable in foil and place it on a baking sheet in an oven preheated to 180 degrees for about 35-40 minutes. Usually this time is enough for the beets to become ready for further processing. Check readiness with a wooden skewer or match; they should pierce the beets very easily. Remove the foil, cool the beets and peel them.

Cut the boiled eggs in half lengthwise. You can take a knife with a sharp end and zigzag along the oval of the protein. This way the stuffed eggs will become more elegant and take on a festive look. Carefully separate the yolks.

Now prepare the filling. To do this you need a blender or food processor. Place pieces of lightly salted herring fillet, grated or diced beets, chicken yolks and a little mayonnaise into a bowl. Grind until creamy. Season with pepper and salt if necessary.

If you have a whole herring, then first clean it of entrails, skin, large and small bones. Rinse well, separate the fillet from the backbone and cut into small pieces, only then can it be chopped in a blender.

Place the beetroot cream in a piping bag fitted with a star tip. If you don't have a pastry bag, you can replace it with a regular plastic bag by cutting off a corner of it. But with a special bag, preparing the snack will be much more convenient, and serving it more aesthetically pleasing.

Pipe the beetroot cream into the prepared egg white halves.

Garnish with fresh herbs. Eggs stuffed with herring and beets are ready. They will be a wonderful decoration for both an everyday dinner with the family and a festive buffet. Bon appetit!

Today I want to show you not quite ordinary eggs stuffed with herring. Well, I think from the photograph of the finished dish it’s obvious that the eggs were obviously stuffed with more than just herring. So, to give the herring cream color, you can use a variety of products with coloring properties - these can be carrots, spinach, and even cocoa (yes, cocoa, if not sweetened, is bitter, and goes great with salty dishes). In general, everything that was recommended for coloring cake creams in Soviet times can also be used to color the herring cream I offer.

It is important to understand here that the herring itself, if it is without skin, is almost colorless and is well pureed with other products, and the resulting mass can be colored. Without dyes at all, the color is not very attractive, but with the addition of the same beets or the rest of the natural dyes I listed above, you get what you need.

First, I will show you the recipe for cheese-egg-herring cream, and then how to cook eggs stuffed with beets and herring so that they look “top-notch” and are literally a pity to eat!

I used a tulip pastry tip for decoration, but, of course, you can use stars or make roses, if anyone knows how. "Tulip" is convenient because it makes such flowers in one movement.

The ingredients are given in proportion for 1 egg, so that everyone can calculate for themselves how much they need for their number of eaters.

Boil the eggs hard, cool and peel.

While the eggs are boiling, grate the boiled beets on a fine grater and squeeze.

We cut the herring into pieces that can be conveniently processed in a blender. By the way, if the herring had skin, remove the skin first - it is dark and will spoil the color of the cream.

Cut the boiled eggs in half and remove the yolks. You can lightly rinse the eggs to remove any traces of yolk from the surface of the white.

Puree herring, grated beets, melted cheese and egg yolks into cream. If we see that the cream is too thick, then add a little mayonnaise. It should be about the consistency of cake cream.

Let the cream sit in the refrigerator for about an hour. We place it in a seed bag or syringe. What happens next depends on the set of your pastry attachments, your skills and imagination.

I used a tulip attachment and got these flowers.

If several hours pass before serving, then it makes sense to keep eggs stuffed with herring in the refrigerator. If it’s an hour or two, then both this cream and basil or parsley leaves can stand at room temperature without drying out or withering.

step by step recipe with photos

An original and very tasty appetizer - eggs stuffed with herring and beets. They can be prepared both for a festive table and on an ordinary day. The ingredients are practically the same as in the popular “herring under a fur coat” salad, so they taste very similar.

Ingredients

  • 3–4 chicken eggs
  • 1 half lightly salted herring
  • 1/2 beet
  • 1.5 tbsp. l. mayonnaise
  • 2 pinches of salt
  • spices to taste
  • 3-4 lettuce leaves, to serve

Preparation

1. Hard boil the eggs, cut each in half.

2. Cut the herring into very small pieces, picking out the bones along the way. Place the fish pieces in a bowl.

3. Remove the yolks from the egg halves and add them to the fish, mashing them with a fork or spoon.

4. The egg halves should be whole and not deformed so that the snack looks neat.

5. Cook the beets, you can do this in advance. You can also bake it in foil in the oven. Grate it on a fine grater. If the beet mass turns out to be too juicy (watery), you can squeeze it out slightly. Transfer the grated beets into a bowl.

6. Salt the filling, add spices as desired and mayonnaise (you can use sour cream). Stir.

“Lazy Fur Coat” is an excellent alternative to the classic version of the “Herring under a Fur Coat” salad, which can be easily and quickly created in any kitchen.

Hello dear readers. Today I want to offer a delicious cold appetizer for herring lovers. Eggs stuffed with herring and beets are an excellent decoration for any holiday table. It's tasty, inexpensive, beautiful and bright. For the New Year - a luxurious snack. I’ve been making this for years now and all my guests love it. The taste is reminiscent of herring under a fur coat. I would even call this appetizer a lazy herring under a fur coat.

Today I will have many recipes, you can choose the recipe that you like best.

The content of the article:
1. Eggs stuffed with herring and beets - recipes

You can prepare a snack using from 2 to 10 eggs, it all depends on the number of guests.

  • 4 eggs
  • 1 herring
  • 1 beet
  • You can add an apple or processed cheese (optional)

For this recipe I do not use mayonnaise, below I will have a recipe with mayonnaise.

How to stuff eggs with beets and herring

It is better to take fatty, lightly salted herring. I fillet it, remove all the bones (if possible). I cut into pieces of approximately 7-8 mm.

I boil hard-boiled eggs. I cook them for 10 minutes from the moment they boil. I boiled 2 store-bought and 2 country-made eggs (they were fresh and poorly peeled). We need the egg to be even, so the appetizer will look more beautiful.

I cool and peel the eggs. I cut it in half with a sharp knife.

Boil the beets until tender. Can be baked in the oven in foil. I always boil more vegetables during the holidays, using some of them for salads and some for appetizers.

I cool the beets, peel them, and grate them on a fine grater. You can even grind the beets into a smooth puree using a blender.

Now we need to separate the yolks from the whites. Yolks separately, whites separately.

I combine the yolks and grated beets. It is most convenient to mash the yolks with a fork (you can rub the yolks on a fine grater). If desired, you can add herbs or mayonnaise.

This is what the mixture for stuffing eggs looks like. I have already started stuffing eggs with beets. I scoop up the beet mass with a teaspoon and do it carefully.

I fill the eggs with beetroot mixture. I put it on a plate or dish.

I place a piece of herring on top and garnish with parsley. You can decorate with dill. Although the cold appetizer looks so beautiful. This dish can be prepared in advance. Served chilled.

I also want to offer you an excellent, very tasty appetizer that I have been preparing for many years. Everything is simple, fast and accessible.

Eggs stuffed with herring and onions - lazy herring under a fur coat in eggs

  • 4 eggs
  • 1 herring
  • 1 beet
  • half an onion (I have Yalta onion)
  • mayonnaise
  • salt and ground black pepper to taste
  • greens for decoration

How to cook lazy herring under a fur coat in eggs

My herring is Norwegian, I bought it in advance, cleaned it, divided it into fillets, removed the bones and cut it. My pieces are 1-1.5 cm.

I used country eggs. Yalta onion, but you can replace it with regular onion, or use green onion (it will be bright and beautiful).

Salt and pepper as desired. There is no mayonnaise in the photo, but I use a little mayonnaise for the dressing. My mayonnaise is homemade, I prepared it at home, I prepare mayonnaise using yolks.

Boiled the eggs, peeled them, cut them in half. We take out the yolk, we need halves of whites to prepare lazy herring under a fur coat.

I boiled the beets and cooled them. I grated it on a Korean carrot grater.

I marinated the onion in a solution of salt, sugar and vinegar. Add half a teaspoon of salt, 1 tbsp. spoon of sugar, 1 tbsp. a spoonful of vinegar 9% (can be replaced with apple cider vinegar) and 100 ml. water. Mix everything and leave for 20 minutes. Strain the marinade.

I stuff the egg halves with the beet mixture.

I put pieces of herring on top. Everything is fast, easy and simple. Eggs stuffed with herring and onions are ready. They can be chilled in the refrigerator before serving. The resulting eggs are stuffed like a fur coat. This is delicious.

I also want to offer another appetizer recipe: eggs stuffed with herring and cheese. The combination of processed cheese makes the taste tender and creamy.

Eggs stuffed with herring and melted cheese

You can cook from 2 to 10 eggs, I usually boil 4 eggs, which makes 8 halves.

  • 4 eggs
  • 1 herring
  • 1 processed cheese
  • Mayonnaise (optional, I don't add)

How to stuff eggs

I boil the eggs hard, peel and cool. Using a sharp knife, cut the eggs into halves. I take out the yolk, doing it carefully so as not to damage the white.

You can boil chicken or quail eggs.

Since I use processed cheese, I don’t add mayonnaise, so take thicker cheese, you can use cream cheese or cream cheese.

You need to mash the yolks with a fork, rub the cheese into them (if the cheese doesn’t rub well, you can freeze it). Mix, add mayonnaise if necessary. You can add finely chopped dill (if available).

You can add finely chopped herring to the minced meat and mix.

Egg whites can be colored with beet juice. Everything is done simply. Dip the egg halves into the beet juice and they immediately turn pink. You can “color” the egg halves with blue cabbage juice.

Stuff the egg white halves and add pieces of herring. Decorate as desired. You can garnish with red caviar and dill.

Eggs stuffed with herring and apple

The taste is interesting; if you have tried herring under a fur coat with an apple, it is somewhat reminiscent of a salad. The apple gives a certain piquancy and adds its own unique note.

  • 4 eggs
  • 1 herring
  • 1 beet
  • Half an apple (sweet and sour)
  • Mayonnaise (optional, I don't add)

How to stuff eggs

The trail needs to be cleaned, divided into fillets, and the bones removed. I cut it into thin pieces. Approximately 7-8 mm.

I boil the beets until tender, cool, and peel.

I boil the eggs hard, cool, and peel. You need to cut each egg in half. Take out the yolk.

Grate the beets on a fine grater, add the yolks to the beets, and mix. Peel the apple and grate the pulp. Mix. You can add mayonnaise.

Stuff the egg halves. Place pieces of herring on top. I decorate with a slice of lemon, herbs and serve.
